Effects of the Raising Period on Meat Quality in Two New Strains of Korean Native Chicken (사육기간에 따른 신품종 및 상용토종닭의 육질특성 비교분석)

  • This study was conducted to determine the nutritional quality of two newly-developed native chicken strains, compared to the commercial Korean native chicken. A total of 600 chickens (CON: Hanhyup No. 3, CL1: candidate line C, CL2: candidate line D) raised under the same conditions were slaughtered at either 5 or 12 weeks. Leg meat was then obtained and analyzed for its physicochemical properties. The results showed that regardless of the growing period, there was no variation in proximate composition (P>0.05), except for crude protein, between strains. Water holding capacity did not differ between strains at either slaughter age; however, it was significantly lower in the 12-week group than in the 5-week group (P≤0.05). For both skin and muscle color, a* and b* values were lower at 12 weeks than at 5 weeks (P≤0.05). DPPH radical-scavenging activity tended to be lower at 12 weeks than at 5 weeks (P≤0.05). Furthermore, all chickens slaughtered at 5 weeks were found to have greater contents of linoleic acid (18:2) and polyunsaturated fatty acids (PUFA) and lower atherogenicity and thrombogenicity indices than those slaughtered at 12 weeks (P≤0.05). However, anserine, betaine, and glucose were more concentrated among the lines at 12 weeks than at 5 weeks (P≤0.05). In conclusion, the quality traits of native chickens were distinct by different production stages rather than chicken lines.

  • L-carnitine promotes mitochondrial ${\beta}$-oxidation of long chain fatty acids and their subsequent transport across the inner mitochondrial membrane. Although the role of L-carnitine in fatty acid metabolism has been extensively studied, its role in live performance and carcass responses of commercial broilers is less understood. The objective of this research was to determine if Lcarnitine fed at various levels in diets differing in CP and amino acids impacted on live performance and carcass characteristics of commercial broilers. Two floor pen experiments were conducted to assess the effect of dietary L-carnitine in grower diets. In Exp. 1, Ross${\times}$Hubbard Ultra Yield broilers were placed in 48 floor pens (12 birds/pen) and fed common diets to d 14. A two (0 or 50 ppm Lcarnitine) by three (173, 187, and 202 g/kg CP) factorial arrangement of treatments was employed from 15 to 35 d of age (8 replications/treatment). An interaction (p<0.05) in carcass yield indicated that increasing CP (187 g/kg) resulted in improved yield in the presence of L-carnitine. Increasing CP from 173 to 202 g/kg increased (p<0.05) BW gain and decreased (p<0.05) feed conversion and percentage abdominal fat. Feeding dietary L-carnitine increased back-half carcass yield which was attributable to an increase (p<0.05) in thigh, but not drumstick, yield relative to carcass. In Exp. 2, $Ross{\times}Ross$ 708 broilers were fed common diets until 29 d. From 30 to 42 d of age, birds were fed one of seven diets: i) 200 g/kg CP, 0 ppm L-carnitine; ii) 200 g/kg CP, 40 ppm L-carnitine; iii) 180 g/kg CP, 0 ppm L-carnitine; iv) 180 g/kg CP, 10 ppm L-carnitine; v) 180 g/kg CP, 20 ppm L-carnitine; vi) 180 g/kg CP, 30 ppm L-carnitine; and vii) 180 g/kg CP, 40 ppm L-carnitine (6 replications of 12 birds each). BW gain, feed conversion, mortality (30 to 42 d), and carcass traits (42 d) were measured on all birds by pen. There were no treatment differences (p<0.05). However, the addition of 40 ppm L-carnitine in the 200 g CP/kg diet increased (p = 0.06) thigh yields relative to BW in comparison to birds fed diets without L-carnitine, which was further confirmed via a contrast analysis (0 vs. 40 ppm L-carnitine in the 200 and 180 g CP/kg diets; p<0.05). These results indicated that dietary L-carnitine may heighten metabolism in dark meat of commercial broilers resulting in increased relative thigh tissue accretion without compromising breast accretion.

Change of performance, serum metabolite, and carcass characteristics on high energy diet of Hanwoo steers

  • The aim of this experiment was to determine the effect of a high-energy diet on the level of serum metabolites and on carcass characteristics of Hanwoo steers. High energy diets have been used for enhancing intramuscular adipose tissue in high quality beef cattle. However, there is not much information about the physiological reactions to this diet. We hypothesized that a high energy diet would increase blood metabolites and the meat quality of Hanwoo steers during the early and final fattening periods. A $2{\times}2$ factorial arrangement (High, Control, and Early, Final) in a completely randomized design was used to feed 24 Hanwoo steers. Two steers were kept in the same pen and 12 pens were used for the experiment. Blood was drawn from each steer on the first week of every other month from 11 to 28 months. Overall Average Daily Gain (ADG) and feed efficiency were not different between high energy and control diets (p > 0.05). However, Dry Matter Intake (DMI greater with the control diet than DMI with the high energy diet during the final fattening period (p < 0.05). Serum non-esterified fatty acid (NEFA) concentrations were greater in the control diet group than in the high energy diet group during the final fattening period (p < 0.05). However, serum albumin, glucose, total protein, triglyceride, and phosphorus were greater in the high energy group than those of the control group (p < 0.05). Carcass traits or physico-chemical characteristics were not different between high energy diet treatment and the control. These data indicated that a high energy diet (+ 3% TDN) increased serum triglyceride during early fattening periods and decreased non-esterified fatty acids during final fattening periods in Hanwoo steers.

  • This experiment was carried out to investigate the effects of ruminally inserted artificial fiber (RIAF; polymerized fibrous implements) on growth performance, feed intake and carcass characteristics of Hanwoo steers. Thirty six steers averaging $368.3\pm20.3kg$ were randomly assigned into three groups: control group, the ruminal insertion of three pieces (T1), and five pieces (T2) of RIAF. Average daily gain, feed intakes and conversions among treatments were similar. Numbers of rumen villi were higher in RIAF treatment (T1 and T2) groups than control group, but they were not significant (p>0.05). The length of villi were significantly longer in T2 than control group (p<0.05). Fecal weight tended to decrease in T1 compared with the control group (p>0.05). There was no differences on carcass traits inc1uding longissmus muscle area, back fat thickness, marbling score, meat color, and fat color among treatments.

Effects of high energy diet on growth performance, carcass characteristics, and blood constituents of Hanwoo steers distributed by estimated breeding value for meat quality (고에너지 사양이 육종가 배치별 거세한우의 성장, 도체, 및 혈액성상에 미치는 영향)

  • This study was to investigate the effect of high energy diet on characteristics of Hanwoo steers distributed by estimated breeding value (EBV). The aim of this experiment was to determine the effect of high energy diet on the high and low beef group distributed by EBV for quality grades. We hypothesized that high energy diet is able to increase quality traits in high EBV groups when fed a high energy diet. A $2{\times}2$ factorial arrangement (High energy, control vs high EBV, low EBV) in a completely random design was used to feed 26 Hanwoo steers. Blood was drawn from each steers from 11 to 28 months. ADG and feed efficiency were not different between high energy and control diet (P>0.05). The level of DMI was greater at calf and early fattening diet in low EBV groups (P<0.05). Serum glucose and tryglyceride conecntrations were increased (P<0.05) by high EBV group from 22 to 28 month old. Serum NEFA concentration were plateau at 24 months at high EBV group and steady reduced by high energy diet (P<0.05). This data indicated that high energy diets increased serum glucose and triglyceride concentrations of high EBV steers at final fattening period.

Effects of purified lignin on in vitro rumen metabolism and growth performance of feedlot cattle

  • Objective: The objectives were to assess the effects of purified lignin from wheat straw (sodium hydroxide dehydrated lignin; SHDL) on in vitro ruminal fermentation and on the growth performance of feedlot cattle. Methods: In vitro experiments were conducted by incubating a timothy-alfalfa (50:50) forage mixture (48 h) and barley grain (24 h) with 0, 0.25, 0.5, 1.0, and 2.0 mg/mL of rumen fluid (equivalent to 0, 2, 4, 8, and 16 g SHDL/kg diet). Productions of $CH_4$ and total gas, volatile fatty acids, ammonia, dry matter (DM) disappearance (DMD) and digestion of neutral detergent fiber (NDF) or starch were measured. Sixty Hereford-Angus cross weaned steer calves were individually fed a typical barley silage-barley grain based total mixed ration and supplemented with SHDL at 0, 4, 8, and 16 g/kg DM for 70 (growing), 28 (transition), and 121 d (finishing) period. Cattle were slaughtered at the end of the experiment and carcass traits were assessed. Results: With forage, SHDL linearly (p<0.001) reduced 48-h in vitro DMD from 54.9% to 39.2%, NDF disappearance from 34.1% to 18.6% and the acetate: propionate ratio from 2.56 to 2.41, but linearly (p<0.001) increased $CH_4$ production from 9.5 to 12.4 mL/100 mg DMD. With barley grain, SHDL linearly increased (p<0.001) 24-h DMD from74.6% to 84.5%, but linearly (p<0.001) reduced $CH_4$ production from 5.6 to 4.2 mL/100 mg DMD and $NH_3$ accumulation from 9.15 to $4.49{\mu}mol/mL$. Supplementation of SHDL did not affect growth, but tended (p = 0.10) to linearly reduce feed intake, and quadratically increased (p = 0.059) feed efficiency during the finishing period. Addition of SHDL also tended (p = 0.098) to linearly increase the saleable meat yield of the carcass from 52.5% to 55.7%. Conclusion: Purified lignin used as feed additive has potential to improve feed efficiency for finishing feedlot cattle and carcass quality.

Effects of Dietary Feldspar on Productivity and Composition of Eggs in Laying Hens (장석의 첨가가 산란계의 생산성 및 난 성분에 미치는 영향)

  • This study was carried out to investigate the effect of feldspar on laying Performance and e99 qualify in hens. A total of 96 'Tetra Brown' layers were assigned to 4 treatments in a completely randomized design. Each treatment consisted 4 replicates accommodating 6 layers per replication. Experiment diets were a control diet without feldspar and supplemented 0.5, 1.0 and $1.5\%$ feldspar. The egg Production rate was significantly increased in layers 134 diets supplemented 0.5 and $1.0\%$ feldspar compared to that of control (P<0.05). Egg weight, egg mass, feed intake, feed conversion ratio, egg shell strength and egg yolk color were not significantly different among the treatments (P>0.05). The haugh unit and blood spot of the eggs were significantly increased in $1.5\%$ feldspa. diets compared to that of control (p<0.05). However, the albumen index and meat spot in the eggs were not statistically different among treatments (P>0.05). Sensory evaluation traits were not significantly differed in terms of appearance, color, texture flavor and overall acceptability of eggs (P>0.05). The juiciness of boiled eggs was significantly increased in eggs of birds fed $1.0\%$ feldspar diets(P>0.05).

Relationships of Muscle Fiber Characteristics to Dietary Energy Density, Slaughter Weight, and Muscle Quality Traits in Finishing Pigs

  • The present study was conducted to investigate the relationships of muscle fiber characteristics to dietary energy density [3.0(Low-E) vs. 3.2 (Med-E) Mcal DE/kg)] and slaughter weight [SW; 110, 125, and 138 kg] in finishing pigs (gilt vs. barrow) using a $2{\times}3{\times}2$ factorial treatment design. Forty-one longissimus dorsi muscle (LM) samples were analyzed histochemically, with growth performance and physicochemical data for the 41 animals and their LM out of 192 animals and 72 LM used in a previous study retrospectively included. The ADG was less (P<0.01) in the Low-E than in the Med-E group (0.93 vs. 0.73 kg) whereas lightness ($L^*$) and redness ($a^*$) of LM were greater in the Low-E group SW did not influence these variables. The diameter and perimeter of the type I (slow-oxidative), type IIA (fast oxido-glycolytic) and type IIB (fast glycolytic) fibers increased with increasing SW whereas densities of the fibers decreased. However, the number and area percentages of the fiber types were not influenced by SW or dietary energy density. The percentage and per-$mm^2$ density of type IIB fibers were negatively correlated with SW (r = -0.33 and -0.57, with P<0.05 and <0.01, respectively), whereas type I fiber number percentage was positively correlated with SW (r = 0.31; P<0.05). Marbling score was negatively correlated (P<0.05) with type I (r = -0.36) and type IIB (r = -0.39) fiber densities. The $a^*$ was correlated (P<0.01) with both type I and type IIB fiber number percentages in the opposite way (r = 0.42 and -0.47, respectively). However, $L^*$ (lightness), drip loss and $pH_{24h}$ were not correlated with the fiber number percentage or density of any fiber type. Collectively, results indicate that muscle fibers grow by hypertrophy during the late finishing period, but that fiber characteristics other than the size are not significantly influenced by dietary energy density or SW.

Effects of Forage Source and Shipping Time on Growth Performance and Carcass Characteristics of Hanwoo Steers (조사료원과 출하시기가 거세한우의 발육과 도체특성에 미치는 영향)

  • This study examined the influence of forage source (grass hay and rice straw) and shipping time (24, 26, 28 and 30 months) on feed conversion ratio, growth performance and carcass characteristics of Hanwoo steers. Sixty four Hanwoo steers at 6 months age were fed either grass hay (n=32) or rice straw (n=32) for 24, 26, 28 and 30 months of age. Steers fed on mixed grass hay gained significantly higher body weight at 24, 26, 28 and 30 months compared with those fed on rice straw. Feed efficiency was slightly better in steers fed mixed grass hay compared to those fed rice straw. Back fat thickness and marbling score were increased with the age of steers (p<0.05). Carcass quality traits (meat color, fat color, texture and maturity) were not affected by forage source and shipping time. Shear force, cooking loss and water holding capacity of beef were reduced with advancing age of steers (p<0.05). Moisture content was lower and fat content was higher in beef produced from steers fed mixed grass hay than those fed rice straw (p<0.05). Beef juiciness was reduced with the advancing shipping time of steers. In conclusion, it would be beneficial to feed hay compared with rice straw during whole period of Hanwoo steer to produce high quality beef.

Discovery of Deleterious nsSNPs on the Genes related to the Lipid Metabolism and Prediction of Changes on Biological Function in Korean Native Chicken (한국 재래닭에서 지질대사 관련 유전자에 존재하는 유해성 nsSNP 발굴 및 생물학적 기능 예측)

  • In this study, we aimed to identify the nonsynonymous single nucleotide polymorphisms (nsSNPs) located in lipid metabolism-related genes because lipids are an important factor affecting the taste and flavor of meat, and they predict the functional consequences. The results showed that we identified 139 common nsSNPs in all five Korean native chicken (KNC) lines from the 81 genes related to lipid metabolism. Furthermore, sorting intolerant from tolerant (SIFT) and polymorphism phenotyping v2 (Polyphen-2) analyses predicted that among the genes, 14 nsSNPs of nine genes might be deleterious. Protein domain prediction of the nine genes revealed that all deleterious nsSNPs identified in this study were located outside the functional domain. This observation suggests that the common deleterious nsSNPs might be dispensable and have a minor effect on the traits of the KNCs.
