초등학교 고학년 아동의 비만에 영향을 미치는 요인 (Factors Influencing the Obesity of Senior Elementary Students)

  • Objectives: This study was to identify the food habits, dietary attitudes and exercise habits of senior elementary students and provide basic data for the development an obesity management program for these children. Methods: The survey participants were 626 fourth to sixth grade elementary students in G city. Data were analyzed by descriptive statistics, $\chi^2$-test, t-test, ANOVA and multiple logistic regression. Results: The prevalence of obesity was 9.1%. The score of food habits and dietary attitudes at normal-weight group was higher than that of obese group. The food habits of obese group were significantly different according to gender and consideration eating between meals too often as bad habits. The dietary attitudes were significantly different according to interest in obesity control and consideration eating fast and fat food preference as bad habits in obese group. The factors such as grade, intension in weight control and consideration eating fast, overeating, fat food preference and predilection for some food as bad habits were related to obesity. Conclusion: Food habits and dietary attitudes have relation with obesity of senior elementary students. Thus, to develop of obesity management program for senior elementary students, we considered the food habits and dietary attitudes of them.

수도권 지역 영양사와 비영양사의 영양지식, 영양태도 및 식 행동 비교연구 (A Comparative Study of Nutrition Knowledge, Nutrition Attitudes and Eating Behaviors of Dietitians and Non-Dietitians Working in the Metropolitan Area)

  • This study was carried out to compare the nutrition knowledge, nutrition attitudes and eating behaviors of dietitians and non-dietitians. The subjects of this study were 148 dietitians and 195 non-dietitians who are working in the metropolitan area. The general characteristics, nutrition knowledge, nutrition attitudes and eating behaviors of the subjects were surveyed using a self-administered questionnaire. The results were as follows: The result of anthropometric data and body mass index showed no significant differences between dietitians and non-dietitians groups. The dietitian group ($16.61{\pm}1.82$) showed a significant difference (p < 0.001) compared to the non-dietitian group ($14.60{\pm}2.17$) in nutrition knowledge scores. Nutrition attitudes of the dietitian group ($36.66{\pm}6.91$) was a little higher than the non-dietitian group ($36.21{\pm}7.95$), but not a significant difference. The dietitian group ($61.52{\pm}9.37$) and the non-dietitian group ($62.50{\pm}11.25$) were no significant difference in eating behaviors. The correlation between nutrition knowledge scores and nutrition attitudes score of dietitians and non-dietitians groups were no significantly difference and also the correlation between nutrition knowledge scores and eating behaviors scores were not statistically significance. Whereas, the correlation between nutrition attitudes and eating behaviors showed a significant difference (dietitian r = 0.40829, non-dietitian r = 0.51914). From these results, we could see the necessity of emphasis of nutrition knowledge by mending the education is necessary to enable dietitians to apply that in real life. Also it is important to guide non-dietitians to adjust their nutrition knowledge, nutrition attitudes and eating behaviors.

한국판 식사태도검사-26(The Korean Version of Eating Attitudes Test-26 : KEAT-26) 표준화 연구 I : 신뢰도 및 요인분석 (A Standardization Study of the Korean Version of Eating Attitudes Test-26 I : Reliability and Factor Analysis)

  • The purpose of this study was to test a reliability and validity of the Korean version of Eating Attitudes Test-26(KEAT-26). Using multi-stage sampling, we finally got 3,496 subjects(1422 males and 2074 females) who were available for analysis from target 4,400 Korean adults over 18 in the nationwide areas of9 kus, 10 middle or small cities, and 17 kuns. We tried to make T score norm of the KEAT-26 as a cutoff score and STEN score norm as a index of severity for disordered eating behaviors. For the male group, Cronhach's internal consistency was .83 and Spearman-Brown split half correlation coefficiency was .75. For the female group, each of them was .81 and .75, and .81, .75 for the grand total group respectively. Validity test was performed by construct validation analysis. By a iterated principal axis factoring, 4 factors were extracted. There were some differences in the factors of the KEAT-26 by sex. In the male group, factor I was 'self-control of eating and bulimic symptom', factor II was 'food preoccupation and dieting', factor III was 'preoccupation with being thinner', factor N was 'avoidance of sweet foods'. In contrast with the male group, factor I was 'self-control of eating and bulimic symptom', factor II was 'preoccupation with being thinner', factor III was 'food preoccupation' and factor N was 'dieting' in the female group. We used T score 65 as a cutoff score. T score 65 corresponded to raw score 19 in the male group, 22 in the female group and 21 in the grand total group. Severity of disordered eating behaviors was measured by a STEN score. In the male group, each of the score range of 0-10, 11-14, 15-18, 19-22 and over 23 represented the degree of none, subclinical, manifest, moderate and severe severity respectively. Each of the score range of 0-13, 14-17, 18-21, 22-26 and over 27 in the female group, and the score range of 0-12, 13-16, 17-20, 21-25 and over 26 in the grand total group also represented the same degree of severity as like in the male group. These results support that KEAT-26 is a reliable and valid scale for evaluating disordered eating behaviors and eating problems.

요리 활동 교육이 아동의 편식행동에 미치는 영향 (The Effect of Cooking Activities on the Unbalanced Dietary Food Habits of Elementary School Children)

  • The purpose of this study was to investigate the effect of cooking activities on the unbalanced dietary food habits of elementary school students and develop the effective cooking activity program for the improvement of unbalanced dietary behaviors as well as the food intake and menu acceptance. The subjects of this study were 256 elementary school students. The cooking activity group and control group were consisted of 128 students of $3^{rd}$ & $5^{th}$ grader each. Both cooking activity and the control group took the same 1-hour nutritional theory based class for 10 sessions. Only Cooking activity (CA) group took additional 10 sessions of 1-hour cooking class. Programs for cooking activity were developed and 10 cooking activity sessions were taken place for 4 months. The questionnairs were used to evaluate the effect of the cooking activities over the intake of food group, unbalanced dietary behavior, eating attitudes, menu acceptance before and after the completion of all the cooking activities. Cooking activities affect the unbalanced dietary behaviors and the intake of food groups. Fish, cereals, milk products, fruits, potatoes, vegetables were more eaten by CA group than control group. Eating attitudes and unbalanced dietary behaviors of CA group are also improved significantly than control group. From these results, it was concluded that cooking activities had the positive effect on the improvement of unbalanced dietary food habits over vegetables, cereals, fish, milk product and fruits as well as the unbalanced dietary behaviors of the elementary school children.

건강신념 모델에 근거한 보육시설 유아대상 영양교육 프로그램 개발 및 적용 (Development and Application of a Health Belief Model Based Nutrition Education Program for Day Care Center Children)

  • The purpose of this study was to develop various nutrition education materials, including an animated CD, for day care center children and their teachers and in order to apply the nutrition education programs systematically. We evaluated the effect of the nutrition education programs on nutrition knowledge in the first year, and the effect of the nutrition education programs on nutrition knowledge, food attitudes and eating behaviors in the second year in day care center children. In the first year, nutrition education foundational materials, such as the animated CD-ROM, videotape, textbook, panels, posters, slogans, leaflets, picture disks, hand puppets, stickers for compensation and poster boards were developed. The subjects were 537 children (286 boys,251 girls) aged four to six years. In the second year, nutrition education materials, such as the animated CD-ROM and textbook were developed. The nutrition education group included 368 children (177 boys 191 girls) aged four to six years, and the comparison group consisted of 108 children (54 boys,54 girls) Regarding the nutrition knowledge test results in the first year, the pre-test mean of children was 6.82, however, the post-test mean was 11.35 and showed a significant increase (p < 0.001). Regarding the nutrition knowledge test and the food attitude test results in the second yew, the nutrition education group had significantly higher scores than the comparison group in a post-test (p < 0.001). For the eating behavior test results, the post-test means between the comparison group and the nutrition education group were not significant. The test results show that several months of nutrition education is not enough to improve eating behaviors. As a result, nutrition education has improved nutrition knowledge and food attitudes in day care center children but short-term nutrition education was not sufficient to induce a change in eating behaviors. To improve eating behaviors in day care center children, nutrition education programs must be applied to day care center children in addition to their Parents and Persistent education will have to be continued.

식생활 라이프스타일 유형에 따른 다이어트 관련 태도와 인구 통계학적 특성의 차이분석: 20, 30대 성인을 중심으로 (Differences in Diet-Related Attitudes and Demographics by Type of Food-Lifestyle: Focused on Adults in Their 20s and 30s)

  • This study classified respondents by food-lifestyle and investigated differences in diet-related attitudes and demographic variables among food-lifestyle groups. Diet-related attitudes consisted of variables such as interest in diet, trial number of diet, diet period, weight loss, diet motivation, verification of products approved by the Ministry of Food and Drug Safety, verification of manufacturer's reliability, examination of damage cases and side effects, and awareness of consumer protection law. This study administered a questionnaire survey to adults between the ages of 20 and 39 who lived in Daegu and Uijeongbu from November 17th to December 14th 2014. Data collected from 293 respondents were analyzed using descriptive statistics, factor analyses, cluster analysis, analysis of variance (ANOVA) and chi-square tests. Four clusters (passive eating habit group, active eating habit group, convenience oriented group, and taste and health oriented group) were developed according to four factors of food-lifestyle (health-conscious, popularity-seeking, taste-seeking, convenience-seeking). The results of the ANOVA and chi-square tests indicated significant differences in interest in diet, awareness of consumer protection law, verification of products approved by the Ministry of Food and Drug Safety, verification of manufacturer's reliability, examination of damage cases and side effects, gender, education levels and household monthly income levels among food-lifestyle groups.

초등학교 고학년생의 성별과 영양지식 수준에 따른 식습관, 식품섭취빈도, 식태도 비교 (Dietary Habits, Food Frequency and Dietary Attitudes by Gender and Nutrition Knowledge Level in Upper-grade School Children)

  • This study was carried out to examine dietary habits, food frequency and dietary attitudes by gender and nutrition knowledge level in upper-grade school children. Subjects were 223 boys and 208 girls attending 13 elementary schools (5 th and 6 th graders). A self-administered questionnaire was developed to assess nutrition knowledge, dietary habits, food frequency, and dietary attitudes. Nutrition knowledge score assessed by 19 questions was significantly higher in girls than in boys. There were significant differences between boys and girls in several items in dietary habits such as enough breakfast time, dinner regularity, number of side dishes, eating speed, type of snack after dinner, and degree of saltiness of dishes. Girls consumed staple foods such as rice, noodles or bread more frequently, and consumed less frequently ramyun, fried foods, fast foods, and Chinese foods than boys. In addition, girls had more positive dietary attitudes in trying to reduce fast foods, Chinese foods, ramyun and fried foods. Also children in the high or moderate nutrition knowledge level groups had better dietary habits in frequency of meals, frequency of breakfast, enough breakfast time, dinner regularity, activity during the meal, number of side dishes, eating speed, type of snack after dinner, and better food choices by eating staple foods and vegetable side dishes, meats and beans more frequently, and fried foods, doughnuts/cakes, Chinese foods less frequently, and had better dietary attitudes in breakfast, vegetables and fruit intake than children in the low nutrition knowledge level group. Our results showed that dietary habits, food frequency and dietary attitudes were different by gender and nutrition knowledge level. These results suggest that in developing nutrition education program for elementary school children, the differences between gender and nutrition knowledge level should be considered. Nutrition education in elementary schools may change dietary habits and dietary attitudes through increasing nutrition knowledge.

주부들의 식생활태도 유형에 따른 스트레스와 자기건강에 관한 연구 (The Relationship between Stress from Housewives' Attitudes toward Dietary Life and their Health)

  • The consciousness and eating habits of the housekeeper directly influence the stress level and health quality of the household occupants. In Korea, most housewives are in charge of dietary life. Accordingly, their attitudinal clusters toward dietary (eating) life were researched in relation to their stress and health. The research results showed that irregular eating habits cause stress. Therefore, it is necessary for housewives to have a regular eating habit. The results were as follows. The house wives' attitudes toward dietary life were categorized into 5 clusters: regular and speedy overeating, regular and frequent eating, regular and light eating, irregular and light eating, irregular and speedy overeating. The cluster of regular and frequent snacks was 24.3%. The cluster of irregular and speedy overeating caused the most stress. Especially the house wives' group belonging to the cluster of irregular and speedy overeating were under social and emotional stress, while the cluster of regular and light eating and the cluster of irregular and light eating were under concentration stress. The cluster of regular and frequent snacks and the cluster of irregular and light eating had negative effect on their health, while the cluster of regular and speedy overeating had negative effect on their family's health by their social stress.

Implementation and Evaluaion of Nutrition Education Program for Elementary School Children

  • This study was designed to develop, implement and evaluate a nutrition education program for elementary school children. Subjects consisted of 47 children in the 6th grade in Seoul, Korea. They received five sessions of nutrition education from June to July, 1999. Topics for nutrition education included function of nutrients, food sources of nutrients, balanced diet, meal planning, and adequate energy intake. Each session lasted 40 minutes. To evaluate program effectiveness, one group pretest-posttest design was used. Subjects were given a pretest and a posttest on nutrition knowledge, eating attitudes, eating behavior, and dietary intake. All data were statistically analyzed mainly using the paired t-test and $\chi$$^2$-test. There was a significant difference between pretest and posttest score on nutrition knowledge(p<0.001), subscales of nutrition knowledge including food sources of nutrients, function of nutrients, and balanced diet(p<0.001). These changes in nutrition knowledge were also shown both in boys(p<0.001) and in girls(p<0.001). Eating attitudes, subscales of eating attitudes, and eating behavior were not significantly changed after nutrition education, although some changes were observed in these variables. Dietary intakes were not significantly were not significantly changed after nutrition education for all subjects ; however, different patterns in dietary intakes were observed when examined by sex. There was an increase in nutrient intakes among boys, while there was a significant decrease in nutrient intakes among girls after program implementation. Especially, it was noted that girls had diets deficient in iron, calcium, and vitamin A, even after nutrition education. It was concluded that a five-week nutrition education program can improve nutrition knowledge or some dietary intake, but this might not be enough to induce changes in food attitudes, eating behavior or dietary intakes. It might be necessary to incorporate diverse approaches, targeting sub-groups of children, and follow-up in nutrition education for elementary school children.   • This study was to evaluate the anthropometry, dietary attitudes and the other factors of 201 children in day-care centers according to their parents' income levels. The evaluation was conducted using anthropometric measurements such as height, weight, skinfold thickness, blood pressure, and questionnaire survey which was completed by the children's mothers. The results are summarized as follows: Overall growth of children was normal according to Korean standard. There were no significant differences in anthropometry according to the income levels. The scores of eating habits of children were different significantly according to income levels. That is, the score was the lowest in the low-income group. Children generally prefer one-dish meal or snacks, while the preference levels of kimchi, seasoned vegetable and beans broiled in soysauce were lower than those cf other foods. In the questions to know mothers' nutrition knowledge, we could see that they didn't know well about protein, breast-feeding, weaning and balance in nutrients. Nutrition knowledge score of mothers was significantly lower in the low income group, which shows close relationship with low-score eating habits of their children. The score of nutrition knowledge was affected by the mother's education level. The higher the mother's nutrition knowledge and education level, the better children's eating habits. These findings emphasize the planning and application of nutrition education programs for mothers especially in the low income group.
