Proper skin care promotes good metabolism and the biological activity of skin, helps maintain the skin in a healthy and beautiful state when combined with nutritional nourishment. Health functional foods are being used for the purpose of enhancing efficient skin care. Health functional foods related to skin care maintain the epidermis, dermal fibroblast layer and subcutaneous tissue that form the skin. Efficient functional foods alleviate the signs of endogenous aging that come with getting older and exogenous aging caused by sunlight. Even though the field of skin care related to health functional foods has received less attention and been the subject of less research compared to functional cosmetics which are developing widely, this area of skin care that maintains and improves the layer of dermal fibroblast through the intake of food, is expected to progress with the commercialization of products in many fields when the related technical research development is galvanized and the related patents are applied for. Research into health functional foods related to skin care in Korea started rather late in comparison to other advanced countries where patents for relevant techniques have been applied for since 1990's together with research conducted on how they might be used for practical purposes. This study used the key words 'skin care, health functional food' to search for Korean patents that have been applied for at the Korean Intellectual Property Office from 1983 to 2011 using the KIPRIS database, in order to help researchers in the related fields by organizing the patented formulas for health functional foods for skin care which have gained attention recently. According to the number of registrations in each industry field, the total number of patents was 1,120 we screened the major patents among them, the field with the largest number was food foodstuff non-alcoholic beverage and preparation or treatment(A23L) with 135, then natural plant medicine & medical supplies and cosmetics(A61K) with 112, microorganisms or enzymes(C12N) with 63, heterocyclic compounds(C07D) with 44, horticulture or cultivation of sea weeds, forestry(A01G) 16 times, listed from the highest to the lowest number of applications. It has been revealed that food, foodstuff, non-alcoholic beverage and preparation or treatment(A23L) was the industry field where the most patents for health functional foods related to skin care were registered.
토양 미생물인 방선균의 배양액으로부터 그람양성균에 대해 항균활성을 가지는 항균성 물질을 탐색하였다. 2,500주의 방선균 배양액을 탐색하여 항균성 물질 생산균주 Streptomyces sp. G9l353을 분리하였고, 그로부터 생산된 항균성 물질인 A91353을 분리 정제하였다. A91353은 다양한 구조해석 연구에 의하여 N-acetyl-phenylalanine으로 동정되었으며 Sc. pyogenes 308A, Sc. pyogenes 77A 등과 같은 그람양성균에 대해 선택적이며, D-alanyl-D-alanine과 상호작용 하여 그람양성균의 세포벽 합성을 저해하는 것으로 사료된다. N-acetyl-phenylalanine의 최소생육저해 농도는 그람양성균에 대해서 $50{\mu}g/ml$ 이었으며, 그람음성균에 대한 활성은 나타나지 않았다.
An improved method for the preparation of monomethine cyanine dyes with quinoline nucleus by one-pot three-component using 1-methyl-2-quinolinethione, quaternized 2- or 4-methylheterocyclic compounds and methyl p-toluenesulfonate as starting materials was described. Compared with the traditional methods, the new synthetic method reduced the reaction steps, shortened the reaction time, avoided the separation and purification of the intermediate and reduced cost. The dyes absorbed in the region 478.0-563.0 nm and had molar extinction coefficients of $1.3{\times}10^4-9.4 {\times}10^4L\;mol^{-1}\;cm^{-1}$. Their fluorescence maxima and Stokes shifts were in the range of 525.2-594.4 nm and 16.2-80.6 nm in different solvents, respectively. From the spectral properties of the dyes in different solvents, it could be found that the ${\lambda}_{max}$ of the dyes were shorter in protonic solvents, and showed hypsochromic shifts with the increase of polarity of the solvents.

Four functional constituents, oxyresveratrol 3'-O-${\beta}$-D-glucoside (ORTG), oxyresveratrol (ORT), t-resveratrol (RT), and moracin (MC) were isolated from the ethanolic extract of mulberry (Morus alba L.) twigs by a series of isolation procedures, including solvent fractionation, and silica-gel, ODS-A, and Sephadex LH-20 column chromatographies. Their chemical structures were identified by NMR and FABMS spectral analysis. Quantitative changes of four phytochemicals in mulberry twigs were determined by HPLC according to cultivar, producing area, and heat processing. ORTG was a major abundant compound in the mulberry twigs, and its levels ranged from 23.7 to 105.5 mg% in six different mulberry cultivars. Three other compounds were present in trace amounts (<1 mg/100 g) or were not detected. Among mulberry cultivars examined, "Yongcheon" showed the highest level of ORTG, whereas "Somok" had the least ORTG content. Levels of four phytochemicals in the mulberry twigs harvested in early September were higher than those harvested in early July. Levels of ORTG and ORT in the "Cheongil" mulberry twigs produced in the Uljin area were higher than those produced in other areas. Generally, levels of ORTG and ORT in mulberry twigs decreased with heat processing, such as steaming, and microwaving except roasting, whereas those of RT and MC did not considerably vary according to heat processing. These results suggest that the roasted mulberry twigs may be useful as potential sources of functional ingredients and foods.
Fermentation is an effective process for providing various beneficial effects in functional beverages. Lactic acid bacteria and yeast fermentation-based biotransformation contribute to enhancement of nutritional value and digestibility, including lactose intolerance reduction and control of infections. In this study, the probiotic fermented fruit juice (PFJ) was produced by Lactobacillus plantarum TISTR 1465, Lactobacillus salivarius TISTR 1112, and Saccharomyces boulardii CNCM I-745 while mixed fruit juice (MFJ) was used as the basic medium for microorganism growth. The potential function, the anti-salmonella activity of PFJ, was found to be effective at 250 mg/ml of MIC and 500 mg/ml of MBC. Biofilm inhibition was performed using the PFJ samples and showed at least 70% reduction in cell attachment at the MIC concentration of Salmonella Typhi DMST 22842. The antioxidant activities of PFJ were determined and the results revealed that FSB.25 exhibited 78.40 ± 0.51 mM TE/ml by FRAP assay, while FPSB.25 exhibited 3.44 ± 0.10 mM TE/ml by DPPH assay. The volatile compounds of PFJ were characterized by GC-MS, which identified alcohol, aldehyde, acid, ester, ketone, phenol, and terpene. The most abundant organic acid and alcohol detected in PFJ were acetic acid and 2-phenylethanol, and the most represented terpene was β-damascenone. The sensory attributes showed scores higher than 7 on a 9-point hedonic scale for the FPB.25, illustrating that it was well accepted by panelists. Taken together, our results showed that PFJ could meet current consumer demand regarding natural and functional, fruit-based fermented beverages.
함초발효액의 기능성 해명과 유용 기능성 성분 탐색연구의 일환으로 함초발효액으로부터 항산화 활성물질을 분리하여 구조해석 하였다. 함초발효액을 용매분획 하여 얻어진 용매분획물들 중 $CHCl_3$층이 높은 항산화 활성을 나타냈다. 그래서 $CHCl_3$층을 Sephadex LH-20 column chromatography의 분자체 효과 및 흡착능의 특성을 각각 이용하여 정제함으로써 2종의 항산화 활성물질을 분리하였다. 단리한 이들 화합물을 대상으로 MS 및 NMR 분석을 통하여 cirsiumaldehyde(1)와 chrysoeriol(2)로 각각 동정하였다. 이 화합물들은 $ABTS^+$ 및 DPPH radical-scavenging 활성을 나타냈으며, 화합물 2는 화합물 1에 비해 더 높은 활성을 나타냈다.
식물자원으로부터 생리활성 물질의 이용측면에서 국내에서 자생하고 있는 광나무 잎을 대상으로 하여 다양한 생리활성을 가지는 것으로 보고된 페놀성 화합물의 분포를 확인하였다. 총 페놀성 함량은 $0.89{\sim}1.53%$, 축합형 탄닌은 $0.10{\sim}0.13%$였으며, flavonoid는 aglycone인 apigenin, luteolin과 칼럼크로마토그라피를 행하여 분획으로 분리한 후 가수분해하여 이들의 배당체를 확인하였다. 페놀산의 분획 중 유리형 페놀산 화합물에는 tyrosol, t-cinnamic acid, p-Hydroxybenzoic acid, vanillic acid, shikimic acid, protocatecuic acid등이 존재하였다. 에스테르형 페놀산 화합물에는 tyrosol, t-cinnamic acid, ferulic acid, esculetin, caffeic acid, p-coumaric acid, hydroxytyrosol 등이 함유되었다. 결합형 페놀성 화합물에는 tyrosol, t-cinnamic, p-coumaric acid와 미확인 페놀성 물질들이 존재하였다. 따라서 광나무 잎은 xanthine oxidase 활성저해, LDL 산화, 혈소판 응집저해, 항균활성 등 다양한 생리활성을 나타내는 것으로 보고되고 있는 tyrosol, hydroxytyrosol, protocatecuic acid 등 풍부한 페놀성 화합물을 함유하고 있으므로 유용한 식물자원이 될 수 있음을 확인하였다.
Background: The objective of this study was to make colloidal dispersions of the active compounds of radix of Angelica gigas Nakai that could be charaterized as nano-composites using hot melt extrusion (HME). Food grade hydrophilic polymer matrices were used to disperse these compound in aqueous media. Methods and Results: Extrudate solid formulations (ESFs) mediated by various HPMCs (hydroxypropyl methylcelluloses) and Na-Alg polymers made from ultrafine powder of the radix of Angelica gigas Nakai were developed through a physical crosslink method (HME) using an ionization agent (treatment with acetic acid) and different food grade polymers [HPMCs, such as HP55, CN40H, AN6 and sodium alignate (Na-Alg)]. X-ray powder diffraction (XRD) analysis confirmed the amorphization of crystal compounds in the HP55-mediated extrudate solid formulation (HP55-ESF). Differential scanning calorimetry (DSC) analysis indicated a lower enthalpy (${\Delta}H=10.62J/g$) of glass transition temperature (Tg) in the HP55-ESF than in the other formulations. Infrared fourier transform spectroscopy (FT-IR) revealed that new functional groups were produced in the HP55-ESF. The content of phenolic compounds, flavonoid (including decursin and decursinol angelate) content, and antioxidant activity increased by 5, 10, and 2 times in the HP55-ESF, respectively. The production of water soluble (61.5%) nano-sized (323 nm) particles was achieved in the HP55-ESF. Conclusions: Nano-composites were developed herein utilizing melt-extruded solid dispersion technology, including food grade polymer enhanced nano dispersion (< 500 nm) of active compounds from the radix of Angelica gigas Nakai with enhanced solubility and bioavailability. These nano-composites of the radix of Angelica gigas Nakai can be developed and marketed as products with high therapeutic performance.
다양한 생리활성을 갖는 것으로 알려진 갈근을 중급 정도의 녹차와 혼합하여 갈근녹차를 제조하고 기호도와 관련이 있는 휘발성성분을 동시증류추출법에 의해 추출하여 GC 및 GC-MS로 분석, 동정하고 비교하였다. 갈근과 녹차를 1:1로 혼합한 갈근녹차의 향기성분으로 총 82종류를 동정하였다. 갈근녹차에는 갈근의 향기성분 18종류와 녹차의 향기성분 33종류 및 공통으로 포함된 31종류의 화합물들로 구성되어 있었다. 녹차의 향기성분으로 linalool, $\alpha$-ionone 및 nerolidol 등의 꽃향과 safranal, methyl butanal 등의 달콤한 향이 대부분을 차지하였다. 갈근의 향기성분으로 hexanal, trans-2-nonenal 및 $\beta$-selinene 등의 풋풋한 향과 decanal, limonene 등의 달콤한 향이 대부분을 차지하였다. 갈근녹차의 향기성분은 녹차의 향기성분인 달콤한 향을 띄는 furan류와 꽃향이나 산뜻한 과일 향을 띄는 linalool, nerolidol, 구수한 향을 띄는 pyrazine류와 pyrrole류에 갈근특유의 향기성분인 terpene계 화합물과 풋풋한 향을 띄는 trans-2-nonenal 및 $\beta$-selinene 등이 혼합되어 나타났다.
진달래꽃을 60% ethanol로 추출하여 추출물의 H. pylori에 대한 저해활성의 측정과 저해물질의 분리 및 동정을 시행하였다. 또한 H. pylori균에 대한 항균활성은 60% ethanol 추출물에서 phenol 화합물을 200${\mu}g/ml$ 이상 주입하였을 때부터 22 mm이상의 clear zone이 관찰되어 H. pylori균에 대한 높은 항균력을 나타내었다. 저해물질의 분리는 Sephadex LH-20 column을 이용하여 분리한 결과 6개의 fraction으로 분리되었으며, H. pylori 저해활성을 나타낸 fraction D를 MCI-gel CHP-20 column을 이용하여 normal phase type인 ethanol 100%에서 0%로 농도를 감소시키며 용출한 결과 5개의 단일 물질 분획을 얻을 수 있었다. 그 중 세 가지의 물질에 대해 H. pylori저해활성이 나타나 FAB-MS, $^1H$와 $^{13}C$ NMR 및 IR spectrum을 사용하여 구조 동정한 결과 quercitrin (quercetin-3-O-rhamnopyranoside), myricitrin (myricetin-3-O-rhamnopyranoside) 및 quercetin인 것으로 확인되었다.
