식물성 대체 유제품(Plant-based dairy alternatives)에 대한 채식주의자와 잡식주의자의 인식 및 소비행동 (Awareness and Consumption Behavior of Vegetarians and Omnivores on Plant-based dairy alternatives)

  • This study investigated the awareness and consumption behavior of 118 vegetarians and omnivores toward plant-based dairy alternatives. The preference and choice attribute questionnaires were compared. Significant differences were obtained between the two groups when considering the purchase experience, preference, and selection attributes of plant-based dairy alternatives. Vegetarians had more experience purchasing plant-based dairy alternative products. In both groups, environmental and animal protection were the major factors that influenced the highest response rate for purchasing plant-based dairy alternatives. The preference score of vegetarians for plant-based dairy alternative products was high, indicating that vegetarianism had a significant effect on their preference for plant-based dairy alternative products. Analysis of selection attributes revealed that price, product weight, appearance, and manufacturer were considered important by vegetarians, whereas nutritional components and labeling, manufacturing environment, composition of ingredients, and taste and texture were considered more important by the omnivores. Results of this study can be used as basic data for the future development of the fast-growing industry producing plant-based dairy alternative products.

IPA기법을 활용한 한옥마을 선택속성의 중요도-만족도 연구 (Research on the Importance and Satisfaction of Selection Attribute for Hanok Village using Importance-Performance Analysis(IPA))

  • 본 연구는 전주 한옥마을 관광객들의 선택속성에 관한 연구를 수행하였다. 전주 한옥마을 방문 시에 중요하게 생각하는 중요도와 방문 후 만족도를 IPA 분석을 활용하여 연구하고, 이에 따른 결과와 마케팅적 시사점을 제공하였다. 설문 조사는 2018년 10월 초부터 11월 말까지 일대일 방식으로 진행하였고, 총 300부를 배포하였으며, 불성실하게 응답한 설문지 42부를 제외한 총 258부를 유효표본으로 활용하였다. 본 연구의 유효표본에 대한 분석은 SPSS for Window Version 15.0 프로그램을 이용하여 분석하였다. 표본의 일반적인 사항은 빈도분석(Frequency Analysis)을 실시하여 표본의 특성을 파악하였고 대응표본 T 검정(Paired Sample T-test)을 활용하여 연구하였다. 연구의 결과는 첫째, 선택속성 중에 관광지의 청결성이 가장 높았고, 그다음 순위는 주차장 시설, 자연경관, 음식·먹거리, 기후(날씨)순으로 나타났다. 둘째, 한옥마을을 방문하는 관광객들이 만족한 선택속성 항목은 자연경관이 가장 만족한 것으로 나타났고, 기후(날씨), 지역의 특색, 역사문화자원, 관광지 청결 순으로 조사되었다. 셋째, 한옥마을을 방문하는 관광객들이 지각하는 선택속성 변수의 중요도-만족도 값의 사분면 위치에 따라서 한옥마을의 다양한 프로그램 개발과 관광객의 만족도를 올리기 위한 방안 마련이 필요할 것으로 판단된다.

Study on Influence of Korea's Selection Attributes of HMR on Trust, Customer Satisfaction, and Repurchase Intention

  • Purpose - The current study conducted research on influential relationship of Korea's selected attributes of home replacement foods (HMR) with trust, customer satisfaction, and repurchase intention. Design, data, and methodology - This study was conducted on consumers in Seoul and the metropolitan area (Gyeonggi and Incheon) who have purchased home replacement foods (HMR). The survey was conducted for 30 days from March 1st, 2021 to March 30th, 2021. Among total of 300 surveys distributed, 250 surveys were collected, and 199 surveys, excluding ones with missing value and outliers (51 surveys), were used for analysis. Results - The results empirical analysis based on earlier studies are as follows. First, as a result of analyzing which variables of selection attribute factors of home replacement food (HMR) have an effect on trust, healthiness, reasonable price, and convenience had a positive effect, and quality of food and diversity did not have a significant effect. Second, as a result of analyzing whether trust has a significant effect on customer satisfaction, it was found that it had a positive effect on customer satisfaction. Third, as a result of analyzing whether trust has a significant effect on repurchase intention, it was found to have a positive effect. Fourth, as a result of analyzing whether customer satisfaction has a significant effect on repurchase intention, it was found that customer satisfaction had a positive effect. Conclusions - The current study aims to develop various new products of HMR and establish differentiated marketing techniques tailored to consumer needs.

HMR 선택속성이 태도와 재구매의도에 미치는 영향: 브랜드 신뢰의 조절역할을 중심으로 (The Effects of Selection Attributes on Attitude and Repurchase Intention for Home Meal Replacement (HMR): Focused on Moderating Role of Brand Trust)

  • The purposes of this study were to examine the effect of Home Meal Replacement (HMR) selection attributes on attitude and repurchase intention and to investigate the moderating role of brand trust between attitude and repurchase intention. This study surveyed the customers who have purchased HMR in Seoul and Gyeonggi area using a convenience sampling method. The survey was conducted from September 15, 2017 to October 25, 2017. A total of 250 questionnaires were distributed, and 237 copies were collected. Of these, 228 copies were used as valid data. The results of the analysis were as follows. First, convenience of the HMR selection attribute had a significant effect on attitude, and food quality and packaging had no significant effect on attitude. Second, attitude toward HMR had a significant effect on repurchase intention. Third, brand trust played a moderating role between HMR attitude and repurchase intention. Therefore, it is necessary for HTMcompanies to understand consumers' attitudes and consumption behaviors accurately by recognizing the selection attributes that consumers consider important By gaining strong brand trust, companies could increase repurchase intention.

컨조인트 분석을 활용한 학교 우유급식의 서비스 품질 속성 및 상대적 중요도 도출 (An Investigation of the Relative Importance of the Selection Attributes of School Milk Programs by Conjoint Analysis)

  • This study evaluated the quality of school milk programs and analyzed the relative importance of school milk program selection attributes using conjoint analysis. The survey was conducted on students from middle and high schools in metropolitan cities that provide school milk programs. Responses were received from 414 students and the data was subjected to frequency analysis, t-test, and conjoint analysis using the SPSS Statistics Package. While evaluating white milk in the school milk program, middle school students rated 'packaging condition' (4.23) the highest, high school students rated 'nutrition' (4.64) the highest, and their evaluation of all the quality attributes was significantly different from that of middle school students (p<0.001). Overall satisfaction scores too, showed a significant difference between high school (4.46) and middle school students (4.01) (p<0.001). Processed milk & dairy products had the highest satisfaction score in the attribute of 'serving time' (4.57). The relative importance of the choice attributes of the school milk program was in the order of 'number per item' (62.260%), 'temperature' (25.708%), and 'serving method' (12.032%) for all students. The school milk program most preferred by all students and middle school students was to provide milk at a refrigerated temperature, select white milk three times a week, processed milk, fermented milk, and cheese twice a week, and provide it at the desired time.

제주 향토음식 선택속성이 고객행동에 미치는 영향 -제주방문 관광객의 고객만족, 재방문, 구전을 중심으로- (A Study on Impacts of Selection Attribute of Jeju Local Folklore Food on Customers' Behaviors -Focusing on Customer Satisfaction, Re-visit, and Word of Mouth of Jeju Tourists-)

  • 본 연구는 제주를 방문한 관광객들의 제주향토음식의 선택속성 요인이 제주 관광객의 고객행동에 어떠한 영향을 미치는가를 알아보기 위한 연구로 통계패키지 SPSS+/WIN 12.0을 이용하여 제주향토음식선택속성의 요인들이 고객만족, 재방문, 구전 의도에 미치는 영향을 파악하기 위해 다중회귀분석을 실시하였다. 연구결과 제주향토음식선택속성요인이 고객행동에 미치는 영향을 살펴본 결과 유의수준(p<0.05)에서 통계적으로 유의한 영향력을 가진 요인은 만족도에는 본질적 요인이 회귀계수가 0.476, t값이 5.198로 영향력을 나타내는 것으로 나타났으며, 다음으로는 부수적 요인이 회귀계수 0.232, t값이 2.808, 감각적(오감) 요인이 회귀계수 0.165, t값이 2.013의 순으로 나타났다. 재방문에는 본질적 요인이 회귀계수가 0.413, t값이 3.540으로 영향력을 나타내는 것으로 나타났으며, 다음으로는 메뉴 구성적 요인이 회귀계수 0.228, t값이 3.118, 부수적 요인이 회귀계수 0.218, t값이 2.643의 순으로 나타났다. 긍정적인 구전에는 부수적 요인이 회귀계수가 0.273, t값이 2.555로 영향력을 나타내는 것으로 나타났으며, 다음으로는 감각(오감)적 요인이 회귀계수 0.264, t값이 2.238, 본질적 요인이 회귀계수 0.237, t값이 2.230, 메뉴.구성적 요인이 회귀계수 0.161, t값이 2.167의 순으로 나타났다. 따라서 본 연구는 제주를 방문한 관광객의 제주향토음식에 대한 고객행동(고객만족, 재방문, 긍정적인 구전)에 미치는 영향은 향토 문화성은 고객의 행동에 모두 영향을 미치지 못하는 것으로 나타났는데 이는 직업이 학생이며 연령대가 $20{\sim}29$세가 주를 이루고 있는 인구통계적 특성에서 오는 것으로 사료되며, 본질적 요인과 부수적 요인은 고객행동인 고객만족, 재방문, 긍정적인 구전에 모두 영향을 미치는 것으로 나타났다. 특히 음식선택에 대한 본질적 요인은 고객행동에 전반적으로 영향을 크게 미치는 것으로 나타났다.

  • 본 연구는 외식업계 패밀리 레스토랑의 이용고객이 서비스 품질 향상 노력의 결과와 만족에 따라 재방문에 어떻게 나타나는지에 대하여 알아보고 패밀리 레스토랑 이용 고객의 서비스 품질이 선택 속성과 재방문에 미치는 영향을 연구하여 봄으로써 서비스 품질이 선택 속성의 영향을 미치고, 선택에 만족한 고객이 그 레스토랑에 재방문에 미치는 영향 변수들 간의 인과관계 구성과 서비스 품질은 선택 속성과 고객 만족 사이에서 서비스 가치 여부를 부여하고, 고객 만족을 통하여 재방문에 미치는 영향을 연구하고, 서비스 품질은 고객 만족을 통하여 재방문에 미치는 영향과 연구의 조사는 SPSS12.0 프로그램을 분도 분석, 요인분석, 신뢰도분석, 회귀성형분석을 실시하였다. 실증연구의 모형은 연구의 초점을 패밀리 레스토랑 이용 고객은 서비스 품질의 선택 속성이 고객 만족과 재방문 의도에 영향을 미치는가에 중점을 두고 이를 이론적 배경에서 분류하고 실증분석을 통하여 검증하였다. 서비스 품질의 결과변수는 선택 속성, 고객 만족, 재방문 의도로 보고 서비스 품질은 외부 영향 요인으로 패밀리 레스토랑 이용객의 특성에 따라 서비스 품질 만족도의 차이가 재방문에 어떠한 영향을 미치는지 검증하였다.

포도소비수준에 따른 포도선택속성 중요도-만족도 분석 (Analysis of the Importance-Satisfaction of the Grape Selection Attributes by Grape Consumption Level)

  • This paper provides data for product development and improvement of grape varieties by analyzing the satisfaction-importance of the grape selection attributes from a consumer's perspective. A survey was conducted on consumers aged 19-59 living in Seoul, Gyeonggi and Incheon on their fruit consumption level, preferences according to the grape quality characteristics, importance, and satisfaction with the grape selection attributes. Three hundred and eighty two valid samples were collected and analyzed statistically using SPSS 23. In the preference according to the grape quality characteristics, consumers tended to prefer a sweet taste, black color, and seedless grapes. Regarding the importance of the grape selection attributes according to the level of grape consumption, the high consumption group considers texture, size, shape, color, ease of removing seeds, country of origin, area of production, certification, and brand to be more important. In satisfaction, the high consumption group rated satisfaction highly in texture, odor, size, shape, color, ease of removing peelings, ease of removing seeds, price, country of origin, area of production, certification, and brand. An analysis of the IPA of the grape selection attributes showed that improvement of price and shape attributes will be prioritized, and the development and management of properties, such as seeds, peelings, certification, and brand will be required. These results can be used to help improve the grape varieties and develop products that meet the consumer needs, secure the competitiveness of grape farmers, and revitalize the local economy.

김치 제품 선택 속성이 고객 만족과 재구매 의도에 미치는 영향 (The Effects of Kimchi Product Selection Attribute on Customer Satisfaction and Repurchase Intent)

  • The purpose of this study is to investigate the preference of Korean traditional food and kimchi among different age groups in order to find a way to increase kimchi consumption. For this study, data from 15 male respondents(5.2%) and 271 female respondents(94.8%) was used. Age distribution of total respondents were in their 20's(21.8%), 30's(32.7%), 40's(32.7%) and 50's(11.6%), which showed the rate of 40's was very high. Most of the groups showed similar rates over the question on "have to eat kimchi" and "don't need to eat kimchi", but the elders' preference was high while the youngers' was relatively low. Therefore, the preference of kimchi has a small gap between the age groups, but all of them like kimchi in general.

A Study on HMR Selection Attributes and Health Values of College Students

  • Purpose: The purpose of this study is to narrow the target down to college students representing single-person households to identify the main attributes of their choice of Home Meal Replacement(HMR) and to look at the impact on satisfaction and repurchase intentions. Research design, data and methodology: An online survey was conducted for consumers who purchased HMR products at least once and a total of 264 questionnaires were used for demonstration analysis. The collected data have verified for validity and reliability between measurement variables through exploratory factor analysis and reliability analysis. Results: As a result, curiosity, economy, safety, and brand, which are HMR selection attributes that university students' value, have a significant impact on satisfaction, and satisfaction has a significant impact on the intention of repurchase, a variable of behavior. In addition, the adjustment effect of health value pursuit was significant only in safety attributes. Conclusions: This study divided the target group to examine what the HMR selection attributes of single-person college students are, the main consumer of HMR, and how selective attributes affect satisfaction and willingness to repurchase. In the process, we wanted to find out if there was a moderating effect on the health-oriented values in the dietary lifestyle.
