Minimal Processing Characteristics of Asian Pears in Relation to Storage Duration (저장기간에 따른 배 과실의 최소가공 특성)

  • This study was conducted to determine the minimal processing characteristics as affected by the storage duration of whole Asian pears(Pyrus pyrifolia Nakai cv. Niitaka). Before and after storage for 4 months under air at 0$^{\circ}C$, whole pears were sliced, placed in unsealed plastic bags, and kept for 4 days at 10$^{\circ}C$. Storage of whole pears increased the initial levels of electrolyte leakage, total phenols and browning index and decreased the initial content of vitamin C in pear slices. Slices from stored pears maintained higher respiration rate compared with slices from non-stored pears during keeping. The increase of electrolyte leakage, browning index and microbial number and the decrease of total phenol in slices during keeping were more fast in slices from stored pears than in those from non-stored pears. These results suggest that the minimal processing characteristics of ‘Niitaka’ pears are depending upon storage duration.

Quality Characteristics of Canned Kimchi Prepared by Minimal Thermal Processing (최소열처리에 따른 캔 포장김치의 품질특성)

  • This study was conducted to examine the quality characteristics of canned kimchi prepared by minimal thermal processing. Korean cabbage kimchi was fermented at $20^{\circ}C$ for several days up to acidity $0.5{\pm}0.1%$, was packaged in cylindrical can of 115 mL and pasteurized at low temperature. Thermal processing times based on $F_{60}$ value at geometrical center of the can were determined as 23.1, 17.7 and 12.7 min at 65, 70 and $80^{\circ}C$, respectively. The quality changes of the processed kimchi were measured during storage at $20^{\circ}C$. The pH of pasteurized kimchi was higher than that of unpasteurized control. The number of lactic acid bacteria was reduced to about $10^{2}{\sim}10^{3}$ (CFU/mL). The pasteurized kimchi product showed better texture and color values compared to the control, while resulting in the lower carotenoid and ascorbic acid contents. Kimchi preparation by minimal thermal processing had a positive effect for reduction of sour taste and sour flavor in sensory quality, but gave adverse effect in acceptability because of off-taste and off-flavor.

Direct globally minimal skeleton with binary morphological processing (이진 형태론을 적용한 직접 총체적 최소 골격화)

  • Original binary image can be reconstructed by morphological bymorphological skeleton(MS) image. And then, the information of MS image points can be applied to a pattern recognition andimage communication. But if we apply MS to a pattern recognition and image communication, there are two problems. That is to say, binary MS processing times is long and skeleton points of MS are high redundancy. And then, to solve these problems, this paper proposes DGMS. After simulating by the proposed method to $256{\times}256$ binary image which is GIRL, we reduce processing time and skeleton points about 1.5~6.5% comparing with the result of GMS method.

Direct fault-tree modeling of human failure event dependency in probabilistic safety assessment

  • Among the various elements of probabilistic safety assessment (PSA), human failure events (HFEs) and their dependencies are major contributors to the quantification of risk of a nuclear power plant. Currently, the dependency among HFEs is reflected using a post-processing method in PSA, wherein several drawbacks, such as limited propagation of minimal cutsets through the fault tree and improper truncation of minimal cutsets exist. In this paper, we propose a method to model the HFE dependency directly in a fault tree using the if-then-else logic. The proposed method proved to be equivalent to the conventional post-processing method while addressing the drawbacks of the latter. We also developed a software tool to facilitate the implementation of the proposed method considering the need for modeling the dependency between multiple HFEs. We applied the proposed method to a specific case to demonstrate the drawbacks of the conventional post-processing method and the advantages of the proposed method. When applied appropriately under specific conditions, the direct fault-tree modeling of HFE dependency enhances the accuracy of the risk quantification and facilitates the analysis of minimal cutsets.

The Status of Production and Processing of Fruits and New Processing Technology (과실류의 생산 및 가공현황과 신가공기술)

  • The high influx of imported fruits into Korea is threatening to price and quality competition of domestic fruits. This investigation was conducted to raise price and quality competition of domestic fruits and to develop new products. The scale of production and processing, amount of processing and new processing technology were discussed. The area of cultivation land as well as the rate of processing is decreasing annually, an item of processing is limited to several kinds. Accordingly in this study, the status of production and manufacturing of some fruits and the new processing technologies such as high voltage pulsed electric fields, high hydrostatic pressure, ohmic heating, membrane separation and microwave treatment have investigated to fruit processing. Consequently, the minimal processing technology has to take advantage of various agricultural products in the food industry.

  • We present a linear time algorithm for finding a lexicographically minimal circular string in a given string. The problem was motivated by an effort to implement state transition functions in isotropic cellular artomata. A naive algorthm for the problem would require quadratic time. The proposed algorithm runs in linear time by keeping the result of comparisons of substrings and reusing it agterwards when the same computation is needed.
