The problems of agriculture and food production in Korea are serious. These problems were brought about by the global food system. In this system, farmers and consumers are disconnected. The distance between food production on the farm to the consumer's table is too long. Farmers can not survive as their food dollar is steadily decreasing. Consumers have to eat old, unclean, and poor-quality foods because the foods do not come from nearby farms. They do not know where their food has come from or by whom their food was grown. In order to solve these problems, the transition from the global food system to a local food system is imperative. In a local food system, farmers and consumers are connected and they can help each other. This study identifies the consumers' role in the local food system. They are the purchasers of local food. They are active participants both in producing and distributing local food, and in taking part in the local food movement. Above all, they are the teachers of the younger generation consumers. While consumers in the global food system are passive, those in the local food system are active. We call the former "food illiterates" and the latter "food citizens." In order to revitalize the local food system, consumers must be food citizens, and therefore, consumer education is necessary. There are several interdependent media forms available for consumer education such as field trips, farm experiences, education for returning to the farm, and food education.

The objectives of this study were to compare alternative agri-food system among Korea, Japan, USA and Italy. This study explore the situation and its challenge of alternative agri-food system. Alternative agri-food system is movement against global agri-food system and food multinationalization. Four alternative agri-food system not only have something in common but also have something in difference. We tried to make clear the commons and differences. But many these ideas were useful in someways, but none could be used to explain everything. This study was the touchstone of Korea's alternative agri-food system. We introduced simplistic ideas and compared four alternative agri-food system. This study sparking renewed discussion about Korea's alternative agri-food system, namely, 'The domestic farm products are the best movement'.
The world is in the process of a structural change related to ICT convergence knowledge industries. ICT is leading to the creation of new products and services, and is making our lives more convenient, safer, and more efficient. In advanced countries, many studies have been conducted with the goal of developing new business models converged with ICT, and this is also the case in the food industry. Korea possesses world-leading ICT, and if this ICT is applied to the food industry, a world-class new business model can be developed. The u-Food System, which is in the process of development in Korea, is a next-generation food system that can allow food providers, consumers, and distributors to access various types of information about food products, including traceability, distribution, safety, quality, and freshness, and manage this information. It is a future food system that converges ICT, biotechnology and sensing technology with food. Based on the u-Food System, this paper will introduce the status of current smart quality distribution technologies that converge ICT (such as sensor tag, sensor network, LBS, GIS, and CDMA) with food technologies (such as traceability, quality, distribution management) to manage the safety and quality of fresh food in the distribution process.
The purpose of this study was to derive practical improvement measures for the food traceability system that could improve food reliability and secure food safety. To this, in our survey May-June, 2019, 567 adult males and females were analyzed for recognition and experience of the food traceability system, measures to improve the system, and intention to make additional payments to improve the system. In the case of a food safety accident, 2.54 of 5 points were given on if the food was recalled or not. Approximately 77.4 percent of the respondents had never seen indication of a food traceability system, and approximately 93.8 percent had no access to, or experience with, using the system. Most respondents said that the food traceability system should be applied to items that need to be applied. As the volume of data that is recorded and managed by the government is recognized as high, improvement is needed. Finally, it was analyzed that the company intends to pay an additional 1.34% on average to expand its food traceability system. A more sophisticated cost analysis is needed to apply the improvements proposed to complement the plans that are acceptable to consumers and the industry.

The standardization of food ingredients in the procurement system is essential to maintain the quality of food services. Currently, school food services in Korea do not have such a standardized system, which results in inconsistency of the procurement procedure of food ingredients. This study examined how school foodservice nutritionists perceive the standardization of food ingredients in the procurement system. In particular, this study investigated school foodservice nutritionists' perception on the appropriateness, convenience, and necessity of newly proposed standardized procurement system consisting of a classification and attribute system. A total of 311 nutritionists from 123 elementary schools, 99 middle schools, and 84 high schools were surveyed via both online and offline from June 16-24, 2016. The major findings of the study are as follows. First, three quarters of the nutritionists perceived the newly proposed standardized procurement system to be necessary, while approximately sixty percent of the respondents reported that the newly proposed standardized procurement system is convenient. More than half of the respondents perceived the newly proposed standardized procurement system to be appropriate. The results suggest that the new standardized system directs a better way in terms of the classification and attribute systems of food ingredients. This study suggests that the standardization of food ingredients should be implemented at the operation of school food services.
This study attempted to understand the perception and the degree of trust that consumers had in the national agricultural food accreditation system, to inquire into and examine the consumers' perception of traditional food quality certification performed for the protection of excellent traditional food, and to propose the right direction for the policies on the traditional food quality certification system and the plans to improve consumers' perception of the system. According to the results of this survey performed in married women, based on the 'the recognition of accreditation system' and 'the recognition of certification marks' of 'the seventh national agricultural food accreditation system' presently being used by the Ministry for Food, Agriculture, Forestry and Fisheries, the household food purchasers showed high recognition for eco-friendly agricultural product accreditation, processed food KS certification, and organically processed food certification in that order. Meanwhile, it was shown that they indicated low recognition for the traditional food-related accreditation systems such as 'traditional food quality certification' and 'food grand master'. It was found that reliability of the certification mark provided by the agricultural food accreditation system gained 3.54 points (on a 5-point scale), and 68.1% of the study subjects referred to the certification marks while purchasing agricultural foods. And most of them answered to the question of 'why they referred to the certification marks' saying that it was done 'to choose safe food'. The most frequent answer to question of 'the means to recognize the traditional food quality certification system' was 'broadcasting, advertising'. 57.3% of the subjects had a previous experience of buying a product certified by the traditional food quality certification system, and 93.2% of all the subjects had the intention to buy a product certified by the traditional food quality certification system later. And most of them answered that 'strengthening government policies' would be the most ideal way to inform the public of the traditional food quality certification system. According to the results of this study, while 'relying on the traditional food quality certification system in general' was relatively high among the consumers, 'intention to buy quality certified products by visiting a distantly located store' was low; thus, from this analysis, it can be seen that there is a need for diversification of places selling these quality certified products and to establish a distribution network for these products.
Consumer anxiety about food safety is increasing, and the ability to make an accurate assessment is inadequate due to the lack of food safety information. This research focuses on relations among main variables, such as food hazard awareness, food apprehension, food safety information awareness, and food safety management system evaluation. In addition, to the moderating effects of food safety information awareness between food hazards awareness, food apprehension, and food safety management system evaluation. First, food hazards awareness and apprehension was slightly higher than the average level, also there was a significant difference in food hazard apprehension according to food hazard awareness. However, the level of food safety information was not high, meaning consumers were not as well informed as expected. We divided food safety management system evaluation into awareness and practice, subsequently, the results of both were at a low level. Food safety information awareness' moderating effect was also confirmed. Consumer organizations and the government need to provide specific and correct information to Korean consumers, that also implement a wide range of consumer education related policies.
The food and nutrition system is a network of processes linking agriculture, food, eating, nutrition, and health. The system includes a series of nine stages (production, processing, distribution, acquisition, preparation, consumption, digestion, transport, and utilization) and two types of contexts (biophysical and sociocultural). Analysis of whole food and nutrition systems provides information about the structure and processes involved in the complete scope of food and nutrition, assisting in the identification of ″upstream″ influences and ″downstream″ consequences in the system. The current analysis gathered existing data about the food and nutrition system in South Korea from public sources and professional publications, and interpreted that information to consider how different elements of the system contribute to health. The findings revealed that South Korea has substantial domestic food production and processing supplemented by imports, widespread food distribution in markets and a growing number of Korean and Western restaurants, a relatively low percentage of household income spent on food, growing use of new food preparation methods such as microwave ovens, a rice/vegetable/fish based three-meal consumption pattern, few recorded digestive problems, increasing calorie storage as body fat, and a relatively low chronic disease prevalence compared to other developed societies. Examination of the full scope of the food and nutrition system provides a broad perspective using whole system thinking that can identify potential strategies for future research and intervention.
The allergenic food labeling system for 12 foods has been operated in Korean school food service since 2012. This study was conducted to evaluate the food allergy status of Korean elementary school children's and their parents' perceptions of allergenic food labeling system. The parents of school aged(6-9yr olds) children in Gyeongbuk area were recruited to assist in this survey. Surveys were conducted by 404 parents. The prevalence of food allergy was 18.1%(73 students) and about one-half of the food allergic children had a family history of allergies, in particular, maternal family history. The major symptoms were related to skin and the major allergenic foods were mackerel, eggs, milk, wheat, crab and tomatoes. The parents eliminated the allergenic food from diet of 43.8% of the children with food allergy. Participants had an average knowledge score of 68% correct. The average knowledge score was higher for parents with food allergic children than for parents with intact children(p<.05). Over 61% of the respondents were not satisfied with allergenic food labeling system operated in school food service. The requirements for the allergenic food labeling system were the front-of-package labeling, conspicuous description and insert of warning sign. The parents estimated that the most important effect of the allergenic food labeling system was the improvement of psychological and physical health in children with food allergy. Because the only prevention method for food allergy is the restriction of allergenic food, the institutional device to expand the food labeling to unpackaged food as well as packaged food and to make people trust the food labeling should be prepared.

The main purpose of the article is to analyze the main approaches to the formation of the food system in modern conditions. The constant growth of the population, the increase in the level of use of natural resources against the background of a decrease in their reserves causes a number of risks for the food security of both a person and the country as a whole. The problem of the formation of food security has always remained at the center of scientific interests of both domestic and foreign researchers. In the context of globalization, this issue is considered as one of the key global problems in the system. Theoretical and metodological basis studia systematic approach to study of fundamental provisions of economic science regarding the formation of the food system. Based on the results of the study, the main approaches to the formation of the food system in modern conditions were characterized. The study has limitations associated with the lack of the ability to analyze the food system on the practical activities of a single socio-economic system.
