Objectives: This study was carried out to evaluate the risk factors of Oral cleft and to inspect the living environments of the rural areas of Sintang, Indonesia Methods: During 3 to 9 August 2004, A questionnaire survey was done for the risk factors of oral cleft. Case group was composed of 11 oral cleft patients who admitted Missionary Hospital whose mother's bloods were analyzed for anemia and hyperlipidemia. Control group was composed of 56 reproductive rural women recruited from near rural villages. Also we surveyed 4 rural areas of Indonesia with simple water test kits. $x^2-test$ for significant difference was analysed. Results: Drinking water was statistically significant risk factor(p<0.05) of oral cleft. Other factors had no statistical significancy. The kind of drinking water was river-originated water. In rural villages, water sanitation state, even boiled water, was very poor. Although $NO_2-N$, $NO_3-N$ was negative, E. coli-form microorganisms were strongly positive in most samples. Total food intake amount was not enough, and vitamin supplements were also under the need. Conclusions: Drinking the contaminated river-water around pregnancy was supposed to be one of the risk factors of oral cleft in Indonesia. Further study is needed for nitrate and mercury.
Three experiments on the addition of Porous Calcium Silicate (PCS) to broiler feed were conducted at different time periods in the same house. Each treatment had 4 replicates with 12 chicks in each treatment. Weight gain and feed intake were higher ($P{\le}0.05$) in the control groups. Feed conversions' were better ($P{\le}0.05$) in the PCS group, 3.0% PCS and 20 mesh size of PCS than the control group from 21 to 49 days, and for the overall period. $NH_3$ and $H_2S$. gas production were decreased ($P{\le}0.05$) when zeolite was added in broiler feeds. 1.5% or 3.0% PCS in broiler feed was better ($P{\le}0.05$) than the 4% PCS. More than 90 mesh size PCS was better ($P{\le}0.05$) in controlling $CO_2$ production in the 5th period than the 20 or 50 mesh size or control groups. The control and PCS groups produced more flies ($P{\le}0.05$) than zeolite group during the 2nd and 3rd weeks. The 3.0% or 4.5% PCS or 50 or 90 mesh size of PCS in broiler feed produced more flies than the 20 mesh size or control groups although 50 or 90 mesh size of PCS during 5th week tended to have lower fly production than the 20 mesh size of PCS and control group.
This study was executed to determine the cumulative dietary risk of PAHs exposed by food ingestion. Food samples including barbecued beef, barbecued pork, grilled chicken, ham, bacon and vegetable oil which were collected from food markets. These samples were saponified, extracted and cleaned up to purify PAHs, and then the purified sample solutions were analyzed by HPLC-FL. Generally, the levels of total PAHs in barbecued beef (0.2 ppb), bacon (0.3 ppb), barbecued pork (0.7 ppb), ham (0.8 ppb), and vegetable oil (1.2 ppb) were low, whereas the level of total PAHs in grilled chicken (9.3 ppb) was significantly high. For the exposure assessment of PAHs due to food ingestion, PAHs levels converted into TEQ$_{BaP}$, the average body weight for 20-73 age group and consumed levels of food proposed from report on the National Health and Nutrition Survey were used. The estimated lifetime average daily intake of dietary PAHs was 4.32${\times}$10$^{-4}$$\mu\textrm{g}$-TEQ$_{BaP}$kg/day as the mean value. The dietary risk adjusted to cancer potency of benzo(a)pyrene as 7.3 (mg/kg/day)$^{-1}$ was 3.44${\times}$10$^{-6}$ based on current data.ata.
The red pepper (Capsicum annuum L.) is one of the most important vegetables in traditional Korean food, containing vitamins A, C, and E, polyphenol, and flavonoids. In addition, red peppers have high anti-oxidant ability and are known to be effective in preventing obesity, diabetes, hypertension, digestive disorders, stress, and aging. In this study, we investigated the effects against obesity and diabetes of both fermented and non-fermented red pepper. C57BL/6N mice with induced obesity from an eight-week 45% high fat diet (HFD) were then fed either an HFD or diets containing 2.5% non-fermented red pepper marc (NRM), 1.25% fermented red pepper marc (FRM), or 2.5% FRM for a further eight weeks. An oral glucose tolerance test was performed seven weeks after dietary intake, and body weight, liver, epididymal fat weight, serum insulin level, and HOMA-IR were measured and a lipid content test performed at eight weeks. The results show that the 2.5% FRM diet reduced body and tissue weight, lipid content, serum insulin levels, and HOMA-IR compared to the 2.5% NRM and HFD diets. These results suggest that fermented red pepper is effective against obesity and diabetes. We will use this information as the basic data for the development of health food materials using red pepper.
This study was conducted to evaluate animal welfare approved farms in three housing systems (open, windowless, and free-range). The survey was conducted in 25 animal welfare approved farms, and 10 farms were surveyed for distribution status. The main breed in all animal welfare approved farms of laying hens was Hy-Line Brown variety. In the case of open house, laying hens were bred in traditional and panel houses simultaneously; however, the ratio of panel house was 58.3%, which was higher than that of the traditional house. All the windowless houses were made of panels and more than 15,000 laying hens were housed in a single windowless house. In the case of free-range house, it was maintained on a small scale of less than 12,000 birds. Fifty-six percent of the surveyed farms were breeding at $7{\sim}8birds/m^2$. In terms of male and female ratios, most farms maintained 1 male:15 females, but there was a farmhouse that switched 17 or 20 females to 1 male. The daily dietary allowance was 110~170 g, and 32% of the surveyed farms provided feed of more than 150 g/day, which showed that forage feed was important. The age of at the first egg was 123 days, 122 days, and 120 days, and the peak percent was 91.8%, 94.9%, and 86.5% in open, windowless and free-range houses, respectively. The average egg production rate was 74.0%, 84.6%, and 72.7% in open, windowless, and free-range houses respectively, thus, there was no correlation between feed intake and hen-housed eggs. Distribution of welfare certified eggs was mainly a direct deal with the consumer or through contract production. The ratio of direct transactions between large-scale marts and eco-friendly specialty stores of welfare approved eggs was higher than that of conventional eggs. The rate of contract sales of eggs in both the barn and free-range systems was high, and the percentage of courier sales farms was also high. Excluding courier services, price of eggs in the barn system rose to more than 30 won/egg in the second half of 2017 (after AI). Price of eggs in the free-range system rose to more than 50 won/egg in the second half of 2017 (after AI). In the case of courier sales, the same price of 500 won was maintained before and after AI. In conclusion, the results of this study can be used as basic data for improving the animal welfare certification system for laying hens in Korea.
Edible insects might be used as a means to solve food insecurity caused by population growth. Many studies have investigated the biological activity of insects; however, few studies have investigated the nutritional value of insects. Therefore, the aim of this study was to investigate the nutritional value of Allomyrina dichotoma larva protein (ADP) as a source of protein replacement. In vivo studies were conducted to determine the food efficiency ratio (FER), protein efficiency ratio (PER), and true digestibility (TD) of ADP. Experiments were conducted in 3 groups of 8 animals per group using twenty-four 4-week-old SD rats. The experimental groups included the general diet group (Con), in which 20% of the total Kcal in the diet was composed of casein protein, and the ADP group (ADP), in which 20% of the total Kcal was composed of ADP protein, and a non-protein diet group (NP) to measure the protein (metabolic fecal nitrogen) excreted by metabolic processes in the body. As a result of this experiment, we found that the FERs were 0.52 and 0.41 in the casein protein intake (Con) and ADP groups, respectively, thus showing a significantly lower level in the ADP group. The PERs of ADP and Con were 2.39 and 2.63, respectively. The TD of Con and ADP were 91% and 80%, respectively.
Development of protein resources as food has been a big issue especially in Southeast Asia region, and intake of protein is also insufficient in Korea. To cope with this shortage of protein resources and its improvement together with increased production of high nutritive animal protein, studies were carried out on feeding of Korean native goats. In the experiments were made absorption of carbohydrate and volatile fatty acid in miniature rumen, and absorption of amino acid in rumen as in vivo were conducted as part of studies on nutritional absorption in rumen. Those nutritional for improvement of feeding and management as described above are summarized as following. 1. According to the result of test on the nutritional absorption of native goat by means of miniature rumen method, absorption ratio of VFA measured at 0.5, 1 and 2 hours after injection of nutrition showed propionic acid 70-86%, acetic acid 74-87%, and lactic acid 76-89%. In the absorption of organic substances, ethyl alcohol of 0.5% showed 29-87% and lactic acid of 0.1M showed 12-27% of absorption ratio. 2. Result of absorption measurement in rumen from L-type free amino acid injection in the content of rumen vein showed lower rate at menthionine-free group compared to whole-egg amino acid injection in the content of rumen vein showed lower rate at methioine-free group compared to whole-egg amino acid group, and high absorption ratio was observed at methionine 3 times group and urea added group. Deficiency of methionine caused no change of the content in mucous membranes. 3. Absorption of amino acid in rumen muscular layer showed equal tendency as in the mucous membrane without exerting any influence of methionine deficiency. At the methionine3-times group, content of methionine and glutamine were increased by 14.7 and 4.4 times as compared to whole-egg amino acid group, an absorption ratio of glutamine, proline and valine were increased at urea added group. 4. In general, concentration of amino acid in rumen vein plasma was lower than in rumen mucous membrane and muscular layer. Absorption ratio of amino acid is decreased due to methionine deficiency, and tripling of methionine or urea adding caused increment of amino acid. Absorption pattern is thus varied depending on the composition of amino acid. 5. At the urea added group, content of ammonia-N, amino-N and urea were increased in rumen muscular layer. As the inside of goat's rumen was unable to clean thoroughly, investigation was made on remaining bacteria, however, variation of ammonia-N was affected by these bacterial content. 6. Variation in rumen structure by differential absorption of amino acid was observed by general microscope and fluorescent microscope. According to the result of observation in the methionine 3 times group, single cylinder epithelium of mucous membrane showed rather thin, and it was thick at urea added group though no significant differences existed among test groups in submucous membrane and muscular layer.

This study was performed to document the association between eating behaviors and major risk factors for cardiovascular diseases. Those who stated that they ate a daily breakfast for male and female were 88.6% and 96.0%, $1{\sim}2$ times a week were 9.1% and 2.0%, $3{\sim}4$ times a week were 2.3% and 2.0%, respectively. Those who stated that they were overeating of $0{\sim}1$ time a week for man and female were 80.7% and 89.9%, overeating of $2{\sim}3$ times a week were 19.3% and 10.1%, respectively. Those who said that they were regular of meal time for man and female were 38.6%, and 37.4%, sometimes irregular of meal time were 14.8% and 19.2%, irregular of meal time were 46.6% and 43.4%, respectively. Those who said that they were light of eating volume for man and female were 20.5% and 25.3%, moderate of eating volume were 69.3% and 61.6%, heavy of eating volume were 10.2% and 13.1%, respectively. Those who said that they were very fast of eating speed for man and female were 15.9% and 8.1%, fast of eating speed were 51.1% and 34.3%, moderate of eating speed were 4.5% and 20.2%, slow of eating speed were 17.0% and 14.1%, and very slow of eating speed were 11.4% and 23.2%, respectively. Higher frequency of breakfast a week resulted in higher serum total cholesterol and blood sugar for the daily eating group for both genders with women having high LDL-cholesterol and HDL-cholesterol. Both group had high HDL-cholesterol and low blood sugar with less number of overeating, with men having low triglyceride and LDL-cholesterol. With regular meal, both group had low triglyceride, total-cholesterol, atherogenic index, and blood sugar with women having low LDL-cholesterol. For both groups, the triglyceride, total-cholesterol, LDL-cholesterol, atherogenic index, and blood sugar had higher figures for overeating, with men having low HDL-cholesterol and women having high HDL-cholesterol. This study revealed that less number of overeating, regular mealtime, and less volume of food intake are effective in preventing and treating for the cardiovascular diseases.
