This study evaluates common activity and quality of life in Swedish cohousing units to examine whether Swedish cohousing functions properly or not. A questionnaire survey was fulfilled during the autumn of 2010 in G$\ddot{o}$teborg Sweden. The subjects of study were 12 of 44 cohousing units in Sweden that included 4 of the +40 cohousing and 8 of the mixed-age cohousing. A total of 242 of 353 distributed questionnaires were collected (68.6%) and analyzed by SPSS statistical program. The findings are as follow: 1) General characteristics of the respondents are that they are mostly healthy, evenly aged from age 50s to 70s and highly educated with significant proportions of academics and civil workers. There are more females than males and more singles than cohabitants. 2) The most frequent and preferred common activity is a common meal followed by a coffee meeting. A common dinner, the 'hub of living together' is held almost every day or at least a few times a week. A common meal is considered one of the most important activities because of practical and social advantages in that residents can save time and cooking costs as well as engage in social contact. Referring to evaluation of frequency and content of common activity, more than a half of the respondents prefer the current situation. 3) All of the variables (except health conditions and education level) affect participation in common activity with statistical significance. 4) Most of the respondents indicate a high level of life satisfaction and are willing to recommend others move to cohousing. They agree that there is more mutual support among residents in cohousing units than in a conventional community. In conclusion, Swedish cohousing units function successfully as they have pursued intentional community ideology and most of the residents are proud of their current living situations.
The purpose of this study is to investigate the overall operations of National Hospital Food service after it was benefited by National Health Insurance (NHI). The survey was conducted between July and August, 2007. Among questionnaires mailed to 2,558 medical care institutions, 2,090 returned (81%) questionnaires were analyzed by descriptive statistics, $x^2$-test and ANOVA using the SPSS 13.0. The general foodservice characteristic of medical care institutions were as follows. The type of foodservice operations were 'self-operated' (86.9%), 'contracted' (10.5%) and 'Both' (2.6%). Only 6.4% of medical care institutions provided 'hospital food menu not benefited by NHI'. The number of dietitians and cook for medical care institutions were 1.1 and 1.0, respectively. The cost of a general diet meal was 4,205 won and therapeutic diet meal was 4,434 won. The overall operations of hospital foodservice were different depending on the types of medical care institution. After hospital foodservice was benefited by NHI, the overall quality of hospital foodservice including manpower, facilities, and environment was improved. The future direction of hospital foodservice should 1) differentiate the cost of hospital foodservice by the types of medical care institution, 2) increase in co-payment, and 3) provide same service with equal expenses in each party as medical aid or NHS beneficiary.
Objectives: The purposes of the study were to assess wastes generated in school foodservice and to identify factors influencing the generation of plate waste. Methods: A survey was administered from November 18-30 in 2015 to dietitians and nutrition teachers that were employed in schools located in Gyeonggi province. A questionnaire file and on-line survey site link were sent to the dietitians and nutrition teachers by e-mail. A total of 622 dietitians and nutrition teachers responded and 594 responses were used for data analysis after excluding 28 responses with significant missing data. Results: Plate waste was the major part of food waste generated in school foodservice. Vegetable menus and soup/stews were discarded the most as plate waste. The dietitians and nutrition teachers perceived students' unbalanced diet and lack of appreciation of food as causes of the plate waste. Regarding waste management, they were concerned about environmental contamination by food waste and felt uncomfortable about discarding food. No plate waste day was the most frequently used plate waste reduction activity, followed by newsletters on plate waste reduction. Difficulty in getting teachers' support for dietary education during meal time was rated the greatest barrier to implementing the activities. To reduce plate waste, they perceived that students should understand the importance of environment conservation, teachers should supervise students' eating during meal time, students should be educated about proper portion, and foodservice staff should improve food quality. Conclusions: To improve students' intake and reduce plate waste in school foodservice, foodservice staff need to involve students in school foodservice and improve the palatability of meals, especially vegetable dishes. School nutrition teachers and dietitians should educate students about healthy eating and environment conservation and the school community needs to understand and support plate waste reduction and healthy eating in schools.
This study was carried out to investigate the dietary behaviors and nutrient intake of high school girls in Iksan and Seoul cities. The subjects consisted of 122 students in Iksan city, and 136 students in Seoul city. The proportion of subjects who eat meals irregularly was higher in Iksan ($94.8\%$) than in Seoul ($80.9\%$). The proportion of subjects who skip meals was also higher in Iksan ($61.5\%$) than in Seoul ($56.6\%$), and most of them ($69.7\%$) skipped breakfast, even thought they thought that it was the most important meal ($86.4\%$). The subjects tended to overeat at lunch ($41.9\%$) and dinner ($55.4\%$). The main reasons that the subjects skipped a meal were a lack of time (50.7%) and poor appetites ($23.7\%$). Most of the subjects ($57.4\%$) had tried to control their body weight by taking drugs ($40.5\%$), doing exercise ($34.5\%$), and controlling their diet ($25\%$). The average intake of nutrients and energy was significantly higher (P<0.05, p<0.01) in Iksan than in Seoul. The intake was below the RDA recommendations except for phosphorus in I ksan, but was above it except for calcium, iron, and vitamin B2, in Seoul. The indexes of nutritional quality (INQ) of calcium (0.5), iron (0.6), vitamin A (0.8), vitamin B2 (0.7), niacin (0.9), and vitamin C (0.9) were under 1.0 but those of protein (1.0), phosphorus (1.2) and thiamin (1.0) were over 1.0. The INQ of the other nutrients, except protein and vitamin C, was significantly higher in Seoul than in Iksan.
This study was applied to the PCA (Primary Components Analysis) for the sixteen table setting at the 2017 Yeongju local food contest. In this contest, we have developed a seonbibansang and a temple one-dish meal. As a result of the correlation analysis, the applicability and composition were 0.7980, harmony and taste were 0.7747 and easiness and composition were 0.7435. In the Primary Component $Y_1$, all the variables $X_1{\cdots}X_{10}$ mean that the quality of the food had positive values greater than zero. The second Primary Component $Y_2$ has a large positive value while $X_4$, $X_5$, $X_6$, $X_7$, $X_9$ have negative values. $Y_2$ is a value representing the sanitation variable, and can be considered a traditional and characteristic table setting natural to the native food in Yeongju. In addition, we developed an-hyangbansang and seonmyoaecheong food content by applying PCA factors (the elements of harmony, ease and sanitation). Table setting of an-hyangbansang provided energy 61.5%, protein 20.0% and fat 18.5% and seonmyoaecheong provided energy 62.7%, protein 15.4% and fat 22.2%. This satisfied the necessary amount of caloric nutrient intake that could be provided in a meal. Especially through story-telling, a modern interpretation - or rebranding - of local and traditional foods could make these traditional food products familiar to consumers currently. The developed table setting is felt to be conductive to the possible commercialization and introduction of traditional food into the mainstream commercial food service industry.
The COVID-19 pandemic has led to the curtailing of school meal services. This study aimed to compare the diets of students attending online classes who prepared their own lunch under these circumstances, with those of their counterparts who had their lunch prepared for them. In December 2020, a survey was conducted on 204 students (75 male and 129 female) at a high school in Gyeonggi-do. The results showed that more girls prepared their own lunch than boys (53.5% vs. 36.0%, respectively, P<0.05). Further, more participants with working mothers prepared their own lunch compared to those with unemployed mothers (60.8% vs. 23.0%, respectively, P<0.001). Lunch was prepared either by parents (47.5%), themselves (47.1%), or others (5.4%). A comparison of the Nutrition Quotient (NQ) was carried out between the subjects who prepared their own lunch and those who ate lunch prepared by their parents. The students who prepared their own lunch had significantly lower total (P<0.05), balance (P<0.01), and environment (P<0.01) sectors of NQ-A than their counterparts. Especially, subjects whose parents prepared their lunch had bean·tofu·soy milk more frequently (P<0.01), tended to eat vegetables more frequently (P=0.059), and skipped breakfast less frequently (P<0.01). In conclusion, this study suggested that high school students who have to prepare their own lunch at home during the COVID-19 pandemic are the newly emerging nutritionally vulnerable group. This study may provide the basic information necessary for preparing measures to maintain the diet quality of high school students during the COVID-19 pandemic and similar situations in the future when school meal services may not be available.
This study aimed to explore the status of food service outsourcing behavior of long-term care institutions (LTCIs) through a cross-sectional survey using a questionnaire administered between July 16th and August 7th, 2020. The survey respondents were either dietitians or facility managers, who worked at 731 nursing homes, 477 group homes, and 673 day-care centers. Approximately 25.9% of nursing homes, 11.7% of group homes, and 33.1% of day-care centers used a managed-services company to operate their food service units. The main reason for outsourcing food service by nursing homes was related to the staffing of dietitians and cooks, whereas group homes and day-care centers outsourced food services due to factors relating to meal costs and the cooking process. Almost all the LTCIs entered into private contracts for outsourced food services. Only a few food service contracts included the types of meals, nutrition standards such as protein and calories per meal, and the parameter or ratio of food cost. Of the respondents, 84.5% from nursing homes, 87.5% from group homes, and 87.1% from day-care centers agreed that the quality of outsourced food services of the LTCIs should be regulated. Meals are essential for maintaining the health and functional status of LTCI users. As more LTCIs outsource their food services, we suggest the following: (1) Increasing the minimum dietitian staffing standards for LTCIs as per the Welfare of Senior Citizens Act and requiring at least one dietitian for every nursing home, (2) Making it mandatory to use a standard food service contract template when drafting food service contract, and (3) Developing realistic standards for food service operations considering the size and operation type of the LTCIs.
This study was conducted to investigate whether there were differences in eco-friendly food, home meal replacement (HMR) purchases, and eating-out behavior according to the level of agri-food consumer competence. The data for the study were extracted from main food consumers (n=3,321) in the 2022 Food Consumption Behavior Survey. The competence index was divided into awareness-attitude-practice items, and three groups were classified by competence level. The results showed an agri-food consumer competency score of 70.62, with the highest score for awareness (73.96), followed by practice (69.28) and attitude (66.18). The frequency of purchasing eco-friendly food was higher in the excellent group compared to other groups, and quality and price satisfaction was higher with higher competency (p<0.001). Regarding HMR, the results showed that the shortage group had the lowest HMR consumption rate, and satisfaction decreased as competence decreased (p<0.001). The main reason for eating-out was to enjoy food in all groups (59.0%), followed by a lack of cooking time in the excellent group (15.7%) and hassle with food preparation in the moderate and shortage groups (17.3%, 16.6%) (p<0.001). In short, agri-food consumption competency showed differences by contents and components, and differences in food purchases and eating-out behavior by competency level were found.
본 연구에서는 2011년 중국국민건강영양조사 자료를 이용하여 20 ~ 64세 중국 성인이 섭취한 점심식사의 질을 가정식, 급식, 외식으로 구분하여 분석하였으며, 그 결과를 요약하면 다음과 같다. 첫째, 총 대상자 3,708명 중 76.7%가 가정에서 점심식사를 하고 있었으며, 급식은 15.6%, 외식은 7.7%에 해당하였다. 가정식군은 여성이 남성보다 많았으나, 급식군과 외식군은 남성이 여성보다 많았다. 가정식군은 농촌 거주자가, 급식군과 외식군은 도시 거주자가 더 많았다. 둘째, 식품군별 섭취량을 분석한 결과, 곡류·서류·콩류와 생선류는 세 군 모두 권장섭취량 범위에 있었으나, 육류 섭취량은 세 군 모두 과다하였다. 특히 급식군과 외식군의 경우 권장섭취량의 2배 이상 섭취하고 있었다. 가정식군과 급식군의 채소류 섭취량은 권장섭취량 범위 내에 있었지만, 외식군은 20 g 이상 부족하였다. 과일류와 우유 및 유제품류 섭취량은 세 군 모두에서 매우 부족한 것으로 나타났다. 셋째, 다빈도 섭취 식품을 분석한 결과 전체적으로 섭취빈도가 가장 높은 식품은 쌀과 돼지고기였고, 가장 많이 섭취한 채소는 청경채와 배추였다. 외식군은 가정식군과 급식군에 비해 채소류로 섭취한 식품의 종류가 적었고 쇠고기의 섭취 빈도가 높았으며, 빵 및 면류 식품의 섭취빈도가 높았다. 넷째, 식품군 섭취패턴을 분석한 결과, '곡류+ 육류+ 채소류' 패턴이 55.5%로 가장 많았다. '곡류+ 육류+ 채소류' 패턴은 급식군에서 그 비율이 가장 높았고, 외식군에서 상대적으로 낮았다. 가정식군에서는 '곡류+ 채소류' 패턴이, 외식군에서는 '곡류+ 육류' 패턴의 비율이 상대적으로 높았다. 다섯째, 전체적으로 식품군점수는 5점 만점에 평균 2.4점, 식품섭취 가짓수는 평균 3.4개로 섭취한 식품의 다양성이 부족한 것으로 나타나 개선의 필요가 있었다. 급식군의 식품군점수와 식품섭취 가짓수가 가정식군이나 외식군보다 유의적으로 높았다. 본 연구결과를 종합해보면, 중국 성인의 점심 식사는 육류 섭취가 과다하며, 과일류와 우유 및 유제품류의 섭취가 매우 부족한 공통적인 문제점이 있었다. 가정식의 경우 식사의 다양성 측면에서 곡류, 육류, 채소류를 모두 섭취할 수 있도록 영양교육이 필요하며, 외식의 경우 육류의 섭취가 지나치게 많고 채소류 섭취가 부족하여 개선의 필요가 있다. 또한 급식은 외식이나 가정식보다 식품 다양성 측면에서 바람직한 것으로 나타났으나, 점심식사의 기본적인 구성요소라고 할 수 있는 곡류, 육류, 채소류를 모두 섭취한 비율이 2/3에도 미치지 못하고 있어 체계적인 급식 프로그램을 도입할 필요가 있다.

Most of the employees' are women-cook and there were no man-cook in school feeding. This fact indicates that the foods which serving by school are not properly developed for the direction of taste and menu variations in the future. Most of married housewives were dissatisfied with long working hours, short break-time, dirty toilet, and other working conditions. And they were also complained of limited job performance in spite of their capacity and knowhow.
