In recent years, the knowledge about bifidobacteria has considerably evolved thanks to recent progress in molecular biology. The analysis of the whole genome sequences of 48 taxa of bifidobacteria offers new perspectives for their classification, especially to set up limit between two species. Indeed, several species are presenting a high homology and should be reclassified. On the other hand, some subspecies are presenting a low homology and should therefore be reclassified into different species. In addition, a better knowledge of the genome of bifidobacteria allows a better understanding of the mechanisms involved in complex carbohydrate metabolism. The genome of some species of bifidobacteria from human but also from animal origin demonstrates high presence in genes involved in the metabolism of complex oligosaccharides. Those species should be further tested to confirm their potential to metabolize complex oligosaccharides in vitro and in vivo.

BACKGROUD/OBJECTIVES: Understanding the factors associated with fish consumption is necessary to determine strategies to improve the fish consumption particularly those high in omega-3 long chain polyunsaturated fatty acids (n-3 LCPUFA). The aim of this study was to analyse the correlation between a mother's perspective on fish and actual fish consumption in their children. SUBJECTS/METHODS: Two hundred thirty-one elementary school children grade 3-6 and their mothers in Surakarta were recruited using multi stage random sampling for this study. Data was collected in July and August 2017. A validated questionnaire consisted of 3 topics including knowledge related to the health benefits and organoleptic properties of fish and cooking technique-related attitudes on fish were used to measure the mother's response to the fish properties. A validated food frequency questionnaire and a food picture book of fish specifically designed for the survey were developed and used to assess fish consumption of the children. A χ2 test was used to analyse the correlation between the mothers' perspective on fish and their children's fish consumption. RESULTS: The median fish consumption in children was 65 g/d with fried non-oily or lean fish, e.g., milkfish (locally called Bandeng) and catfish (locally called Lele) were consumed more than oily fish as well as processed fish products. Of all children, 31% met the fish consumption recommended by the Environmental Protection Agency-Food and Drug Administration 2017. There was no relationship between a mother's knowledge related to health benefits, organoleptic properties and cooking technique-related attitude toward fish and her child's fish consumption. CONCLUSIONS: The fish consumption of children is not influenced by their mother's perspective on fish. Nutrition education strategies are warranted to improve fish consumption and maintain the optimal benefits by consuming fish, including fish high in n-3 LCPUFA.
Objectives: This study sought to assess the prevalence and duration of weight-control or health functional food use, associated weight-control behavior, perception, and knowledge among university students. Methods: The subjects were 442 university students in Cheonju, Korea, and data was collected by a self-administered questionnaire. Both χ2 and t-tests were conducted for categorical and mean comparisons. Results: An estimated 62.7% (female 69.0%, male 54.8%) had ever attempted weight-control. Among these, an estimated 59.2% of females and 38.9% of males had used weight-control or health functional foods with significant gender difference. The weight-control foods commonly used included chicken breast, protein powder, low-fat milk and soymilk, and meal replacement drinks, while garcinia cambogia extract and green tea extract were frequently used as health functional foods. One of 10 (10.3%) consumers of weight-control foods reported ≥ 7 months use, with less frequent long-term consumption of health functional foods (4.2%). The average degree of satisfaction was 3.24 ± 0.92 for weight-control foods and 2.72 ± 0.97 for health functional foods on a 5-point scale, meaning 'slightly satisfied' and 'slightly dissatisfied', respectively. Females or students with an experience of weight-control reported poorer perceptions of their health and body image as well as a higher need for weight control. Besides, both male and female subjects felt a high need for correct information regarding weight-control methods. Conclusions: Our results provide a better understanding of the characteristics associated with the use of weight-control or health functional foods among university students and will be useful in developing a nutrition education program by incorporating correct body image, knowledge, and practical yet desirable practices for weight control.
Purpose: This study was done to develop a pregnancy nutrition knowledge scale and to examine the relationships between pregnancy nutrition knowledge and eating habits in pregnant women. Methods: With convenient sampling, 189 pregnant women who used community health centers for their ante-natal care were recruited. Data were collected using a self administered questionnaire including items on pregnancy nutrition knowledge (18 items) developed by researcher and items on eating habits (14 items). Cronbach's alpha and exploratory factor analysis were examined to test reliability and construct validity of the scale. Pearson's correlation coefficients were used to identify the relationship between pregnancy nutrition knowledge and eating habits. Results: Cronbach's alpha of 18 items was .80. In factor analysis using principal components, 6 factors explained 65% of the total variance. The level of pregnancy nutrition knowledge was not sufficient but correlations between pregnancy nutrition knowledge and some of eating habits were significant. Specifically, pregnancy nutrition knowledge was positively correlated with good eating habits and negatively with bad eating habits. Conclusion: The pregnancy nutrition knowledge scale developed in this study is acceptable for nutrition education led by nurses. Pregnancy nutrition knowledge and eating habits are considered as major variables for ante-natal nutrition education. In future studies, explorations are needed on dietary intake and physiological indices in pregnant women, comparison of women at risk with those not at risk, and development of nutritional education programs for pregnant women.
This study was conducted to evaluate the nutritional status of the elderly women, who attended the Health Promotion Program of the Seogu Health Center in Daegu. The study subjects were 158 elderly women in an urban community. The general characteristics, dietary behavior (nutritional knowledge, nutritional attitudes and dietary habits), food and nutrient intake were surveyed by an individual interview. The average age of the study subjects was 70.9 $\pm$ 2.3 years of the subject group 79.1% ranged in age from 65 to 74 years and 20.9% were over 75 years. Their average score for nutritional knowledge, nutritional attitudes and dietary habits was 7.3 (total mark of 10), 7.2 (total mark of 10) and 9.1 (total mark of 22) respectively. Specifically, the level of the dietary habits of the study subjects was very low. In relation to food group intake of the study subjects according to age, their food intake was low. The total, plant. and animal food intake were 1078.9 g, 954.4 g (88.5%), and 244.4 g (11.5%), respectively. The mean daily energy intake and nutrient intake according to percentage of the Korean RDA were higher in the from 65 to 74 year group than in those people over 75 years. The average calories and the mean percentage of nutrient intake, except for vitamin C and phosphorus. were below 75% of the Korean RDA. It seems that the nutrient intake was very low. The mean nutrient adequacy ratio (MAR) was 0.59. Nutritional status of age over 75 years old was significantly lower than that of 6574 years old group (Mar = 0.60 VS 0.54, p < 0.05) The correlation coefficients between their dietary behavior (nutritional knowledge, nutritional attitudes, dietary habit) and their mean nutrient adequacy ratio (MAR) showed significant linear relations. In conclusion, if nutritional education is to affect the dietary behavior of elderly women, it should be included in a Program to Promote their nutrition and health status.
Children are an important target of health promotion activities due to the life long effects. Therefore, the purpose of this study was to evaluate a nutrition education program offered to primary school students by community health centers. Eight hundred and twenty-six children from 4 primary schools in Seoul voluntarily attended the program. Teachers taught the classes with materials that were provided to them. The subjects were asked to fill out a questionnaire before and then after completion of the program. The data were analysed by SPSS. The results showed that there were significant positive differences in the children's nutrition knowledge scores after the program (p<0.001). In terms of dietary attitude, the rate of 'yes' responses, as a desirable answer to many questions, had increased (p<0.001); however, this positive change in scores was not statistically significant. For dietary habit changes, it was shown that the proportion of children regularly eating breakfast five days a week had improved to 3.3%. And the proportion of children eating fast foods and instant foods decreased. There was no change in fruit intake, but vegetable intake increased (p<0.001). However, the children's overall dietary habit scores did not show a significant change. In the evaluation of the program, 52.3% of the subjects answered that was helpful, and they viewed 'fast food' as the most interesting topic, whereas 'nutrition labeling' was the most difficult topic in the program. The program's effectiveness was positive in terms of enhancing the 'nutrition knowledge', 'dietary attitudes', and 'dietary habits' of the children. Therefore, the above results indicate that this type of program, provided by community health centers, was effective for nutrition education.
This study was conducted to identify adults' knowledge, attitude, dietary behavior, and lifestyle for cancer prevention, and to examine the relation between these variables. The participants were 414 adults in the Jeonbuk area. The data were analyzed using Pearson correlation coefficients, ANOVA and Duncan test with SPSS v. 12.0. The score for participants' knowledge about cancer was 23.98 points of a possible 30, the score for attitude towards cancer was 44.46 points of a possible 55, the score for preventive dietary behavior for cancer was 36.79 points of a possible 55, and their score for preventive lifestyle for cancer was 29.76 points of a possible 40. The knowledge, attitude towards cancer, dietary behavior, and lifestyle for cancer prevention showed significant differences according to the general characteristics (e.g., age, religion, monthly income, educational level, job, health condition, and interests). There was a significant positive correlation between knowledge about cancer, attitude towards cancer, dietary behavior, and lifestyle for cancer prevention. Dietary behavior for cancer prevention showed a positive correlation with lifestyle for cancer prevention. In conclusion, it is necessary to consider the related factors for the development and implementation of systematic education programs that can encourage and promote preventive health behavior for cancer among adults.
Significant low knowledge and poor attitudes on complementary feeding undermine the practices. This study was a cluster randomized controlled trial in which 284 study participants were assigned into two groups. One intervention group and a control group in a ratio of 1:1. Nutrition education on complementary feeding was carried out among the caregivers in the intervention group but the caregivers in the control group were not educated. To determine complementary feeding knowledge and attitudes, data was collected from caregiver at baseline, midline and at endline using researcher-administered questionnaires. Quantitative data were analyzed using SPSS version 22.0. From the analysis, there was a significant difference in complementary feeding knowledge of the caregivers after the intervention. The baseline difference was -0.06, the midline difference was 3.85 the endline difference was 4.00 and the DID of the baseline and endline was 4.06 which was significant at p=0.001. There was a significant difference in the attitude of the caregivers towards complementary feeding at baseline (-0.14), midline (2.09), endline (3.82) and the DID of baseline and endline was 3.96 which was significant at p=0.001. The intervention improved the caregivers' knowledge on complementary feeding and it improved the attitudes of the caregivers towards adequate complementary feeding.
The purpose of this study was to promote health for elementary school children. It was conducted with a 7 week program focused on the teaching of the food tower and evaluation of its educational effects. Subjects consisted of 75 boys and girls (control group : 37, treatment group : 38) in the 4th grade of elementary school. The results showed as follows. The proportion of boys was a little higher than that of girls. Of their mothers age, the thirties and forties were 66.7% and 33.3%, respectively. 61.3% of mothers had jobs and 86.7% of mothers prepared meals. The average of the anthropometric data of the 2 groups show were all in the normal range. The degree of nutritional knowledge in treatment group after education was significantly increased in all concepts, however, the degree of the control group appeared to show significant increase in only two concepts, such as "snack" and "one-sided diet". The diversity of dietary intake was investigated to evaluate the educational effect using food picture cards. The treatment group showed significant increase in all food groups except "cooked rice", "potatoes" and "fruits", but the control group showed no significant change. The level of nutrition knowledge has a significant correlation with the dversity of the food intake in the treatment group. The preferred lesson for children were "games", "doll playing" and "role playing". The impressive lesson contents were "diverse food intake without one-sided diet", "eating breakfast everyday", "choosing good snacks for health" and "eating less procesed food". These findings indicate that a well-designed program for nutrition education can help to change food habits, and that childrens education helps them to grow and to live as healthy adults. The purpose of this study was to develop a nutrition education program for dietary salt reduction using various nutrition education materials. The effect of a 5-week nutrition education program on salty taste assessment, nutrition knowledge, salt attitude for a high-salt diet, salt content in food, and individual satisfaction with the salt concentration of meals during the education period was evaluated. Nutrition education materials included two animations, a pamphlet, panels, and a website, as well as other training resources. Subjects participating in this study were 335 employees (164 male, 171 female) at 15 foodservice operations in Daegu. Preference for higher levels of salty taste and food containing higher amounts of salt were lowered. Knowledge regarding the necessity for dietary salt reduction was higher (p < 0.001) than before nutrition education, and salt content in a meal was reduced. As the program progressed, average salt concentrations of soups were significantly lowered (p < 0.05), and there was greater satisfaction with the lower concentration (p < 0.001). This was a positive indication of the program's success. In addition, it was found that subjects who participated in the program several times have changed their preference to lower levels of salty taste and have increased their nutrition knowledge (p < 0.05, p < 0.001). Thus, the positive effect of this 5-week nutrition education program developed for, and applied to, foodservice employees, concerning dietary salt reduction was confirmed.
