비만성인의 영양소 섭취량 및 식사 다양성 평가 (Evaluation of the Dietary Diversity and Nutrient Intakes in Obese Adults)

  • The purpose of this study was to assess the diet diversity, food habit and nutrient intake of obese adults who were visiting the health promotion center. This study was accomplished with the 138 obese adults (men = 103, women= 35) aged over 20 years old whose BMI were above $25 kg/m^2$. Nutrient adequacy ratio (NAR), the number of foods (Dietary Variety Score DVS), and food group consumed (Dietary Diversity Score, DDS) by using the data from the three days record were analyzed and the food habit and lifestyle were assessed by self reporting questionnaire. The average enemy intake of men was 2150.2 kcal which was significantly higher than that of women (p < 0.05). The intake ratio of carbohydrate, protein and fat over total energy was 54.8% : 19.3% : 25.8% in men, 59.5% : 17.8% : 22.6% in women respectively. Frequency of the breakfast in a week above 4, $2{\sim}3$ time and under one time was 75.7% 10.7% and 9.7% in men 77.1%, 5.7% and 14.3% in women respectively. frequency of eating between meals in a day under one time was 73.8% in men, 57.1% in women (p < 0.05). The average DDS and DVS was $3.63{\pm}0.07$ and $14.10 {\pm}3.45$, respectively which was significantly correlated with MAR (r=0.40 in DDS, r=0.64 in DVS, p < 0.01). The most frequent style of food pattern was DMGFV = 01101 in 35% of men, and DMGFV= 01111 in 37.1% of women. Our results show that dietary diversity and variety are useful parameters far evaluating nutrient intakes in obese adults. These findings suggest that nutritional education based on obese persons' eating behavior and eating diversity may be required to increase educational efficiency of weight control programs.

채식선호자와 육식선호자의 식사의 질 및 비타민 K 섭취 비교 연구 (A Study for Comparison of Dietary Quality and Vitamin K Intake of Vegetarians with Carnivores)

  • The prevalence of chronic diseases have been rising in the developing countries because of their increased animal foods consumption and Western lifestyle. Lately, vegetarian diet that exclude animal products get public attention. The purpose of this study was to evaluate the nutritional status and dietary quality of vegetarians, and their consumption of vitamin K and was also assessed. Vegetarians including strict vegan and lacto-ovo-vegetarian consumed their diet at least over 6 months. Carnivores were gender and age matched with vegetarians and they consumed over 50% of protein and fat from animal sources. Current nutrient intakes and dietary quality were assessed using 3-day food records and intake of vitamin K was calculated from the data base of 'Provisional Table on the vitamin K contents of foods, USA'. Blood sample were collected and biochemical parameters and plasma phylloquinone concentrations were analyzed. Anthropometric data from vegetarian and carnivore were not significantly different. The intake of calories, protein, vitamin $B_2$, Ca and Zn of the vegetarians were remarkably lower than RDA for each nutrient. Moreover, index of nutritional quality and nutrient adequacy ratio of vegetarians were lower than those of carnivore. Vegetarian consumed less fat and the ratio of n-6/n-3 fatty acid was lower in vegetarian. The intake of essential amino acids in vegetarian was significantly lower than that of carnivore. The vitamin K consumption and plasma phylloquinone concentration of vegetarian were significantly higher than those of carnivore (p<0.05). The dietary vitamin K consumption was positively correlated with plasma phylloquinone levels in vegetarian (p<0.01).

대구지역 임신부의 식품 및 영양섭취실태 (The Dietary Intake of Pregnant Women in Daegu Area)

  • This study was carried out to figure out the dietary intake of pregnant women in Daegu area. A total of 467 pregnant women was recruited at two hospitals in this area to collect the information on dietary intakes, general characteristics, and anthropometric measurements using an interview. Forty-seven women (10.1%) were in the first trimester, 101 women (21.6%) in the second trimester, and 319 women (68.3%) in the third trimester. The mean age, prepregnant weight and height of subjects were not significantly different among the trimester groups. The mean daily nutrient intakes of energy, fat, protein, carbohydrates, phosphate, sodium, vitamin B$_1$, vitamin B$_2$, and vitamin C were significantly different among the trimester groups, but the other nutrients were not different. For the calcium and iron, the percentage of subjects consumed less than 75% of the Korean RDA was over 80%, and for other nutrients such as energy, vitamin B$_1$, and vitamin B$_2$ over 50% of subjects consumed less than 75% of the Korean RDA in the first trimester. The correlations between nutrient intakes and weight gain during pregnancy showed different patterns among the trimester groups. The mean adequacy ratio and dietary variety scores were not significantly different among the trimester groups. The amount of food intake from cereals and cereal products were higher during the second and the third trimester compared to the first trimester, but those of the other food groups were not significantly different. In conclusion, nutrient intakes of the pregnant women for iron, calcium and some vitamins were inadequate and nutritional management programs for these nutrients are necessary. 일부 서울지역 대학식당의 메뉴분석 (Evaluation of Meals Students Consumed in College Foodservice)

  • A survey was conducted in 591 college students using 8 different cafeterias serving 31 meals. The information was obtained about the name and amount of dishes they consumed from the menu offered by college foodservice. Mean nutrient contents per meal in offered menu were higher than 1/3 of RDA for their age, sex in offered menu. The mean energy content was 466kcal from rice, 113kcal from soup, 141kcal from side dish and 21kcal from kimchi. When side dishes were classified by cooking methods, side dishes using grilling, frying, roasting methods had high energy content and fat percent above 200kcal, 40% per dish. By main ingredients, side dishes with animal food were higher energy than with plant food. Students consumed 94% of the energy provided in offered menu. When compared to proportion of foods consumed by sex, there was 43% of female and 22% of male consumed less than half in soup and 31% of female and 12% of male in kimchi. The most prevalent menu patterns of subjects included rice, soup, 2 side dishes, kimchi and were the same in both sexes. Mean energy intakes per meal were 989kcal for males and 842kcal for females which were enough to meet 1/3 of RDA for their age and sex. Most nutrient intake except fat and vitamin B1 were higher in set menu than in cafeteria. Nutrient adequacy ratio(NAR) were above 0.9 except calcium and vitamin A. The mean energy intake was 542kcal from rice, 70kcal from soup, 164kcal from side dish and 20kcal from kimchi. In conclusion, intake of most of the nutrients of students obtained from males in college foodservice were sufficient but calcium intake was insufficient and fat content was above 20% of energy. High fat consumption was due to side dishes from frying, grilling, roasting with animal food. To provide desirable meals in college foodservice, use of fat in cooking must be decreased.

24시간 회상법으로 조사된 영양섭취 상태와 신체계측결과 비교분석: '98 국민 건강,영양 조사 (Relationship between Nutrients intake and Anthropometric indices using '98 Korean National Health and Nutrition Examination Survey)

  • This analysis was performed to investigate the relationship between nutrition and anthropometric indices using the data from a cross-sectional survey of a large national sample, '98 Korean national health and nutrition examination survey. Subjects were selected by stratified multistage probability sampling design and completed dietary questionnares including food intakes for one day by 24-hour recall method. For this analysis, 6566 subjects were selected by age(over 20 years old). For anthropometry, height, weight, and waist- and hip- circumference were measured. They were classified by body mass index(BMI, weight(Kg)/$height^2 $($m^2 $)) and waist-hip ratio(WHR, waist circumference(Cm)/hip circumference(Cm)). The nutrients intake of subjects were compared with the recommended daily allowances(RDA). Mean adequacy ratio(MAR) was calculated. Mean heights, weights, BMIs were higher in the groups with nutrient intake over 125% of RDA than the lower intake groups for most nutrients. However, Mean WHR was the highest in the groups with nutrient intake under 75% of RDA for most nutrients excluding iron intake of women aged 20-64 years. Among women aged 20-64 years, means of MAR were 0.71 for obese individuals(BMI>30), 0.72 for subjects with underweight(BMI<18.5), and 0.76 for subjects with normal weight(18.5$\leq$BMI<25). Normal subjects has statistically significantly higher MAR than those of other groups. However, among elderly people aged over 65 years, obese group had the highest MAR, 0.68. Women with abdominal obesity(WHR>0.9) had lower MAR, 0.71 than those with normal weight(MAR=0.76). From these results, obesity and abdominal obesity seems to be the results of malnutrition including both undernutrition and overnutrition rather than simple problem of excess energy intake. Obesity in elderly people needs to be handled differently from adults.

가구소득 및 인구학적 특성에 따른 코로나19 유행 전·후 한국 노인의 영양소 섭취변화에 대한 단면연구: 국민건강영양조사 제8기(2019-2020) 자료를 활용하여 (Changes in nutritional status of Korean older adults during COVID-19 Pandemic by household income and demographic factors -using the Korea National Health and Nutrition Examination Survey(2019-2020): a cross-sectional study)

  • Objectives: The study aim was to identify changes in the nutritional status of older adults during the COVID-19 pandemic according to household income and demographic characteristics. Methods: Study participants were 2,408 adults aged 65 and over who participated in the 2019-2020 Korea National Health and Nutrition Examination Survey (KNHANES). To examine changes in nutrient intake levels resulting from COVID-19, data of 2019 and of 2020 were compared. Study participants were divided into three groups based on household income level to compare these changes. The changes were compared according to household income level, age group, and household type. Results: Percentages of recommended intakes for energy, protein, and most micronutrients were the lowest for the low-income group of both males and females in 2020. The Mean Adequacy Ratio (MAR) score was the lowest for the low-income group in both years. When comparing nutrient density for 2019 and 2020 by income group, the male low-income group experienced a decrease in nutrient densities of vitamin A, thiamine, calcium, and iron. For the same group, a decreased percentage for energy intake from protein was noted. Fruit intake was lowest in the low-income group for both males and females. Low-income males had the lowest intake levels for meat, fish, eggs, and legumes in both 2019 and 2020 and the lowest milk and milk product intake levels in 2020. Older adults living alone or single older adults with children had lower MAR scores than those living with a spouse. Older adults living alone experienced decreases in energy and thiamine and iron intake levels in 2020 compared to their intake levels in 2019. Conclusions: Because of the COVID-19 pandemic, nutrition intake levels worsened for older adult males in the low-income group and older adults living alone. This finding shows the need for a more systematic nutritional support strategy for the vulnerable older adults population in national disaster situations.

대학생의 거주형태에 따른 영양상태 및 식사의 질 비교 연구 (Nutritional Status and Dietary Quality by Their Residing Types in College Students)

  • The purpose of this study was to evaluate the dietary habit, nutritional condition and quality of everyday meal for college students. The number of the subjects was 102 and they were divided into three groups by their residing types; students living with their parents (n=34), students living in dormitory (n=34) and students living independently off the campus (n=34) Questionnaire, 24hour dietary recall for food intakes, and body composition analysis were used. SPSS program was used for the statistics. In general health matter, the average age for each group of students was $21.2kg/m^2$, $20.9kg/m^2$, and $21.9kg/m^2$ respectively. And heights, weights, muscle mass, body fats and BMI were not significantly different between groups. Results on dietary habit showed that students living with their parents had better meal pattern and regularity for breakfast than other groups. Also, for dietary evaluation, students living with their parents showed better extent of intake of milk than other groups. Evaluation on nutrients intake showed that amount of calcium, vitamin $B_2$, folic acid intake in student living independently off the campus were lower than those of the other groups(P<0.05). And MAR(Mean Adequacy Ratio) was not significantly different between groups, however INQ(Index of Nutritional Quality) and NAR(Nutrient Adequacy Ratio) of calcium were lower in off the campus group than other two groups. In conclusion, students living independently had worse eating habits and showed lower intake of calcium than those living with their parents or living in a dormitory. Therefore nutritional education for improving well-balanced dietary habits and optimal intake of nutrients are required especially for students living independently off the campus.

Dietary quality of lunches in senior leisure service facilities in South Korea: analysis of data from the 2013-2017 Korea National Health and Nutrition Examination Survey

  • BACKGROUND/OBJECTIVES: This study analyzed the quality of lunches provided in senior leisure service (SLS) facilities and compared institutional foodservice (IF) and non-institutional foodservice (non-IF). SUBJECTS/METHODS: Data of 390 adults aged 65 years or older who ate lunches in SLS facilities were analyzed using the information from the 2013-2017 Korea National Health and Nutrition Examination Survey. The participants were classified into IF (n = 129) and non-IF (n = 261) groups according to meal type provided. The intake of major food groups, energy and nutrients, and nutrient adequacy ratio (NAR) and mean adequacy ratio (MAR) were analyzed. The diversity of meals was evaluated by food group patterns, dietary diversity score (DDS) and dietary variety score (DVS). Energy intake was adjusted in model 1, while energy and sex were adjusted in model 2. All confounding variables were adjusted in model 3. RESULTS: The intake of seafoods (P < 0.001 in models 1, 2, and 3), seaweeds (P < 0.01 in models 1 and 2), and dairy products (P < 0.05 in models 1, 2, and 3) was significantly higher in the IF group. No significant difference existed in energy intake; however, the intake of all nutrients except carbohydrate and vitamin C was significantly higher in the IF group. NAR of all nutrients, excluding vitamin C, was higher in the IF group, and MAR was also higher in the IF group (P < 0.001 in models 1, 2, and 3). The IF group had significantly higher DDS and DVS than the non-IF group (P < 0.001). CONCLUSIONS: The lunches provided in SLS facilities were better in terms of quantity and quality when provided through IF than through non-IF. More systematic foodservice programs should be implemented in SLS facilities, especially in facilities wherein users prepare their own meals.

장기간 기록법으로 조사한 주부의 식품 및 영양소 섭취 실태 (Evaluation of Long-term Dietary Intakes of Housewives)

  • 본 연구는 주부(35-59세) 30명을 대상으로 하여 추정량기록법으로 연중 식품 및 영양소 섭취실태를 조사하였으며, 그 결과를 요약하면 다음과 같다.1. 권장량에 비해 에너지 섭취량은 부족하였고 단백질 섭취량은 초과하였으며, 무기질 섭취량은 전반적으로 부족하였다.2. 영양소 적정 섭취비율(NAR)은 칼 (0.60), 철분(0.62), 비타민A(0.71), 비타민 $B_2$(0.76)의 경우 특히 낮았다.3. 에너지 섭취에 기여가 높은 식품은 쌀, 돼지고기, 라면 등이었고, 지방 섭취에 기여가 높은 식품은 돼지고기, 쌀, 콩기름, 계란 등이었으며, 콜레스테롤 섭취에 기여가 높은 식품은 계란, 돼지고기, 쇠고기, 멸치 등이었다. 칼슘 섭취에 기여가 높은 식품으로는 배추김치, 멸치, 우유, 두부, 계란 등이었고, 철분 섭취에 기여가 높은 식품 순서로는 쌀, 배추김치, 돼지고기, 계란, 쇠고기, 두부 등이었다.4. 식품섭취 중량을 기준으로 가장 많이 상용되는 식품은 쌀, 배추김치 등이었고, 가장 자주 섭취하는 다빈도 식품은 계절에 상관없이 쌀, 마늘, 파, 고춧가루가 상위를 차지하였다.5. 식품군별 섭취량을 보면 대부분의 식품군은 전체 평균 섭취량과 계절별 평균 섭취량이 비슷하였으나 두류, 어패류, 음료류는 계절에 따라 차이를 보였다. 이와 같은 연구결과로 볼 때 본 조사대상자들의 영양소 섭취상태는 전체적으로 권장량보다 낮은 수준이었으며 특히 칼슘과 철분, 비타민 $B_2$ 섭취량이 권장량 대비 75% 이하로 부족한 실정이었다. 그러므로 에너지 및 영양소 섭취량의 증가와 함께 특히 부족한 영양소 급원식품을 잘 활용할 수 있도록 적절한 식품의 선택과 영양소 파괴율은 낮고 소화흡수율은 높일 수 있는 조리방법 모색이 필요하다. 또 에너지 및 지방 섭취에 기여가 높으나 다른 영양소 함량은 상대적으로 낮은 라면,(커피)크림 등은 줄이는 대신 양질의 칼슘과 철분을 공급하는 우유, 두부, 살코기 등의 섭취는 늘려야 할 것이다. 주부는 가족내에서 핵심적인 역할을 수행하며, 가족 구성원 모두가 섭취할 식품의 계획, 구입, 조리 등, 가족의 식생활을 좌우하는 중요한 역할을 담당하고 있다. 따라서 주부의 바람직한 식생활 행동과 건강상태는 자신뿐만 아니라 가족 구성원 개개인의 영양소 섭취상태에 직접, 간접적으로 큰 영향을 미칠 수 있으므로 이들에 대한 영양교육은 그 중요성이 크다고 볼 수 있다. 중요성이 크다고 볼 수 있다.

서울 거주 20대 여성의 아침식사 섭취 빈도에 따른 식습관 및 영양소 섭취상태 조사 (Dietary Habits and Nutritional Status of Young Women according to Breakfast Frequency in Seoul)

  • Objectives: Although breakfast is important to nutrition balance, prevention of overeating, and weight control, people in their 20s (males: 55.1%, females: 49.9%) were reported to have the highest rate of skipping breakfast in 2016 Korea Health Statistics. This study aims to examine dietary habits and nutrient intake depending on breakfast frequency among young women in Seoul. Methods: The subjects were 655 young women in Seoul from August to October 2016, and the survey was performed by using a questionnaire that included general characteristics, dietary habits, and eating behavior. Body composition was determined by bioelectric impedance analysis. Nutritional status was examined by the 24-hour recall method. Results: The participants were classified by breakfast intake frequency; '${\geq}5times/week$ (n=160)', '1-4 times/week (n=327)', and 'breakfast skipping (n=168)'. The 'breakfast skipping' group had lower frequency and regularity of meals. In addition, the 'breakfast skipping' group had a higher frequency of eating-out and late-night meals. There was no difference in total calories between the 'breakfast skipping' group and other groups, but the 'breakfast skipping' group had significantly low carbohydrate and fiber intakes. The participants showed lower intakes of calories, fiber, vitamin A, vitamin C, niacin, folic acid, calcium, potassium, and zinc in comparison with recommended intakes. Especially, the 'breakfast skipping' group had significantly lower fiber, vitamin A, vitamin C, calcium, potassium levels compared to the '${\geq}5times/week$' group. For Mean Adequacy Ratio (MAR), the 'breakfast skipping' group recorded a ratio of 0.60, which was lower than those of other groups. Index of Nutritional Quality (INQ) including fiber, vitamin C, calcium and phosphorus were significantly lower in the breakfast skipper group, compared to the breakfast eater group. Conclusions: The 'breakfast skipping' group showed low regularity of meals and a high frequency of eating-out and late-night meals. The breakfast regular eater group showed high intake of micronutrients and quality of meals was high in general. Skipping breakfast could lower nutrient intake and quality of meals, which requires attention.
