  • To improve hygienic quality of egg, the ozone treatment was applied. Eggs were inoculated with Salmonella Typhimurium, and the inoculated eggs were treated by ozone (38.8 ppm) for 10-30 min. Furthermore, microbiological and chemical quality changes of eggs were investigated during storage. Initial number of S. Typhimurium of egg shell was 6.18 log CFU/g and the number was increased during storage (p<0.05). However, those of ozonated samples for 10-30 min were 4.22-5.25 log CFU/g, which was lower than that of the control. Especially, ozone treatment for 30 min achieved about 2 decimal reductions and the numbers were maintained during storage. Other physical and chemical characteristics of eggs by ozone treatment, including Haugh unit, yolk color, pHs of egg white and yolk, foaming ability, foam stability and lipid oxidation development were not different when compared with that of the control. Therefore, ozone treatment is one of the available methods to improve hygienic quality of eggs.

  • A preliminary experiment was conducted to produce fowl-typhoid resistant egg type breeds, using three brown egg layer breeders (ISA, Hyline, and Lohman) and two white egg layer breeders (ISA and Lohman). Various economic parameters were measured from day-old to mature stages using parent stocks of each breed. No significant difference in viabilities of mature hens from 34 to 66 wk of ages was found between brown(93.3%) and white(93.5%) egg layer breeders (P>0.05). Also, there was no difference in viabilities of mature cockerels. Although not significant, the mature body weights of brown egg layer breeders tended to be heavier than those of the white egg layer breeders both in hens and cockerels. No difference in feed intakes of mature brown and white hens were detected. Ages of sexual maturity of white and brown egg layer hens were 147.7 and 140.5 d, respectively (P<0.05). Egg production of white egg layer hens during 23-66 weeks age was significantly higher than their counterpart (81.4% vs. 75.0%). Comparisons of Haugh Unit, egg shape index, yolk color, and egg weight between brown and white eggs were not significantly different; however, the brown eggshells were thicker and stronger than those of white eggs (P<0.05).

  • Green tea has been known to show beneficial effects on alleviating stress. The present study was conducted to determine the effects of dietary green tea on quality of eggs, during storage, laid by laying hens treated with corticosterone in order to mimic the current practice of the egg market. Hens were fed for 2 weeks one of three diets containing green tea at 0.0, 0.4 or 1.0%. Each dietary group was divided into two subgroups receiving corticosterone at 0 or 30 mg/kg for 1 week. Eggs, laid at 5-7 days following the initiation of corticosterone treatment, were stored at $10^{\circ}C$ for 1 or 5 weeks and then analyzed for egg quality. After 1 week of storage, egg weight was significantly increased by green tea (p<0.025) but decreased by corticosterone (p<0.0001), but no interaction was observed between both. Corticosterone decreased shell color (p<0.0001) but green tea significantly decreased shell strength (p<0.006). Yolk color, albumen height and Haugh unit were not affected by both treatments. After 5 weeks of storage, corticosterone resulted in reduced egg weight (p<0.01) and eggshell color (p<0.001) and increased shell strength, which were not attenuated by green tea. Taken together, the results of the current study show that dietary corticosterone reduces egg quality during storage, which are attenuated in part by dietary green tea.

  • This study was conducted to Provide basic information Promoting egg qualify improvement and hygienic control by grasping of present market egg distribution system and hygienic quality. The eggs of 57 brands collected from the department food stores in Incheon Metropolitan City were examined. Eggs were kept in room temperature in all the market and 70.2% of the brands were marked the expiration date indicating that eggs would be available over 28 days after being laid. Fifty-four % of the market eggs was classified as a special or functional egg. Expiration date and date of laying were common labelling items in all brands. These items were labelled in trade mark sheet or eggs tray. Only 66.6% of the brands had the mark about net quantity of contents. The inspection about the exterior and contents of eggs has results as follows: eggshell contamination of feces and feather-9.5%, abnormal and broken eggshell -3.9%, blood and meat spots in contents -14.7% and watery whites -1.8%. Average of Haugh Unit(HU) was 56.1 and below HU 31 were 18 of 285 eggs(6.3%), in addition, more than one egg detected in 12 brands(21.1%) among 57 brands have inferior quality. Salmonella enteritidis from eggshell and antibodies directed from S. enteritidis in the yolks of eggs available in the market were not detected. Ranges of Total bacterial count (CFU/ml) on eggshell of eggs were < 10~8.2$\times$10$_3$, and isolation ratio of Escherichia coli were 4.7%. Tetracyclines were detected in 1.8% of the eggs(1 of57 brands) by CHARMII. As mentioned above, quality control and improving distribution system were required to facilitate egg consumption and improve public health by complementing labelling items and quality standards.

  • Non-destructive freshness measurement using spectroscopy has been carried out several times, but research on freshness and freshness has not been conducted. Therefore the purpose of this study is to develop a system for visually measuring and quantifying the air sack inside the egg by non - destructive method. The experimental environment which designed a small chamber was composed of 850nm band of two IR lasers, IR camera and two servo motors to acquire air sack Images. When the air sack volume ratio is 2.9% or less and the density is 0.9800 or more, the Haugh Unit value is 60 or more It was judged to be a fresh egg of a grade B or higher. These results mean, using the weight measurement, nondestructive decision system, and freshness evaluating algorithm. It can be expected to distinguish grade B or more marketable eggs without using destructive methods.

  • Huge amount of persimmon peels, which are byproducts usually arising after making dried persimmons from fresh persimmons, are generated in fall, every year. As the dry matter of persimmon peel contains carbohydrates over 80%, it could be a good candidate for feed. In this study, we evaluated the persimmon peel as a feed resource for a hen laying eggs. Persimmon peel has lower ratio of crude protein and fat composition while higher ratio of crude fiber composition compared to a basal laying hen feed. Feeding the persimmon peel by adding to the feed at the level of 2% or 5% did not affect the egg-laying rate from beginning to the peak of laying. In addition, feeding the persimmon peel did not affect the egg quality either, as the pH, Haugh unit, yolk color and shell thickness of the egg were not different from each other. The composition of amino acids and fatty acids were also almost same for each other, except for the linolenic acid which was slightly higher in the persimmon peel feeding groups. In conclusion, addition of persimmon peel to the feed up to 5% might be helpful to increase the income and reduce the waste produced from the agricultural byproduct.

  • A 42-d study with 384 Hy-line brown laying hens was conducted to assess the effects of dietary octacosanol supplementation on laying performance, egg quality and blood metabolites of laying hens. Hens were randomly allocated into 4 dietary groups of 8 cages each, which were fed basal diet supplemented with 0 (Control), 9 (OCT9), 18 (OCT18), and 27 (OCT27) mg/kg diet of octacosanol isolated from rice bran, respectively. The experiment was conducted in an environmental controlled house and hens were fed twice daily for ad libitum intake. Laying performance was determined over the 42-d period, and egg quality as well as blood metabolites were estimated on d 21 and d 42. Diets in OCT18 and OCT27 increased (p<0.05) laying rate, egg weight, egg mass, egg albumen height, Haugh unit and eggshell strength on d 42, but decreased (p<0.05) feed conversion rate and levels of total cholesterol, triglyceride and low density lipoprotein cholesterol in the serum as compared to those of Control. Feed intake, yolk color, yolk diameter, eggshell thickness and high density lipoprotein cholesterol were similar (p>0.05) among treatments. Results demonstrate that supplementing 18 to 27 mg/kg diet of rice bran octacosanol can improve laying rate and egg quality and reduce blood lipid of laying hens.

  • The effects of dietary betaine on performance, blood compositions, hepatic amino acid concentrations and hormonal secretions were examined in laying hens. Egg production was significantly higher in birds fed the 16.5 % protein diet compared to those fed 14.5 % protein diet(p<0.05), whereas dietary supplementation of betaine did not show any significant effect. The high level of protein and betaine supplementation significantly improved egg weight, egg mass and feed conversion(p<0.05), while eggshell breaking strength, eggshell thickness and Haugh unit were not influenced by betaine and dietary protein levels. Supplemental betaine did not affect serum total protein, albumin and BUN concentration. However, uric acid concentration significantly increased in 600 ppm betaine-fed groups(p<0.05). Concentrations of most hepatic amino acid were influenced by increased protein feeding and dietary betaine supplementation. Hormone studies recorded significantly higher serum and hepatocyte IGF-I concentration in 600 and 1,200 ppm betaine treatments(p<0.05) compared to those of control group. IGF-I mRNA gene expression of hepatocytes revealed statistically correlated increase in 600 and 1,200 ppm betaine-fed groups compared to the controls(p<0.05). Serum IGFBP-3 concentration was significantly elevated in 600 ppm betaine treatments. However, the secretion of IGFBP-1 in hepatocyte of laying hens fed with 600 and 1,200 ppm of betaine showed a significant decrease compared to the control group(p<0.05). Results of these study show that dietary betaine supplementation affects protein and hormone metabolism in laying hens.

  • This study was conducted to investigate whether adding different levels of raw or differently processed chickpea into different diets of laying quails affected live weight, feed intake, feed efficiency, egg weight and internal and external egg quality. Chickpea was used as raw, autoclaved or microwave-processed, and it was involved in the diets on two different levels (20% and 40%). The sample was divided into 7 groups including the control, 20% and 40% raw, 20% and 40% autoclaved, and 20% and 40% microwave-processed groups. 336 ten-week-old female laying quails were used in the study, and the experiment continued for 19 weeks. In the study, the differences among the groups were insignificant in terms of live weight, feed intake, feed efficiency, egg weight and egg quality characteristics such as shell thickness, shell weight, yolk weight, yolk color and albumin index. The differences were significant in terms of the shape index, Haugh unit (p<0.05) and yolk index (p<0.01). Consequently, it was observed that different thermal processes on chickpeas did not usually have a significant effect on the yield performance of the quails, and the results that were obtained were similar to the other groups. However, it was determined that some egg quality characteristics were affected by the autoclaving and microwaving processes. Between the thermal processes, it may be stated that autoclaving provided better results.
