본 연구에서는 n-3계 지방산이 풍부하게 함유된 고등어를 기존의 열풍건조기의 단점을 보완하고 높은 온도에서 손실되는 영양소를 막기 위해 저온진공건조기를 도입하여 건조시킨 후, 건조고등어의 섭취에 의한 간 및 신경조직에서의 지방산 조성 변화를 알아보고자 하였다. 간 지방산 조성의 경우, 고등어군의 총 n-6 지방산 함량은 두 군에서 유의적 차이는 없었으나 총 n-3 지방산의 함량은 고등어군에서 대조군보다 증가하였다. N-3 계열 지방산 중에서 특히 DHA의 함량은 대조군에 비해 229% 증가하였다(p<0.05). 대뇌 피질의 지방산 조성의 경우, 고등어군의 총 monounsaturated 지방산은 대조군에 비해 유의적으로 증가하였으나, 총 n-6 지방산의 함량은 감소하였다(p<0.05). 반면 총 n-3 지방산은 대조군에 비해 12%로 증가하였고 그 중에서 22:5n-3와 DHA의 함량은 고등어군에서 대조군보다 증가하였다(p<0.05). 소뇌의 지방산 조성의 경우, 총 지방산 함량과 총 n-6 지방산의 함량이 고등어군에서 대조군보다 감소하였고, 총 n-3 지방산의 함량은 두 군 간에 유의적 차이는 없었으나 n-3계 지방산중 22:5n-3의 함량은 200%로 증가하였다(p<0.05). 망막의 지방산 조성의 경우, 고등어군의 총 n-6 지방산의 함량은 대조군보다 감소하였으나, 총 n-3 지방산의 함량은 유의적 차이가 나타나지 않았다. 반면, n-3계 지방산 중에서 20:5n-3과 22:5n-3이 각각 200%, 67%로 증가하였다(p<0.05). 이상의 결과로부터 n-3 지방산을 많이 함유한 건조 고등어 식이는 간 및 신경조직의 총 n-3 지방산의 함량을 증가시켰고, 특히 간, 대뇌 피질에서의 DHA의 함량을 증가시켰다. 이상의 결과를 토대로 건조 고등어 섭취는 뇌의 DHA 함량을 증가시켰으므로 향후 공간 기억력 테스트를 행하여 고등어 섭취에 의한 뇌 기능 개선 효과와 뇌의 DHA 함량 증가와의 상호 연관성에 대하여 검토할 예정이다.
어획대상 자원에 있어서 감소계수를 z, 완전가입 년령을 a, 최고년령을 b라 할 때 체장조성과 성장곡선식을 이용해서 감소계수 z를 구하는 수학적 모형을 설정하여 고등어와 전갱이의 생잔율을 추도한 결과를 요약하면 다음과 같다. 1. 평균년령을 $U_t$라 하면 a, b, z 및 $U_t$의 관계식은 $$U_t=\frac{a-b ex p[-z(b-a)]}{1-ex p[-z(b-a)]}+\frac{1}{z}$$이다. 2. 성장곡선식을 사용하여 체장조성표의 각 체장계급에 해당하는 년령을 추정하고 전계급에 걸친 평균년령을 계산하였다. 3. $U_t$값을 a, b, z 및 $U_t$와의 관계식에 대입하여 감소계수 z값을 구하고 생잔율 exp(-z) 값을 구하였다. 4. 한국 연안 (제1해구)산 고등어와 전갱이의 감소계수, 생잔율 및 생잔율의 $95\%$ 신뢰구간을 계산한 결과는 고등어가 0.87909, 0.41516, 0.35966-0.47264 전갱이가 2.22327, 0.10825, 0.06897-0.14974이었다.
본 연구는 고등어의 소금절임과정에 한약재의 추출물을 처리하여 저장중에 간고등어의 화학적 변화를 조사하였다. 한방재료의 추출물처리한 고등어의 pH의 변화는 $4^{\circ}C$와 $25^{\circ}C$에서 저장기간이 길어질수록 모든 군에서 증가함을 나타내었으며, 증가정도는 처리 및 저장에 따른 큰 차이를 보이지 않았다. 저장기간 동안의 적정산도의 변차는 $4^{\circ}C$와 $25^{\circ}C$ 모든 군에서 저장기간이 길어질수록 산도는 증가하였으나 추출물에 따른 변화는 없었다. 저장기간에 따른 고등어 산가의 변화는 저장기간이 길어질수록 산가가 증가하였으나 대조군에 비해 추출물에 절인 고등어군에서 낮은 산가의 증가를 나타내었다. 과산화물가도 산가와 비슷한 경향을 나타내었다. 저장기간이 길어질수록 휘발성 염기 질소의 함량은 증가하였으며, 대조군에 비해 곽향과 초피추출물에 절인 고등어군이 저장초기 $6.5mg\%$ 값으로 가장 낮게 나타났다. 총균수의 변화는 저장초기에는 대조군에서 균수가 낮게 나타났으나 저장기간이 길어질수록 한방재료 추출물에 절인 고등어군에서 균수의 생장이 현저히 낮았다.
Mackerel Scomber japonicus is an excellent source of vitamins (A, D and B12), omega-3 fatty acids, dietary protein and minerals. This study was conducted to prepare mackerel-based processed seafood products such as grilled product with super-heated (GM), tang (TM) and salad with sweet potato (SSM) using mackerel as senior-friendly seafoods and to examine their quality characteristics. The hardness of GM, TM and SSM were 240.3×1.03, 21.7×1.03 and 7.4×1.03 N/m2, respectively. The viscosity of SSM was 25,450 m·Pas. The nutritional content of mackerel-processed products was within the senior-friendly standard specifications for protein, vitamin C, vitamin B2 (riboflavin) and vitamin B3 (niacin) ing GM, protein, vitamin B3 and calcium for TM, and protein, vitamin D, vitamin B2 and vitamin B3 in SSM. All the mackerel-processed products were safe as senior-friendly seafoods, since digestibility rates were 81.5% for GM, 87.9% for TM and 93.5% for SSM. The physical, nutritional and the sanitation results indicated that senior-friendly seafoods classified of the mackerel-processed products was step 1 for GM, step 2 for TM and step 3 for SSM according to the Korean Food Code and Korean Indusrty Standards.
This study was conducted to develop and characterize of a high quality salted mackerel using enzymatic extracts of Ecklonia cava (EEC). In this study, potential antioxidative properties of EEC were evaluated by DPPH free radical scavenging activity, hydrogen peroxide scavenging activity, peroxide value, and fatty acid composition, and the antimicrobial properties were also measured by analysis for volatile basic nitrogen, pH, viable cells, Eschericia coli and biogenic amine. Compared to EEC-untreated salted mackerel, the salted mackerel with EEC was superior in antioxidative properties, while was negligible in the difference of antimicrobial properties. These results suggested that the high quality salted mackerel with antioxidative activity could be developed by treatment of EEC.
This study was conducted to evaluate the qualities of mackerel Scomber japonicus sausage prepared with Theragra chalcogramma surimi (TS, A grade), Nemipterus virgatus surimi (NS, A grade) (0, 5, 7, 10%), and 7% NS with starch (0, 1, 2, 3%). The whiteness of the mackerel sausage was significantly increased by adding TS and NS, but that of the NS with starch groups was decreased compared with the control. The hardness increased significantly with the addition of TS, whereas the NS and NS with starch groups showed no considerable differences compared with the control. The gel strength was not significantly different among the mackerel sausage additive groups. In the sensory evaluation, the mackerel sausages containing 5% TS, 7% NS, and 7% NS with 2% starch had the highest overall preference. In conclusion, these results suggest that 5% TS, 7% NS, and 7% NS with 2% starch improve the quality, texture and sensory properties of mackerel sausage.
This study examined chemical characterization in commercial dark-fleshed fish (mackerel Scomber japonicus, Japanese Spanish mackerel Scomberomorus niphonius, and Pacific herring Clupea pallasii) to determine their suitability for use as raw materials for seafood products. The volatile basic nitrogen (VBN), heavy metal, radioactivity, polychlorinated biphenyl (PCBs), benzo[a]pyrene, and histamine concentrations were measured. The VBN in all of the dark-fleshed fish was less than 20 mg/100 g, which is the limit for raw materials for seafood processing. Except for mackerel based on the lead (Pb) standards of the European Union (EU), Taiwan, and CODEX, and all fish based on the cadmium (Cd) standards for China and the EU, the commercial dark-fleshed fish were free from total mercury (Hg), Pb, and Cd based on domestic and foreign standards. The radioactivity, polychlorinated biphenyl (PCB), benzo[a]pyrene, and histamine concentrations of the commercial dark-fleshed fish all adhered to the domestic and foreign standards. The commercial dark-fleshed fish tested could all be used as raw materials for seafood products, except for some exported products.
Monthly changes in the proximate and fatty acid compositions of chub mackerel (Scomber japonicus) muscle during cultivation from October 2007 to September 2008 were investigated. The lipid content increased gradually from the first stage of cultivation until March 2008 and then dramatically until May, before decreasing. The highest lipid content during cultivation was 21.6% in May, just before the fish spawns. There was a negative correlation (y=-1.1585x+87.741, $R^2$=0.9495) between the lipid and moisture contents during cultivation of chub mackerel. By contrast, the protein ($18.6{\pm}1.05%$) and ash ($1.18{\pm}0.11%$) contents were essentially unchanged during cultivation. Prominent fatty acids in chub mackerel muscle were 16:0, 18:0, 14:0 saturates, 18:1n-9, 16:1n-7, 18:1n-7 monoenes, and 22:6n-3 (docosahexaenoic acid, DHA), 20:5n-3 (eicosapentaenoic acid, EPA), and 18:2n-6 polyenes. The percentages of n-3 polyunsaturated fatty acids (PUFA), such as DHA and EPA, were higher during three months in the early stage of cultivation than they were subsequently. However, the PUFA (DHA+EPA) content (in mg/100 g of muscle) was lower in the early stage (740-796 mg/100 g muscle) than in the other stages. The highest PUFA (DHA+EPA) content was from April to May (2,749-2751 mg/100 g muscle). The PUFA content was positively correlated with the total lipid content of chub mackerel muscle during cultivation. The results indicate that cultured chub mackerel is a very good source of n-3 PUFA, such as DHA and EPA.
본 연구는 일반인들의 의식수준과 소득 증가로 건강 기능성 식품의 관심이 높아지고 있어 건조 로즈마리 추출물의 함량을 달리하여 마리네이드한 고등어의 품질 평가에 대하여 알아보고자 하였다. 또한 고등어 특유의 버린 냄새를 감소시키며, 고둥어의 DHA 등 건강에 유용한 성분의 섭취 증진하고자 하였다. 로즈마리 첨가량을 달리하여 마리네이드 한 고등어의 염도 측정 결과 기존의 유통되는 안동 간고등어의 소금 5% 이라보다는 건조로즈마리 추출물로 마리네이드 한 고등어의 염도가 2%로 소금섭취를 낮출 수 있었다. 저장 중 pH의 변화는 pH 6.2-6.3으로 적색육 어류의 초기 부패점인 pH 6.2-6.4의 범위 안에 들어가 제품 품질 특성에 적합하였고, 특성 차이 검사 중 견고성, 탄력성, 촉촉함 등 실험에 참여한 학생들이 별다른 거부감이 없었으며 기호도 검사에서 외관은 차이가 없었으나 풍미에서는 건조 로즈마리를 많이 첨가한 R 4보다는 R 2를 선호하는 것으로 나타났으며, 맛과 전체적인 기호도가 가장 좋은 것으로는 건조 로즈마리 추출물 많이 들어간 R 4 보다는 일정수준 첨가한 R 2가 최적의 첨가량으로 보아진다.

This study was performed to investigate the inhibitory effects of brown algae extracts on histamine production in mackerel muscle. First, antimicrobial activities of brown algae extracts against Morganella morganii were investigated using a disk diffusion method. An ethanol extract of Ecklonia cava (ECEE) exhibited strong antimicrobial activity. The minimum inhibitory concentration (MIC) of ECEE was 2 mg/ml. Furthermore, the brown algae extracts were examined for their ability to inhibit crude histidine decarboxylase (HDC) of M. morganii. The ethanol extract of Eisenia bicyclis (EBEE) and ECEE exhibited significant inhibitory activities (19.82% and 33.79%, respectively) at a concentration of 1 mg/ml. To obtain the phlorotannin dieckol, ECEE and EBEE were subjected to liquid-liquid extraction, silica gel column chromatography, and HPLC. Dieckol exhibited substantial inhibitory activity with an $IC_{50}$ value of 0.61 mg/ml, and exhibited competitive inhibition. These extracts were also tested on mackerel muscle. The viable cell counts and histamine production in mackerel muscle inoculated with M. morganii treated with ${\geq}2.5 $ MIC of ECEE (weight basis) were highly inhibited compared with the untreated sample. Furthermore, treatment of crude HD-Cinoculated mackerel muscle with 0.5% ECEE and 0.5% EBEE (weight basis), which exhibited excellent inhibitory activities against crude HDC, reduced the overall histamine production by 46.29% and 56.89%, respectively, compared with the untreated sample. Thus, these inhibitory effects of ECEE and EBEE should be helpful in enhancing the safety of mackerel by suppressing histamine production in this fish species.
