위탁급식전문업체의 급식소 식수 규모별 노동생산성 비교 분석에 따른 인력산정 모델 개발 (Development of Standardized Model of Staffing Demand through Comparative Analysis of Labor Productivity by Foodservice's Meal Scale in Contract Foodservice Management Company)

  • The purpose of this study were to a) investigate operation of human resource in contract foodservice management company (CFMC), b) identify the staffing indices for the establishment an labor productivity for CFMC, and c) develop standardized model of staffing demand as foodservice's scale in CFMC. The data was collected using FS intra-net system from 138 contract-managed foodservice operations in A CFMC and statistical analysis was completed using the SAS/win package (ver. 8.0) for description analysis, ANOVA, Duncan multiple comparison, pearson correlation analysis, and regression analysis. The types of operation were included factory (45%), small scale operation (26%), office (11%), department store (10%), training institute (4%), and hospital (3%). The distribution of foodservice scale was classified by meal served was as follows; 'less than 500 meals (47%)', 'from 500 to 1500 meals (25%)', 'from 1500 to 2500 meals (17%)', and 'more than 2500 meals (12%)'. There was two types of contract method, fee-contract (53%) and profit-and-loss contract (46%) Some variables were significantly high operation indices such as selling price, food cost, monthly sales, net profit and others were significantly low operation indices such as labor, meal time a day in the small foodservice on meal scale (p<.001). The more foodservice was large, the more human resource was disposed on dietitian, cook, cooking employee altogether (p<.001). Foodservice in A CFMC was divided into 2 groups by 500 meals a day, according to comparative analysis of labor productivity as meal scale per working hour, meal scale a day and operation indices as meal per foodservice employee, meal per cooking employee (p<.001). The regression equation model was developed as 'the number of employees=1.82+0.014 ${\times}$ meal served' in the operation of less than 500 meals, 'the number of employees=9.42+0.013 ${\times}$ meal scale a day -0.94 ${\times}$ meal scale per working hour' in the operation over 500 meal scale using labor productivity indices and operation indices. Therefore, CFMC could be enhanced efficiency of human resource arrangement using the standardized model of staffing demand and would be increased effectiveness of profit.

외식업 경영주의 직업만족도 및 경영의식 조사연구 - 경남지 역을 중심으로 - (Job Satisfaction and Business Attitude of Restaurant Owners - Focused Mainly in the Gyeone-nam Area -)

  • The purpose of this research was to analyze the job satisfaction and business attitudes of restaurant owners in order to explore solutions for improving restaurant management. The results were as follows : 1) The motive for starting a restaurant business was vocational aptitude \longrightarrow possibilities \longrightarrow good income : 2) In terms of job satisfaction, most respondents were satisfied with both the work itself and the income. It was also observed that the younger owners were more satisfied with their jobs than the older owners : 3) Increased costs, including labor and food costs, was indicated as the biggest problem in restaurant management. Respondents also perceived labor shortage as one of the most difficult problems. Men were more likely than women to consider the following problems as being more serious: rent, financial problems, taxes, regulation restrictions, menu development and customer complaints. It was found that as the size of the restaurants grew, the respondents perceived the shortage of labor as the hardest part of running a business : 4) Respondents agreed that employing good foodservice workers was the most important part of foodservice management. Owners also believed that they needed more research time for menu and service development 5) To be successful, the restaurant owners paid the most careful attention to food taste. Service, sanitation, and menu development were also emphasized. Respondents stressed the focus on service, good relationships, diligence, and faithfulness in order to be a good restaurant owner. The results of this research suggest that restaurant owners should have more professional conscientiousness to succeed in their own businesses, as well as improve the quality of the foodservice industry. Other important aspects related to the overall improved quality of the foodservice industry are: the continuation of government support, the enlargement of educational opportunities and greater respect for foodservice employees. 한국음식과 태국음식에 대한 국내.외국인의 소비자 의식비교 (Consumer survey of foreigners and Koreans about Korean and Thai foods and restaurants)

  • This study was conducted to investigate the consumer perceptions of Koreans and foreigners towards Korean and Thai foods and restaurants. Self-administered questionnaires were collected from 129 foreign residents and 291 Koreans who have been members or the Thai travel association in the seoul area. statistical data analysis was performed using the SPSS v 10.0 program. From the evaluation of Korean and Thai foods and restaurants by foreigners, Thai foods/restaurants showed significantly higher ratings in the attributes of 'Food appearance', 'Food smell', 'Overall food taste', and 'Exotic food taste' In the attributes of 'Use of various food seasonings', 'Variety of food ingredients', 'Variety of menu', 'Food sanitation', and 'Fast restaurant service', Thai food/restaurants showed higher ratings than Koreanfood/restaurants. Korean foods were considered more salty than Thai foods. However, overall satisfaction of Thai and Korean foods/restaurants was similar at about '3.7' points on the 5-point Likert scale. From the evaluation by Koreans, there were no significant differences in the attributes of 'Food appearance', 'Food smell', and 'overall food taste'. however. the rating or 'Exotic food taste' was significantly higher in Thai foods. In the attributes of 'Use of various food seasonings', 'Variety of food ingredients', and 'Variety of menu', Thai food/restaurants showed higher ratings than Korean food/restaurants. Interestingly, the evaluation of sanitation of restaurants was opposite to that of foreigners.

외식 종사원의 사회지능과 긍정심리자본이 직무만족도에 미치는 영향에 관한 연구 (The Effects of Employees' Social Intelligence and Positive Psychology Capital in Foodservice Industry on Job Satisfaction)

  • The purposes of this study were to understand the influence of social intelligence and positive psychology capital in foodservice employees on job satisfaction and to analyze whether employees' positive psychology capital plays a moderating role between social intelligence and job satisfaction. Based on total 316 samples obtained from empirical research, this study reviewed the reliability and verified a total of 2 hypotheses and 1 proposition using the SPSS program. The results showed that social awareness (${\beta}$=0.546) and social skill (${\beta}$=0.152) in foodservice employees, were indicated to have positive (+) influence upon job satisfaction. And, employees' positive psychology capital (${\beta}$=0.307) had a significant positive (+) effect on the job satisfaction. However, the effect of the employees' social intelligence upon job satisfaction was not found to be moderated by positive psychology capital. Limitations and future research directions are also discussed.

외식 기업의 특성을 고려한 재무 비율과 경영 성과간의 관계에 대한 연구 (A Study on the Correlation between Financial Ratio and Operating Performance Considering the Characteristics of Foodservice Companies)

  • 본 연구는 금융감독원 전자공시시스템에 공시된 기업의 재무제표를 활용하여 외식 기업의 재무 비율과 경영 성과의 관계를 파악하고자 하였다. 재무 비율은 재무제표의 두 계정을 조합하여 비율을 계산하여 경영 성과를 제시하는 지표로써, 경영자와 채권자 그리고 투자자는 해당 기업의 재무제표를 평가하기 위한 방법으로 비율 분석을 각기 다른 목적으로 사용하고 있다. 재무 비율과 경영 성과에 대한 분석에 의하면, 상장된 음식료업종 기업은 이자 보상 배율을 제외한 전 부분에서 상관 관계를 보였지만, 외식 기업은 안정성 비율과 성장성비율에 한정해서 상관 관계를 보여주었다. 이와 같은 차이에 근거하여 외식 기업의 경영자는 부채와 자산에 대한 관리와 더불어 비용에 대한 효과적이고 계획적인 관리를 통하여 경영 성과를 개선하여야 할 것이다.

  • 본 연구는 외식사업을 하고 있는 경영자와 창업자들의 마케팅에 관한 방법과 활동이 영업지속기간과 경영성과에 어떠한 영향을 미치며 이들의 창업에 대한 인식과 마케팅의 방법에 따라 영업지속기간과 경영성과도 달라지리라는 것을 알아보고자 하였다. 때문에 본 연구에서는, 첫 번째, 외식업체는 마케팅관리에 영향을 미칠 것이다. 두 번째 마케팅관리는 경영실적에 영향을 미칠 것이다. 셋째, 외식창업은 경영실적에 영향을 미친다. 넷째, 마케팅관리는 지속기간에 영향을 미친다. 다섯째, 경영성과는 외식업지속 기간에 영향을 미칠 것이다. 라는 가설하에 본 연구를 실시하였다. 연구결과 모든 가설은 채택이 되었음을 알 수가 있다. 때문에 마케팅 활동, 마케팅 비용, 마케팅인식 등 외식사업의 경영기법에 따라 선진경영을 할 수 있도록 지속적으로 개선 연구하여야 하며, 그리고 창업시의 마케팅이 창업자에게는 중요한 요소임을 발견 할 수 있었다. 따라서 외식업 창업이나 경영을 하고자 하는 자는 마케팅관리 등에 많은 인적 물적 정성을 기울여야 할 것으로 보인다.

외식업 종사자들의 근무 형태에 따른 만족도 연구 (The Study of Satisfactory Degree based on the Working Type in Foodservice Industry)

  • The meaning of foodservice industry is various but especially its most important one contains a service industry. And so, foodservice industry should provide very impressive service to customers. if workers don't satisfy themselves at the works, they can not give a high qualifying service to the customers. Therefore, this study showed how the worker's satisfactory degree depending on working type effects on the growth of foodservice industry. The conclusions by questionnaires to workers who have worked as both a regular and a contract employment at Special First Degree Hotels in Seoul are followings. Very interestingly, the proportion of satisfying degree for the workers as regular is 34.94% but the degree for workers as contract is 36.8%. The reason is that the average age of regular workers is high and they have their family to support and they have changed their job more often than the others. They can express their problems through a labor union but the part of solution is very small. It must cause to decrease satisfying degree. The workers generally satisfied to their senior employers. It means that the negative image of higher-ups in the past has been changed. It is a serious problem that the proportion of satisfaction degree remains 30%. The managements must perceive the fact that the increase ratio of contract workers does not make low quality of service. They should know that the satisfaction degree of regular workers is lower than contract ones. In order to increase the satisfaction degree, if the managements can find out the way of taking over their authority and giving a motive, they can reduce the ratio of occupation change and nonattendance. And also they can promote the productivity in foodservice industry and in conclusion, the foodservice industry will have glowed very successfully in the near future.

병원 영양부서의 급식 및 임상영양 서비스의 중점관리 요인 (Task Analysis on Foodservice , Clinical Nutrition Service in Hospital Dietetic Departments)

  • The purpose of this research was to analyze the tasks on foodservice ․ clinical nutrition service in hospital dietetic departments. A survey of 30 hospital food and nutrition service departments was undertaken and detailed informations were collected from each, including surveys of 176 dietitians and 30 foodservice managers. Statistical data analysis was completed using the SAS/win 6.11 package for descriptive analysis and t-test. The results of this study can be summarized as follows : Regarding dietitian's training period, 38.6% dietitians answered that they spent 1~2 years in mastering food service management. 28.4% dietitians replied that they needed 2~3 years in learning clinical nutrition management. It was shown that 48.9% dietitians were engaged in food service management, while 26.7% were engaged in clinical nutrition and 26.7% were engaged in both. The 13 elements of food service management showed low performance level. These elements were food temperature, food intake, menu selection, contaminated substances and serving mistake and reliance on hospital food. These should be controlled with caution. The average score of dietitian's life satisfaction within the work place was 3.42 out of 5. The most dissatisfactory element was physical environment of the workplace. 5 elements for improving nutrition service activities showed low performance level with high importance score. Problem analysis showed low difference score between importance and performance level. Hospitals under contract foodservice management received higher points on clinical nutrition performance(P<.05) than hospitals under self-operated foodservice management.

서울시지역 외식산업 프랜차이즈 1호점의 공간입지분석 (A Spatial Location Analysis of the First Shops of Foodservice Franchise in Seoul Metropolitan City)

  • 외식산업 프랜차이즈는 외상 매출액의 비중이 작고 자금회전이 원활하여 국내에서 창업 선호도가 매우 높다. 이에 본 연구에서는 서울시지역 외식산업 프랜차이즈 1호점들의 입지분석을 통해 향후의 입지경향을 예측하는 데 목적을 두었다. 본 연구결과는 다음 세 가지로 요약된다. 첫째, 외식산업 프랜차이즈 1호점의 공간분포형태는 최근린지수(R) 0.16으로 집중된 분포패턴을 보인다. 둘째, 외식산업 프랜차이즈 1호점은 상관분석 결과 특히 금융기관수, 사업서비스업체수, 숙박 음식점업체수 등의 15개 변수와 상관성이 있다. 셋째, 다중회귀분석에 의해 최종적으로 선정된 입지요인은 설명력 64% 정도의 금융기관수이다. 이러한 본 연구결과에 의거하였을 때 금융기관수가 많은 서울시 강남구와 중구 지역은 향후에도 외식산업 프랜차이즈 1호점의 선점 장소가 될 것으로 예측된다.
