Evaluation of impact of climate variability on water resources and yield capacity of selected reservoirs in the north central Nigeria

  • This paper presents the evaluation of the impact of climate change on water resources and yield capacity of Asa and Kampe reservoirs. Trend analysis of mean temperature, runoff, rainfall and evapotranspiration was carried out using Mann Kendall and Sen's slope, while runoff was modeled as a function of temperature, rainfall and evapotranspiration using Artificial Neural Networks (ANN). Rainfall and runoff exhibited positive trends at the two dam sites and their upstream while forecasted ten-year runoff displayed increasing positive trend which indicates high reservoir inflow. The reservoir yield capacity estimated with the ANN forecasted runoff was higher by about 38% and 17% compared to that obtained with historical runoff at Asa and Kampe respectively. This is an indication that there is tendency for water resources of the reservoir to increase and thus more water will be available for water supply and irrigation to ensure food security.

Recognition of Elementary School Students for The Country-of-Origin Labeling at School Foodservice in Seoul (학교급식 원산지 표시제 시행에 따른 일부 서울지역 초등학생의 인식도)

  • This study was conducted to offer basic data that give effective ways to inform the country-of-origin labeling, where the ingredients they are serving are from, at school foodservice and to reconsider the importance of the labeling origin based on the survey by the elementary school students. 96.0% of the elementary school students agreed to the regulation about the country-of-origin labeling and the older students were influenced more by media and also supported the labeling. About the tendency of ingesting food from the country the students didn't like, 69% of them disagreed to eat. In the ways to label the country-of-origin labeling at school foodservice, elementary school students recognized easily the indication of origin designed by menu items, letter type. 76% of elementary school students checked the country-of-origin labeling posted at restaurants. When the students eat out, 68% of them were unwilling to have the food using the ingredients from the country they don't like. The country-of-origin for main ingredients such as beef, pork, chicken and other meat products, rice, kimchi had high importance scores. We found that the students think about the country-of-origin for main ingredients is important. Consequently, education and public relations of the country-of-origin labeling for elementary school students would be required.

Antioxidant and Immunoenhancement Activities of Ginger (Zingiber officinale Roscoe) Extracts and Compounds in In Vitro and In Vivo Mouse and Human System

  • Ginger (Zingiber officinale Roscoe) is traditionally used as appetite enhancer, improver of the digestive system, antithusive, anti-cold, antipyretic, analgesic, and antiinflammation. In vitro evaluation using human lymphocyte cultures showed almost similar indication with those in in vivo mouse study, NK cell lysing activity was improved significantly. Proliferation activity of B and T cells, and CD3$^{+}$ and CD3$^{+}$CD4$^{+}$T cell subset were better observed using oleoresin or gingerol and shogaol fractions. Although there were higher activities in gingerol, the improvement was almost equal to that by oleoresin. Shogaol did not show better improvement except at higher concentration. It could be concluded that treatment with single bioactive compound, such as gingerol, did not show significant effects compared to oleoresin, the crude extract. In human study, involving healthy male adult, the improvement of NK cell lysing activity was again demonstrated and even more apparent. The mechanism involved in the protection seemed to be through the antioxidant activity of gingerol. However, other mechanism underlying the improvement of NK cell lysing activity must be involved since this improvement seemed to be specifically toward NK cell activity. Since NK cells ave specific for the elimination of virus-infected cell and mutated cells, this positive effect on the immune system are very interesting. This work has also scientifically proved that the traditional beliefs that ginger had preventive effects on common cold appeared to be reasonable.

The Fast Foods Consumption Patterns of Secondary School Students in Busan Area (부산지역 중.고등학생의 패스트푸드 이용실태 조사)

  • The purpose of this study was to examine the fast food consumption patterns of secondary school students in Busan. Secondary school students in Busan area were asked in a survey about their perception and attitudes towards fast food (n=968, response rate: 92%). Most respondents answered that they consume fast food once a month because it is fast, easily accessible and tasty. Although they perceived fast food as unhealthy and less nutritious, they were less aware of its effect on their eating patterns: a clear indication of their limited knowledge on dietary impact. The more knowledgeable respondents were about nutrition and health, the less likely they were to choose fast food over other meals. However, respondents who had little or no knowledge about the nutritional factors of fast food accounted for 43.1%. Our study suggests that development of effective nutrition and health education is crucial to adolescent population. This study will enable educators to plan more effective strategies for improving the dietary knowledge of the adolescent population.

Investigation of Microbial Contamination Level during Production of Baby Leafy Vegetables (어린잎채소 생산 농장의 위생지표세균과 병원성미생물 오염도 조사)

  • The purpose of this study was to investigate contamination sources of baby leafy vegetables by assessing microbial loads on baby leafy vegetables and agricultural inputs contacted with the vegetables. To estimate microbial loads, fecal indicators (coliform and Escherichia coli) and foodborne pathogens (E. coli O157:H7, Salmonella spp., Staphylococcus aureus, Listeria monocytogenes, and Bacillus cereus) were examined. A total of 126 samples including eleven kinds of leafy vegetables, irrigation water, media, and tools were tested, resulting in coliform contamination observed from most of samples. For E. coli, 10.3% (13/126) of the samples were positive including irrigation water, knife, handler, media, tools, and three kinds of leafy vegetables. B. cereus was detected from 38% (48/126) of the samples including media, tools and three kinds of leafy vegetables. No E. coli O157:H7, Salmonella spp., and L. monocytogenes was detected. This result implies that contacting with agricultural inputs could explain microbial load of baby leafy vegetables.

Evaluation of the Level of microbial Contamination in the Processing Company of Nuroong-ji (누룽지 생산시설에 대한 미생물학적 오염도 평가)

  • This study was conducted to evaluate the microbial contamination levels in the processing company of Nuroong-ji. Microbial contamination levels were examined for sanitary indication bacteria such as aerobic plate count, coliforms and fungi, and pathogenic bacteria such as Escherchia coli O157:H7, Salmonella spp., Staphylococcus aureus, and Listeria monocytogenes. Contamination levels were detected differently according to handling materials and purposing work-space. The equipments and raw materials were not seriously contaminated but there were necessary to attend the cross-contamination. A high contamination level was detected at the process where the interference of the employees was relatively higher than the other process. Standardization of the roasting process (l20~$170^{\circ}C$, about 10 min) could be necessary to control the microbial organism effectively on Nuroong-ji manufacturing process. At small/medium size foodstuff manufacturers, it is the most important to improve the recognition level of individual hygiene but also expand a hygiene facility.

Effects of Food-related Lifestyle on the Importance of Selected Attributes of Diet Lunch Box (식생활 라이프스타일 유형이 다이어트 도시락 선택속성의 중요도에 미치는 영향)

  • The study subjects were 302 adult males and females aged more than 20 years living in the metropolitan area of South Korea. This study was conducted to obtain baseline data to establish proper development and marketing strategies by examining the effects of food-related lifestyles on the importance of diet, purchasing behavior towards diet lunch boxes, and their selected attributes such as menu, packaging, and services. With respect to food-related lifestyle, a cluster analysis was performed by using five factors such as convenience factor, health factor, safety factor, taste factor, and economy factor obtained from factor analysis to derive the economy type, the taste and economy type, the convenience type, the safety type, and the health type. As a result, the respondents regarded 'food hygiene (4.59)', 'freshness (4.47)', 'taste (4.28)', and 'nutrient balance (4.19)' as the selected attributes of diet lunch box menus. Moreover, the importance of diet lunch box menus (${\beta}=0.179$) was increased with increasing safety orientation. 'Shelf life label (4.42)' was the most important selected attribute of diet lunch boxes, followed by 'ingredient label (4.19)', 'nutrition facts label (4.16)', and 'indication of origin (4.15)'. In particular, the importance of packaging for diet lunch boxes (${\beta}=0.203$) was increased with increasing safety orientation. With respect to the selected attributes of services in purchasing diet lunch boxes, 'provision of personalized menus (4.07)' was the most important, and the importance of services for diet lunch box (${\beta}=0.160$) was increased with increasing taste and economy orientation. Based on the above results, the respondents gave importance to the selected attributes related to food safety and health such as hygiene and, freshness. In addition, they also placed emphasis on hygiene and safe factors such as shelf life, ingredients, and nutrition facts labels. Therefore, it is considered necessary to develop diet lunch boxes by taking these factors into account. Furthermore, in services for diet lunch boxes, it is considered necessary to establish a service system capable of providing consumers with specialized menu or nutrition counseling according to the food-related lifestyle for their proper health management. Particularly, because consumers place emphasis on both food hygiene and safety, and health, it is considered necessary to thoroughly manage hygiene, safety, and nutrition in menu or packaging so that it is possible to enhance customer satisfaction by considering these selected attributes in greater detail.

A Survey on the Knowledge and Preferences for Korean Food Targeting Germans Residing in Korea (주한 독일인의 한국 음식에 대한 인식 및 기호도 조사)

  • This study has been conducted to research the interests and tastes in Korean cuisine aiming at Germans who have lived in Korea for over 6 months, create new Korean menu items to their taste, and provide preliminary data for the globalization of Korean cuisine. Germans living in Korea tend to prefer Korean dishes as much as German dishes, and males have more opportunities to have different Korean dishes than females through social activities. Most of them answered that they barely cook Korean food and gave low marks for the globalization of Korean food and ease of cooking. The main reason given for not cooking Korean food themselves was that it is complicated to cook, which is a direct indication of the lack of knowledge of the recipes. Therefore, the importance of simplification and standardization of recipes for the globalization of Korean food was revealed. From the study on Korean food preferences based on the restaurant frequenting practices of Germans, the most popular Korean restaurants were those which were located in popular restaurant districts or within walking distance and those with an elegant or tranquil ambience. To promote the globalization of Korean food, development of diverse easy recipes or education about Korean dishes for foreigners would enhance their understanding and familiarity of Korean cuisine.

  • This study intended to examine the Korean restaurant customer's recognition about GIAP and to measure the reliability for them, and to figure out their effects on the customer's satisfaction and revisit intentions. Accordingly, research model had been set up and also hypotheses was made up according to pre-studies and pre-investigation results. Factor analysis and reliability analysis were concluded as valid results by the Cronbach's Alph for GIAP, customer satisfaction and revisit intention each other. Firstly, the effect of GIAP on the customer satisfaction was showed positive significance about four factors - perceived quality, reliability, authenticity and security on the customer satisfaction by the multiple regression analysis. Secondly, The effect of GIAP on the customer's revisit intention was showed positive significance about four factors - perceived quality, reliability, authenticity and security on the customer's revisit intention by the multiple regression analysis. Thirdly, the effect of the customer satisfaction on the customer's revisit intention was showed positive significance by the simple regression analysis. This study focused on medium level-cost Korean-pop restaurant so as to investigate general popular's recognition about the GIAP and intended to figure out their revisit intention. Therefore, the results are useful for increasing the food-service strategy system. Informations about the GIAP in restaurants can be credible to the restaurant customers.

Analysis of Pharmacogenetic Information in Korea Drug Labels (국내 허가사항에 반영된 약물 유전정보 분석)

  • Background: Pharmacogenomics is the study of how genetic mutations in patients affect their response to drugs. Pharmacogenomic studies aim to maximize drug effects and minimize adverse drug events. The Food and Drug Administration and the European Medicine Agency published guidelines for pharmacogenetics in 2005 and 2006, respectively; the Korean Ministry of Food and Drug Safety followed suit in 2015. Methods: This study analyzed pharmacogenomic information in the Korean Ministry of Food and Drug Safety's integrated drug information system to evaluate whether domestic pharmaceutical products reflect the current research on pharmacogenomic differences. Results: In June 2020, the Korean pharmacogenomic database contained genomic data on 90 compounds. Of these, 45 compounds were classified as "Antineoplastic and immunomodulating agents." The other 45 non-antineoplastic agents were in the following categories: Anti-infectives, Mental & behavior disorder, Hormone & metabolism related diseases, Cardiovascular system, Skin & subcutaneous tissue disease, Genito-urinary system and sex hormones, Blood and blood forming organs, Nervous system, Alimentary tract and metabolism, Musculo-skeletal system, and Other conditions including the respiratory system. In addition, 30 additives unrelated to the main ingredient were associated with genetic precautions. Conclusion: This study showed that antineoplastic and immunomodulating agents accounted for half the drugs associated with pharmacogenetic information. For antitumor and immunomodulatory drugs, genomic tests were recommended depending on the indication; this was in contrast to genomic testing recommendations for non-antineoplastic medications. Genomic tests were rarely requested or recommended for non-antineoplastic medications because the relationships between genotype and efficacy among those drugs were relatively weak.
