Antioxidant Activity and Quality Characteristics of Pork Patties Added with Saltwort (Salicornia herbacea L.) Powder (함초(Salicornia herbacea L.)분말을 첨가한 돈육패티의 항산화활성 및 품질특성)

  • This study investigated the effects of saltwort powder on the antioxidant activity and quality characteristics of patties added with saltwort powder. Patties were prepared with different amounts (0, 1, 2, and 3%) of saltwort powder. The total phenolic content, DPPH free radical scavenging activity, and pH of patties increased with increasing saltwort powder content (P<0.05). In particular, the moisture content and cooking loss of the group added with 2% saltwort powder were the highest and lowest, respectively (P<0.05). As the content of saltwort powder increased, $L^*$ and $a^*$ values decreased while $b^*$ value increased. Texture analysis showed that the hardness, chewiness, and gumminess of the control group were lower than those of the treated group (P<0.05). Consumer acceptability showed that 1% and 2% saltwort powder groups scored higher in terms of overall preference, appearance, color, taste, and texture compared to the other groups. Characteristic intensity rating of saltwort patties showed that as more saltwort powder was added, saltwort taste intensified; however, the increase did not affect juiciness, off flavor, or salty taste of the patties. Judging from the results, it was concluded that the addition of saltwort powder to patties in processing can enhance the preference, quality, and antioxidant activities of the patties, which elevates the value of patties.

A Study on Fire Resistance and Spalling of HPC Beam with Fiber-Cocktail in ISO Fire under Loading Condition (표준화재 재하조건하에서 Fiber Cocktail을 혼입한 고강도 콘크리트 보의 폭렬특성 및 내화성능에 관한 연구)

  • In an attempt to control the spalling in high strength concrete, spalling reducer was mixed to identify the effect and thermal characteristics of concrete beam member at high temperature. The member was manufactured in such as way of adding 40~60MPa of high strength concrete into spalling reducer, and then fire resistance performance were monitored under the ISO standard fire load condition in accordance with KS F 2257. As a result of test, fore rate performance of 40MPa beam without spalling reducer was 180minutes, 50MPa was 174minutes and 60MPa was 152minutes, indicating that 50MPa and 60MPa beam appeared 6~28minutes short to become a 3-hour rate. However, 50 and 60MPa beam mixed with spalling reducer appeared to have satisfied the requirements for 180minutes. A spalling was occurred in surface of 50 and 60MPa beam mixed without spalling reducer, while no spalling or surface failure was occurred with 50 and 60MPa beam mixed with spalling reducer. Thus polypropylene fiber mixed with the concrete proved to be effective, but viewing that the surface of 60MPa was peeled off partially, the steel fiber mixed appeared not to be effective for the beam more than 60MPa.

Greenhouse Gas Reduction from Paddy by Environmentally-Friendly Intermittent Irrigation: A Review (환경 친화적인 간단관개를 통한 논에서의 온실가스 저감)

  • Irrigated and flooded rice paddy contributes to the greenhouse gas emissions (GHG) that affect climate. This in turn affects the supply and reliability of the water needed for rice production. This dynamic makes current rice production methods foreseeably less sustainable over time while having other undesirable effects. Intermittent irrigation by a means of the system of rice intensification (SRI) and alternate wetting and drying (AWD) methods was reviewed to reduce global warming potential (GWP) from 29% to 90% depending on site-specific characteristics from flooded rice paddy and analyzed to be a promising option for enhancing the productivity of water as well, an increasingly constraining resource. Additional benefits associated with the SRI/AWD can be less arsenic in the grain and less degradation of water quality in the run-off from rice paddies. Adoption and expansion of intermittent irrigation of SRI/AWD may require costly public and private investments in irrigation infrastructure that can precisely make irrigation control, and the involvement and upgrading of water management agencies and farmer organizations to enhance management capabilities. Private and public collaboration as a means of earning carbon credit under the clean-development mechanism (CDM) with SRI/AWD for industries to meet as a part of their GHG emission quota as well as a social contribution and publicity program could contribute to adopt intermittent irrigation and rural investment and development. Also, inclusion of SRI and AWD in programs designed under CDM and/or in official development assistance (ODA) projects could contribute to climate-change mitigation and help to achieve UN sustainable development goals (SDGs).

Changes in Total Plate Counts and Quality of Pig Small Intestine by Different Washing and Packaging Methods

  • Pig small intestine not only is used as food but also for sausage casings production in many countries worldwide. However, it is well recognized that the small intestine is important source of spoilage and pathogenic bacteria. The present study aimed at investigating the effects of different washing and packaging methods on the changes of microbial levels and physicochemical characteristics of pig small intestine. After collecting and trimming off of visible fats, the pig small intestine samples were treated with; (i) different packaging methods: aerobic packaging (AP), skin packaging (SP), and vacuum packaging (VP); and (ii) washing with different concentrations of acetic acid. The treated samples were then stored at $4^{\circ}C$ for 1, 4, 7, and 10 d. At 1-d storage, higher pH value was found in the AP-treated samples, however, after 7 to 10 days the samples treated with SP had higher values compared to the ones treated with AP and VP (p<0.05). Thiobarbituric acid reactive substances values were higher in the AP-treated samples than those of the SP- and VP- treated samples at 7-d storage (p<0.05). At $10^{th}$ d, total plate counts (TPC) were higher in the control than in the acetic acid-washed samples (p<0.05). Additionally, the TPC was lower in the SP- and VP-treated samples than the AP-treated samples at 7-d storage (p<0.05). These obtained results suggest that the applications of washing with acetic acid solution and/or SP and VP methods could be an effective way to extend the shelf-life of pig small intestine during cold distribution.

  • The aim of this study, a traditional residential area in the environmentally friendly design techniques to identify the techniques and principles that have been carried out to reestablish the principles. To do this, through literature review environmental performance is reflected in the traditional residential area side of resources conservation, locational aspects, spatial configuration, and how cases were selected looking for ways to apply modern. Are examples of upper class housing in the Chosen Dynasty Period period construction relatively well-preserved round and a good building with a clear housing Dokrakdang year were selected. Locational aspects of the terrain with minimal changes to the building and construction techniques were entirely in terms of environmental conservation and environmental temperature was adjusted to regulate the room temperature technique could be seen. In terms of cycling in natural materials were recycled. and water make used of positive through water cycling technique & water control. In addition, the importance of landscape views overlooking the landscape from inside to outside through the regulation of the various internal and external space technique was used to attract and expand. Traditionality in the pursuit of modern space, simply cut off because of tradition rather than to restore or recover the organizing principle inherent in the traditional space, and extraction of the contemporary social, cultural and environmental understanding of space is acceptable in basis. Environmentally-friendly design techniques in a traditional residential area for a long time to be developed by the experience of its application of modern environmental and energy problems and pleasant environment to the creation of human life and are subject to significant swings in that.

Control Method for the Number of Travel Hops for the ACK Packets in Selective Forwarding Detection Scheme (선택적 전달 공격 탐지기법에서의 인증 메시지 전달 홉 수 제어기법)

  • A wireless sensor network which is deployed in hostile environment can be easily compromised by attackers. The selective forwarding attack can jam the packet or drop a sensitive packet such as the movement of the enemy on data flow path through the compromised node. Xiao, Yu and Gao proposed the checkpoint-based multi-hop acknowledgement scheme(CHEMAS). In CHEMAS, each path node enable to be the checkpoint node according to the pre-defined probability and then can detect the area where the selective forwarding attacks is generated through the checkpoint nodes. In this scheme, the number of hops is very important because this parameter may trade off between energy conservation and detection capacity. In this paper, we used the fuzzy rule system to determine adaptive threshold value which is the number of hops for the ACK packets. In every period, the base station determines threshold value while using fuzzy logic. The energy level, the number of compromised node, and the distance to each node from base station are used to determine threshold value in fuzzy logic.

Evaluation and Weathering Depth Modeling of Thermally Altered Pelitic Rocks based on Chemical Weathering and Variations: Ulju Cheonjeon-ri Petroglyph (화학적 풍화작용과 조성변화에 따른 열변질 이질암의 풍화심도 모델링 및 평가: 울주 천전리 각석)

  • The Cheonjeon-ri petroglyph is inscribed with shale formation belonging to the Daegu Formation of the Gyeongsang Supergroup in the Cretaceous of the Mesozoic Era. This rock undergoes thermal alteration to become hornfels, and has a high hardness and dense texture. Rock-forming minerals have almost the same composition as quartz, alkali felspar, plagioclase, calcite, mica, chlorite and opaque minerals, but calcite is rarely detected in the weathered zone. The petroglyph forms a weathered zone with a certain depth, and there is a difference in mineral and chemical composition between weathered and unweathered zones, respectively. The CaO contents of the weathered zone were reduced by more than 90% compared to that of the unweathered zone, because calcite reacted with water and dissolved. As a result of calculating the surface weathering depth for the petroglyph with the transmission characteristics of X-rays, depth of the parts in falling off and exfoliation showed a depth of about 0.5 to 1 mm, but the weathering depth in most areas was calculated to be about 3 to 4 mm. This can be proved by the contents and changes of Ca and Sr. The surface discolorations of the petroglyph are distributed with different color density, and the yellowish brown discoloration is alternated with a thin biofilm layer, showing a coverage of 79.6%. Therefore, periodic preservation managements and preventive conservation monitoring that can effectively control the physicochemical and biological damages of the Cheonjeonri petroglyph will be necessary.

Analysis of Temperature and Humidity Distributions according to Arrangements of Air Circulation Fans in Single-span Tomato Greenhouse (토마토 단동온실에서 공기순환팬 설치 방법에 의한 온실 내 온습도 분포 분석)

  • This study was aimed to investigate the effect of air-circulation fans on air temperature and relative humidity in a single-span tomato greenhouse (W: 7m, L: 25m, H: 3.2m). According to standard of fan layout by ASAE (1997), a total of 10 fans were bilaterally arranged in 2 rows in the experimental greenhouse. The distributions of air temperature and relative humidity were measured from 6 pm to 8 am under different conditions, with and without fans. The measurement heights were 0.7m, 1.7m and 2.7m. Under the condition of "fans off", the spatial differences of air temperature and relative humidity between upper and lower sides were $1.7^{\circ}C$ and 10.8%, respectively. The operation of 10 fans showed their differences to $0.1^{\circ}C$ and 3.2%. The number of fans and installation direction were evaluated their performance on reducing the spatial variation of air temperature and relative humidity. The experimental layouts were 5 and fans in 2 rows (bilaterally) and 10 fans in the one (same) direction. Under the condition of "6 fans on" and "5 fans on", the spatial differences of air temperature and relative humidity between upper and lower side were $0.3^{\circ}C$, 3.4% and $0.3^{\circ}C$ and 4.0%. The operation of 10 fans in the one direction reduced their differences to $0.5^{\circ}C$ and 4.9%. The overall findings of this study showed that there was no significant differences under each condition. Therefore, this study suggested that it is more economic and effective to install five fans in 2 rows (bilaterally) in the greenhouse (W: 7m, L: 25m, H: 3.2m).

The Effects of Calcinated Calcium Solution Washing and Heat Treatment on the Storage Quality and Microbial Growth of Fresh-cut Broccoli (신선편이 브로콜리의 품질과 미생물 성장에 영향을 주는 소성칼슘 용액 세척 및 열처리 효과)

  • This study was conducted to investigate the effect of calcinated calcium (CC) alone or combination with heat treatment on storage quality and microbial growth in fresh-cut broccoli. Fresh broccoli samples were cut into small pieces and washed in normal tap water (TW), $50{\mu}L{\cdot}L^{-1}$ chlorinated water (pH 6.5), $1.5g{\cdot}L^{-1}$ CC, heat treatment in TW at $45^{\circ}C$, and CC dissolved in TW at $45^{\circ}C$ for 2 minutes separately. Samples were then packaged in $50{\mu}m$ polyethylene bags and stored at $5^{\circ}C$. Results revealed that like $50{\mu}L{\cdot}L^{-1}$ chlorine, washing in CC at normal water temperature was effective in reducing microbial population in fresh-cut broccoli samples. Washing with CC combined with heat treatment increased an electrical conductivity of fresh-cut broccoli. Combined heat treatments with TW and CC reduced aerobic plate count on fresh-cut broccoli, only in initial period of storage. But, later on heat treatment induced injury of fresh-cut broccoli resulting more microbial population compared to non heat treatment. However, samples treated with CC alone had good quality with low off-odor at the end of storage. Results suggest that CC, an environment-friendly sanitizer could be an alternative to chlorinated water for washing of fresh-cut broccoli without affecting sensorial quality.

Effect of Chlorine Dioxide, Cold Plasma Gas Sterilization and MAP Treatment on the Quality and Microbiological Changes of Paprika During Storage (이산화염소 및 저온 플라즈마 가스 살균 및 MAP 처리가 파프리카의 저장 중 품질과 미생물학적 변화에 미치는 영향)

  • This study was conducted to investigate the effect of packaging methods and sterilization treatment on storability and microbial control in paprika fruits. When treated with chlorine dioxide gas for 3, 6, and 12 hours and cold plasma gas for 1, 3, and 6 hours, and then packed in a carton box and stored in a 8 ± 1℃ chamber for 7 days, chlorine dioxide treated 12 hours and plasma treated 6 hours was prevented the development of E·coli and YM(yeast and mold). Accordingly, the control was treated with chlorine dioxide for 12 hours and plasma for 6 hours, packed using a carton box and 40,000 cc·m-2·day-1·atm-1 OTR film (MAP), and stored in a 8 ± 1℃ chamber for 20 days. Fresh weight loss rate during storage was less than 1% in the MAP treatments, and the visual quality of the MAP treatments was above the marketability limit until the end of storage. There was no difference in the contents of oxygen, carbon dioxide, and ethylene in the film. In the case of firmness, the chlorine dioxide treatments was low, and the Hunter a* value, which showed chromaticity, was highest in the Plasma 6h MAP treatment. Off-odor was investigated in the MAP treatments, but it was very low. The rate of mold growth on the fruit stalk of paprika was the fastest and highest in the chlorine dioxide treated box packaging treatments, and the lowest in the chlorine dioxide treated MAP treatments at the end of storage. The aerobic count in the pulp on the storage end date was the lowest in the plasma treated box packaging treatments, the lowest number of E·coli in the chlorine dioxide treated MAP treatments, and the lowest yeast & mold in the chlorine dioxide treated box packaging treatments. As a result, for the inhibition of microorganisms during paprika storage, it is considered appropriate to treat plasma for 6 hours before storage regardless of the packaging method.
