The aim of this study was to determine what kinds of foods university students have, how often they eat out and the regularity and quantity of food they consume. A questionnaire surrey was conducted on 597 university students. The main results are as follows : The average weight of the participants was 68.24kg(male) and 53.12kg(female) with average height 174.50cm(male) and 162.48cm(female). Many students ate irregularly (breakfast 73.5%, lunch 54.4%. dinner 57.1%). The percentage students who had a meal with the average amounts of food were 32.2%(breakfast), 61.1%(lunch), 39.2%(dinner). Male students ate out than female (lunch>dinner>breakfast). Male students usually ate rice, meat, fish, soybean and seaweeds, Female students ate bread, fruits and milk products. Male students consumed carbonated beverages drinks and alcohol more often than females-who consumed many types of-snack More female students preferred fast food than males.
A practical control diet was prepared and compared with raw fish ($80\%$ frozen horse mackerel + $20\%$ commercial binder meal) and moist pellet ($50\%$ frozen horse mackerel + $50\%$commercial binder meal) diets to develop a practical diet formulation for Korean rockfish (Sebastes schlegeli). Korean rockfish averaging 68.5g were fed with the three experimental diets for 11 months. Final average body weight was approximately 330g and showed no significant difference between fish groups (P>0.05). Feed efficiency of fish from control diet was significantly lower than those of fish from raw fish and moist pellet diets (P<0.05). Protein and lipid retention efficiency of fish ranged $26.9-28.8\%$ and $86.5-110.2\%$, respectively, without any significant difference between the different diets. At the end of the experiment, chemical composition for the various parts of fish body and flesh quality of the raw fish were examined. The data showed that there was no significant difference between fish from the different diet groups for moisture, protein and lipid contents of whole body, liver, and dorsal muscle. Also, thirty three panelists did not find any difference in color, smell, texture, and taste of the raw fish flesh. These results suggest that Korean rockfish can be cultured with a laboratory practical feed without any negative effects on growth, nutrient utilization, chemical composition of fish, and quality of raw fish. Therefore, the next step in developing practical feed is to modify the control diet for improving fish performance and reducing feed cost.

A 6-week feeding trial was conducted to determine optimum feeding frequency for growth of juvenile flounder Paralichthys. olivaceus during the summer season. Triplicate groups of fish (initial mean weight 3.7 g) were fed a extruded pellet with 5 feeding frequencies (one meal every 2 days, one meal a day, two meals a day, three meals a day and four meals a day) at $24.0\pm0.50^{\circ}C$ (mean$\pm$SD). Survival of fish fed one meal every 2 days was significantly (P<0.05) lower than that of the other groups. Weight gain, specific growth rate and daily feed intake increased with increasing feeding frequency (P<0.05). However, no significant differences were observed in weight gain, specific growth rate and daily feed intake of fish fed among two, three and four meals a day. feed efficiency and protein efficiency ratio were not affected by feeding frequency. Whole body contents of moisture, crude protein, crude lipid and ash were not significantly affected by feeding frequency. These results indicate that optimum feeding frequency is two meals a day for the optimum growth of juvenile flounder grown from 3.7 to 19.0 g under the experimental conditions.
This experiment was conducted to utilize the water soluble protein from the fish meal in wastewater as nitrogen source by alkaline protease producting bacteria and to investigate the culture condition of the production. G-12 and G-14 strains having the strong activity of the alkaline pretense were isolated from sea water. These strains were identified as Pseudomonas chlororaphis and Pseudomonas alcaligenes according to physiologycal characteristics, respectively. In enzyme production, galactose and casein for G-12 strain, and raffinose and the water soluble protein of the fish meal wastewater for G-14 strain was favorable as carbon and nitrogen source. An action of inhibition appeared in all of the metal salts used. The optimal temperature of enzyme production was $30^{\circ}C$ for all strains. Optimal initial pH for the enzyme formation in G-12 and G-14 strains was pH 10.0 and 8.0. When these two strains were incubated for $30\~35$ hours in the optimal production medium, the enzyme production reached at maximum.
The need for an efficient sampling technique to collect aquatic organisms has risen with the increase of interest in rice paddy fields, which have been recognized as important ecosystems supporting biodiversity. In the present study, a submerged funnel trap used with the assistance of attracting agents (fish meal and chemical light) was designed as an easy, objective and quantitative tool for collecting aquatic organisms in the rice paddy fields. The preference for collecting aquatic organisms as a means for attracting agents was analyzed using a generalized linear mixed model. Also, based on the data of previous research, we compared the community composition of the aquatic macroinvertebrates, which were collected using the quadrat method, and newly designed submerged funnel traps, by analyzing non-metric multidimensional scaling. The results showed that the catching efficiency of 18 of the total 65 taxa was affected by the attracting agents. 12 taxa including Pomacea canaliculata, Hippeutis cantori, Austropeplea ollula, Erpobdella lineata, Ostracoda spp. Branchinella kugenumaensis, Hydaticus grammicus, Rhantus pulverosus, Chironomidae spp., Rana nigromaculata, Cobitidae spp. etc., favored fish meal and 6 taxa including Ischnura asiatica, Coenagrionidae spp. Sternolophus rufipes etc., were attracted by chemical light. The submerged funnel trap used as a measurement tool for biodiversity was less applicable than the quadrat method; however, it was more effective for the selective collection of specific taxa. We expect that this newly designed trap can be a simple and quantitative method for collecting aquatic organisms, and could be used for long term and extensive surveys in rice paddy fields in the future.

This study was conducted to evaluate the effects of extruded pellet (EP) diets, as compared to a raw fish moist pellet (MP) diet for olive flounder, Paralichthys olivaceus, grown in commercial-scale aquaculture for 1 year. Four diets with duplication per diet were formulated for this experiment: two experimental EP diets (EP1 and EP2), one commercial EP diet (CEP), and a raw fish MP diet (MP). The MP diet consisted of 80% frozen horse mackerel and 20% commercial binder meal. Fish weighing $30.1{\pm}0.1 g$ ($mean{\pm}SD$) were distributed randomly to each aquarium as a group of 2,600 fish. Weight gain (WG) and feed efficiency ratio (FER) of fish fed EP2 and MP were higher (P<0.05) than those of fish fed CEP, while those of fish fed EP1 did not differ (P>0.05) from those fed EP2 and MP. However, fish fed the MP diet had a higher survival rate than fish fed the other diets. Fish fed EP2 had higher serum, phospholipids and total protein levels, and lower levels of serum glutamic-oxaloacetic transaminase (GOT), glutamic-pyruvic transaminase (GPT), and total cholesterol than fish fed MP (P<0.05). Dorsal muscle and liver proteins and lipid of fish fed EP1 were higher (P<0.05) than those of fish fed CEP, while those of fish fed EP1 and MP did not differ from those of fish fed EP2 (P>0.05). These results strongly suggest that EP1 could be developed to replace MP for grow-out stage production of olive flounder without adverse effects on growth performance.

Five experimental diets were formulated to evaluate the effects of dietary enzymatically hydrolyzed tuna by-product on growth, non-specific immune responses, and hematology of juvenile rainbow trout (Oncorhynchus mykiss). A basal diet with 50% of fishmeal was used as control (CON) and four other diets replaced 12.5% ($TBB_{12.5}$), 25% ($TBB_{25}$), 37.5% ($TBB_{37.5}$), and 50% ($TBB_{50}$) of fish meal in the CON diet. Juvenile rainbow trout ($4.87{\pm}0.05g$) were randomly distributed into 15 tanks (50 L) and fed 3-4% of wet body weight two times a day. At the end of 7 weeks of feeding trial, weight gain, specific growth rate, feed efficiency, and protein efficiency ratio of fish fed CON diet were significantly higher than those of fish fed $TB_{50}$ diet (P < 0.05). But there were no significant differences among fish fed CON, $TBB_{12.5}$, $TBB_{25}$, and $TBB_{37.5}$ diets (P > 0.05). There were no significant differences in GPT levels among fish fed CON, $TBB_{12.5}$, $TBB_{25}$, and $TBB_{37.5}$ diets. Also, there were no significant differences in lysozyme, superoxide dismutase, glucose, and total protein levels in all experimental diet (P > 0.05). The broken-line analysis indicated that the minimum dietary level of enzymatically hydrolyzed tuna by-product to replace fishmeal could be 29.7% in rainbow trout. These results indicated that the optimum level of dietary enzymatically hydrolyzed tuna by-product could replace greater than 29.7% but less than 37.5% of fishmeal in juvenile rainbow trout diet.
Frying is the most popular cooking style used in food service institutions in Korea because fried dishes are well accepted by students. However, trans fat contents reduction have recently been required in many foods for health reasons Therefore, alternatives to frying such as oven baking or roasting are being used in many institutions. Steam convection ovens provide dry heat as well as steam so that they can be used to make a wide variety of Korean dishes. In this study, a menu acceptance test was conducted over 2 weeks. Pork, chicken, fish and potato dishes cooked by conventional cooking methods were served for 4 successive days, after which the same dishes were prepared using the oven. Overall, 322 junior high school students evaluated the traditionally cooked foods, while 316 evaluated the oven cooked foods. Comparison of the foods prepared using both methods only revealed a significant difference in the acceptability of foods on the fish menu (p<0.05). Specifically, the acceptance of fried fish was higher than that of the oven baked fish. Additionally, overall acceptance of the menu by males was higher than the acceptance by girls. Furthermore, students who had the preference for special ingredients showed a higher menu acceptance for the menu cooked with those ingredients. On average, approximately 25% of the meal was not consumed and left as plate waste. The portion of the fried fish not consumed was smaller than that of the oven cooked fish, but the portion not consumed did not vary based on cooking method for any other foods evaluated. Overall, it is expected that the oven cooking method will be a good substitute for frying or other cooking method for traditional Korean dishes.

Inclusion effect of soybean meal (SBM) and fermented SBM (FSM) in extruded pellet for juvenile abalone (Haliotis discus) was compared in abalone farm. Dietary inclusion effect of the combined macroalgae (MA) (Undaria pinnatifida and Hizikia fusiforme) and a single Saccharina japonica on abalone was also compared. Three thousand six hundred juvenile abalone were purchased from a private hatchery and acclimated to the experimental conditions for 2 weeks. Six 5-ton flow-through raceway tanks were used, and abalone were randomly distributed into tanks (n = 600 per tank). Three experimental diets were prepared in duplicate. Fish meal, FSM, corn gluten meal, and shrimp meal and wheat flour and dextrin were used as the protein and carbohydrate sources, respectively, in the FSM diet. MA was also included in the FSM diet. FSM and MA in the FSM diet were substituted with SBM at the expense of wheat flour and S. japonica, referred to as the SBM and SJ diets. The experimental diets were pelletized by an extruded pelleter. Water stability of nutrients in the experimental diets was monitored at 12, 24, and 48 h after seawater immersion. The experimental diets were fed to abalone once a day to satiation with a little leftover for 120 days. The retained crude protein and lipid and ash content of the extruded pellets were changed over all period of time. Weight gain and specific growth rate (SGR) of abalone fed the SBM diet were greater than those of abalone fed the FSM and SJ diets. Weight gain and SGR of abalone fed the SJ diet were also greater than those of abalone fed the FSM diet. The longest shell length, widest shell width, highest shell height, and greatest soft body weight were obtained in abalone fed the SBM diet, followed by the SJ and FSM diets. Proximates of the soft body of abalone were not different among the experimental diets. In conclusion, SBM was a superior protein source to FSM in extruded pellet for growth performance of abalone. Dietary inclusion of a single S. japonica was superior to the combined inclusion of U. pinnatifida and H. fusiforme in the production of abalone.
The present study was carried out to evaluate the effects of organic liquid fertilizer (OLFs) fertigation on the growth and fruit quality of hot pepper (Capsicum annuum L.) cv. 'Nokkwang (Seminis Korea)'. Treatments were given with control (chemical feritilzer), OLF I(fowl dropping : fish meal : soybean meal, 2:1:1), OLF II(fowl dropping : bone meal : soybean meal, 2:1:1), OLF III(fowl dropping : bone meal, 1:1), and OLF IV(fowl dropping : rice bran : soybean meal, 2:1:1). The composition ratio of OLF based on weight to weight. The pH and EC of OLFs according to different material and compositions ranged from 6.5 to 6.8, and from 2.91 to $3.69dS{\cdot}m^{-1}$, respectively. The C/N ratio was the highest as 5.75 in OLF Ⅳ, and there was no difference among the treatments in C/N ratio of the exception of OLF IV. In OLF IV total fruit weight was the highest as 1,558g per plant and total fruit number increased as 23.7% compared to control. The content of capsaicin in the ripened pepper increased with OLF I and II treatments, and decreased with OLF III and IV treatments compared to control of $662mg{\cdot}kg^{-1}$, but the soluble solid content was the highest with OLF IV treatment as $10.0^{\circ}Brix$.
