선박용 주방후드 환기시스템에 관한 수치해석 (Numerical Analysis of the Kitchen Hood Ventilation System for Marine Environment)

  • This study regards distributions of flow in the ventilation system used in the kitchen hood in a ship. In this study, for describing the flow in the ventilation system, three-dimensional steady-state turbulence was assumed for the governing equation. When the plume was formed, three gases, CO, CO2, and HCL, in the flow field of the hood were considered as the plume, and it was assumed that the sum of concentrations of the gases was 100%. As a result, it could be confirmed that the plume was smoothly discharged when the flow rate of the supply was ten times lower than that of the exhaust.

고령자용 소규모 그룹홈의 생활환경 실태 (Actual conditions on the Living Environment of Small-scale Group-homes for the Elderly)

  • To investigate the actual conditions on the living environment of group-homes for the elderly and their living environment, 4 group-homes were surveyed. As the results, conditions of location for the group-home of the elderly looked positive, on the other hand, safety for criminal prevention, accessability and convenient facilities were not on level satisfied. The average area of each space in the group-home indicated that the bed room was $11.21\;m^2$, the living room $28.13\;m^2$, the kitchen $23.59\;m^2$, and the bath room had an integrated type of bath room and toilet $7.63\;m^2$. The physical environments of each space in the group-home were investigated, In bed room, door, windows and illumination were relatively good but safety was extremely inferior. Living room mostly looked good except the doorsill which needs refurbishment. In kitchen, cooking table, windows, illumination, ventilator were somewhat satisfactory but gas-warning device should have been installed. In addition, in bath room and toilet, location, door, window, illumination and finished material were satisfactory. But the stepped difference between the bath room and other space, safety-bar, emergency bell and floor heating system were seriously deteriorated and must be improved for the safety of the elderly. Conclusively, living environment of group-home for the elderly is mainly satisfactory but it was necessary to take a consideration for their safety.

호텔 조리사의 이직에 관한 연구 (A Study of Hotel Restaurant′s Cook Separation)

  • This study is about job change hotel kitchen cook. addition, through case analysis, by choosing three hotels in Seoul, the relation job changes was found out, and through the interviews with cooking employees for more than three months, their opinions and reliabilities were collected and analyzed. The surveyed questionnaires were analyzed and studied through SPSS WIN Package, reliability analysis, factor analysis, frequency analysis, correlation, and distribution analysis and T-test were conducted to figure out the population statistical difference. According to the study results. those employees who thought kitchen environment, internal and external working conditions. the welfare for the employees are the most important factors in case of changing jobs scored over average 4 in the statistical analysis. For this reason, in order to reduce the rate of job changes the hotels efforts for and interests in appropriate compensation, improvement of working environment. continuous educational training, fair human resource management, and maintenance of good relation with co-workers are necessary.

一酸化炭素의 家庭內 濃度 및 主婦의 個人曝露濃度에 關한 調査硏究 (Indoor and Personal Exposure to Carbon Monoxide in Homes)

  • A pilot field study was conducted to measure indoor and personal exposure to carbon monoxide (CO) levels using personal monitors from January to February in 1989. The principal objectives of the study was to design and evaluate the research protocol and the instrumentation performance for application to the conduct of a large-scale personal monitoring program. The mean CO concentrations in kitchen and in bedroom were 23.4 and 11.9 ppm, respectively, while mean concentration of personal CO exposure was 18.9 ppm. It was found that the mean CO concentrations in kitchen exceeded 20 ppm of the Korea ambient CO standard(8-hr average) not to be exceeded more than three times per year. The results suggest that indoor CO levels in Korean houses appear to be affected by use of coal briquette for heating any cooking.

지속적 거주(Aging in place)를 위한 국내·외 주택설계지침의 비교 (Comparative Analysis on Domestic and Overseas Design Guidelines for Aging in place)

  • Domestic and international laws and regulations on design of residential environment are adopted, revised and supplemented to solve the problems such as access, safety and privacy in the residential space of the elderly and the disabled. This study is an comparative analysis of Korea and Japan, USA, UK laws and regulations on environment design by literature review. The purpose of this study is to present the basic materials required for development of the standard that would supports the undiscriminatory physical environment for the socially weak who are experiencing aging and disability, due to the restricted scope of entrance, bathroom and kitchen spaces with high frequency of safety accident. The results of this study are as follows. (1) Design guidelines on residential environment were compared under five residential factors for aging in place: safety, accessibility, amenity, usability and privacy. (2) The guidelines of each country applied to the entrance, bathroom and kitchen space were compared. (3) The results showed present guidelines should be completed with 'safety', 'accessibility', 'amenity', 'usability' and 'privacy' for Aging in place.

고령자가 거주하는 독립주택의 주거환경 실측 (A Survey of the Residential Environment of Detached House of Elderly People)

  • With 106 detached houses where the elderly people lives, this study was conducted to perform a survey of their residential environment. The results of this study were summarized as follows: While the surveyed houses' safety, sanitation and convenience appeared to be positive, with respect to the conditions of location, 73.6% of the surveyed houses did not meet the requirements for comfort. The average area of each space indicated that the bed room was $12.09m^2$, the living room $14.38m^2$, the kitchen $8.96m^2$, the bath room $3.93m^2$, and the rest room $259m^2$. Then, 93.3% of the bed room had the doorsill. Also, 97.2% of the surveyed houses had retrievable space. The forms of the living room door were a hinged door(55.7%) and a sliding door(44.3%). The 43.4% of the finished material of the living room was wood which was highest. The cooking table forms of kitchen were mainly "ㄱ"-shaped(50.0%) and "ㅡ"-shaped(48.0%), and their average height was 815mm. The fuel used for kitchen was mainly the gas which accounted for 93.4%, but 95.3% of houses had no gas-warning devices. Most houses(77.4%) had an integrated type of bathroom and toilet. In addition, 63.2% houses had the stepped difference between the bathroom and other spaces. But they had no a sliding-prevention devices(not for 92.5%) or heating systems(not for 93.4%) in the bathroom.

신체장애인의 주거환경 개조에 관한 연구 - 인천시 주거개조 사례 27개를 중심으로 - (A Study on the Remodeling of Living Research about living environment renovation for disabled - Based on 27 cases of residence renovation in Incheon city -)

  • The twenty seven houses at Incheon city, were remodeled in 2009 for the physically handicapped people. This research had been done the analysis of the itemized questionnaire by the needs of the physically handicapped for their better living environment and suggested the following remodeling devices. First of all, there was the priority for the remodeling of their living facilities. According to their priority, they wanted to remodel their bathroom, kitchen & dining room, veranda, living room, and hall way. These were based on their needs of movement, personal hygiene, convenient closet, and cabinet usage. In particular, their demands were shown as followings. The wheelchair using handicapped people required safe doorknobs, unslippery floor materials, removal of step levels, and heights adjustable washing stand for their bathroom. They also requested washboard, non-threshold, and automatic door locks. Otherwise, the disabled in critical condition who could not move anything preferred the remodeling of inner structure of living spaces and automatic door system. The slight disabled and the families those who have the disabled demanded the remodeling of kitchen & dining room, and preferred the reorganization of closet, cabinets, floor tiles, and turncock. The remodeling of bedroom was mostly requested by the disabled women, people with the brain disorder, and disabled people in critical condition who could not move anything. They wanted the remote controlled lightings.

유한킴벌리의 빨아쓰는 키친타올 스카트® 출시전략: "고객의 생활을 리디자인하다" (The Case of Market Launching Reusable Kitchen Towel Scott® in Korean Market: "Redesign Customers' Life")

  • 2005년 유한킴벌리는 자사의 키친타올에 대한 소비자 사용 실태 및 태도 조사에서 흥미로운 점을 발견하게 된다. 키친타올의 용도가 탄생 초기의 의도와는 달리, 한국에서는 주로 후라이팬의 기름기 흡수나, 튀김시 기름기 흡수 등 주로 기름기를 흡수하는 것에 한정되어 있다는 사실이었다. 소비자들은 행주 등 천 청소도구의 위생에 대해서 불안하게 생각했지만, 기존의 키친타올도 행주도 소비자들의 불안함을 채워주기에는 무엇인가 부족했다고 지각했다. 결국 유한킴벌리는 해결되지 않았던 이러한 소비자들의 불안을 해결하기 위한 새로운 시도가 필요함을 인식하게 되었다. 천 행주의 비위생성, 불편성에 비추어 볼 때, 키친타올의 상대적 열위는 내습성이 약하다는 점이다. 물기제거 과정에서 천 행주는 물기를 빨아들이고, 관리하는 것이 가능한 반면 키친타올은 종이제품으로서의 인식으로 인해 물기제거에 많은 양이 사용되고 신뢰할 수 없다는 점이 부각되게 된 것이다. 따라서 키친타올 카테고리의 한계를 극복하기 위해서는 이러한 점에 대한 소비자 인식을 전환할 수 있도록 하는 보완이 필요하였다. 새로운 키친타올의 사용시간을 일회용에서 확장하여 1일 이내 수차례 사용으로 확장하는 방향이 필요하게 되었다. 따라서 고객의 주방생활을 리디자인할 필요가 있는 것이다. 여러 번 활용할 수 있는 새로운 키친타올의 브랜드는 킴벌리 클라크의 글로벌 전략과 일치시키기 위해서 스카트(Scott) 브랜드를 사용하는 것으로 결정하였다. 이미 남미에서 유사한 제품이 스카트 브랜드를 사용하고 있어 이에 일치시키기 위한 것이었다. 또한 기존의 키친타올과의 차이를 나타내기 위하여 "스카트® 빨아쓰는 키친타올"로 상품명을 결정하여 기존에 소비자들에게 친숙한 키친타올의 이미지를 활용하여 새로운 상품을 홍보할 수 있도록 하였다. 그 결과 소비자들의 청소에 대한 기존의 행동양식이 보다 위생적으로 청소를 하는 방향으로 변화되었으며, 이러한 소비자 변화는 결국 스카트® 빨아쓰는 키친타올의 급격한 매출증가로 이어졌다.

  • Due to the rapid increasing in the aged population, it calls for social countermeasures urgently. Especially, there are increasing needs of space environment to support physical and spiritual characteristics of elderly. When designing space environment including house, there are growing consideration for elderly and extending appreciation of aging. The purpose of this study is to investigate the perception on environment planning for the seniors among university students who majoring in Housing & Interior Design and who visited the Aging Simulation Center located in Seoul. The Aging Simulation Center gives a chance of space design to support the elderly based on the experiences of daily living for the designers who design environment for elderly. Questionnaire survey was conducted to obtain data from 93 university students in their 20s majoring in housing and interior design who visited the Aging Simulation Center. The research findings showed that the recognition for design elements of residential environment for the elderly of respondents was changed toward positive way after visiting the Aging Simulation Center. The Aging Simulation Center was an effective educational environment for the preliminary designers to understand aging and the importance of appropriate design for users' needs. That is, aging simulation space can improve recognition of necessity of universally designed environment to support the elderly. Handrails around bathtub and wash basin, stair slope, electric auto-level controlled kitchen counter and kitchen cabinet were especially perceived for the respondents as very essential design elements to support the aged.

안전 환경 인식과 사고 경험에 따른 외식산업 주방 종사원의 안전사고에 관한 연구 (Study on the Accident of Kitchen Food Service Industry Employees in Accordance with the Safety and Environment Awareness and Accident Experience)

  • 본 연구의 목적은 외식산업 주방에서 안전 매뉴얼의 방향을 제시하고자 하였다. 외식산업 주방에서의 사고는 87.2%의 매우 높은 사고경험을 가지고 있다. 사고의 유형별로는 칼로 인한 베임(84.7%)이 가장 많았으며 그 뒤를 이어 뜨거운 불과 물, 기름 등에 의한 화상인 데임(74.4%)과 넘어짐(28.1%) 순으로 나타났다. 성별에 대한 주방안전환경에 대한 인식과 개인의 주방안전 이행 정도에서는 남녀간 유의적 차이를 보임으로써 남성이 여성보다 사고 확률이 높다고 볼 수 있다. 근무연수에서 보여주는 주방안전과 안전이행정도는 1~3년차일 때 가장 높게 나타나지만, 7~10년이 되면 가장 낮은 것으로 보여지는 것은 환경에 익숙해지면서 위험도에 둔감해지는 시기로 볼 수 있어, 년수가 지날수록 위험에 대한 환기를 시켜 안전수칙 이행도를 높일 수 있어야 할 것이다. 순환적 구조에서 예방과 사고처리, 사후처리과정을 보다 전문적인 관점에서 심도 있게 검토하여 외식주방의 안전을 지키는 매뉴얼로 제시하는 바이며, 이를 기본으로 하여 각 외식주방별 환경에 적합하도록 수정 보완하여, 향후 사고 예방과 대처에 필요한 매뉴얼을 개발, 배치할 수 있는 방안을 향후 과제로 제언하는 바이다.
