솔빈산 칼륨이 첨가되지 않은 육제품의 저장 수명과 품질 특성 (Shelf-life and Quality Characteristics of Potassium Sorbate-free Meat Products)

  • This study aimed for the examination of quality characteristics and safety of potassium sorbate-free meat products. Therefore, experiments were carried out on the frankfurter sausage and pressed ham, which were stored at 4 and 30$^{\circ}C$ for up to 40 days. The potassium sorbate concentrations of the frankfurter sausage and pressed ham obtained from local market ranged from 1.087 to 1.449g / kg, which were below the permitted value as prescribed in the Korean Hygienic Regulation. At the 0 day the total aerobic bacterial counts of frankfurter sausage and pressed ham were in the level of around 103.0 and 103.4 CFU / g, respectively. However, they were prominently increased after 20 days at 4$^{\circ}C$ and 10 days at 30$^{\circ}C$ to higher than 105 CFU / g. After 30 days the counts were increased to 106.5 and 107.2 CFU / g, respectively. The growth curve of lactic acid bacteria was shown to be similar with that of total bacteria. the counts of lactic acid bacteria of the products stored at 4$^{\circ}C$ were 101∼102 CFU / g lower than those stored at 30$^{\circ}C$. Coliform bacteria was not detected in both of the products stored at 4$^{\circ}C$ even after 40 days storage, but after 10 days at the 30$^{\circ}C$. No significant differences in the microbial counts examined in this study were observed between frankfurter sausage and pressed ham. The biochemical tests on the isolated colonies from Clostridein agar showed no presence of Clostridium botulinum and Clostridium perfringens in the meat products examined. The pH of frankfurter sausage and pressed ham at the beginning was about 6.6, which level was maintained relatively constant during the storage at 4$^{\circ}C$, but it was increased after decrease to about 5.5 during the storage at 30$^{\circ}C$. TBA value was increased slightly till 30 days, but after that time increased sharply. VBN value was increased slowly during the whole storage, but it was more than 30 mg% for the samples stored at 30$^{\circ}C$.

Properties of Frankfurter-type Sausages with Pork Back-fat Replaced with Bovine Heart Surimi-like Materials

  • This study investigates the effect of bovine heart surimi-like material (BHSM) used as a back fat replacer, on the physicochemical and sensory characteristics of frankfurter-type sausages. Frankfurter-type sausage with added BHSM had a higher moisture content and lower fat content than the control. In addition, the samples with added BHSM had higher pH, cooking loss and 2-thiobarbituric acid-reactive substance (TBARS) value and lower water exudation than the control. The sausage formulation with 40% BHSM was more effective in delaying lipid oxidation without affecting cooking loss compared to the 60% BHSM treatment sample. Results showed that hardness values increased upon replacement with BHSM, and sausages manufactured with 40% BHSM had higher lightness and lower redness values. Panelists found there were no differences in color, odor, and tenderness scores and the overall acceptability score found that treatment samples containing 20% and 40% BHSM were preferable to the control after storage for 14 d. These results indicate that fat replacement with BHSM was beneficial to the quality of frankfurter-type sausages, and acceptable reduced-fat products can be produced when back fat is replaced with up to 40% BHSM.

Effects of Dietary Fiber Extracted from Pumpkin (Cucurbita maxima Duch.) on the Physico-Chemical and Sensory Characteristics of Reduced-Fat Frankfurters

  • In this study, we investigated the effects of reducing fat levels from 30% to 25, 20, and 15% by substituting pork fat with water and pumpkin fiber (2%) on the quality of frankfurters compared with control. Decreasing the fat concentration from 30% to 15% significantly increased moisture content, redness of meat batter and frankfurter, cooking loss, and water exudation, and decreased fat content, energy value, pH, and lightness of meat batter and frankfurter, hardness, cohesiveness, gumminess, chewiness, and apparent viscosity. The addition of 2% pumpkin fiber was significantly increased moisture content, yellowness of meat batter and frankfurter, hardness, cohesiveness, gumminess, chewiness, and apparent viscosity, whereas reduced cooking loss and emulsion stability. The treatment of reduced-fat frankfurters formulated with 20 and 25% fat levels and with pumpkin fiber had sensory properties similar to the high-fat control frankfurters. The results demonstrate that when the reduced-fat frankfurter with 2% added pumpkin fiber and water replaces fat levels can be readily made with high quality and acceptable sensory properties.

예측미생물을 이용한 미강식이섬유 함유 프랑크푸르터 소시지의 유통기한 설정 (Shelf-life Estimation of Frankfurter Sausage Containing Dietary Fiber from Rice Bran Using Predictive Modeling)

  • Predictive modeling was applied to study the growth of microorganisms related to spoilage in frankfurter sausage containing various levels of dietary fiber (0, 1, 2, and 3%) from rice bran and to estimate its shelf-life. Using the Baranyi model, total viable cells, anaerobic and psychrotrophic bacteria were measured during 35 days of cold storage ($<4{\pm}1^{\circ}C$). The lag times (LT) demonstrated by control and treatment groups were 6.28, 623, 6.24, and 6.25 days, respectively. The growth rate of total viable cells in each group were 0.95, 0.91, 0.92, and 0.91 (Log CFU/g/day), respectively. The anaerobic and psychrotrophic bacteria had lower initial ($y_0$) and maximal bacterial counts ($y_{max}$) than total viable cells. Also, the anaerobic and psychrotrophic bacteria possessed lower growth rate and longer lag time than total viable cells. The estimated shelf-life of frankfurter containing rice bran fiber by the growth rate of total viable cells was 7.8, 7.9, 7.9, and 7.7 days, respectively. There were no significant differences in shelf-life as a function of fiber content. In other words, the addition of dietary fiber in sausage did not show the critically hazardous results in growth of microorganism. The 12 predictive models were then characterized by high $R^2$, and small RMSE. Furthermore, $B_f$ and $A_f$ values showed a very close relationship between the predictive and observed data.

Effects of konjac gel with vegetable powders as fat replacers in frankfurter-type sausage

  • Objective: The purpose of this study was to investigate whether addition of konjac gel with three different vegetable powders can increase quality of low-fat frankfurter-type sausage. Methods: Low-fat frankfurter-type sausages were manufactured with formulations containing konjac gel and three vegetable powders (aloe vera, cactus pear, or wheat sprout) as pork fat replacers. The formulations of frankfurters were as follows: NF (normal-fat; 20% pork fat), LF (low-fat; 10% pork fat), KG (low-fat; 10% pork fat+10% konjac gel), and konjac gel with three vegetable powders (KV), such as KV-AV (10% pork fat+10% konjac gel with aloe vera), KV-CP (10% pork fat+10% konjac gel with cactus pear), and KV-WS (10% pork fat+10% konjac gel with wheat sprout). Proximate analysis, pH value, color evaluation, cooking loss, water-holding capacity, emulsion stability, apparent viscosity, texture profile analysis, and sensory evaluation were determined. Results: The konjac gel containing groups showed lower fat content (p<0.05) and higher moisture content than NF group (p<0.05). The pH value of frankfurters was decreased in three KV groups (p<0.05). The three KV groups had increased dark color (p<0.05) compared with KG, and KV-CP had the highest redness (p<0.05). The water-holding capacity and emulsion stability were higher in the three KV groups than KG and LF (p<0.05). Cooking loss was generally decreased in the three KV groups, compared with KG (p<0.05). The apparent viscosity of KV groups was similar with NF group and overall texture properties were improved in KV-CP. In the sensory evaluation, the highest overall acceptability was found in KV-CP groups (p<0.05). Conclusion: The four fat replacers improved physicochemical properties of low-fat frankfurters. Particularly, konjac gel with cactus pear powder seems more acceptable as a pork fat replacer.

돼지 심장으로부터 획득한 수리미유사물이 프랑크푸르트 소시지의 품질에 미치는 영향 (Influence of Surimi-like Material (SLM) from Pig Heart on Quality of Frankfurter Sausage)

  • 돼지 심장근육으로부터 획득한 수리미유사물을 프랑크푸르트 소시지 제조시 원료육에 5%와 10%로 대체 첨가할 경우 제품의 품질에 미치는 영향을 알아보았다. 대조구와 비교해서 수리미유사물의 대체처리구가 가열 전 페티상태에서의 수분과 지방 함량에 차이를 나타내지 않았지만 단백질 함량은 감소하였다. 대조구의 pH는 수리미유사물 5% 대체 첨가와 유의적인 차이를 보이지 않았지만, 10% 대체 첨가구에 비해 유의적으로(P<0.05) 높게 나타났다. 반면에, 대조구의 가열수율은 수리미유사물 5% 대체 첨가구와 유의적인 차이를 보이지 않았지만, 10% 대체 첨가구에 비해 유의적으로(P<0.05) 낮게 나타났다. 조직감의 비교에서, 수리미유사물의 대체 첨가가 우육과 돈육의 반막양근으로부터 만들어진 소시지의 경도와 씹힘성을 감소시키는 효과를 가진 것으로 나타났으며, 관능평가에서도 연한 것으로 나타났다. 이러한 결과는 제품의 외관, 색, 풍미 등과 함께 평가된 전체적인 기호성의 증가에도 영향을 미치는 것으로 나타났다. 그러나 수리미유사물 5%와 10% 대체 처리구간에는 통계적인 차이를 나타내지 않았다. 이상의 결과를 종합하면 경제적 측면을 감안할 때, 프랑크푸르트 제조시 값비싼 원료육의 비용절감 차원에서 값싼 돼지 심장근육으로부터 수시미유사물을 추출하여 원료육의 10%까지 대체 첨가는 부분적으로 가능한 것으로 사료된다. 반면에 돼지 심장근육으로부터 추출한 수리미유사물을 프랑크푸르트 소시지 제조시 이용할 경우 소 심장근육과 달리 낮은 가열감량을 보였는데 이에 대한 보다 더 많은 연구가 필요할 것으로 판단된다.

마(Dioscorea japonica) 분말 첨가 프랑크푸르터 소시지의 품질과 저장 특성 (Quality and storage characteristics of frankfurter sausages with added yam (Dioscorea japonica) powder)

  • 마 분말 0.5, 1.0과 2.0%를 첨가한 프랑크푸르터 소시지를 제조하여 진공포장한 후 $10^{\circ}C$에서 6주간 저장하며 품질 특성의 변화를 조사하였다. 일반성분은 마 첨가량이 높아질수록 수분, 조단백질 함량은 감소하였고, 조지방과 회분의 함량은 증가하는 경향을 보였으나 마 첨가량 자체가 낮았던 관계로 그 차이는 미미한 편이었다. 마 첨가량 차이에 의한 수분활성도 값은 저장 3주 후 부터는 유의적 차이가 없었다. pH는 저장 후기로 갈수록 감소하는 경향을 보였다. TBA 값은 저장기간이 길어짐에 따라 증가 하였는데 마분말의 첨가량이 많을수록 천천히 증가하였다. VBN 값은 저장기간이 연장될수록 모든 처리구에서 증가하는 경향이 나타났는데, 마 분말의 첨가량이 많을수록 더 크게 증가하였다. 마 첨가 수준이 높아짐에 따라 $L^*$ 값과 $a^*$ 값은 감소하고, $b^*$ 값은 증가되는 경향을 보였다. 기계적 경도 측정치는 마 첨가량이 높아질수록 유의적으로 감소하였다. 관능학적 품질 평가에 따르면 T3는 3주, 그리고 C, T1, T2는 4주까지 상품성이 유지되는 것으로 판단되었다. 결론적으로 마 분말은 1.0%까지 프랑크푸르터 소시지에 첨가하여도 물리화학적 품질 및 저장성에 큰 영향을 주지 않는 것으로 판단되었다.

Measurement of Thermal Conductivity of Foods in Liquid and Solid Phase Using a Thermal Probe

  • An instrument using thermal probe method was designed to measure thermal conductivity of liquid and solid foods. Thermal conductivity probe was designed with diameter to length ratio of 100 and diameter of 0.51 mm to minimize axial flow effect on thermal conductivity measurement. Thermal conductivities of distilled/deionized water, glycerin, and beef frankfurter meat were measured at $20-80^{\circ}C$. Mean thermal conductivity values of water showed less than 2.0% difference from several reference values without using time correction factor or probe calibration constant. For glycerin, difference was less than 0.7% from reference values at $20-50^{\circ}C$. Mean values of thermal conductivity for beef frankfurter meat ranged from 0.389 to $0.350\;W/m{\cdot}K$ at $20-80^{\circ}C$.

Convection Heat Transfer Coefficient of a Meat Cube in a Continuous Flow Sterilizing System

  • Finite difference model and dynamic thermal property evaluation system were developed to estimate convection heat transfer coefficient by modeling temperature-time profile of beef cube in continuous flow sterilizing system. As input parameters of the model, specific heat and thermal conductivity values of beef frankfurter meat were independently measured from 20 to $80^{\circ}C$. Convection heat transfer coefficient was estimated by comparing simulated and measured temperature-time profiles. Actual temperature-time profiles of meat cube were measured at flow rates of 15, 30, and 45 L/min and viscosities from 0 to 15 cp, and mean values of convection heat transfer coefficients ranged from 792 to $2107\;W/m^2{\cdot}K$. Convection heat transfer coefficient increased with increase in flow rate and decreased as viscosity increased.

사슴육으로 제조한 프랑크푸르터 소시지의 관능적 특성 (Organoleptic Characteristics of Frankfurter Sausage Made with Venison)

  • The purpose of this study was to investigate the quality characteristics of frankfurter sausage made with venison. The crude protein content of sausage showed a significant increase pattern in the proportion to the addition of the venison. The crude fat content showed a decrease pattern. The saturated fatty acid significantly increased in proportion to the content of the venison. The monounsaturated fatty acids and the polyunsaturated fatty acids decreased with increasing the venison content. The content of the free amino acids increased in proportion to the amount of the venison added. The amino acid content of the pork sausage was in the order of Alanine > glycine > glutamic acid, and was similar in the sausages made from venison. The essential amino acids were 36.4% in FSV, higher than 34.0% in the pork sausages. In the sensory test, it was confirmed that the texture, taste, and overall acceptability increased with the addition of the venison. Because the sausages made from the venison were superior to the pork sausages in all of the measured sensory characteristics, it is considered that industrialization is sufficiently feasible.
