  • The purposes of this study were to survey the present situation of nutrition education in junior/senior high school, to analyze the difference between the favorite subjects on students and the existing subject done by dietitians on nutrition education, and then to identify the subjects of nutritional education for junior/senior high school students. Self-administered questionnaires were given to dietitians and students and 142 of the 200 dietitians (71.0%) and 479 of the 564 students (84.9%) responded to the questionnaire on the nutritional education. According to the survey results, 76.1 % of school dietitians currently were doing nutrition education for students while the other 23.9% didn't have such education programs even though they recognized the necessity strongly. The target of nutrition education was student rather than parents or teacher generally and the principal measuring method for nutrition education effect was change of plate waste and leftover'. It was found that significant difference in the collector and source of nutritional education information between junior and senior high school dietitians (p< .05) . About ninety-eight percentage of dietitians felt that nutrition education should keep pace with meal service and this meant that almost respondent recognized the necessity of nutrition education for students. Because the most serious one among operational problems of nutrition education program was lack of enough time owing to too many affairs as dietitian, junior and senior high schools should support so that dietitians would share enough time for nutrition education. And also, a gap was existed between actual and favorite subjects on nutrition education. Significant differences existed in the following subjects; 'basic concept of food and nutrition', 'disease and nutrition', 'food culture in the world', 'cooking and culinary art', 'food of the 24 divisions of the year in the lunar calendar', 'food waste and environmental issue', 'food habit and food behavior', 'exercise and nutrition' (p< .001) 'table manner', 'food and individual sanitation', 'recommended dietary allowance' (p < .01) and 'menu planning' (p< .05) .Finally, 24 subjects of nutritional education were selected based on the survey results. These subjects would be expected to be able to contribute the effective and interesting nutrition education program for junior and senior high school students.

  • The purpose of this study is to develop the nutritional survey indices such as the Knowledge(K), Knowledge Practice(KP), Attitude(A), and Food Practice(FP) as effective materials of the nutrition education and evaluation in spreading community nutrition service. These materials were applied to two groups(126 rural people and 117 urban people) from August 1st to September 10th, 1996. We investigated actual conditions of objects about K, KP, A, FP by interviews. Also we measured serum cholesterol levels of all objects by Accutelend G.C. The results of the research turned out as follows; 1). In the comparison of the nutritional Knowledge scores, the average score of urban people was much higher($84.2{\pm}2.4$) than rural people($42.1{\pm}3.1$). 2). In the scores of the Knowledge Practice, urban people had also significantly higher score than rural people. But only 19.5% of urban people had high scores between 80 and 100, and 42.4% of urban people and 87.3% of rural people had scores between 0 and 40. 3). The average scores of the Attitude were not significantly different between urban and rural people. The average scores of the Food Practice were not significantly different between urban and rural people. 4). In cholesterol measurements, only three of 243 people were in the abnormal high levels(more than 250mg/dl), and they are all over 60 years old, and two of them were rural people. 5). The people who were younger in age, higher in educational level and spent more money for foods had higher scores on K, KP, A and FP. And the people who were younger in age in age and more money spent for foods had higher scores on FP. Regression analysis showed that the serum cholesterol levels were not associated with the scores of FP.

  • There is little information on the nutrient intake according to the city size and small town in Korean elderly. This study analyzed the nutritional consumption of older people in metropolitan, middle and small cities, and rural areas according to four income levels. The recent data from the 2016~2018 Korean National Health and Nutrition Survey, Centers for Disease Control and Prevention were used. The final analysis included 4,325 individuals (Male: 1,856, Female: 2,469) over 65 years old. Multivariable regression with a complex sample design was conducted to compare the nutrient intake among the groups. In a comparison within regions, the nutrition status of the elderly in small towns was more vulnerable than metropolitan and middle & small cities. The energy intakes were similar between the groups. The carbohydrate intake of middle & small cities was significantly higher than the other regions. The intake of other nutrients in metropolitan and middle & small cities appeared to be higher than in rural areas. The number of nutrients with statistical significance between low and high-income levels were 19 in metropolitan, 11 in middle & small cities, and 5 in rural areas. Each contribution of carbohydrate, fat, and protein to the total energy intake was lower in the low-income level than the high-income level in metropolitan and middle & small cities. On the other hand, in rural areas, only the contribution of protein to energy intake was lower in the low-income level than the high-income level. Cities with higher levels of urbanization had more severe nutritional inequality in relation to the income level. There was also nutritional inequality present in rural areas but it was to a lesser extent. Moreover, the generally low level of nutrient intake was problematic in rural areas. These findings could be used as fundamental evidence for developing community nutritional policies for the elderly.

  • The purpose of this study was to investigate the dietary habits, the nutritional knowledge and the consumption patterns of convenience foods of 618 university students located in the Gwangju area, from November twentieth to November thirtieth, 2002. The subjects included 301 males (48.7%) and 317 females (51.3%). This survey was conducted using a self-administered questionnaire. The percentage of students who were underweight, normal and overweight based on their body mass index (BMI) was 3.7, 88.0 and 8.3 far the males, and 29, 71 and 0 for the females, respectively. Most students (73.8%) skipped breakfast. This was because of lack of time (65.1%) of the cases. Self-reported eating habit problems were eating irregular meal (52.4%), overeating (21%), prejudiced meal (12.4%) and skipping meal (7.4%). The type of favorite snack was biscuit (31.9%) and cup Ramyon (31.9%). The rates of alcohol drinking in male and female students were 88.0% and 85.8% respectively, and the rates of smoking were 35.9% and 28% respectively. Males ate fiequently cup Ramyon (2.08 $\pm$ 2.95), fries (pork cutlet, fried potato) (1.91 $\pm$ 2.58), Ramyon (1.81 $\pm$ 3.00) and kimbab (1.70 $\pm$ 3.17) more frequently, while females ate kimbab (2.25 $\pm$ 3.26), cup Ramyon (1.89 $\pm$ 2.09), fries (pork cutlet, fried potato) (1.77 $\pm$ 2.67), Ramyon (1.46 $\pm$ 1.1.95) and fish paste (1.45 $\pm$ 2.22) more frequently. The nutritional knowledge score was higher in females than in males. The mean consumption patterns of convenience foods of students living in home were lower than that of students living in dormitory and boarding w/cooking. When the amount of pocket money available and the body mass index increased and the nutritional knowledge level was low, the mean consumption of convenience foods increased. The mean consumption of convenience foods correlated negatively with nutritional knowledge (p < 0.01). Therefore, nutritional education for university students is needed so as to improve their health and nutritional education program should be developed to meet the various needs of these students. • A nutrition survey of 128 perschool children, 4 to 6 years old, in the Saemaul Youlgok day care center, located in one uplane, overpolulated, poor area of the city of Seoul, sponsered by the Korean Red Cross Society, was undertaken between August 21 and 31, 1984, to investigate dietary and nutritional status. RESULTS: Mean values of height, weight, arm circumference, girth of chest, and head circumference ranged from 95 to 100% of KIST mean. However, 4.8~14.2% of the subjects were assessed as undernourished in terms of 'weight for height'. Mean hemoglobin vcalue was 12.1±0.7gm%, and mean hematocrit value was 38.5±2.2%; 4.1% of the subjects were proven to be anemic according to the criterion of hemoglobin established by the ICNND. Mean urinary urea nitrogen/creatinine ratio was 11.4±3.8. Regarding mean energy and nutrient intake, the following percentages had intakes below two-thirds of the 1985 RDAs: 28.8% of children, for protein; 48.8% of children, for iron; and 28.8% of children, for calcium. About 25% of children had vitamin A intake below one-third of the recommended allowance. Carbohydrate provided 71% of total energy intake; protein accounted for 13%; fat provided 16%. Energy intake was divided among breakfast, lunch, dinner and snacks in a percentage ration of 19:26:21:34. The lunch, and snacks which were served at the day care center provided 36.5~79.1% of daily energy and nutrient intake. The survey clarified that the day care feding largely supplemented the inadequate dietary intakes of these young children at home. According to factor analysis of energy and nutrient intake, there were two factor groups : the first factor group, for energy, protein, carbohydrate, iron and niacin, mainly provided by grains; and the second factor group, for calcium, vitamin A, thamin, riboflavin and ascorbic acid, provided by vegetables, fruits, milk and milk products. The survey also revealed significant correlation coefficients between family factors such as family income, educational level of parents, and number of children; and dietary or nutritional status of the subjects.
