시판 가공식품의 영양표시 실태 조사 (Prevalence of Nutrition Labeling and Claims on Processed, and Packaged Foods)

  • This study investigated the prevalence of nutrition labeling and claims on processed and packaged foods. The final database consists of 1,287 foods, which were collected in two supermarkets in the Seoul area from September to November, 2006. An estimated 78% of KFDA-regulated processed, and packaged foods have nutrition labels. Nutrient content claims on food labels were identified in 21% of the foods which have nutrition labels. The prevalence of nutrition labels in this study is much higher than in previous studies due to the current expansion of the mandatory labeling regulation. However, false labeling and misleading contents claims were also identified. The food label is an important tool for enhancing the public's understanding of healthy choices of processed foods. Therefore, to maximize the benefits of the nutrition labeling regulation, industries, government agencies and health professionals should work together to help consumers make healthy dietary choices and improve their health.

대구지역 주부들의 비만정도에 따른 식행동 특성과 영양섭취 실태 평가 (Dietary Behaviors and Status of Nutrient Intakes by the Obesity Levels of Housewives in Daegu)

  • This study was intended to collect the baseline information on dietary behavior of adults to develop nutrition education program in the context of healthy weights at community level. Nutrient intakes of 128 housewives were assessed by 24 hour recall method. Also food habits, nutrition knowledge and attitude were investigated by self-administered questionnaires. Subjects were divided to under-weight, normal-weight, over-weight groups by body mass index (BMI). Most under-weight groups evaluated as their current body images were normal. $41\%$ of normal-weight groups judged as their current body images were obese. Energy and fat intakes of over-weight group were significantly higher than that of under-weight and normal weight groups (p<0.05). However, carbohydrate and protein intakes showed no significant differences among the three groups. It appeared that active attitude toward change in nutrition attitude of normal weight group was significantly higher than that of under-weight group (p<0.05). There were no significant differences of food habit score, nutrition knowledge, and obesity habit scores among the three groups. The frequency of eating-out showed significant difference among three groups (p<0.05). Food habit scores were positively related to health-concerned attitude (r=0.174), convenience-concerned attitude (r=0.229) and food enjoyed attitude (0.213) and negatively related to obesity habit score (r=-0.206). Also, positive correlation of body fat mass with frequency of eatingout (r=0.213), instant food (r=0.227) and amount of meal (r=0.187) existed (p<0.05). We concluded that nutrition education programs for housewives should include specific strategies to modify unsound food behaviors and inappropriate perception of body image for a healthy weight.

초등학생 대상의 영양교육 웹사이트 개발 (Development of a Nutrition Education Website for Children)

  • The purpose of this study was to develop a nutrition education website for children, especially those around the 4th-6th grade levels. Among the already existing websites providing nutritional information for children, 7 websites with comparable amounts of information were evaluated in terms of their topics, credibility, content, ease of use, and aesthetics. In addition, a survey was conducted to assess the need for nutrition information among 305 elementary students. The food pyramid was the topic offered most often on those websites. Information on nutrients, digestion, food safety, nutrition labeling, and healthy eating habits were available on the websites. Some of those websites also provided games or quizzes to attract the children's interest. However, seine of the websites did not give any information on the person responsible for providing the information, which is most important in determining the credibility of the website. Other problems were that some information was too difficult for children, and some of the websites did not provide a way to search for information. According to the survey results, the topics that children wanted to know about were‘desirable weight’,‘cooking’,‘correct food choice’,‘weight control method’,‘calories consumed during exercise’, but, they did not have a high interest in‘asking questions’‘books with nutrition messages’,‘under weight’,‘negative effect of weight control’and‘helping hungry children’. Based on these results, we developed a new nutrition education web-site, ifood’(http: //1 ifood.or.kr). We focused on helping children develop healthy eating habits by providing information which is easy and practical for children. However, we neither included the program to assess their dietary intake, nor provided entertaining background sounds, which children like. Also, the game section is composed mainly of quizzes. Therefore, we need to further develop exciting games to teach nutrition to children. In the near future, the newly developed website should be evaluated by children regarding understandability and coverage of the contents as well as usability and design, and then revised to improve the educational effect.

한의학 전공 대학생과 식품영양학 전공 대학생의 임상 영양지식과 영양 실천도 비교 (A Comparison of Clinical Nutrition Knowledge and Nutritional Behavior of College Students Majoring in Korean Oriental Medicine vs. College Students Majoring in Food and Nutrition)

  • This study examined two groups of students Korean Oriental Medicine majors and Food and Nutrition majors and compared their knowledge of clinical nutrition as well as their tendency to follow healthy lifestyles. In all, 204 college juniors and seniors majoring in Food & Nutrition, and 324 sophomores majoring in General Korean Oriental Medicine were given a questionnaire. Overall, knowledge of clinical nutrition(out of twenty questions) was significantly higher among the students majoring in food and nutrition (p<0.01). Specifically, these students obtained a higher score in the questions pertaining to the following topics: nutritional support(p<0.05), the relationship between menopause and blood cholesterol(p<0.01), the relationship between weight control and carbohydrates(p<0.01), the relationship between gout and protein(p<0.10), the relationship between hyperlipidemia and carbohydrates(p<0.01), the relationship between trans fatty acids and atherosclerosis(p<0.01), the relationship between blood potassium levels and kidney disease(p<0.01), and the relationship between weight control and diet and water(p<0.05). Conversely, students studying General Korean Oriental Medicine had a better knowledge of the relationship between malnutrition and the mortality rate and health complications(p<0.01). The questions relating to a healthy diet and lifestyle indicated that students majoring in Food and Nutrition had higher incidences of diet irregularity and a higher missing rate (p<0.01); they were more interested in calorie content and nutrients in their diet(p<0.05); and they were more likely to study about nutritional knowledge during their leisure time (p<0.01). The results also indicated, however, Korean Oriental Medicine students consumed proportionally more vegetables(p<0.05); and they were more likely to take the stairs than the elevator(p<0.01).

어린이의 비만 예방과 관리를 위한 영양교육 웹사이트 개발 및 평가 (Development and Evaluation of a Nutrition Education Website for the Prevention and Management of Childhood Obesity)

  • Childhood obesity has rapidly increased worldwide and is one of the most serious health problems in this age group. In order to prevent and manage childhood obesity, we developed a nutrition education website. The website consisted of three parts. The first part was made for self-assessment with regard to obesity index, dietary habits, food frequency, dietary attitude, nutrition knowledge, nutrient intake, energy expenditure, and the stage of behavioral change, and tailored messages and advice according to the assessment results. A total of 612 real-size food photos as well as a nutrient database of 3,346 foods and 541 dishes were created to help children estimate nutrient intakes accurately. In addition, an energy expenditure database of 156 activities for children was established to calculate calorie consumption. The second part was made for setting long-term and short-term goals and keeping track of the changes in energy intake and expenditure in one's own page. The third part was made for education. Various types of nutrition information were provided; texts, pictures, calculators and games. The readability and design of the website were evaluated by 46 obese children. Usefulness, design and readability of the website were found to be desirable for children. This website is expected to be used by an obese child alone or with parents or nutrition teachers in order to control body weight through healthy dietary habits and physical activities. In addition, a non-obese child can also use this website for maintaining healthy dietary habits and preventing obesity.

식습관 및 운동 목표 달성의 촉진요인과 방해요인: 시내버스 운전자와 상담 영양사의 포커스그룹 인터뷰 (Facilitators and barriers to achieving dietary and physical activity goals: focus group interviews with city bus drivers and counseling dietitians)

  • Objectives: Our previously published study showed that a workplace nutrition intervention program with personalized goal setting and smartphone-based nutrition counseling improved dietary habits and physical activity in city bus drivers who were overweight/obese. This study explored the facilitators and barriers that participants faced in achieving their dietary and physical activity goals six months after the intervention. Methods: The study included bus drivers and dietitians who participated in the intervention program. Three focus group interviews were conducted with 10 bus drivers (divided by two groups based on their achievement of set goals) and five dietitians who had provided nutrition counseling. Results: Willpower was the most important intrapersonal facilitator for drivers to achieve their goals. Other factors that promoted behavioral changes were nutrition counseling by dietitians, trackable physical activity using smartwatches, and setting of practical and achievable goals. Meanwhile, the most important barriers identified were occupational factors such as long driving hours, short breaks, and shift work. Other barriers were environmental factors such as availability of snackable food, accessibility to convenience stores, and cold weather. Family and colleagues were perceived as both facilitators and barriers. In addition, dietitians identified a lack of knowledge about healthy diet as one of the barriers. Conclusions: Our results suggested that the workplace environment should be improved and that nutrition intervention programs at the workplace could encourage bus drivers to practice healthy eating habits. The facilitators and barriers identified in this study should be considered when planning a nutrition intervention program for bus drivers.

운동(運動)이 혈청(血淸) 지질(脂質) 및 뇨중(尿中) Creatinine과 Methylhistidine 농도(濃度)에 미치는 영향(影響) (Effect of Exercise on Serum Lipids, Urinary Creatinine and 3-Methylhistidine in Human)

  • The effect of exercise on serum cholesterol and triglyceride concentration and on urinary creatinine and 3-methylhistidine excretion was studied in eight healthy women, aged 21 to 25yr. Subjects were tested before and after a 3-day experimental period, during which 1000 times rope-jumping a day were performed. Serum cholesterol and triglyceride levels decreased significantly after exercise. Urinary excretion of creatinine and 3-methylhistidine slightly increased after exorcise.

건강체중아 및 비만아의 체중조절 경험, 식습관, 운동습관 및 자아존중감 비교 (Comparison of Weight Control Behavior and Self-esteem between Healthy Weight and Obese Children)

  • The study compared eating and physical activity related behaviors and self-esteem between healthy weight and obese children by presenting 175 primary school students in Busan City and Gyeongsang province with a self-reported questionnaire and Coopersmith's self-esteem inventory. The questionnaire was composed of 25 items, weighted primarily by a Likert scale. The self-esteem inventory presented to the students comprised 25 'Yes' or 'No' response questions to different statements. The study found obese children were more likely to think they always had to control their weight (p=0.000), reportedly measuring their weights significantly more than the healthy weight children. Also the study found that obese children are significantly more likely than healthy weight children to go on a diet, however neither group were successful in losing weight as the duration of the diet in 79.5% of the total sample lasted no longer than one week. In comparison to healthy weight children, obese children reported that they consumed fewer snacks during the day, avoided snacking subsequent to an evening meal and exercised more frequently for as long as physically possible. Interestingly, we found no difference of reported self-esteem between groups, though the obese group were more likely to answer that their parents did not understand them (p=0.055) Based on these findings, we concluded that the obese children who participated in the study were more aware of their body weights than the healthy weights children. It may be necessary to investigate further the relationship between self-esteem and participants' weights while considering other variables such as personality and body image.

  • 보호자와 의사관계에서 가장 중요한 것은 신뢰이며, 특히 소아청소년과 좋은 관계를 유지하며 원칙적이면서도 구체적인 방법을 같이 의논하여 결정한다. 보호자가 이미 알고 있는 단편적인 의학지식을 잘 엮어서 통합하여 주고, 신체활동과 함께 상담하여야 한다. 1. 에너지 소비와 섭취의 균형을 유지해야하는 원칙을 강조한다. 맛있는 음식이 있을 때 과식하는 것은 사실 당연하다. 많이 먹었을 때 많이 움직여야 한다는 것을 강조한다. TV시청시간과 컴퓨터사용시간을 2시간 이하로 제한하고, 신체활동은 1시간 이상 될 때까지 증가한다. 2. 치료의 목적은 건강한 식습관으로 개선하여 평생 건강하게 지내는 것이 목적이다. 단순히 절식하는 것이 아니며 평생 건강할 수 있도록 좋은 습관으로 개선하는 것이다. 3. 건강하게 음식을 선택하는 방법을 교육한다. 소아청소년 비만은 성인비만으로 연결되며, 결국에는 대사증후군으로 당뇨나 고혈압 등 합병증이 오게 되므로, 음식을 어떻게 선택하는 것이 건강한지 설명한다. 4. 야채와 과일 섭취를 권장한다. 5. 음료수도 음식과 같이 생각하여 달콤한 음료수를 먹지 않는다. 6. 칼슘섭취를 위하여 저지방이나 무지방우유를 권한다. 7. 가족과 함께 식습관을 개선하다. 아침 먹기, 밤늦게 먹지 않기, 모든 음식 천천히 먹기, 씹지 않고 물과 함께 삼키지 않는지 확인하고 개선한다. 가족과 함께 식사하는 횟수를 늘린다. 부모는 자녀의 모범이 되어야 한다.

초등학생의 식생활관리 태도에 따른 식품구매 행동 및 식생활 소비자능력 비교 (The Comparisons of Elementary School Children's Food Purchasing and Consumer Competency for a Healthier Diet by Their Attitude toward the Meal Management)

  • In this study elementary school children's food purchasing and consumer competency for a healthier diet were compared by their attitude toward the meal management. The subjects were 779 sixth grade elementary school children (417 boys and 362 girls) in Busan. They were classified into three groups: 'High' was composed of 226 subjects who had more than the mean +1/2 SD of attitude toward the meal management; 'Medium' was composed of 343 subjects who had the mean ${\pm}1/2$SD; and 'Low' was composed of 210 subjects who had the less than the mean -1/2 SD. The results were as follows. The high group had less pocket money than the low group, and thought that their allowances were adequate to their needs. They also had a habit of entering amounts into an account book. The children in the low group purchased mostly snacks without making or practicing a budget. The high group purchased yogurt, fruit, or bread as snacks more frequently than the low group. More children checked the nutrient facts on the package in high group than in the low group. There were no significant differences in the consumer's knowledge of a healthy diet among the groups; but there were significant differences in the consumer's skill, and the consumer's attitude toward a healthy diet among the groups. The high group had higher skills and more positive attitudes than the low group. This research suggests that education can elevate interest and can help develop more positive attitudes toward healthy diets among children. The education can help them to develop planned food purchasing habits, and improve their consumer competency for a healthy diet.
