Fruits Preference of Elementary Children for Fruits Consumption Promotion in School Lunch Program - Focus on Apples and Pears - (과실류 소비촉진을 위한 초등학교 급식에서의 과실류 선호도 조사 - 사과와 배를 중심으로 -)

  • This study was performed to investigate the preference and perception on fruits especially, focusing on apples and pears served in elementary school lunch programs. The subjects of this study were 1,106 students (504 female and 595 male students)from seven elementary schools in Seoul. The survey was conducted by using self-administered questionnaire from July 10 to July 20, 2006. Based on the frequency analysis results, 45% of respondents ate fruits every day and 42% had fruits 2-3 times per week. Approximately, 53% of respondents indicated their usual time to eat fruits was after dinner and secondly 27% had fruits between lunch and dinner. Majority of respondents chose a watermelon as the most preferred fruits and the first chosen among nine fruits (apple, pear, madarin, strawberry, cherry tomato, watermelon, grape, melon, and peach). Cherry tomato was found as the least preferred fruits by 30% of students, however cherry tomato was most frequently offered fruits in elementary school lunch menu. About 50% students were satisfied with the served fruits in their school lunch program. In addition, most students said that they would have fruits more frequently in their lunch menu. However, one fifth of students addressed that they were not satisfied with the fruits in school lunch program because of kinds of fruits, freshness of fruits, taste of fruits, and quantity of fruits. Almost 71% of students preferred apples. Seventy three percents of students preferred eating apples without peel and 78% of students ate apples as slices of apples. In addition, 61% of students indicated their preference of apple salads. Many students responded they did not eat apples and pears frequently since they do not have a chance to eat them. The implications to increase the chance to eat fruits and promote elementary children's fruits consumption were discussed.

Effect of Degree of Ripeness and Size of Fruit on the Feeding Preference in Some Breeding Birds (식물의 종류와 열매의 크기 및 성숙도가 조류의 먹이선택에 미치는 영향)

  • In other to know the feeding preference over the degree of ripeness and size of fruits in birds, we gave them to three bird species in breeding condition, counted and analyzed the number of fruits by correspondence ordination technique. Chrysolophus pictus did not show a distinct preference in respect to degree of maturity or size of fruits of among three tree species. Columba rupestris preferred un-ripen fruits over ripen ones of Prunus yedoensis or Elaeagnus multiflora, but did not choose selectively in case of fruits of Malus sieboldii. Pavo muticus showed the reverse favorable pattern of Columba rupestris. Total feeding amounts eaten by birds were dependent on the initial feeding amounts of fruits. These results indicated that in feeding activity some birds chose differently in terms of species or maturity of fruits, but not in fruit size.

A Survey on Food Preference of the Elementary School Students in Chollabukdo Area (전북 일부지역 초등학생의 식품 기호도에 관한 연구)

  • This study was done to provide basic information for nutrition education and meal planning preference, Children's preference according to cooking method is high in fruit. drink, fried foods, dish food, but low in Sangchae, Sukchae, and Jangachies. The preference of staple food was that the most preferred foods were plain rice in rice, chicken gruel in gruels, rolled rice in one dish foods. and Jajangmyeon in noodles. The preference of side dishes was that the most preferred foods were seaweed in soups, Kimchi in Chigaes, beef and pork rib in steamed foods, beef in braised foods, Bulgogi in grilled foods, egg-fry in pan fried foods, Ddukbokki in stir-fried foods, pork cutlet in fried foods, Dotorimuk in Sangchaes, fruit in salads, bean sprouts in Sukchaes, Baechu Kimchi in Kimchies and Danmuji in Jangachies. The preference of snack was that the most preferred foods were citrus in fruits, Kkuldduk in rice cakes, hotdog in bread, ice cream in milk and dairy products and fruits juice in drink.

The Effect Evaluation of Nutrition Education Program for Preschool Children in Gyunsggi-do (경기지역 유치원 아동을 위한 영양교육 프로그램의 효과 평가)

  • The following study has been conducted by carrying out the nutrition education program for preschool children and measuring the change in their food preference and nutritional knowledge. The 28 boys and 22 girls with the average height of $117.4{\pm}5.1cm$ and weight $21.8{\pm}3.5kg$ participated in the study. The favorite foods of the children were: meat (51.1%) being the highest, fruits (38.3%), carbohydrates (23.4%), while the least favored food was vegetables (75%). It indicated that 36.2% of the children were having unbalanced diets. The change in food preference after the implementation of the nutrition education program was the significant increase in preference in vegetables and fruits (p<0.01) and proteins such as meat, fish, eggs and beans (p<0.05). The differences in food preference among boys and girls were that the boys showed significant increase in vegetables and fruits (p<0.01) while there was a decrease in the simple sugar groups (p<0.01). Regarding girls, there were significant increases in vegetables and fruits as well as protein groups of meat, fish, eggs and beans (p<0.01). The changes in the nutritional knowledge of the preschool children after the implementation of the nutrition education program were scores for the fruits and vegetables group and carbohydrates group showed a significant increase while the scores for the oil and nuts group had decreased considerably. The average score on nutritional knowledge has significantly increased from 9.07 to 10.17 (p<0.01) and the score on the roles of the nutrients increased from 3.02 to 3.48 (p<0.05). The changes in eating habits of the children after the nutrition education were the answer for the change in eating habits of the children after the nutrition education was 'slight change' 61.4%. Also, the change in food preference was 'slight change' 61.4% and the improvement in nutrition education was 'slightly' 50%. According to the results of this study, it is evident that the change in eating habits and the acquisition of nutritional knowledge is very difficult, thus requiring consistent and prolonged education. Therefore, it seems to be best to include a more systematic and professional nutrition education program in preschool education. Also, the education for the parents should be implemented since the effect of education on children is greater when it is closely connected with the education at home.

A Study on the Preference and the Actual Using Patterns of the Bakery Products using Functional Ingredients (기능성 재료를 이용한 베이커리 제품의 선호도와 이용실태에 관한 연구 - 수원 지역 여성을 중심으로 -)

  • This research was accomplished to analyze the preference and the actual using patterns of the bakery products using functional ingredients by subjects' age. This survey was examined by the self-administered questionnaire method for 374 female subjects in Suwon. All respondents preferred breads than confectionaries with functional ingredients. As for the products of cooking ingredients, cookies, roll-cake, cake, chocolate, the preference of teenagers was higher than those of the other groups. Subjects preferred potatoes, fruits, rice and green tea as functional ingredients. Over thirties showed the high preference over beans, vegetables, mushrooms, ginseng and oriental herbs while fruits were highly preferred in teenagers and twenties. The ratio of using the bakery products with functional ingredients once or twice a week was higher in over thirties than those of the other groups. Subjects answered that they generally spent $3,000won\sim5,000won$ on those products. Functionality of products was considered as the more important factor in thirties than in the other groups. The lack of information about these products and functional ingredients was reported by teenagers and twenties. These results would be basic data for marketing or improvement of baking products with functional ingredients.

Comparison of Storability and Quality of Sweet Pepper (Capsicum annum L.) Grown in Two Different Hydroponics Media

  • This study compared the effects of cocopeat and perlite growth media on the storability and quality of sweet pepper fruit stored using modified atmosphere packages (MAP) and carton boxes. The fruits were stored at 8℃ for 35 and 30 days, respectively. Perlite-grown fruits had a significantly lower size at harvest due to the medium's inability to hold plenty of water during the growing stage. Contrary to what is expected for small fruits, the result shows box-stored perlite-grown fruits to have lower weight loss and a longer shelf life than cocopeat-grown fruits, while MAP fruits have indifference. Perlite fruits also had a higher quality in terms of dry matter, soluble solids, and vitamin C, while box-stored fruits had a better visual quality. As expected, respiration and ethylene production rates were high, and fruits had similar after-storage firmness values. Based on the findings, perlite-grown sweet pepper fruits may have a better quality and give preference in a box storage condition.

A Study on Consumer′s Preference and Use Patterns of Salad Dressing (샐러드 드레싱에 대한 소비자의 기호도와 이용 실태 조사 연구 - 대구지역을 중심으로 -)

  • This study was conducted to evaluate the consumers' preferences and perceptions on the salad and its dressings, via a total of 401 subjects in the Taegu area on the basis of 5-point Likert scale. Anthropometric data included the total subjects consisted of 66 females and 335 males: categorized by age, 20's (103), 30's (135). 40's (83), over 50's (80), The average size of family was 4.2 persons. According to BMI, 64.8% of the subjects belonged to the normal group. The age group that liked salad most was the 20's group, which was also the group that ate salad most frequently. The salad was perceived as food item which is convenient to eat(3.83), healthy(3.63), easy to prepare(3.73) and delicious(3.61) but rarely as a expensive item(2.44). The ingredients, used for salad preparation included fruits and vegetables(3.19) such as tomato and cucumber. Among the salad dressings, the fruit dressing was preferred the most(4.59), while the mayonnaise the least(3.59). The mayonnaise was perceived as an item with highest calories(4.1), and hardly perceived as a luxury item(2.78). The preference for the fruits dressing was highly correlated with the degree of education(p<0.05), age(p<0.001) and BMI(p<0.001). The higher the degree of education, the lower the level of age group, and the lower the BMI, the higher preference for the fruit salad dressing was demonstrated.

Measuring Total Solids Quantity as Easy Method for Quality Evaluation of Squash Fruits (호박의 손쉬운 품질 평가를 위한 건물율 측정방법 이용)

  • Fruit quality is essential for increasing marketability and consumer acceptance. To suggest an easy method for measurement of squash fruit quality, 10 varieties/cultivars and 1 populations were used as experimental materials. The fruits were harvested in marketable maturity to investigate the relation between quality factors and sensory test. The total solids content is one of the most important factors associated with sensory taste in fruits. The major squash varieties/cultivars such as 'Puthobag', 'Seoulmadi', 'Aehobag 1', 'Aehobag 2', 'Ford Zucchini', and 'Zucchini' showed total solids content of 6.4, 7.5, 7.3, 5.8, 4.7, and 4.30%, respectively. The preference values for 'Puthobag', 'Seoulmadi', 'Aehobag 1', and 'Aehobag 2', which are generally preferable varieties/cultivars, were 4.6, 4.7, 4.8, and 4.3, respectively. On the other hand, the preference values for variety 'Ford Zucchini' and cultivar 'Zucchni', which are not generally preferable, were 1.6 and 1.4, respectively. There was no significant correlation between plant length and total solids content or starch content in the fruits thereby suggesting the possibility of breeding bush type squash cultivars with good taste. This easy method of weighing dry matters of squash fruits might be useful for marketable quality index.

A Study on the Relationship between Nutrition Knowledge and Food Habit of Mothers and Food Preference and other Factors of their Elementary School Children. (어머니의 영양지식 및 식습관과 국민학교 아동의 식품기호와의 관계에 관한 연구)

  • This survey was carried out to investigate the correlationship between the nutrition knowledge scores and food habit of the mothers and food preference and other factors of the 272 elementary school children in Masan. The results were summarized as follows : 1. Children's most favorite food was fruits, but they dislike spicy vegetables and some fermented foods. Preferences of the male children to food groups such as protein, calcium and carbohydrate were significantly higher than those of the female children. 2. The rate of the children who take between-meal snacks 2 o 3 times a day was high and those children who skip breakfast take snacks more often. They prefer to eat fruits, dairy products and cakes as their snacks. The body weight of the children who take snacks more frequently was rather lower. 3. As the mother's nutrition knowledge scores rise, so do those of food habit scores. The nutrition knowledge scores go up according to the education degree of the mothers, but the food habit scores seem to have little to do with their education degree. The nutrition knowledge scores of the working mothers were lower than those of the non-working mothers. 4. There was strong positive correlation between the food preference on the food group and those on the other food groups of the children. As the food habit scores of the mothers rise, the children prefer to take calcium and carbohydrate group. Those who take more fat showed higher body weight.

A Study on the Quality Safety of Apples by Region Using MA Packaging Materials (MA포장재 이용한 지역별 사과의 품질 안전성에 관한 연구)

  • Apples are one of the most produced fruits in Korea, with 2,423,000 tons of fruits produced in Korea in 2018, of which 365,000 tons (MAF, 2018) account for about 15% of the total production. For quality safety after harvesting apples, the application of MA(modified atmosphere) packaging technology (Mostofi et. al., 2008) is being actively studied. In addition, the effects of functional packaging materials that have added functions such as fireproof, antibacterial, high-blocking, degradability, and far-infrared radiation have been studied (Chung et al., 2009). In addition, there are reports of the effects of quality changes (Park et al., 2007) and MA storage methods on the quality of apples by packing apples with functional MA films((Park et al., 2004). But there are only few reports on quality safety by analyzing the correlation between the change of reducing sugar and total sugar and preference during storage by packing Geochang, Yeongju, and Yesan apples in functional MA film. Therefore, this study aims to propose a method to secure the quality safety of apples by investigating the effect of sugar change on the preference of apples during storage by packing apples in three regions in functional MA films.
