요양시설 거주 노인의 에너지와 영양소 섭취 실태 및 식품선호도 조사 (Study on Energy and Nutrient Intake and Food Preference of the Elderly in Care Facilities)

  • Objectives: The purpose of this study was to assess energy and nutritional intake and investigate the preference for food and cooking methods of the residents in elderly care facilities. Methods: Data were collected from 72 residents (10 males and 62 females) aged ${\geq}70$ years in elderly care facilities using questionnaires, food photographs for estimating dietary intake and records for daily physical activity. Results: Average age of the study participants was 85.0 years and 41, 36 and 8 had dementia, hypertension and diabetes mellitus, respectively. 15%, 65% and 19% of subjects were physically mobile, enervated, and immobile, respectively. Daily energy intake was 1360.2 kcal in men and 1378.0 kcal in women, which were 68.0% and 86.1% of the estimated energy requirement (EER) of dietary reference intake for Koreans (KDRI) for ${\geq}75$ year old individuals, respectively. Estimated energy expenditure (EEE) of subjects calculated using formula from KDRI was 1361.9 kcal and EER calculated using estimated daily physical activity (EDPA) was 1232.9 kcal. Energy intake and EEE from KDRI were higher than EER from EDPA. Dietary intake of dietary fiber, calcium, potassium, zinc, vitamin $B_2$, niacin, vitamin C were lower, and protein, phosphorous, iron, sodium, vitamin A, vitamin $B_1$, vitamin $B_6$, vitamin E were higher than the corresponding ones of KDRI. Subjects liked meats, fishes and shellfish, and fruits, while subjects disliked milk, seaweeds and salted fish and salted vegetables. Cooked rice, soybean paste soup, beef, cooked sliced radish strip, and yogurt were favorite foods, with steam being a favorite cooking method. Subjects considered nutrition as the most important factor for improving food service quality. Conclusions: Results of this study could be utilized for improving food-service for the residents in elderly care facilities, and provide a basis for setting reference intake of energy and nutrients of the elderly having very low activity levels.

안양시내 초등학교 6학년 남.여학생의 식행동과 식품기호도 비교 (A Study of gender difference on Dietary behavior and Food Preferences of the 6th grade Elementary School Children in Anyang city)

  • The purpose of this study was to investigate of gender difference on dietary behavior and food preferences of elementary school children. This survey was carried out through questionnaire method for 274 male and 257 female of the 6th grade elementary school children in Anyang city. By calculating WLI(weight-length index), 26.9% of students were overweight, and 26.2% were under-weight. Average height of male was 147.9cm and that of female was 148.9cm, and their weight was 40.9 kg and 39.2kg respectively. The average BMI(body mass index) was 18.1 kg/㎡. The self-recognition of health status was different according to gender, male recognized better health status than female. There was no significant difference of parents´ education level and the occupation depending on gender. The 56.7% of students had regularly for breakfast, and 60% for lunch and 42.9% for dinner. The female students had irregular meal time more frequently than male did for dinner(p<0.01). They skipped more breakfast(7.0%) than other meals. Reasons of skipping meal were lack of time to eat(50%), boring side-dishes(17.0%) etc. For snacks, choice depends on taste (55.4%), and they bought at the shop nearby (36.5%) and convenience shop(29.9%). They had a meal outside once a month(42.9%), and selected Korean traditional food(52.5%). For almost all of foods male students´ preference showed higher than female except cucumber. Low score of preference was obtained in such as salted vegetables, soy pastes, and fish(shellfish) groups raw or fermented. The preference level was a little higher in such as vegetables & kimchi group and pot stews. The results assert the importance of nutrition education for the students in puberty. It is necessary breakfast should be taken regularly, and therefore we should carry out the education of importance of nutrition and health for children considering the dietary behavior and food preference for balanced diet.

충청남도 해안지역의 비브리오 패혈증균 분포 및 분리주의 특성 분석 (Distribution and Characterization of Vibrio vulnificus Isolated in Coastal Areas of Chungcheongnam-do Province)

  • Background: Vibrio vulnificus has been frequently detected in seawater, fish, and shellfish mainly in the coastal areas of Chungcheongnam-do Province. Objectives: This study was conducted to investigate the analyzed biochemical properties, genetic characteristics, and distribution of Vibrio vulnificus isolated from environmental sources in coastal areas of Chungcheongnam-do Province from 2019 to 2020. Methods: A total of 1,510 samples were obtained from six different sites in Chungcheongnam-do Province. Isolated strains from the samples were identified by a VITEK 2 system and MALDI-TOF. Antibiotic susceptibility testing for 85 isolates was done by microdilution minimum inhibitory concentration methods, and 11 isolates were analyzed for 16s rRNA sequences in multiple alignments. Results: Among the 1,510 samples taken during the investigation period, 306 strains were isolated and the detection rate of V. vulnificus was 20.3%. One hundred eighty-eight strains (24.6%) from seawater and 118 strains (15.8%) from mud flats were isolated. It was mainly detected in July (17.3%), August (36.5%), and September (28.8%), and the proportion was 82.0%. Based on the CLSI-recommended breakpoints, V. vulnificus isolates were all susceptible to amoxicillin/clavulanic acid, amikacin, gentamicin, ciprofloxacin and trimethoprim/sulfamethoxazole. However, nonsusceptible isolates to ampicillin, ampicillin/sulbactam, cefazolin, cefoxitin, imipenem, tetracycline and chloramphenicol were identified. In the analysis of the nucleotide sequences for 16s rRNA of V. vulnificus isolates, it was confirmed that mutations frequently occurred between nucleotide number 922 and 952, and 98.2% to 100% nucleotide identities between isolates was verified. Conclusions: The results of this study can be used as a basic data for infection control and prevention of Vibrio vulnificus infection by describing the distribution and characteristics of Vibrio vulnificus strains isolated in coastal areas of Chungcheongnam-do Province.

남성 근로자들의 알코올 섭취에 따른 영양소 섭취상태 연구 (An Investigation of the Nutrient Intakes according to the Alcohol Consumption Level in Male Workers)

  • The purpose of this study was to compare the anthropometry, nutrient intakes, dietary - related behaviors and health - related behaviors of male workers that were divided according to their alcohol consumption. The mean height, weight and BMI of all subjects were 172.0$\pm$5.8 cm, 67.8$\pm$9.3 kg and 22.9$\pm$2.6 kg/$m^2$, respectively. The WHR was higher in the heavy drinking group than in the other groups(p<0.01), while the other anthropometric indices were not significantly different among the three groups. The calorie intake was highest(p<0.001) in the heavy drinking group(3,270.4$\pm$686.5 kcal), followed by moderate(2,602.8$\pm$415.8 kcal) drinking group and light drinking group(2,341.5$\pm$449.4 kcal). As alcohol consumption increased, there was a decrease in the percent of energy derived from carbohydrates and lipids, while there was an increase in the percent of energy derived from proteins and alcohol(p<0.001). The heavy and moderate drinking groups had a highers intake of protein compared to the light drinking group, and the heavy drinking group had a higher intake of lipid compared to the light and moderate drinking groups(p<0.01). The intakes of vitamin $B_2$, niacin and phosphorus were lower in the moderate group than the other groups(p<0.01). The average MAR(Mean adequacy ratio) was 1.44$\pm$0.35 and the intake of all nutrients, except for folic acid, was much higher than the Korean RI(Recommended intake). The fruit intake frequency and sleeping hours were the lowest in the heavy drinking group(p<0.05) and the subjects preferred the following order of food products when they drink: meat(42.5%), fish & shellfish(30.0%), fruit & vegetable(22.5%) and others(5.0%) as a side dish. The average rates of smoking and exercise for all the subjects were 77.5% and 67.5%, respectively. The results of this study showed that heavy alcohol drinkers were more prone to abdominal obesity and related chronic degenerative diseases, indicating the need for extensive nutritional education for heavy alcohol drinkers.

한국인의 나트륨 섭취에 기여하는 주요 음식군 및 식품군의 추이 분석: 1998~2010 국민건강영양조사 자료 분석 (Trends in the major dish groups and food groups contributing to sodium intake in the Korea National Health and Nutrition Examination Survey 1998-2010)

  • The purpose of this study was to evaluate trends in the sources of dietary sodium intake in a representative Korean population in the Korea National Health and Nutrition Examination Survey (KNHANES) conducted in 1998, 2001, 2005, 2007, 2008, 2009, and 2010. The study consisted of 53,570 men and women aged 7 years or older participating in the KNHANES during the corresponding years. Overall sodium intake and the mean percent contribution of each dish and food group to dietary sodium intake across 1998-2010 were calculated. The means of sodium intake ranged between 4,572.6-5,498.9 mg/d across 1998-2010. The major dish groups contributing to dietary sodium intake were kimchi (1,154.8-1,521.2 mg/d), noodles and dumplings (505.3-760.5 mg/d), soups (465.3-714.8 mg/d), and stews and casseroles (387.0-579.8 mg/d). The combined mean percent contribution from the top four dish groups contributing to dietary sodium intake showed a slight decrease over the period; 64.4% in 1998, 64.5% in 2001, 59.3% in 2005, 58.2% in 2007, 56.3% in 2008, 56.7% in 2009, and 54.4% in 2010. The major food groups contributing to dietary sodium intake were seasonings (1,852.9-2,435.9 mg/d), vegetables (1,425.6-1,792.1 mg/d), grains (482.2-778.1 mg/d), and fish and shellfish (257.2-351.4 mg/d). In addition, the combined mean percent contribution from the top four food groups showed a slight decrease over the period; 92.8% in 1998, 93.2% in 2001, 93.8% in 2005, 92.1% in 2007, 91.7% in 2008, 90.9% in 2009, and 90.7% in 2010. In summary, we did not observe a reduction in dietary sodium intake over time, however, the percent contributions from the top major dish groups or food groups to dietary sodium intake showed a decrease over the last decade.

명태의 건조중 N-nitrosamine의 생성 (The Formation of N-nitrosamine in Alaska Pollack during its Drying)

  • 우리나라의 대표적인 건제품중의 하나인 건조명태의 안전성 평가를 위한 기초자료를 얻고져, 명태 건조중 건조방법이 발암성 N-nitrosamine 및 그 전구물질의 생성에 미치는 영향을 조사하였다. 명태의 생시료중 질산염 및 아질산염 질소는 각각 1.5,<1.0mg/kg이었으나 건제품에서는 각각 $3.0\~4.2,\;1.4\~2.7mg/kg$의 범위였으며, 대체로 열풍건제품에서 그 함량이 높았다. 명태 건조중 아민류의 함량변화를 보면 betaine은 건조중 별다른 양적 변화를 보이지 않았고, TMAO는 건조중 감소하는 반면에 TMA및 DMA는 계속 증가하는 경향을 보였다. 검출된 NA는 N-nitrosodimethylamine (NDMA)뿐이었고, $10{\mu}/kg$의 N-nitrosodipropylamine (NDPA)을 시료에 첨가하여 회수율을 시험한 결과 $87.2\~107.4\%$였다. 명태의 생시료중 NDMA는 평균 $2.8{\mu}/kg$이었으나 건제품에서는 $8.7\~51.4{\mu}/kg$으로서 건조 방법에 따라 상당한 함량차를 보여 천일건제품은 생시료에 비해 평균 9.0배, 열풍건제품은 평균 15.5배 그리고 동결건제품은 평균 4.4배였다. 일반적으로 NDMA의 생성을 최소화시키기 위해서는 동결건조법이 효과적이었다.

가막간 표층퇴적물 중의 금속 및 비금속 원소의 생지화확적 분포특성 (Biogeochemistry of Metal and Nonmetal Elements in the Surface Sediment of the Gamak Bay)

  • 양식활동이 활발한 반폐쇄적인 내만에서 퇴적물의 지화학적 특성을 파악하기 위하여 2010년 4월 가막만 전역의 19개 정점에서 표층 퇴적물을 채취하여 퇴적물 중의 금속(V, Cr, Mn, Fe, Co, Ni, Cu, Zn, Ag, Cd, Hg, Pb, As), 비금속(P, Se) 및 악티늄족 중 U원소의 분포특성을 파악하였다. 또한, 퇴적물기준 및 농축계수를 이용하여 금속원소의 오염도를 평가하였다. V, Cr, Fe, Co 및 Ni 등은 석영희석 효과, Cd 및 U은 유기물 희석효과, Mn, Ag, As 및 Se는 만의 북부 및 남부해역 정점들에서 표층퇴적물의 강한 환원환경경하에서 이산화망간 및 황산염이 유기물 분해의 산화제로 이용되면서 화학적 재분배에 의해 농도분포가 결정되어지는 것으로 보여진다. 미국 퇴적물 오염 기준(SQGs)에 의한 오염평가는 As의 경우 만의 중앙부를 제외한 대부분의 정점, Ni은 전 조사정점에서 ERL을 초과하였다. 농축계수(EF)를 이용한 평가는 Ni, Ag, Cd 및 As가 평균 EF가 1을 약간 초과하는 단계를 보였으며, 이외의 성분은 1과 유사하거나 혹은 그 이하 양호한 수준을 나타내었다.

성인의 일상적인 식사섭취상태의 지역별 비교평가 (Comparative Evaluation of Dietary Intake Status on Self-selected Diet in Korean Adults by Region Groups)

  • The purpose of this study was to compare the nutritional menu value of self-selected diet in Korean adults residing in different regions. Subjects were recruited and divided into three groups according to the districts where they lived, which included rural district(n=137), coastal district(n=100), and urban district(n=117). Subjects were interviewed using a general questionnaire and 24-hour recall method for dietary intake. The average age of the subjects were 57.5 years for rural district, 57.0 years for coastal district, and 47.9 years for urban district. The contents of energy, calcium, zinc, vitamin $B_2$, and vitamin E in self-selected diet were 76.1%, 60.1%, 73.1%, 68.6%, and 80.4% of RDAs, respectively. Index of nutritional quality(INQ) for calcium and vitamin $B_2$ was below in 1 in region groups. The contents of calcium and vitamin E in self-selected diet of rural and coastal districts were significantly lower than those of urban district. The numbers of food items in diet of rural, coastal, and urban district were 14.6, 15.3, 15.1 for breakfast, 16.5, 11.8, 17.0 for lunch, 14.9, 12.1, 15.1 for dinner, respectively. However, there was no significance in total food intake by regions. The food intakes from cereals, mushrooms, vegetables of rural district, that from fishes of coastal district, and those from sugars, milks, oils of urban district were the highest among three districts. The numbers of dish items in diet of rural, coastal, and urban district were 4.1, 4.4, 4.1 for breakfast, 4.5, 3.7, 4.4 for lunch, 4.0, 3.8, 4.2 for dinner, respectively. Especially, the number of food and dish items in lunch menu of coastal district was the lowest among region groups. According to these results, it could be suggested to add milk and its products in lunch menu of rural and coastal districts and to supplement fish and shellfish like anchovy in diet of rural and urban districts. And it is recommended to increase food and dish items in diets of three region groups.

소득수준에 따른 우리나라 성인의 식품 및 영양소 섭취수준 비교 - 2001 국민건강$\cdot$영양조사 결과를 중심으로 (Food and Nutrient Consumption Patterns of the Korean Adult Population by Income Level - 2001 National Health and Nutrition Survey)

  • To explore the relationship between economic status and food and nutrient intake patterns, the 2001 National Health and Nutrition Survey result was analyzed. Dietary intake data of 6,978 Korean adults of 20 years and older who participated in the 2001 National Health and Nutrition Survey were used along with their demographic data. Economic status of the subjects was classified into the following 4 groups based on the self-reported average monthly income of household with reference to the minimum monthly living expenses (MLE) in 2001 : low < $100\%$ MLE $\leq$ middle < $200\%$ MLE $\leq$ high < $300\%$ MLE $\leq$ higher, Individuals in the higher income class had significantly higher mean intake for most of the nutrients including energy, protein, carbohydrate, fat, calcium, thiamin, riboflavin, niacin and vitamin C, and a higher percentage of energy intake from fat. In addition, they consumed more animal foods including meats, eggs, fish/shellfish, milk/dairy products and fats. On the other hand, the mean intakes of individuals in the lower economic class for calcium, vitamin A, and riboflavin were lower than $75\%$ of RDAs. And, there was a predominant difference in contribution of fat to total energy intake among the groups of different economic status. These results showed that household income is an important factor influencing the food and nutrient intake patterns of the Korean adult population. Although individuals at different age classes may respond differently to a change in economic status, developing and implementing nutrition policy and intervention programs for those nutritionally vulnerable groups should consider the economic status as an important factor to customize and differentiate the content of the Program. 가막만 표층퇴적물 중 알칼리 및 알칼리 토금속 원소의 생지화학적 특성 (Biogeochemistry of Alkaline and Alkaline Earth Elements in the Surface Sediment of the Gamak Bay)

  • 2010년 4월 가막만 전역의 19개 정점에서 표층퇴적물을 채취하여 퇴적물의 입도 분포, 유기물의 기원, 알칼리 원소(Li, Na, K, Rb) 및 알칼리 토금속(Be, Mg, Ca, Sr, Ba)원소의 분포특성을 파악하였다. 조사해역의 퇴적물 유형은 대부분 Mud로 나타났다. Chlorophyll $a$, TOC, TN, TS 및 LOI의 경우 만의 북부해역과 어류양식장이 산재되어 있는 남측해역에서 높은 농도분포를 보였으며, 만의 중앙부에서 낮은 농도를 보였다. 이들 성분과는 반대로 산화환원전위의 경우 만의 중앙부에서 대체로 (+)값으로 산화상태를 나타내었으며, 만의 북부해역과 남측해역에서 (-)상태로 환원환경 특성을 보였다. 유기물의 기원은 대부분 자생기원 유기물질 이였으나, 일부 정점에서 육상 및 박테리아성 유기물 기원 특성을 보였다. 알칼리 및 알카리 토금속 원소 중 Li, Na, K, Rb, Be, Mg, Ca 및 Sr의 경우 대부분의 정점에서 석영희석 효과에 의해 일차적으로 농도 분포가 결정된다. Ba의 경우 본 조사해역에서 중정석(Barite)가 존재하는 것으로 생각되며, Sr 및 Ba의 경우 이차적으로 탄산염 희석과 산화환원전위에 의한 생지화학적 영향을 직간접적으로 받는 것으로 보인다.
