  • The purpose of the experiment was to clarify morphologically normal growth pattern of the ductus deference in accordance with the sex maturity of meat-type cockerels. 1. Diameter of lumens in u, pp.r, mid and lower parts of ductus deferens, the most conspicuous enlargement of lumen was observed in the lower part. Heights of epithelial layers of ductus deferens showed abrupt growth at 12 weeks of age with subsequent gradual growth in all the part of u, pp.r, mid and lower, and heights of those at 30 weeks were a, pp.oximately 4 times as large in the u, pp.r and mid parts and 5 times as large in the lower part in contrast to those at 4 weeks of age. Thickness of muscular layer of ductus showed gradual growth in contrast with the diameter of lumen and height of epithelial layer, showing 1.3 times as large in the u, pp.r part, 1.6 times in the mid part and 1.9 times in the lower part at 30 weeks of age in contrast to the thickness at 4 weeks of age. 2. Within 10 weeks after hatching, lining cells of ductus deferens were mainly composed of round cells and columnar cells in simple columnar epithelium. During 10th to 20th week, the lining cells were mainly composed of high columnar cells and round cells in pseudostratified epithelium. From 22nd week, the lining cells were composed of pseudostratified columnar cells. Whereas round cells disa, pp.ared gradually. Enlargement of lumen and pooling of sperms in ductus deferens coincided with the maturation of seminiferous tubules. 3. In simple correlation between the values of testis weight and the values from various measurements in the ductus deferens, there was significant correlation coefficient with each other. 4. In the India ink absorption test, India ink granules were not absorbed on the epithelium of the ductus deferens, but the granules reactive to acid phosphatase a, pp.ared in a line on the free border of each parts of the ductus deferens. The granules reactive to alkaline phosphatase were noted on the luminal border of ductus deferens mainly, but weak reaction showed than acid phophatase were a, pp.ared. The granules reactive to PAS were a, pp.ared mostly near on the free border of hte epithelial cells of ductus deferens. 5. Number of sperm, Indes of sperm vitality and MRT in the different parts of ductus deferens were tended to be somewhat dominant in the mid and lower parts than in u, pp.r part, even though not significant in the statistical analysis. Ratio of sperm abnormality was tended to be relatively high in the u, pp.r part too, and in the sperm of abnormality blunted head was less in number significantly in the mid and lower part than in the u, pp.r part.

  • This study was conducted in order to evaluate the effect of gamma irradiation on improvement of the quality and safety of meat products. Emulsion type bologna sausages were manufactured with 3 kGy gamma irradiated ground beef. Beef patties were also manufactured with the addition of antioxidants (200 ppm, BHA, ascorbyl palmitate, ${\alpha}-tocopherol,\;or\;{\beta}-carotene$) following gamma irradiation of 1.5 or 3 kGy. Bologna sausages could be successfully manufactured with 3 kGy gamma irradiated ground beef and lower salt content(NaCl of 1.0 or 1.2% and phosphate of 0.2 or 0.3%) without any deteriorative results when compared with the products manufactured with regular salt content(NaCl of 1.5~2.0% and phos phate of 0.4~0.6%). No colony formations of aerobic microorganisms were observed in the sausage with NaCl of 1.2% and phosphate of 0.2 or 0.3% up to 30 days storage at $10^{\circ}C$. No significant differences appeared in the TBA values among all the sausages during storage for 30 days. No colonies of aerobic microorganisms were observed in the 3 kGy irradiated patty. Lipid oxidation of the beef patties was inhibited by the addition of an antioxidant.

  • Background: Korean native chicken (KNC) is a well-known breed due to its superior meat taste. This breed, however, owing to a low growth rate, has a high market price. In order to overcome this disadvantage, the National Institute of Animal Science (NIAS) in Korea developed a commercial KNC breed, named Woorimatdag version 2 (WM2), an upgraded version of the Woorimatdag (WM1) breed and the WM2 was created by crossing the KNC with meat type breeds. This study aims to discriminate between WM2 and other chicken breeds using microsatellite (MS) markers. Methods: A total of 302 individuals from eight Korean chicken populations were examined. The genetic diversity and population structure analysis were investigated using Cervus, API-CALC, STRUCTURE, PowerMarker programs. Results: Based on heterozygosity and polymorphic information content (PIC) values, 30 MS markers were initially selected from 150 markers. The identified average number of alleles (Na), expected heterozygosity, and PIC values for the WM2 samples were 7.17, 0.741, and 0.682, respectively. Additionally, the paternity of individuals was assigned with a success rate of greater than 99% using 12 markers, the best minimum number of markers. The 12 selected markers contained heterozygosity and PIC values above 0.7 and probability of identity values around zero. Using these markers, the determined probability of identity (PI), $PI_{half-sibs}$, and $PI_{sibs}$ values were 3.23E-33, 5.03E-22, and 8.61E-08, respectively. Conclusions: WM2 is well differentiated with respect to other chicken breeds based on estimated genetic distances. The results presented here will contribute to the identification of commercial WM2 chicken in the market.

  • This study was conducted to evaluate the feasibility of spent bleaching clay(SBC) as an energy resource for meat type chicks. A total of one hundred twenty 1-d old broiler chicks(Han-hyop, No. 3) were divided into four groups and each group was assigned to one of the following diets: 0(T1), 2.0(T2), 4.0(T3) and $6.0\%$ SBC(T4). Each treatment had 3 replications of 10 birds. Before feeding experimental diets, they were fed a commercial diet for a week Body weight gain and feed intake tended to increase in T3 and T4, respectively. Feed efficiency(feed intake/ gain) tended to decrease in T3 compared to other groups. Fatty acid composition of breast and thigh meat was not significantly affected by feeding SBC. Utilization of dry matter, energy, crude protein and crude fat was lower in T4 than in the other groups during both starter and finisher periods(p<0.05). Crude ash utilization was not significantly affected by feeding dietary SBC. These results indicate that broiler diets may be supplemented with 2 to $4\%$ SBC without adverse effect on growth.

  • Among all the ingredients usedin mandu, the following types were used:, 13 types of grains were used (12.38%), 30 types of vegetables, fruits, bulbs, and nuts were used (28.57%), 32 types of marine products, birds, meats, fishes, and shellfishes were used (30.48%), 10 types of functional ingredients were used (9.52%) and. For spices, 20 types of spices were used (19.05%). 2. Cooking Methods offor Mandu. The mMandu eaten at in the early Joseon era had was primarily made ofusedbuckwheat that contained boiled tofu or egg uiijuk in the kneaded dough for the most part and while kneading with buckwheat, the tofu or egg uiijuk has been boiled down to knead the dough, and and starch powder, bean powder, or rice powder, etc were mixed to make the mandu coating. Buckwheat powder was mixed toadded to the flourwer or was used by itself, while meat, vegetables, tofu, and shiitake mushroom, etc were also addedincluded. From the 18th century, the host plant, or cabbage kimchi, were prepared and combined had been sliced to be used as filling together while red pepper powder was mixed combined withto spices or vinegar soy sauce to be used together. Also, Radishes had beenwere also used as filling, but shown as not being used fromafter the start of the 1900's. For the shape of mMandu, it was madeinto different shapes such as as triangle, rectangle, date plum, gwebul, half moon, or pomegranate shapes, and then shapes to be boiled in simmering water, baked, or cooked as soup in clear broth for soup., In the 17th to 18th century, boilingthen in a steamer gradually became a cooking style, assumed the style of boiling in a steamer in $17th{\sim}18th$ century while in the 16th century, the an essay ofn fermenting flour in ‘Food Dimibang’ in 16th century had indicated it was cooked as the style ofby steaming in a rice steamer. Also, Mandu may have also contained the following: the thin-cut and boiled fish was cut out thin to put into the filling and boiled down, made by putting in added pine nuts after making bbeef jerky or boiled- down meat, fish, or shellfish itself to extractsand mold mandu only the ingredients combined withto put on starch powder, and then boiled down and put on pine nut powder finally, after it or cooled it wasdown to be eaten by dipping in vinegar soy sauce. In conclusion, many different types of mandu were made during the Joseon era using a variety ofwhile the ones using such various ingredients. are also one type of mandu.

  • This study was conducted to investigate the utilization and satisfaction of meal-kits according to food-related lifestyle among total 357 adults who had experience in using meal-kits. This study can provide basic data for effective menu composition and directions toward improvement. The participants of the study were classified into 5 groups 'health-type group', 'economic-type group', 'safety-type group', 'tasty-type group' and 'convenience-type group'. The 'tastye-type group' were found to spend more on purchasing meal-kits than other groups with the higher proportion(36.66%) of spending '30,000-50,000'won(p<0.05), which is the highest price category. The important factors that contributed to purchasing a meal-kits were 'taste'(50.98%), and 'economic-type group' showed the highest tendency of considering taste (58.46%). About half(49.02%) of the respondents preferred 'Korean-food' for meal-kits as for the type of food. All groups highly preferred 'meat'(42.58%) as the main ingredient, particularly the 'tasty-type group'(53.33%)(p<0.001). The 'tasty-type group' showed the highest satisfaction on 'convenience of cooking'(4.05), and 'convenience-type group' showed the lowest satisfaction on the 'origin of ingredient'(2.98) among groups (p<0.01). The overall response indicated that most respondents are willing to use meal-kits in the future (97.20%); and 93.28% of respondents would recommend the purchase of meal-kits to others, where 'convenience of cooking/purchase' was the factor contributing most for recommending(67.23%). Taken together, 'taste' was the most important factor for all groups. And 'Convenience of cooking' was the factor contributing to satisfaction most while 'origin of ingredient' contributing the least. It is recommended for the growth of meal-kits industry, to improve the quality of the meal-kits products and develop various menus.

  • The objectives of this work was to investigate the effects of feeding type of concentrates during growing period and slaughter age on growth performance, feed efficiency and carcass characteristics in growing-fattening Holstein steers. Treatments were two concentrates feeding types(ad libitum or restricted 1.9% of BW) and three slaughter ages(at 19, 22 or 25 mo). Body weight at slaughter was numerically higher(approx. 8.3%) for the restricted than the ad libitum feeding groups. TDN intake rate was higher(8.4%) for the restricted than the ad libitum feeding groups. One mo slaughter delay increased TDN intake by 4%. Despite the lack of significances, higher back fat thickness and rib-eye area appeared in the restricted feeding or the late slaughter groups compared with the ad libitum feeding or the early slaughter groups. Marbling score(mean 2.46) numerically increased when the steers were restrictively fed concentrates compared with the ad libitum feeding groups. In addition, significant increases in the marbling score were associated with the slaughter age delay. In economic analysis, increases in total income were associated with the restricted feeding and the slaughter age delay. Whereas the highest monthly income appeared in the restricted feeding-and-slaughter at 22 mo group. In conclusion, the optimal feeding system may be 1) the restricted concentrates feeding(1.9% of BW) during growing period and 2) the late slaughter age(22${\sim}$25 mo of age) in growing-fattening Holstein steers fed rice straw.

  • This study was carried out to investigate the correlation of body measurement type and carcass traits. This study used body measurement type and carcass traits on 1,312 heads of Hanwoo steers tested(24 months) which was from 1997 to 2002 at Hanwoo Improvement Main Center National Agricultural Cooperatives Federation. Body measurement type used the age of 18 months body measurement type, and carcass traits used the results of decision grade of Animal Products Grading Service. Observing the phenotypic correlation between carcass traits and body measurement type from the result, the weight, withers height, and chest width at age of 18 months and carcass weight showed readings of 0.690, 0.483, and 0.506, respectively. Also, eye muscle area and age of 18 months weight and chest width read 0.356 and 0.279, respectively. According to results, that improvements in weight, withers height, and chest width are likely to enlarge the eye muscle area and meat production level. Not only quality improvement but also quantity augmentation affect income and sales of the farmers. As can be seen in this study, improvements of weight, withers height and chest width should always be put to much effort while other body measurement type should be considered continuously too. In order to attain clearer results further studies should be done on body measurement type, which will contribute to the improvements of body measurement type in Hanwoo.

  • Objectives: The purpose of this study was to investigate the relations between diabetic dietary compliance and dietary intake, physical activity and prevalence of metabolic syndrome (MS) in type 2 diabetic patients. Methods: Seventy five subjects diagnosed with type 2 diabetes visiting the D hospital in Dongducheon from May 2014 to Dec 2014 were included in this study. The subjects were divided into two groups according to their diabetic dietary compliance score (median 39); low diabetic dietary compliance (LDDC) group (n=44) and high diabetic dietary compliance (HDDC) group (n=31). Survey data collection was carried out by direct interview method. The nutrient intake, food intake and KDDS (Korean's dietary diversity score), DVS (dietary variety score) and GMVDF (grain, meat, vegetable, dairy and fruit) were analyzed using data from the 24-recall method. Metabolic parameters were obtained from the hospital records. Data was analyzed using Chi-square test and general linear model adjusted for sex. Results: The prevalence of MS was 59.7% in the participating diabetic patients. The prevalence of MS of the HDDC (39.3%) was significantly lower than that of the LDDC (72.7%). The distribution of physical activity showed a significant difference between the groups (p=0.006). The intakes of seeds and nuts of the HDDC were significantly lower than those of the LDDC. Fat and vegetable fat intakes and % fat of energy in the HDDC were significantly lower than those in the LDDC. But, carbohydrate (CHO) and potassium intake and %CHO of energy in the HDDC were significantly higher than those in the LDDC. KDDS and GMVDF showed significant differences between groups (p=0.033; p=0.012). Conclusions: Continuous intervention by specialized nutritionists for long-term self-regulation is needed for diabetic patients, and the high compliance to diabetic diet and increasing physical activity may be effective in the prevention of metabolic syndrome.

  • This study was carried out to examine the Korean housewives' recognition and consumption type about organic and instant food. The questionnaire were answered by the housewives in Seoul, Kyunggi-do and Chungcheong-do areas. 94.1% of the housewives were aware of the organic food and 71.7% were consuming it. However, majority(95.9%) thought the price was too expensive. The biggest reason why the housewives did not purchase organic food was the high price(43.8%). But 60.6% of the housewives bought organic food because of its safety. The most preferred organic food type of the housewives was vegetable and lettuce was most consumed organic vegetable. Instant food was used by 96.7% of the housewives. 29.9% used instant food once a week, and the number of using instant food from one to seven times a week were 73.8%. Time saving was the biggest reason(51.3%) of using instant food, but 72.4% of the housewives did not buy instant food because of its artificial color, added preservatives, and the low safety level. Housewives liked fish and meat products(37.4%) and awareness of the names of companies made difference in consuming. There were significant correlation between food expenses and purchase of organic food, and between housework and organic food, and between housework and number of uses (p<0.05).
