위탁운영 사업체급식소의 운영현황에 따른 고객만족도 분석 (An Analysis of Customer Satisfaction by Operational Characteristics in Business & Industry Foodservice Operated by Contracted Foodservice Management Company)

  • The objectives of this study were to analyze customer satisfaction by operational characteristics in business & industry foodservice operated by contracted foodservice management company. The instruments were developed by reviewing literatures on customer satisfaction and by intervewing with managers, employers and customers. A total of 1000 questionnaires were hand delivered at the ten contracted foodservice operations by designated coordinators. A total of 833 questionnaires were usable; resulting in an 83.3% response rate. Statistical data analysis was completed using the SAS 6.04 for description, T-test, ANOVA. Overall customer satisfaction score for office building foodservice was significantly higher than those for manufacturing company foodservice. As for the type of management contracts, overall customer satisfaction score for management fee contracts was significantly higher than those for profit and loss contracts. With regard to payment method, overall customer satisfaction score for meal card was higher than those for POS system. Concerning the categories of service, overall customer satisfaction for combo-tray service was higher than those for cafeteria-tray service and partially self-service. As for types of menus, the score of overall customer satisfaction was not significantly different between cafeteria menu and double choice menu.

ATBEQ를 이용한 조리외식 전공 학생의 기업윤리에 대한 태도 연구 (Attitudes towards Business Ethics by ATBEQ of the Students Majoring in Culinary and Foodservice Management)

  • This study investigated the attitudes towards business ethics of 409 University students majoring in culinary science and foodservice management. The survey questionnaire evaluated their attitudes by ATBEQ (Attitudes towards Business Ethics Questionnaire), using a seven-point scale and the data were analysed by frequency, t-test, ANOVA and reliability analysis. The average value of ATBEQ was investigated with attitudes towards ethics (3.48${\pm}$0.79), application of the ethics to business (4.24${\pm}$0.71), business profit making (4.18${\pm}$0.71), businessman (4.29${\pm}$0.67) and practice of business ethics (3.16${\pm}$0.79). The female, undergraduate and younger students showed significantly higher scores of attitudes towards business ethics (higher ethical attitude) than the male, graduate and older students, respectively. There are some similar results between Korean and Israeli students, while western students (America, Australia and Turkey) showed different attitudes with Korean students.

  • The objective of the current study was to analyze the major factors affecting quality of life improvement for contract foodservice customers by identifying the contract foodservice environment consisting of the customer, foodservice management, and competitor. Qualitative research method was performed on foodservice customers and foodservice management using in-depth interviews. First, the customer environment was classified into three categories, including convenience of location, foodservice management environment into six categories, including comfort level of dining facility, and competitor environment into three categories, including service competition between foodservice providers. Second, quality of life was defined as the level of contentment felt by both the customer and foodservice management consuming the food provided. Third, both the customer and foodservice management perceived that the management environment of contract foodservice had a "medium" effect on quality of customer life. The findings of this study could be applicable for development of a contract foodservice business strategy through objective comparative analysis of the customer, foodservice management, and competitor environments.

외식업 경영주의 직업만족도 및 경영의식 조사연구 - 경남지 역을 중심으로 - (Job Satisfaction and Business Attitude of Restaurant Owners - Focused Mainly in the Gyeone-nam Area -)

  • The purpose of this research was to analyze the job satisfaction and business attitudes of restaurant owners in order to explore solutions for improving restaurant management. The results were as follows : 1) The motive for starting a restaurant business was vocational aptitude \longrightarrow possibilities \longrightarrow good income : 2) In terms of job satisfaction, most respondents were satisfied with both the work itself and the income. It was also observed that the younger owners were more satisfied with their jobs than the older owners : 3) Increased costs, including labor and food costs, was indicated as the biggest problem in restaurant management. Respondents also perceived labor shortage as one of the most difficult problems. Men were more likely than women to consider the following problems as being more serious: rent, financial problems, taxes, regulation restrictions, menu development and customer complaints. It was found that as the size of the restaurants grew, the respondents perceived the shortage of labor as the hardest part of running a business : 4) Respondents agreed that employing good foodservice workers was the most important part of foodservice management. Owners also believed that they needed more research time for menu and service development 5) To be successful, the restaurant owners paid the most careful attention to food taste. Service, sanitation, and menu development were also emphasized. Respondents stressed the focus on service, good relationships, diligence, and faithfulness in order to be a good restaurant owner. The results of this research suggest that restaurant owners should have more professional conscientiousness to succeed in their own businesses, as well as improve the quality of the foodservice industry. Other important aspects related to the overall improved quality of the foodservice industry are: the continuation of government support, the enlargement of educational opportunities and greater respect for foodservice employees. 외식업체의 영업 환경이 기업 이미지에 미치는 영향 (A Study on the Effects of Business Environment upon Corporate Image)

  • This study is to explore the effects of business environment upon corporate image. Customers of foodservice establishments are selected as a population and six famous family restaurants located in Seoul were selected to evaluate the population. Accordingly, the purpose of the study is to survey satisfaction with corporate image of foodservice establishments and six famous family restaurants, to evaluate the satisfaction with corporate image, and to find a plan of raising corporate image. 240 samples were distributed and 194 samples were collected among them. 182 valid samples were selected for the research. As a result of factor analysis for business environment, internal environment factor, external environment factor, addition environment factor were extracted. There was no significant difference by sen, age, schooling, occupation, average income by month, and number of visiting foodservice establishments after examining the difference of establishment business environment by demographic characteristics. Analysing the effects of business environment upon corporate image revealed that the effects of business environment had effects upon corporate image in order of internal environment factor(.531), external environment factor(.360), and addition environment factor(.285).

외식산업 창업속성이 창업 과잉자신감과 창업자 태도에 미치는 영향 (The Effects of Business Startup Attributes on the Overconfidence of Business Startup and Entrepreneur's Attitude in Foodservice Industry)

  • 본 연구는 외식산업 창업속성이 창업 과잉자신감과 창업자 태도에 미치는 영향을 밝히는데 목적을 갖고, 외식업 창업자 총 300명을 대상으로 2012년 10월 1일부터 30일까지 설문조사하였다. 분석결과 첫째, 외식산업 창업속성이 창업 과잉자신감에 미치는 영향을 검증한 결과 창업자 특성, 창업자금, 입지, 상품요인이 창업 자신감에 통계적으로 유의한 정(+)의 영향을 미치는 것으로 나타났다(p<.05). 둘째, 외식산업 창업속성이 창업자 태도에 미치는 영향을 검증한 결과 창업자금, 입지, 상품요인이 창업자 태도에 통계적으로 유의한 정(+)의 영향을 미치는 것으로 나타났다(p<.01). 셋째, 창업 과잉자신감이 창업자 태도에 미치는 영향을 검증한 결과 창업 과잉자신감은 창업자 태도에 통계적으로 유의한 정(+)의 영향을 미치는 것으로 나타났다(p<.001). 이는 창업자 특성변인으로서 전문화된 경영마인드와 관련 지식, 경험이 그만큼 중요하고, 이에 기반한 충분한 자금조달과 준비속에 고객의 유동인구가 상품특성과 결합하여 적합한 곳에 입지할 때 고객의 이용과 선택 또한 안정된 경영으로 이어져 자신감과 함께 안정경영을 통한 긍정적인 태도로 나타남을 의미한다.

외식업체의 메뉴분석에 적용방안에 관한 연구 (A Study on Applying Method for Menu Analysis of Foodservice)

  • Regarding to foodservice industry, menu analysis of foodservice has two significant meanings. One is to elevate a satisfaction to customer's desires, the other is to find a menu which can maximize profits to restaurant operator. In these reasons, Menu organization methods were developed and has been constantly developing by many researchers. Specially, Since computerization has been introduced in the foodservice business, menu organization methods has been made a growth. On the other hand, menu organization methods has not been developed by lack of recognition of foodservice-worker. methods for menu analysis focused on profits and preference out of foodservice operation have a lot of limits. That reason is why factors of internal and external influence are more than other industries. In the future, foodservice industry should improve sales-performance through the menu analysis after due consideration and need to develop methods for menu analysis. In the conclusion, development of foodservice indusrty can be expected if menu development and menu control should be go on through the menu analysis.

영양사 직무기술서 (2000 년) 의 영양사 직무영역별 특성 분석 I : 사업체 (Analysis of the Dietitian's Job description in the business and industry foodservice)

  • The purpose of this study was to verify the dietitian’s job description(2000) for dietitians working at business and industry foodservice. The survey was carried out for the frequency, criticality and difficulty of each job description with 4 point. The number of subject was 39 dietitians, who have been working over 3 years at their position. The results are following ; 1. Duties with high frequency and criticality were menu managements, purchasing, storage and inventory controls, food productions, meal services, waste managements and sanitation managements. 2. Duties with middle frequency and high criticality were managing equipments and facility, human resources managements, financial managements, self promotions. 3. Duties with low frequency and high criticality were nutrition assessment (life cycles, certain diseases, specific conditions), medical nutritional theraphy, nutrition education and public health nutrition. 4. For difficulty, duties related food service had lower points than that of nutrition service.

Effects of Foodservice Franchise's Brand Awareness and Service Quality on Cognitive Attitude, Affective Attitude, and Loyalty

  • Purpose: In general, franchise business models can generate higher returns and profits than non-franchise businesses. Therefore, it is necessary to study customer-based foodservice franchise brand awareness and service quality. The purpose of this study is to investigate the effect of service quality and brand awareness of foodservice franchises on attitudes divided into cognitive and affective attitudes and revisit intentions. Through this study, we intend to establish a structure that leads to service quality and brand awareness-cognitive attitude and affective attitude-loyalty. Research design, data, and methodology: In order to verify the hypothesis of this study, the survey was conducted among general consumers over the age of 20 who had visited a foodservice franchise within the last 3 months. Among the collected questionnaires, one insincere questionnaire was excluded, and 299 copies were used for analysis. The data collected to verify the hypothesis of this study were analyzed using SPSS 24.0 and AMOS 24.0. Result: First, it was found that the service quality of the foodservice franchise had a positive (+) effect on the cognitive attitude, and the service quality of the foodservice franchise had a statistically significant positive effect on the affective attitude. Second, the brand awareness of the foodservice franchise was found to have a statistically significant positive (+) effect on the cognitive attitude. and the brand awareness of the foodservice franchise had a statistically significant positive (+) effect on the affective attitude as well. Third, cognitive attitude was found to have a statistically significant positive (+) effect on loyalty, and affective attitude was also found to have a statistically significant positive (+) effect on loyalty. Conclusions: First, this study applied the S-O-R theory to the effect of service quality and brand recognition on cognitive attitude, affective attitude, and loyalty. Second, the structure leading to service quality and brand awareness-cognitive attitude and affective attitude-revisit intention was established. Third, attitudes in this study were divided into cognitive attitudes and affective attitudes. In general, attitude is studied as a single dimension as a cognitive attitude, but in this study, attitude was studied by dividing it into a cognitive dimension and an affective dimension

외식 업체 파트너쉽 요인이 SCM에 미치는 영향 (A Study on the Effects of the Partnership Factors of the Foodservice Industry on SCM Success)

  • Various techniques of business innovation such as MRP, ERP have been introduced, which has offered many advantages to the foodservice industry. However, these techniques optimized only a part not for the whole supply chain. For overcoming this problem, companies introduced SCM(Supply Chain Management). Since SCM research for restaurant business hasn't been widely studied, this research focuses on the relation between purchasers and suppliers in the domestic restaurant business. It divided the types of purchaser-supplier relationships in the foodservice industry and studied the influences that partnership factors have for the results. The SCM achievement was divided into asset management, job efficiency and customer satisfaction sharing, reliance/cooperation, professional technology and relation concentration. Under these factors, it looked into the difference that partnership affects SCM achievement. It made it easy to understand the importance by practically analyzing the relation of partnership factors extracted by SCM achievement and investigation suggested by the previous researches. It was found that the partnership factors such as extracted information sharing, reliance/cooperation, professional technology, and relation concentration positively affect the SCM achievement such as asset management, job efficiency and customer satisfaction.
