채소 소비와 건강 관심의 관계를 조절하는 음식 몰입과 음식 신공포증의 효과 평가 (Measuring the Moderating Effects of Food Involvement and Food Neophobia in the Relationships between Vegetable Consumption and Health Concern)

  • The purpose of this study was to measure the effects of food involvement and food neophobia moderating the relationships between vegetable consumption and health concern. The questionnaires with the items to measure constructs of health concern, food involvement, food neophobia and vegetable consumption were completed by 290 subjects in Jeonnam area. Moderated regression analysis was used to measure the relationships between variables. To test validity and reliability of constructs, factor analysis and Cronbach's $\alpha$ were used in this study. Results of the study demonstrated that the result of the analysis of the data also indicated excellent model fit. The main effects and interaction effects of health concern, food involvement and food neophobia on vegetable consumption were statistically significant. Moreover, the effect of health concern on vegetable consumption was statistically significant at all levels of food involvement and food neophobia, except when food involvement and food neophobia were high. The present findings may be particularly relevant to interventions to promote healthy eating among adults.

The Effect of Delivery Food on Customer Emotional Response and Repurchase Intention

  • The purpose of this study is to examine the impact of the service quality of delivery food on customers' emotional response and repurchase intention during the COVID19 pandemic. The proposed research model examined the effect on the service quality, customer sentiment response, and repurchase intention of delivery food. A questionnaire was distributed and measured for 300 consumers who had experience using food delivery services in the last 30 days. The questionnaires from previous researches were revised to fit the purpose of the present study. The survey results were analyzed to verify the reliability and validity of the measured variables. To verify the hypotheses a Structural Equation Modelling (SEM) was used for the study. The results showed that taste, price fairness, and package design positively affected emotional response; moreover, repurchase intention was enhanced by emotional response. This research analyzed the relationships between service qualities of delivery food, emotional response, and repurchase intention when customers consume delivery food during COVID19 in Korea. This study extends the delivery food literature by combining customers' emotional behavior with SEM model. The result suggested competitive strategic plans and development directions of food delivery companies in the rapidly increasing food delivery industry, providing implications for further research.

실버타운 거주자의 식사 서비스 품질 인식이 거주 만족도에 미치는 영향 (The Effect of Foodservice Quality Perception on Residence Satisfaction of Silver Town Residents)

  • This study attempted to investigate the effect of foodservice quality perception on residence satisfaction of silver town residents. Through an extensive literature review, the questionnaire was developed and distributed to senior residents in 'A' silver town located in Gyeonggi-Do. Out of 254 questionnaires administered, a total of 212 completed questionnaires were returned, yielding a response rate of 83.5%. The results showed that there was a meaningful correlation between perception on foodservice quality and residence satisfaction. Among foodservice quality factors, reliability and comfort were the most important factors affecting residence satisfaction. Considering the effect of reliability and comfort factors on residence satisfaction, it is important to make a strategy to build up these factors in foodservice operation of silver town.

청미래덩굴(망개)잎 에탄올 추출물의 항균효과 (Antimicrobial Effect of Ethanol Extract of Smilax China Leaf)

  • The extract with the dilution of $50\%$ ethanol and treatment of $121^{\circ}C$ for 15min were inhibited highly the growth of staph aureus, Ent. cloacae, Sh. sonnei, A. hydrophila, b. subtilis, St. faecalis and L. casei. of food samples, red-bean dregs with addition of extact of smilax china. leaves or sorbic acid took the similar inhibition effect to microorganisms for the early storage days(1-3days). There was inhibited the growth of microorganisms in strawberry Juice added to 20m1 of $1\%$ extract solution for one storage day in comparison with no addition of smilax china L. Over all with growth inhibition capability to microorganisms and foods, it was believed that the effect and value as the natural food preservatives and the extracts like as this natural plant material took the food safety and it was capable to develop the natural food preservation.

  • Effect of Aralia elata extract on experimentally alloxan-induced diabetes ill rabbits and toxicity of mouse were studied; $LD_50$ of Aralia elata extract (A. E. E.) was 5.5g/kg intraperitoneally ill mice. A. E. E. 800mg/kg exhibited more excellent hypoglycemic effect after 6 days and 14 days in 200mg/kg, compared to the control group. Blood urea nitrogen level was significantly decreased after 6 days in 800mg/kg. and blood levels of total cholesterol and GPT activity were showed more significant decreasing effect ill 800mg/kg than 200mg/kg.

Effect of Food on the Pharmacokinetics of YH439 and Its Metabolites in Rats

  • The pharmacokinetics of YH439 and its metabolites were investigated after oral administration of YH439 to rats to investigate the food effect. After oral administration of YH439, its metabolites, M4 and M5 were detected in plasma. YH439 was not detected in the plasma for both fasted and fed rats for all doses studied. The pharmacokinetic parameters of the metabolites were not affected by food at all doses studied. The results of this study indicated that there are no significant food effects on the pharmacokinetics of YH439 and its metabolites in rats.

Antimicrobial Effect of Portulaca oleracea Extracts on Food-Borne Pathogens

  • This study was performed to investigate the antimicrobial effects of Portulaca oleracea extracts against food-borne pathogens. First, the Portulaca oleracea was extracted with methanol at room temperature, and then further fractionated by using petroleum ether, chloroform, ethyl acetate and methanol, respectively. The antimicrobial activity of the Portulaca oleracea extracts was determined using a paper disc method against food-borne pathogens and food spoilage bacteria. The ethyl acetate extracts of Portulaca oleracea showed the highest antimicrobial activity against Staphylococcus aureus and Shigella dysenteriae. There was also a synergistic effect of the combined extracts of Portulaca oleracea and Indigofera kirilowii as compared to each extract alone. Finally, the growth inhibition curve of ethyl acetate extracts of Portulaca oleracea against Staph­ylococcus aureus and Shigella dysenteriae was determined The ethyl acetate extract of Portulaca oleracea showed strong antimicrobial activity against Staphylococcus aureus at the concentration of 4,000 ppm. The 4,000 ppm of ethyl acetate extract from Portulaca oleracea, retarded the growth of S. aureus by more than 24 hand Shigella dysenteriae up to 12 h at $37^{\circ}C$.

식음료 기업의 스포츠 스폰서십 활동의 커뮤니케이션 효과 (Communication Effect of Sports Sponsorship Activities of Food and Beverage Companies)

  • 이 연구의 목적은 식음료 기업의 스포츠 스폰서십 활동에 대한 커뮤니케이션 효과를 규명하여 최근 활발하게 진행되고 있는 식음료 기업의 스포츠 스폰서십활동에 대한 커뮤니케이션효과를 파악하여 기업의 전략적 마케팅방안을 모색할 수 있도록 하는 기초자료를 제공하는데 있다. 이를 위해 지난 1월 식음료기업 N사가 주최한 스포츠대회에 참여 및 관전한 사람 300명을 대상으로 설문조사를 실시하여 267부를 통계분석에 활용하여 다음의 결과를 얻었다. 첫째, 스포츠 스폰서십은 기업태도에 정적영향을 미치는 것으로 나타났다. 둘째, 스포츠 스폰서십 요인 중 이미지제고, 홍보, 촉진은 제품태도에 정적영향을 미치는 것으로 나타났으나 이벤트기여는 제품태도에 영향을 미치지 않는 것으로 나타났다. 셋째, 기업태도는 제품태도에 정적영향을 미치는 것으로 나타났다. 넷째, 기업태도는 구매의도에 정적영향을 미치는 것으로 나타났다. 다섯째, 제품태도는 구매의도에 정적영향을 미치는 것으로 나타났다.

Antioxidant Effect of Monascus koji in Sausage Mixture

  • The antioxidative capacity of Monascus koji was studied in raw bologna-type sausage by measuring thiobarbituric acid reactive substances (TBARS) and peroxide values (POV) during storage at $25^{\circ}C$ for 7 days. The addition of 2% Monascus koji effectively inhibited lipid oxidation in the mixture without vitamin C and NaNO$_2$, evidenced by its prevention of an increase in TBARS and a significantly reduction in increases in POV. Monascus koji in raw minced processed meat significantly improved the shelf life of the food.

Effect of NaCl/Monosodium Glutamate (MSG) Mixture on the Sensorial Properties and Quality Characteristics of Model Meat Products

  • Sodium chloride is an important ingredient added to most of foods which contributes to flavor enhancement and food preservation but excess intake of sodium chloride may also cause various diseases such as heart diseases, osteoporosis and so on. Therefore, this study was carried out to investigate the effect of monosodium glutamate (MSG) as a salty flavor enhancer on the quality and sensorial properties of the NaCl/MSG complex and actual food system. For characterizing the spray-dried NaCl/MSG complex, surface dimension, morphology, rheology, and saltiness intensity were estimated by increasing MSG (0-2.0%) levels at a fixed NaCl concentration (2.0%). MSG levels had no effect of the characteristics of the NaCl/MSG complex, although the addition of MSG increased the surface dimension of the NaCl/MSG complex significantly (p<0.05). Furthermore, the effect of MSG on enhancing the salty flavor was not observed in the solution of the NaCl/MSG complex. In the case of an actual food system, model meat products (pork patties) were prepared by replacing NaCl with MSG. MSG enhanced the salty flavor, thereby increasing overall acceptability of pork patties. Replacement of NaCl with MSG (<1.0%) did not result in negative sensorial properties of pork patties, although quality deterioration such as high cooking loss was found. Nevertheless, MSG had a potential application in meat product formulation as a salty flavor enhancer or a partial NaCl replacer when meat products were supplemented with binding agents.
