User Evaluation of the Farmers' Market Design in the Rural Village Festival - The Perspective of the Universal Design - (농촌마을축제의 농산물 직거래 장터 디자인에 대한 사용자 평가 - 유니버설디자인 관점에서 -)

  • This study is in order to promote agricultural products sold in the rural village festivals direct transaction marketplace and enabled by a comprehensive user evaluation of the rural village festivals direct transaction marketplaces in universal design perspective, provide a design plan for your care and comfort of a rural village festival Direct Deals Marketplace there is a purpose. Thus, redefining the principles of universal design suitable for direct transactions rural village festival marketplaces, and to do this by reclassifying the design elements of the farmstand-type in a framework was developed 30 questions to evaluate items for Universal Design Evaluation. And, the selection of three villages along the rural village festivals scale and conducted a survey of Universal Design Rating. As a result, the overall assessment was positive for B villages of rural village festival marketplaces direct transactions, there was a significant difference with the other village. In particular, there was a notable difference in the fairness, efficiency, promotional, safety and hygiene. And, there was a significant difference in design elements for directing atmosphere by selling space, product display, hygiene. This paper presents the design suggestions about a rural village festivals farmers' market aspects of universal design for improvement of the marketplace as following, 1) placement for differentiation the markerplace and around sites in the festival place, 2) to build the operating systems of sustainable management for arrangement and organization during the festival, 3) to install the device for maintaining agricultural products freshness 4) to separate the sale of local specialty products and general food products, and 5) to locate the suitable space considering the visitors tour route in the festival place for large-scale festival.

Demand Analysis of Technology Development for Smart Village based on Community Activities (공동체 활동을 기반으로 한 스마트빌리지 기술개발 수요분석)

  • In this study, demands of smart technology development were analyzed for rural village communities. Questionnaire items were derived by grasping the current status of information and communication technology. 49 villages in 8 regions were selected and surveys and statistical analysis were conducted. The main results of the study are as follows. First, 92% of community leaders use smartphones, search for information (38%), communicate with the Internet (36%) using smartphones, use KakaoTalk (31%), and Facebook (24%). Second, in the rural and urban exchange activities, promote support information service (51%) and promote method suggestion service (48.5%) showed that the demand for services in promote field was high. It is linked to the creation of economic opportunities. Third, in the income and production activities, demand for distribution services technology (39.3%) was high in the field of production and distribution, and cold chains that help maintain freshness until food, such as meat, fish, and vegetables are delivered to consumers when agricultural products are distributed. The constant temperature control system needs to be actively introduced. Fourth, autonomy activities showed the highest demand for air conditioning and control systems (34.2%) of community building, and the lowest demand for electronic voting (9.4%) and videoconferencing (9.4%) services. Lastly, in the general activity area of the community, the demand for technology of emergency services (37.1%) and health self-diagnosis service (35.4%), which are technologies in the welfare sector, ranked first and second respectively.

Processing of Ready-to-Cook Food Materials with Dark Fleshed Fish 1, Processing of Ready-to-Cook Sardine Meat "Surimi" (일시다획성 적색육어류를 이용한 중간식품소재 개발에 관한 연구 1. 정어리 연육의 가공)

  • In order to develop new types of product which can offer a sanitary and preservative duality, and convenience to consumers in marketing and cooking particularly in urban area, two processing methods of ready-to-cook food materials with dark fleshed fishes like sardine and mackerel were investigated. A method applied, in this work, is processing of ready-to-cook sardine meat "surimi" in which sardine meat is treated with alkaline solution to stabilize myofibrillar proteins, washed thoroughly with water to remove soluble components, and added with a proper amount of polyphosphate and sorbitol to enforce the functional property of meat such as water holding capasity, elasticity, and gel strength. The textural properties of fish meat paste made from the "surimi" meat were greatly dependent upon the stability of myofibrillar proteins and the elimination of water soluble components. The salt soluble proteins of sardine meat were so unstable in post-mortem stage that the gel forming ability was lost within 3 days at $5^{\circ}C$ storage and 2 to 3 weeks even at $-20^{\circ}C$ although the freshness was well kept for a week at $5^{\circ}C$ and several months of storage at $-20^{\circ}C$. A proper way of treatment to keep the proteins stable was that fish meat must be washed with $0.4\%$ sodium bicarbonate solution followed by 3 to 4 times washing with water. This resulted in removal of $80\%$ water soluble proteins and 50 to $60\%$ lipids. The addition of polyphosphate and sorbitol affected the stability of proteins during the storage of "surimi" meat. When phosphate and sorbitol were added in the ratio of $0.3\%:\;0.3\%,\;0.6\%:\;3\%,\;0.6\%:\;6\%,\;0:\,0.3\%\;and\;0.3\%:\;0$, the gel forming ability terminated in 35 days, 21 days, 14 days, 14 days, and 14 days of storage at $-30^{\circ}C$, respectively, while that of the control was 7 days. And it was also noteworthy that at least 8.0 mg/g of salt soluble protein nitrogen content was required for gel formation.

  • In 2007, due to the outcome of the Korea-U.S. FTA negotiations, the opportunities for American beef greatly increased and a serious change in the domestic dining market is expected. The market currently faces issues such as the settlement of the beef origin declaration policy and the fulfillment of customer needs on domestic and imported beef. The following are the summary of the results of the aforementioned research and analysis. First, the consumer awareness level of origin declarations was comparatively low. Second, the reason behind the propensity for imported beef was the comparatively cheaper price despite the lower taste quality, and it was determined that there is a high level of distrust on domestic beef sold in general restaurants. Third, domestic beef showed a high valuation in taste, safety and freshness, while imported beef showed results which were below average. Concluding from the above research results, a dining environment should be created where consumers can trust what they eat through settlement of an origin declaration policy, and more efforts should be put into fulfilling consumer needs for both domestic and imported beef.

Highly Sensitive sub-ppm level Trimethylamine Gas Sensor Based on Porous CuO/In2O3 Nanostructures (고감도 sub-ppm 수준의 다공성 CuO/In2O3나노구조 트리메틸아민 가스센서)

  • Trimethylamine (TMA) is an organic amine gas that serves as a key indicator for evaluating the freshness of seafood. We synthesized a highly sensitive trimethylamine (TMA) sensor based on porous indium oxide (In2O3) nanoparticles (NPs) loaded with CuO in the range of 6.7 to 28.4 at.%. CuO was loaded by hydrazine reduction onto as prepared In2O3 NPs using the microwave irradiation method. Crystal structures, morphologies, and chemical composition of CuO/In2O3 nanostructures (NSs) were characterized by X-ray diffraction, field emission scanning electron microscopy, energy-dispersive X-ray spectroscopy, and inductively coupled plasma mass spectrometry. The response of the 23.8 at.% CuO/In2O3 to 2.5 ppm TMA at 325℃ was 5.7, which was 2.8 times higher than that of porous In2O3 NPs. The high sensitivity and selective detection of TMA were attributed to electronic interactions between CuO and In2O3 and the high catalytic activity of CuO to TMA. Altogether, this CuO/In2O3 sensor could be used in the future to detect low concentrations of TMA, thereby aiding in the storage and distribution of marine food resources.

  • The purpose of this study is development of the quality assessment for interior space and foodservice management in Italian restaurants. Also this study aims to evaluate them which are consisted of 30 items by Likert 5 point scale. As a result of the evaluation, 'food taste' and 'ingredients freshness' were the most important factors in interior space and the foodservice in Italian restaurants. The IPA technique proved that nine items including Q4, Q9, Q10, Q11, Q14, Q16, Q19, Q24, Q28 were in 'Doing great, keep it up' and five items such as Q13, Q25, Q26, Q27, Q29 that got high expectation and low perception needed to be focused for quality management strategies.

Effect of Storage Temperature, Time and Natural Additives on the Changes in Flavor of Lentinus edodes (저장온도, 시간 및 천연첨가제가 표고버섯의 향 변화에 미치는 영향)

  • This study was carried out to investigate the flavor changes of Lentinus edodes at different storage temperatures, time and natural additives using an electronic nose with six metal oxide sensors. To preserve good quality of modified atmosphere packaged Lentinus edodes, Four natural additives(Artemisia princeps, Artemisia capillaries, green tea, and activated charcoal) were used. The mushrooms were packaged in polyethylene films with each treatment and were stored at 5, 10 and $20^{\circ}C$. Increase in storage temperature and storage time decreased the ratio of resistance in the electronic nose as well as first principal component scores. In addition, indicating quality of mushroom reduced at high temperature and long storage time. The results of the electronic nose and the principal component analysis(PCA) in the mushrooms with Artemisia princeps and Artemisia capillaries that were stored at $5^{\circ}C$, and green tea and activated charcoal which were stored at $10^{\circ}C$ showed the good effects to maintain the freshness along with reducing off-flavor. However, there were no differences between control and treatment groups at $20^{\circ}C$.

Quality Evaluation of Take-out Services at Restaurants in Chungbuk Province (충청북도지역 외식업체의 테이크아웃서비스 품질특성 분석)

  • The purpose of this research was to evaluate the quality of take-out services at restaurants in Chungbuk Province. A questionnaire survey by 450 customers who had experience in take-out service at the restaurants was conducted and 378 completed questionnaires were available for statistical evaluation. Statistical analyses were made of raw data by SAS V8.2. The scale for analyzing the importance and performance of the service quality was composed of 5-point Likert scales. The main results of this study are as follow: The quality attributes of take-out service were rearranged into four factors in terms of food, sanitation, access and service. The importance score was higher than performance score. IPA showed that 'freshness of food material', 'cleanliness and hygiene in food', 'sanitation of facilities', 'neatness of employees' and 'price in food' was included in 'focus here' area. There was significantly positive correlation between factors such as food, sanitation, access, service and overall customer satisfaction (p<.001); between factors and repurchasing intentions (p<.001); and between customer satisfaction and repurchasing intentions (p<.001). According to multiple regression analysis, 26.27% of the variance in respondents' overall satisfaction score and 9.21% of the variance in respondents' repurchasing intention score could be explained by factors such as food, sanitation, access and service.

Study on Manufacturing and Characteristics of Phase Change Materials for Having Latent Heat (열저장 물질로써 잠열재의 제조 및 특성 연구)

  • The purpose of this study is to develop the cold chain system by developing optimal phase change materials (PCM). There are some benefits from developing this system such as keeping freshness of agriculture products, saving energy, etc. The major results are as follows. To decide a latent heat material, the characteristics of water, sodium, polyacrylate, ethanol and N-tetradecane are analysed. Also, an insulating material is made by mixing water, nucleating agent and latent heat material, using cementing method. In addition, the sensitivity analysis for developed latent heat material($K_l,\;K_2,\;K_3$) is conducted. For $K_l,\;K_2,\;K_3$ which cans keep latent heat temperature, ranging from $0\;to\;5^{\circ}C,\;5\;to\;10^{\circ}C,\;10\;to\;15^{\circ}C$. it can keeps latent heat temperature at radiant heat (5, 12, $17^{\circ}C$) and transportation latent heat container both melting temperature and amount of latent heat of Kl are $-1.6{\pm}1.0^{\circ}C$, 326.51 J/g, respectively and freezing temperature and latent heat are $-7.98{\pm}1.5^{\circ}C$ and 174.18 J/g. and $K_2$ are $7.41{\pm}1.5^{\circ}C$, 89.80 J/g, respectively and freezing temperature and latent heat are $-2.14{\pm}1.5^{\circ}C$ and 83.90 J/g. and $K_3$ are $9.54{\pm}1.0^{\circ}C$, 145.42 J/g, respectively and freezing temperature and latent heat are $0.21{\pm}1.0^{\circ}C$ and 152.48 J/g.
