Analysis of Temperature Effects on Microbial Growth Parameters and Estimation of Food Shelf Life with Confidence Band

  • As a way to account for the variability of the primary model parameters in the secondary modeling of microbial growth, three different regression approaches were compared in determining the confidence interval of the temperature-dependent primary model parameters and the estimated microbial growth during storage: bootstrapped regression with all the individual primary model parameter values; bootstrapped regression with average values at each temperature; and simple regression with regression lines of 2.5% and 97.5% percentile values. Temperature dependences of converted parameters (log $q_o$, ${\mu}_{max}^{1/2}$, log $N_{max}$) of hypothetical initial physiological state, maximum specific growth rate, and maximum cell density in Baranyi's model were subjected to the regression by quadratic, linear, and linear function, respectively. With an advantage of extracting the primary model parameters instantaneously at any temperature by using mathematical functions, regression lines of 2.5% and 97.5% percentile values were capable of accounting for variation in experimental data of microbial growth under constant and fluctuating temperature conditions.

온도별 저장중 축육 소시지의 이화학적 변화 (The Physico-chemical Changes of Meat Sausage during Storage at Different Temperature)

  • 저장온도가 축육소시지의 품질에 미지는 영향을 알아보기 위하여 저장온도별 이화학적, 미생물학적 변화를 비교, 검토하였던 바 다음과 같은 결과를 얻었다. 저장 온도별 VBN 함량의 변화는 온도의 영향에 민감한 반응을 나타내었는데 $10^{\circ}C$, $20^{\circ}C$에 비해 $40^{\circ}C$ 저장이 VBN 함량이 급격한 증가현상을 나타내었다. 또한, 변온저장 $(10/40^{\circ}C)$인 경우에는 $10^{\circ}C$$20^{\circ}C$에 비해 VBN 함량변화가 빠르나 $40^{\circ}C$에 비해서는 변화가 느린 경향이었다. 저장온도별 VBN 함량, 총균수의 변화는 저장기간의 경과와 저장온도 증가에 따라 증가하였으나, TBA 값은 저장기간이 경과함에 따라 그 변화 경향은 일정하지 않았지만, 전반적으로 $40^{\circ}C$$10^{\circ}C$, $20^{\circ}C$ 및 변온저장에 비해 높은 경향이었다. Aw와 수분함량은 저장온도별 큰 변화는 없었지만 저장온도가 증가함에 따라 약간 감소하는 경향이었으나 소시지 색깔은 저장기간이 경과함에 따라 어두워지는 경향이었다. 전반적인 slime형성의 기준인 관능평가 2.0을 기준으로 저장기간을 예측해 본 결과 $10^{\circ}C$는 40일 이상, $20^{\circ}C$는 40일 미만, $40^{\circ}C$는 30일 미만, 변온저장의 경우는 20일 정도로 산출되었다.

수위변동에 따른 갯벌의 물리적 환경특성의 변화 (Variation of Physical Characteristic of Tidal Flat's Environment by Water Level Change)

  • This paper described the results of the characteristics of the near-bottom flow and field analysis of the tidal flats sediment. It was the aim of this paper to grasp current flow of tidal flat's environment and influence factor for environmental change forecast of tidal flats. Field measurement of water velocity, water elevation, bed materials test, and temperature distribution of tidal flat were conducted. Thereafter, current flow, turbidity and temperature distribution of tidal flat sediment have been discussed. The field research results showed that the fluctuating velocity near the seabed before and after its appearance at low tide was strongly affected by the wind wave. The resuspension of the sea-bottom sediment took place with great intensity before and after the appearance of the seabed at low tide. Both the sea water level and the weather condition were a significant influential factors. Such as, temperature and turbidity just on the surface and the shallow layer of seabed sediments were varied largely with time and weather conditions, but that its deeper layers was almost constant. Temperature on the seabed sediments was strongly influenced by irradiance and water depth. The temperature variation of the tidal flat and the variation characteristics of the current flow and turbidity depend greatly on the inhabiting environment of the tidal flat benthic organism.

Structural and Magnetic Properties of LaFeO3-BaTiO3 Solid Solutions

  • Polycrystalline samples of LaFe$O_3$-BaTi$O_3$ were synthesized to examine the structural and magnetic behavior. X-ray diffraction confirmed that the ceramics had tetragonal symmetry with less tetragonal strain (c/a) than BaTi$O_3$. The magnetic hysteresis measured at room temperature suggested that the magnetic nature deviates from that of the parent LaFe$O_3$, which has antiferromagentic with a G-type spin structure. Improved magnetic behavior of the solid solution compound might be due to the increase in the canting angle of the spin. The presence of oxygen vacancies and fluctuating Fe valence, arising from the substitution of $Ba^{2+}$ and $Ti^{4+}$ at the A- and B-sites of the lattice, might contribute to bulk magnetization. The temperature dependent magnetization indicated that magnetization was higher at low temperatures and showed a decreasing trend with increasing temperature to room temperature. The magnetic transition temperature of these samples was 665 K and 743 K for the mixed system and LaFe$O_3$, respectively.

  • The results of stand and field testing of a combustion chamber for a heavy-duty 150 MW gas turbine are discussed. The model represented one of 14 identical segments of a tubular multican combustor constructed in the scale 1:1. The model experiments were executed at a pressure smaller than in the real gas turbine. The combustion efficiency, pressure loss factor, pattern factor, liner wall temperature, flame radiation, fluctuating pressure, and NOx emission were measured at partial and full load for both model and on-site testing. The comparison of these items of information, received on similar modes in the stand and field tests, has allowed the development of a method of calculation and the improvement of gas turbine combustors.

  • The solar cell should be operated at the maximum power point every instant. Because this maximum power point is fluctuating due to the change in the insolation and temperature. In this paper, we propose a new maximum power' point tracker by using the microprocessor. The proposed step-down chopper system tracks always the maximum power point, regardless of the change in the insolation, temperature and load.

  • The high degree of viscosity and the non-Newtonian fluid dynamics characterizes the process inside a glass furnace. Because the temperature is fluctuating in very short time-intervals, it is hard to determine that the status of its fluctuation is stable or unstable. Usually Shewhart-chart is used to determine the control status. However because of the characteristics of the temperature fluctuations in the glass furnace it does not directly serve the purpose here. Therefore we suggest using ARIMA to diagnose control status and confirm that the method using ARIMA can be a better tool than Shewhart-chart.

Estimation of Shelf Life Distribution of Seasoned Soybean Sprouts Using the Probability of Bacillus cereus Contamination and Growth

  • Growth of Bacillus cereus was assessed during the storage of seasoned soybean sprouts at 0,5, 10, and $15^{\circ}C$. No lag time in its growth curve was observed and thus the specific growth rate of B. cereus in the exponential growth phase was estimated for bootstrapped microbial count data. The distribution of the specific growth rate could be explained by the BetaGeneral distribution function, and temperature dependence was described by the Ratkowsky square root model. The temperature dependence of the growth could be successfully incorporated into the differential equation of microbial growth to predict the B. cereus count on the seasoned soybean sprouts under fluctuating temperature conditions. Safe shelf lives with different probabilities to reach $10^5\;CFU/g$ were presented at four different temperatures, considering the variation in initial contamination and specific growth rate by the Monte Carlo method and 2-step bootstrapping, respectively. Safe shelf lives defined as the time with a probability of less than 0.1% of reaching the critical limit, were 13.4, 5.2, 3.6, and 2.8 days at 0, 5, 10, and $15^{\circ}C$, respectively.
