The objective of this study was to develop a food material and, examination of fermented juice using turnips. The highest yield of fermented juice was with the mixture ratio of 60% turnip, 20% rice-nuruk and 20% sugar. The total acidity and turbidity increased depending on the adding rate of rice-nuruk. By reducing sugar concentration by 24.9%, 22.6% and 25.3% resulted in samples containing 5%, 20% and 35% of rice-nuruk. The reduced sugar concentration was the highest at 35% rice-nuruk and 5% sugar. As a result of enzyme activity, ${\alpha}$-amylaze was the highest at 5% rice-nuruk and 35% sugar, and glucoamylase was increased by depending on the rice-nuruk concentration. The main organic acids in fermented turnip juice were succinic acid, acetic acid and lactic acid, and were increased during fermentation. DPPH free radical scavenging activity of fermented turnip juice was higher than that of non fermented turnip juice. Also, the nitrite scavenging ability was the highest($89.58{\pm}0.00$) in 35% rice-nuruk at pH 3.0.
This study investigated Korean and Chinese female college students' retirement attitudes. Considering the fact that the two countries are experiencing dramatic increases in elderly population, retirement planning is a significant social issue. Even though Korea and China share similar cultural backgrounds, economic systems and governmental retirement policies have been developed in different ways. The purpose of this research was to compare retirement attitudes and related factors between Korean and Chinese female college students. Based on a survey with 214 female college students (130 Koreans and 84 Chinese), differences and similarities in retirement attitudes and related factors were identified. On average, Chinese female college students showed more positive attitudes towards retirement than Korean students. The levels of thinking about retirement and worrying about finances in retirement were greater for Korean students than Chinese students. More Korean students anticipated that their actual retirement age will be earlier than their desired retirement age. Korean students believed that they should start retirement planning at an earlier age than Chinese students' retirement planning age. Korean students anticipated that the cost for food and housing as the major expenditure category in retirement while Chinese students anticipated cost for health care as the major expenditure category. Korean students who worry about finances in retirement, and those who anticipated that they will retire earlier than their desired age showed negative retirement attitudes when controlling other factors. Implications for retirement planning and education were presented based on the research findings.
This study focused on developing various application services for smart phones in the rural amenity resources information service. By developing application services for smart phones, this study aims to stimulate rural tourism and increase the rural tourism economy. The main findings of this study revealed that 'information for reports/cultural/recreational facilities, etc', 'maps for rural villages(food, attractions, etc)', 'regional weather information', 'traffic reports for rural villages(public transportation, etc)' and 'introduction of rural experiences (festivals, exhibitions, events, etc)' are preferentially needed as the contents services of the rural amenity resources. Moreover, it has been found that the types of services firstly needed to offer information of rural amenity resources include 'searching the information around me(where I am)', 'wayfinding such as navigation', 'information sharing function with messenger and SNS, etc', 'taking and editing photography', 'searching information of rural villages about festivals, events, etc'. These are the items that can be utilized in developing application services needed by information services of rural amenity resources. It is expected that the future real-time smart phone services for rural amenity resources will be able to reinforce the competitiveness of rural tourism by giving urban dwellers the chance to utilize the customized information whenever they want.
This study examined the basic information on the native pear c.v. 'Baekwoon' grown in Mt. Baekwoonsan, Gwangyang, to develop as a local specialty product. the sensory characteristics, chemical compositions, and physiological activities of 'Baekwoon' pear were examined and compared with those of 'Niitaka' pear. Hardness of 'Baekwoon' pear was 19.30N, which was higher than 'Niitaka'. The sugar content of 'Baekwoon' was 11.5 $^{\circ}Brix$, which was lower than 'Niitaka'. The total amino acid contents of the fruit skin and flesh of 'Baekwoon' were 222 mg/100g dry weight (DW) and 130 mg/100g DW, respectively, which were much higher than those of 'Niitaka'. Especially, serine contents in fruit skin and flesh of 'Baekwoon' were 75.4 mg/100g DW and 40.2 mg/100g DW, respectively, which were significantly (p<0.05) higher than those of 'Niitaka'. However, physiological activities, such as total phenol content, DPPH radical scavenging activity, total flavonoid content and nitrite scavenging activity, of 'Baekwoon' were lower than or similar to those of 'Niitaka'. Consequently, vitamin and amino acid contents of 'Baekwoon' were better than those of 'Niitaka'. It is suggested to use fruit skin because of its good composition and physiological activities so that it helps to improve the quality and the biological activity.
This research investigated the physicochemical properties and antioxidant activities of hot air-dried red mustard (Brassica juncea L.) leaf (HR) and freeze-dried red mustard leaf (FR). Crude protein content was highest in FR, and crude fat and carbohydrate contents were highest in HR. However, moisture and crude ash contents were not significantly different between the two drying methods. Total free sugars were higher in HR compared with FR. Sucrose, fructose, and glucose were the major free sugars in both HR and FR. Contents of essential and non-essential amino acids were higher in HR compared with FR. The major organic acid of FR was malic acid, and the major organic acid of HR was malic acid. The contents of saturated and unsaturated fatty acids were higher in HR than in FR. Total mineral contents were higher in FR (10,187.22 mg%) compared with HR (9,815.80 mg%). Major minerals were K, Ca, and Na in the two drying methods. The contents of vitamins C and E in HR were higher than those in FR. Total polyphenol contents showed no significant difference between the two methods. However, total flavonoid contents in HR were higher than in FR. The $IC_{50}$ values of FR and HR in ABTS assay were 0.89 mg/mL and 0.65 mg/mL, respectively. The results of all experiments suggest that HR and FR can be natural candidates as a rich source of antioxidants for further chemical investigation.
Purpose: The purpose of this study was to explore the prevalence of Clornorchiasis and related factors, targeting inhabitants living in a 5 Km area of the Yeongsan River and to identify knowledge related to Clornorchiasis and intended behavioral changes related to risk of infection. Method: The data were collected from December 16, 2008 to January 10, 2009. A total of 553 questionnaires were distributed, 28 were deleted as answers were not complete, resulting in 525 copies being used for data analysis, which was done using frequency, percentage, $x^2$-test, and t-test with the SPSS 12.0 program. Results: Clornorchiasis was found in 25 persons of the 525 (4.8%). As for knowledge on Clornorchiasis, the Clornorchiasis group had a higher mean score of 10.08 $({\pm}4.96)$, of a possible 17, than the negative group score of 9.42 $({\pm}4.81)$, but, the difference was not statistically significant. The intended behavioral change related to risk of infection, according to presence of infection or not, was statistically significant. Conclusion: Effective management of Clornorchiasis demands management targeted at the inhabitants living in all of the risk areas without any distinction according to sex, areas, live food diet or not, nor liquor consumption or not.
The purpose of this study was to investigate the economic lives of single households with the age of 30 through less than 50. The economic life was examined in three aspects; income, assets, and consumption expenditures and patterns. One hundred sixty single households were surveyed, with questionnaires for 15days from April 1 to April 15 of 2002, and analyzed with descriptive statistics. The results were as follows: about 30.8% of total single households in the sample were in the income group of 1,500,000 thought less than 2,000,000 won. The size of income for the 30's was less than that for the 40's. Compared with male single households, female single households were more in both low and high levels of income. The saving rate tended more or less to be low. The more the age, the higher the saving rate. As for debt, the 40's single households, male single households, high school single households (compared to the 30's single households, female single households, university and graduate single households, respectively) were relatively higher. In general, the single households tended to have debts due to preparation for housing, credit over use. The assets tended to be managed by themselves. The economic preparation for the old life was done by banking system rather than insurance. The average monthly living costs was higher in the age of the 40's single than the age of the 30's single. The living costs of the female single households was higher or lower than those of the male single households. As for consumption patterns, there was the most in the expenditure allocation for food away from home, then for culture entertainmentㆍsocial life, and for clothing and shoes. As for the convenience of the consumption life in overall, there were more responses in moderation and inconvenience than in convenience.
Objectives: The purpose of this study was to suggest the strategies for improvement of home-delivered meal services for the elderly, to identify reasons for recipients to get started with the services and to evaluate the attitude, acceptability and adaptation of recipients to the services from the perspective of life context. Methods: The data was collected through face-to-face in-depth interviews with eighteen low-income elderly recipients of home-delivered meals and analyzed using a qualitative research method. Results: The results were deduced as four themes which comprised of long-term vulnerable socioeconomic contexts resulted in entry to the services, conflicting acceptability to the services, passive adaptation to taking the services, and positive practices to cope with supplement free meals or other services. The service participation was initiated because of a combination of prolonged, vulnerable socioeconomic contexts, including poverty and unexpected life events such as diseases, disability, living alone, aging and unemployment. With regard to taking the services, conflicting acceptability was observed: positive aspects including saving living cost and good quality of meals, and negative aspects including lack of a tailored service and feeling of stigma. Although the recipients needed an individualized service, they did not express their needs and demands for the services and they accepted the unavailability as an accustomed, prolonged vulnerable socioeconomic context. With regard to lack of tailored services, either self-solution such as modification of eating patterns or community-based network and services were used. Conclusions: We suggest that a system to concretely identify recipients' attitude, acceptability and adaptation for home-delivered meal services should be developed in the establishment of a tailored nutrition support system for the low-income elderly.
Recent researches suggest that carotenoids are important not only as provitamin A but also for prevention of chronic diseases. This study was conduction to determine levels and factors affecting serum levels of lutein + zeaxanthin, $\beta$-cryptoxanthin, and $\beta$-carotene in 93 adults living in rural area of Korea. Fasting blood samples were collected and serum carotenoid levels were measured by HPLC. Dietary intake was estimated by 24 hour recall method and frequency questionnare of major food groups. Mean serum concentration of lutein + zeaxanthin was 616.32 nmol/L, $\beta$-cryptoxanthin was 856.95nmol/L, and $\beta$-carotene was 242.90nmol/L. Serum $\beta$-carotene levels in study subjects were very low. Both $\beta$-cryptxanthin and $\beta$-carotene were negatively correlated with serum triglyceride and positively correlated with total-choesterol and LDL-cholesterol. Serum levels of female subjects were significantly higher than males in all carotenoids. For age groups, subjects in their 30's were shown to have the highest concentration of all carotenoids. Lutein + zeaxanthin were lowest in subjects in theri 40's while $\beta$-crytoxanthin and $\beta$-carotene levels were lowest in subjects in their 60's. The $\beta$-carotene levels in non-smokers were significantly higher than in drinkers. Lutein+zeaxanthin levels were significantly higher among subjects consuming more green and yellow vegetables by frequency questionnarie. In conclusion, serum carotenoids were affected by sex, age, serum lipids, smoking, and alcohol intake. Intake of vegetables and fruits could affect by sex, serum lipids, smoking, and alchol intake. Intake of vegetables and fruits could affect serum lutein+zeaxanthin level. This data indicated that compared to other studies, Korean adults in rural areas have high lutein+zeaxanthin concentratins and low $\beta$-carotene concentrations in serum. High lutein+zeaxanthin levels may be related to high consumption of vegetables in these subjects.
This study aimed quantitatively to estimate the recent level of recognition of the public value of forests in Korea, to analyze the factors that affect their value, and to present implications. The average annual payment regarding the public value of forests estimated using the contingent valuation method was 234,170 won, broken down into 12 functionalities. The Tobit model was used to analyze demographic factors affecting the degree of willingness to pay, and the analysis showed that area of residence, age, marital status, occupation, household income, and visits to forest facilities all had statistically significant impacts on the degree of willingness to pay. Among these variables, living area (living in Seoul), marriage status (married), occupation (professional and office workers), and household income (more than the median income) were found to have a positive relationship with the degree of willingness to pay, while age and the number of visits to forest facilities were found to have a negative relationship. The implications are as follows: First, it is necessary to establish and implement policies to enhance positive perceptions of the various functions of forests and the legitimacy of protecting forest resources, considering that the public's valuation of various public functions provided by forests is directly related to changes in perception. Second, public evaluations of the public value of forests remain at a low level, meaning that education and promotions regarding the public value of forests need to be implemented and strengthened in the future. Finally, in order to form a consensus among people on the public functions of forests, customized promotions and educational events need to be implemented for non-Seoul residents, non-professionals, the unmarried, and for those who regularly visit forests.
