식품영양학 전궁 비전공에 따른 남녀대학생의 식의식 실태조사 (The Research in Actual State of Food Consciousness of Male, Female College Students by Major, Non-major in Food Dietetics)

  • By the research of the actual state of food consciousness as the object of male, female 421 college students by major, non-major in food dietetics, the results are as follows. The validity degree of the guestion article appeared at the analysis of the knowledge of nutrition(the figure of Cronbach "${\alpha}$" overall 0.58, major 0.62, non-major 0.57). In the interest degree about nutrition knowledge of the major students were significant(P<0.05), but the non-major students were not significant, and there was a difference between two groups of the male and female, major and non-major students in the information about knowledge. The knowledge of the major students mostly get from school education, non-major from mass communication as TV and rodio, etc. There was not significant difference in self-consciousness degree of health of all the male, female students by major, non-major, and the self-consciousness degree about health of should not be significant to the food habit. Therefore deviating from acquirement of nutrition knowledge by the wrong medium of food consciousness of home dietary life, improvement plans should be activated for the right knowledge to practice in actual life. Taking the opportunity of food and nutrition education through literary subject in the curriculum of the college for students, good food consciousness must be properly applied all the part of dietary life, and it is urgent for them to carry out scientific and reasonable curriculum and educational material development.

  • The purpose of this study was to examine the recognition about food preparation and cooking ability of college students majoring in food & nutrition and others. Data were collected from 729 students residing in Chonbuk area by using a self-administered questionnaire. Food and nutrition major students got significantly higher scores than non-major. ones in the recognition of significance and interest in cooking activity. Both food and nutrition major and non-major female students recognized the necessity of cooking ability than non-major male students. Sixty eight percent of the subjects answered that they have aided often his or her family to cook at home. The students majoring in food and nutrition were interested in various fields such as Korean, western style and fusion food. Most of the respondents teamed how to cook from family at home; however major students have learned cooking not only from family but also from various channels such as culinary school, TV and books. The practical use of knowledge about food science was very low in most respondents. The cooking methods used frequently were sauteing, broiling and deep-fat-frying. This study showed that both food and nutrition major and non-major students recognized the necessity of cooking ability and had interests in cooking activity, but cooking ability of non-major ones was significantly lower than that of major students, and the traditional consciousness that women have to take charge of cooking at home tends to be decreasing.

  • This survey was carried out to investigate the effect of self-consciousness of nutrition knowledge and health on the nutrition knowledge and on food habits between two groups of college women, a nutrition majors and a non-majors. Questionnaires were completed by 214 nutrition majors and by 145 nutrition non-major, Nutrition majors group scored significantly higher than nutrition non-majors in the nutrition knowledge. And nutrition non-majors scored significantly higher than nutrition majors in the food habits. Most of the subjects belonged to 'Fair' and 'Poor' food habit group. And also there was a significant correlation between the nutrition knowledge score and food habits score in nutrition majors and non-majors. There was a significant and positive correlation between nutrition knowledge score and food habits score in majors but it was not observed in non-majors. The higher majors had a self-consciousness of nutrition knowledge, the higher they had habit score and nutrition knowledge score, but in non-majors it was not observed. And non-majors who had a self-consciousness of health were healthier, they were higher in the food habits scores than the jai ors. The main curriculum it is important for a good food habits that one has a responsible nutrition education in main curriculum. For the Improvement of nutrition education program we should transmit the nutritional information through an effective mass media (i.e. Radio, TV, Newspaper).

식품영양학 전공 여대생과 비전공 여대생의 외식산업식품에 대한 식생활 태도 조사 (A Study of Dietary Attitude on the Product of Food Service Industry in Nutrition Major and Non-Major College Women)

  • This survey was carried out to investigate the effects of dietary attitude on the nutrition knowledge, food habits and the intake of instant food, convenience food and fast food between two groups of college women, a nutrition major group and nutrition non-major one. Questionnaires were completed by 214 nutrition majors and also by 145 non-majors. Nutrition majors showed better average in meal time regularities per week than nutrition non-majors. And nutrition non-majors had a higher frequency rate in taking of instant food and fast food than nutrition majors. In the case of both college women, those who take a meal regularly at each meal times have a higher score in food habits. The women who ate instant foods more frequently got a lower score in food habits, bot the frequency of the intake of instant foods did not affect the score of nutrition knowledge On the other hand, the women who had fast foods more frequently got a higher score in food habits and lower score in nutrition knowledge. When college women have a little of nutrition knowledge, they have a tendency to keep their meal time regularity and right dietary attitude pattern. In the dining-out pattern, the college women liked to eat flour foods and they preferred western foods than Korean foods. The motivation of food selection was for convenience and for time saving which were the reason for satisfaction to the products of food service industry. The products of food service industry were found to be unsatisfactory in nutrition and sanitation. Therefore, we must be mute aware of preventing the disappearance of Korean traditional foods and for developing dietary culture successively, the products of food service industry which are more suitable for Korean should be developed.

대학생의 혼자식사와 가공식품에 대한 인식 및 섭취 실태 조사 (Recognition and Consumption of Meal Alone and Processed Food according to Major of College Students)

  • This study was conducted to assess the recognition and consumption of meal alone and processed food according to major of college students in Seoul Metropolitan area and Chungcheong province, Republic of Korea. To accomplish this, a survey was conducted to investigate 353 college students (171 food & nutrition majors and 182 non-majors) regarding their general characteristics, dietary behaviors, meal alone issues, and the purchase and consumption of processed food. Most major and non-major students skipped breakfast. The main reason for skipping was not having time. Majors and non-majors put great importance on their lunch and evening meal, respectively. Nutrition information routes for majors were 'college class' (62.5%) and 'TV radio' (17.5%). However, the routes for non-majors to obtain nutrition information were 'internet smart phones' (41.1%) and 'TV radio' (28.3%). These results suggest the need to provide correct information concerning nutrition to college students. Most major and non-major students tend to have 0 to 2 times of meal alone per week. The main reason for meal alone was schedule unsuitable for eating with family or friends. The most critical factors for majors and non-majors when they chose menu to have meal alone were personal taste and money, respectively. The primary consideration for choosing processed food was price and the main purchase route was convenience store. The main reason for consuming processed food was easy-to-cook. Of processed foods, the most favored ones were noodles and fish products. Meal alone frequency was positively correlated with age (p<0.05), grade (p<0.05) and monthly allowance (p<0.05). Preference and consumption frequency of processed food were negatively correlated with concern about nutrition (p<0.05) and meal frequency (p<0.05), respectively. Based on these results, greater efforts should be made to provide meaningful information regarding programs for nutrition education to improve their dietary habits. Research and development of processed food specifically for college students eating alone should be increased.

인천지역 식품영양전공과 비전공 대학생의 식습관 및 건강관련 생활습관 비교 (A Comparison of Dietary Behavior and Health-Related Lifestyles of Food and Nutrition Major and Non-Major University Students in Incheon Area)

  • This study was conducted to investigate the dietary behavior and health-related lifestyles of university students in Incheon arear Self administered questionnaires were collected ken 179 food and nutrition major and non-major students. Statistical data analysis was completed using a SPSS v.10.0 program. The results are summarized as follows: The average weight, height, BMI and PIBW of the major and non-major male and female students were 69.89kg, 172.89cm, 23.4 and 106.49 ; 67.27kg, 173.98cm, 22.2 and 101.35 ; 50.61kg, 161.20cm, 19.53 and 92.25 ; 53.77kg, 161.53cm, 20.56 and 97.18, respectively. The breakfast skipping ratio of the subjects were very high, which was mainly due to the reason“lack of time”More than 75% of male students and 61% of female students responded to have lunch at university canteens or restaurants around campus regularly. About 56% of male students and 68% of female students responded to have dinner irregularly, which mainly caused by the reasons“irregularity of lecture”and “appointment with friends”. The ratio of snacks intake of the subjects were high; Ramyun was the snack item taken the most by the male students and fruits and cookies by the female ones. More than 50% male students and 2% of female students were smokers. A half of students dunk alcohol once or twice a week. The dietary behaviors and health-related lifestyles between major and non-major male students tended to be very similar. The major female students showed more health-oriented dietary behaviors in comparison with the non-major ones. Therefore, they should have a major-oriented and practically organized nutritional education program to correct their dietary behaviors and health-related lifestyles fur health.

미용전공 여대생과 비전공 여대생의 체형인식, 신체만족도 및 식습관 비교 연구 (A Comparative Study on Perceptions of Body Image, Body Satisfaction, and Dietary Habits of Beauty Art Major and Non-major Female College Students)

  • This study was carried out to investigate perceptions of body image, body satisfaction, and dietary habits of beauty art major and non-major college students in Gyeonggi province. A total of 312 self-administered questionnaires (beauty art majors=145; non-majors=167) were analyzed. The means for height, weight, and BMI were 161.7 cm, 51.4 kg and 19.7, respectively. There were more majors who were underweight according to BMI classification than non-majors. Sixty-six percent of the subjects had previous weight control experience, and there was no significant difference between the majors and non-majors. The mean score for current body image was 4.61 out of a possible 9 points in the majors, which was significantly lower than 4.95 in the non-majors, and their perception of an ideal body image was thinner than their current body image. Those with more weight control experience had currently heavier perceptions of their body. The mean score for body satisfaction was 2.60 out of a possible 5 points, which was lower than the mean score for their attitudes toward the importance of their bodies. The mean score for dietary habits was 2.80 out of a possible 5 points, and there was no significant difference with dietary habits according to weight control experience or BMI classification. In both the majors and non-majors, there was a significant positive correlation between BMI and perception of current body image (p<0.001, p<0.001), and a negative correlation between BMI and body satisfaction (p<0.01, p<0.001). In the major students, there were significant positive correlations between dietary habits and body satisfaction (p<0.01), and attitudes toward the body importance (p<0.05); therefore, the greater their body satisfaction and body importance, the higher their scores for dietary habits.

섭취빈도가 반영된 식품의 일상섭취량 분포의 추정 및 비섭취자 비율의 비교 연구: - 국민건강영양조사 자료(2009년) 활용 - (Estimation of the Usual Food Intake Distribution Reflecting the Consumption Frequency and a Comparison of the Proportion of Non-consumers: Based on the KNHANES 2009)

  • Objectives: The objective of this study was to estimate the distribution of the usual dietary intake of foods with respect to the probability of consumption derived from the Food Frequency Questionnaire (FFQ) of the 2009 Korea National Health and Nutrition Examination Survey (KNHANES). Methods: The intake quantity and frequency of 63 food items were assessed from the 2009 KNHANES which was completed by 7,708 participants. The participants completed one or two 24-h dietary recalls and one FFQ. The usual intake distribution was estimated using the multiple source method (MSM), and the proportion of non-consumers was calculated through the usual intake distribution. This was then compared with the proportion of non-consumers from the 24-hour recall method. Results: The difference in the proportion of non-consumers ranged from 2% to 82.9%, indicating that there is a very large difference based on food groups. The food groups in which the proportion of non-consumers did not differ was composed of foods consumed daily, such as 'rice', 'cereal and barley', and 'Chinese cabbage and kimchi', or foods with distinct palatability such as 'coffee' and 'alcohol'. On the other hand, in the case of the food groups with a high difference in the proportion of non-consumers, most comprised fruits that emphasized seasonality. Conclusions: In the case of foods or food groups that are occasionally consumed, it is desirable to use 2 recalls with additional FFQ data by combining the consumption frequency and the quantity consumed.

대전지역 대학생의 친환경농산물 인식 및 구매행동 (Perception and Purchase Behavior on Environment-friendly Agricultural Products of College Students in Daejeon)

  • The survey was conducted to investigate the perception and purchase behaviors regarding environment-friendly agricultural products (EFAP). 353 questionnaires were collected from college students in Daejeon and analyzed using SPSS 21.0. The students recognized EFAP as foods containing less or no agricultural pesticides and chemical fertilizers. More food major students knew the definition of EFAP compared to non-food major students (p<0.05). The students discriminated EFAP based on certificat on label and obtained information about EFAP from TV/home shopping. More non-food major students purchased EFAP than food major students (p<0.001). The main reason for hesitation with EFAP purchases was the high price. However, students purchased EFAP because of their family's safety. Price reduction is the most important factor to promote the consumption of EFAP. Proper education programs are required so that college students can easily purchase EFAP to promote safe and healthy dietary habits.

Evaluation of Nutrient Intake, Eating Behavior and Health-Related Lifestyles of Korean College Students

  • The purpose of this study was to investigate the nutrient intake, eating behaviors and health-related lifestyles of Korean non-nutrition major college students after they took a nutrition course. The subjects were 40 male and 147 female students at a university in Inchon. The results are summarized as follows: Average height of male and female students was 176.2 and 162.0 cm, respectively. Average weight was 66.2 and 52.3 kg, respectively. Average intake of calories, protein, vitamin A, vitamin C, vitamin $B_1$, vitamin $B_2$, niacin, and Ca was lower than Korean RDA. Fe intake of female students was lower than Korean RDA. Most students have had dietary problems such as overeating, eating unbalanced meals, and skipping meals. More than 60% of the students skipped breakfast. The main reason for skipping meals was lack of time. Most students didnt exercise regularly. About 40% of the students took vitamin or mineral supplements. As for smoking and alcohol use, 11.3% of the students drank alcohol and smoked, and 74.2% of them only drank alcohol. More than 30% of the students drank alcohol once a week. Most students ate out twice a week, and chose their based on taste rather than nutritional value. The main reason for eating out was simply to enjoy a meal. More than 60% of the students ate at places in or around campus. After taking the nutrition course, intake of milk and other dairy products, vegetables, fruits and protein-rich foods increased in female students. For both male and female students, intake of fat, sugar, processed foods, soft drinks, fried foods and spices decreased. Therefore, nutrition education had effect on non-nutrition major students, suggesting that proper nutrition education encouraged healthy eating habits on the part of college students.
