Dietary pattern classifications with nutrient intake and body composition changes in Korean elderly

  • BACKGROUND/OBJECTIVES: The body composition changes in aging increased the risk of metabolic disorder. Recent dietary studies have increasingly focused on the correlations between dietary patterns and chronic diseases to overcome the limitations of traditional single-nutrient studies because nutrients in food have complex relations that interact. SUBJECTS/METHODS: This study was conducted to classify a dietary pattern among Korean elderly using cluster analysis and to explore the relationships between dietary patterns and body composition changes in Korean elderly aged 65 years or older. The study subjects (n=1,435) were individuals who participated in the Korean National Health Examination and Nutrition Survey (KNHANES) in 2011. RESULTS: There were three dietary patterns derived by cluster analysis in this study: 'Traditional Korean' (37.49% of total population), 'Meat and Alcohol' (19.65%) and 'Westernized Korean' (42.86%). The (1) 'Traditional Korean' pattern was characterized by high consumptions of white rice and low protein, low fat, and low milk products, while (2) 'Westernized Korean' pattern ate a Korean-style diet base with various foods such as noodles, bread, eggs and milk, (3) 'Meat and Alcohol' pattern had high consumptions of meat and alcohol. In body composition changes, compared with the 'Traditional Korean' pattern, the 'Meat & alcohol' pattern was associated with a 50% increased risk of having elevated BMI ($kg/m^2$), 'Westernized Korean' pattern was associated with a 74% increased abnormality of ASM/Wt (kg) by logistics analysis. Most of the Korean adult population continues to follow ether a traditional Korean having beneficial effects for successful aging. However, the 'Traditional Korean' pattern showed low protein intake (0.7 g/kg), calcium intake, and vitamin D intake as well as low of appendicular skeletal muscle mass (ASM (kg)) among 3 groups. CONCLUSIONS: Considering the low ASM, consumption of protein, calcium and vitamin D should be increased for Korean elderly health body composition.

Vitellogenin Induction and Histo-metabolic Changes Following Exposure of Cyprinus carpio to Methyl Paraben

  • Methyl paraben (MP), which is used as a preservative in pharmaceutical and cosmetic (shampoo) products, foods and beverages, enters into the aquatic environment and can pose a potential fish health hazard. In this experiment, effects of MP were evaluated in adult male common carp (Cyprinus carpio) by exposing them to fractions (1/$143^{rd}$ to 1/29th) of the $LC_{50}$ dose with every change of water for 28 days. Vitellogenin induction, metabolic enzymes, somatic indices and bioaccumulation were studied at weekly intervals. The $96^{th}$ h $LC_{50}$ of MP in fingerlings was 120 mg/L. Compared to the control, except for increases (p<0.01) in alkaline phosphatase (EC 3.1.3.1), alanine aminotransferase (EC 2.6.1.2) and liver size, there were decreases (p<0.01) in activity of acid phosphatase (EC 3.1.3.2), aspartate aminotransferase (EC 2.6.1.1), and testiculosomatic index following exposure to any dose of MP. Vitellogenin induction was significantly higher (p<0.01) in exposed than unexposed (control) fish. The bioaccumulation of MP in testis, liver, brain, gills and muscle tissues of fish increased significantly (p<0.01) with increase of dose from 0.84 ppm to 1.68 ppm. Dose and duration of exposure (p<0.01) indicated that an exposure period of 1 to 2 weeks was sufficient to cause changes in the quantifiable parameters studied. Fish exposed to 4.2 ppm MP became lethargic after the $26^{th}$ d. Histologically, degeneration, vacuolization and focal necrotic changes in liver and fibrosis-like changes in testicular tissue were noted.

청소년의 FTO유전자 다형에 따른 3년간 신체구성과 체력의 변화 (Three Years Follow-up Study for Changes in Body Composition and Physical Fitness by FTO Gene Polymorphism of Male Adolescence)

  • Purpose : To identify changes and relationships in the fat mass and obesity associated (FTO) gene polymorphism, body composition, and physical fitness from childhood to adolescence over a three-year period spanning elementary school to middle school (2015-2018) Methods : A total of 84 male student participants were divided into two groups based on FTO genotype: aa+at (group A) and tt (group T) and tracked down. Body composition, cardiovascular endurance, flexibility, muscle strength, power, and other characteristics were measured in the two groups in both 2015 and 2018, respectively, and the changes over the three-year period were analyzed and compared. Results : Increases in height and weight did not differ significantly between the two groups, but body mass index (BMI) was significantly higher in group A (p=.035). With regard to physical fitness, there was no significant difference in flexibility, but cardiovascular endurance, strength, and power were significantly higher in group T (p<.001, p=.063, and p=.040, respectively). Conclusion : Group A is more likely to become obese than group T because of their lower level of physical fitness and increased BMI relative to group T. This result supports previous studies showing that group A has a relatively low level of physical activity and a greater tendency to eat fatty foods as compared with group T. Therefore, we suggest that the FTO gene polymorphism should be identified early and that students educated on diet and physical activity to help prevent adult obesity.

  • 왜문어 Octopus vulgaris의 천일건조 및 건조 후 3개월간 저장 중의 핵산관련물질의 변화를 이온교환수지 column chromatography 법으로 실험하여 다음과 같은 결과를 얻었다. 살아있는 왜문어에서 절단한 생시료(다리) 중에는 inosine이 $9.4\;{\mu}mole/g{\cdot}dry\;wt.$로서 가장 함량이 많았고, 어류와는 달리 IMP는 존재하지 않았다. 건조중 ATP, ADT 및 inosine은 감소하고, AMP 및 hypoxanthine은 증가하였다. 특히 inosine은 생시료때 $9.4\;{\mu}mole/g\;dry\;wt.$이던것이 $3.0\;{\mu}mole/g\;dry\;wt.$로 감소하는 반면, hypoxanthine은 $5.1\;{\mu}mole/g\;dry\;wt.$에서 $17.6\;{\mu}mole/g\;dry\;wt.$로 증가하였다. 건조후 3개월간 저장 중에는 ADP, AMP 및 inosine은 감소하고 hypoxanthine은 약 2배로 증가하였다.

Effects of pH-treated Fish Sarcoplasmic Proteins on the Functional Properties of Chicken Myofibrillar Protein Gel Mediated by Microbial Transglutaminase

  • pH adjustment would be of advantage in improving the water holding capacity of muscle proteins. The objective of this study was to evaluate the addition of fish sarcoplasmic protein (SP) solution, which was adjusted to pH 3.0 or 12.0, neutralized to pH 7.0, and lyophilized to obtain the acid- and alkaline-treated SP samples, on the functional properties of the chicken myofibrillar protein induced by microbial transglutaminase (MTG). The solubility of alkaline-treated SP was higher than that of the acid counterpart; however, those values of the two pH-treated samples were lower than that of normal SP (p<0.05). All SP solutions were mixed with myofibrillar proteins (MP) extracted from chicken breast, and incubated with MTG. The shear stresses of MP with acid- and alkaline-treated SP were higher than that of normal SP. The thermal stability of MP mixture reduced upon adding SP, regardless of the pH treatment. The breaking force of MP gels with acid-treated SP increased more than those of alkaline-treated SP, while normal SP showed the highest value. The MP gel lightness increased, but cooking loss reduced, with the addition of SP. Smooth microstructure of the gel surface was observed. These results indicated that adjusting the pH of SP improved the water holding capacity of chicken myofibrillar proteins induced by MTG.

LC/MS를 이용한 heterocyclic amines의 분석법 (An analytical method of heterocyclic amines by LC/MS)

  • 헤테로싸이클릭 아민류(heterocyclic amines, HAs)는 소고기, 돼지고기, 닭고기 그리고 생선과 같은 근육질의 육류를 조리 할 때 생겨나는 돌연변이원성/발암성 화학물질로 잘 알려져 있다. 식품으로부터 HAs의 분석에 있어 가장 큰 어려움은 HAs가 식품 중에 극히 미량(수 ng/g)으로 존재한다는 것과 많은 방해물질이 존재한다는 것이다. 식품으로부터 HAs를 추출하고 정제하기 위해 고체-상 추출(solid-phase extraction, SPE)이 많이 사용되고 있다. HAs 분석을 위해 여러 단계의 SPE 과정을 수행하였다. HAs의 회수율은 표준물질이 녹여져 있는 메탄올 수용액과 조리되지 않은 돼지고기에 표준용액을 스파이크하여 서로를 비교하여 얻었다. 회수율은 25.0 ng/g에서 25.3~93.0%의 값을 얻을 수 있었다. 확립된 감도 좋고 재현성있는 시료전처리방법을 통해서 ${\mu}$-LC/ESI-MS에 주입함으로써 조리된 육류로부터 HAs를 분석하는데 응용될 수 있을 것이다. 다른 방법으로는 freezing filtration 방법으로써 보다 좋은 추출 효율과 재현성을 나타내었다.

Correlation between sodium intake and obesity with related factors among Koreans: a cross-sectional study on dietary intake and eating habits

  • Purpose: Sodium is essentially required for homeostasis and physiological functions, but excessive sodium consumption increases the risk of obesity and other chronic disorders. Korean studies on the sodium-obesity relationship are limited, and thus, this study was undertaken to determine the nature of the relationship between sodium intake and obesity in Korean adults. Methods: Forty-two participants were divided into 2 groups according to body mass index (BMI, non-obese BMI < 25 kg/m2, obese BMI ≥ 25 kg/m2). Dietary intakes and eating habits were analyzed using 3-day food records and a food frequency questionnaire. Anthropometric data were obtained from bioimpedance results, and fasting glucose and lipid levels were measured. Results: Mean weight, BMI, waist and hip circumferences, and body fat mass were greater in the obese group than in the non-obese group for men and women. Skeletal muscle mass and body fat mass were higher in obese women than in non-obese women. Biochemical data were no different in these two subgroups except triglycerides (TGs), which were higher in obese women. Nutrient intakes were not significantly different in obese and non-obese groups. However, obese men consumed excessive sodium, while obese women consumed slightly more than non-obese women. Obese men preferred salty foods and tended to overeat. Positive correlations were found between sodium intake and weight in men and percent body fat mass (PBFM) in women. Correlation analysis (adjusted for energy intake) of the relation between sodium intake and obesity-related factors showed sodium intake was positively correlated with PBFM and TG in women. Conclusion: This anthropometric and biochemical data analysis emphasizes the need for awareness and interventions to mitigate the health risks of elevated sodium consumption. Our findings should aid future studies on the relationship between sodium and obesity and contribute to preventing and managing this metabolic condition.

  • 살아 있는 말쥐치 Navodon modestus와 까치복 Fugu xanthopterum을 구입(購入)하여 건조중(乾燥中)의 핵산관련물질(核酸關聯物質)의 변화(變化)를 실험(實驗)하였다. 말쥐치는 생시료중(生試料中)에 건량기준(乾量基準)으로 ADP가 22.9 ${\mu}mole/g$로서 가장 많았고, 다음 IMP가 21.1 ${\mu}mole/g,$ ATP는 4.9 ${\mu}mole/g$ hypoxanthine은 3.2 ${\mu}mole/g$ 그리고 AMP와 inosine은 각각(各各) 0.9 ${\mu}mole/g$였다. 까치복 생시료중(生試料中)에도 말쥐치와 마찬가지로 ADP가 건량기준(乾量基準) 25.6 ${\mu}mole/g$로서 가장 많았고, ATP는 2.4 ${\mu}mole/g,$ IMP는 1.6 ${\mu}mole/g$의 순(順)이었으며 AMP, inosine 및 hypoxanthine의 함량(含量)은 아주 적었다. 말쥐치는 열풍건조중(熱風乾燥中) ADP가 급격히 감소(減少)되어 1.4 ${\mu}mole/g$이 되는 반면(反面) inosine이 21.6 ${\mu}mole/g$로 급격히 증가(增加)하였다. IMP는 건조중(乾燥中) 양적(量的)인 큰 변화(變化)가 없었으며, ATP는 건조중(乾燥中) 거의 소실(消失)되었고, AMP는 양(量)은 적지만 2배(倍)로 증가(增加)하였으며, hypoxanthine은 거의 변화(變化)가 없었다. 까치복 역시(亦是) 천일건조중(天日乾燥中) 생시료(生試料) 때 가장 많았던 ADP가 급격히 감소(減少)되어 3.0 ${\mu}mole/g$였고, 반면(反面)에 inosine이 급격히 증가(增加)되어 21.0 ${\mu}mole/g$였다. IMP는 1.6 ${\mu}mole/g$에서 5.0 ${\mu}mole/g,$ AMP는 0.3 ${\mu}mole/g$에서 1.4 ${\mu}mole/g,$ hypoxanthine은 0.4 ${\mu}mole/g$에서 4.9 ${\mu}mole/g$로 각각(各各) 증가(增加)하였고, ATP는 2.4 ${\mu}mole/g$에서 1.4 ${\mu}mole/g$로 감소(減少)하였다. 말쥐치 및 까치복은 inosine축적형(蓄積型)이었다.

번행초 추출물의 당뇨관련 효소에 관한 저해 활성 (Inhibitory Activity on the Diabetes Related Enzymes of Tetragonia tetragonioides)

  • 본 연구에서 당뇨병의 예방, 치료제 및 건강기능 식품으로서 산업적 활용가능성을 평가하기 위한 기초연구로서 번행초 추출물을 사용하여 당뇨관련 효소인 $\alpha$-amylase, $\alpha$-glucosidase, $\beta$-glucosidase 그리고 aldose reductase에 대한 저해활성을 조사하였다. 번행초의 HX 분획물은 인간 타액, 돼지 췌장 $\alpha$-amylase에 대해 5 mg/mL 농도에서 각각 62.23%, 88.74%로 높은 저해효과를 나타냈으며, $\alpha$-glucosidase에 대해서도 HX 분획물이 1 mg/mL 농도에서 60.27%로 높은 저해효과를 나타냄으로써 현재 혈당강하제로 사용되고 있는 acarbose와 1-deoxynorjirimycin보다 높은 억제 효과를 보였다. 그리고 만성 합병증에 의한 시력장애, 신경성장애, 신장기능장애, 심장기능 장애 등의 심각한 당뇨병성 합병증 유발과 관련이 있는 aldose reductase에 대한 억제활성을 조사한 결과, 1 mg/mL 농도에서 번행초 DCM 분획과 HX 분획물이 각각 51.95%, 47.22%로 높은 저해활성을 나타냄으로써 당뇨병과 그로 인한 합병증의 예방에도 효과가 있는 것으로 판단된다. 전 세계적으로 당뇨병 환자가 증가추세에 있어 당뇨병 치료제의 시장 규모는 더욱 확대될 가능성이 높은 가운데 지금까지 보고되지 않은 번행초의 항당뇨 효능의 우수성을 검증함으로써 바이오산업육성뿐만 아니라 신소득 작물로 순화재배를 통한 농가소득 향상에도 기여할 것으로 기대된다.

어류뼈를 이용한 수산연제품의 기능성 개선 (Improvement of the Functional Properties of Surimi Gel Using Fish Bone)

  • 어류뼈 속에 함유된 칼슘제를 이용한 적색육어류 연제품의 품질 개선을 위한 일련의 연구로 칼슘 강화 적색육어류 연제품의 제조조건 및 저온 저장 중 품질 안정성에 대하여 살펴보았다. 가용성 칼슘 및 젤리강도의 결과로 미루어 보아 적색육어류 연제품의 기능성 개선을 위하여 첨가하는 칼슘제의 적정농도는 고등어 육에 대하여 0.9%이었다. 가용성 칼슘함량은 이 조건으로 제조한 칼슘제 첨가 연제품(105.0 mg/100 g)이 칼슘 무첨가 제품(2.9 mg/100 g)보다 훨씬 높았다. 저장 중 칼슘 첨가 제품은 수분함량, 아미노산 조성, 칼슘 및 인함량의 경우 변화가 없었고, pH, 휘발성염기질소, 히스타민함량, 과산화물값 및 갈변도의 경우 대조제품에 비하여 완만하게 증가하였으며, 생균수 및 대장균군은 검출되지 않았다. 곡류에 부족하기 쉬운 Iysine 등과 같은 아미노산, DHA, EPA 및 칼슘함량은 칼슘제 첨가 적색육어류 연제품이 무첨가 제품보다 높았다. 이상의 결과로 미루어 칼슘제 첨가 연제품은 영양 및 기능성이 우수하고, 식품위생적으로 안전한 식품으로 판단되었다.
