Nutritional Status and Knowledge of the Elderly over 65 Years in Young-Nam Area (영남 일부지역 65세 이상 노인의 섭취상태와 영양지식에 관한 연구)

  • This study investigated the nutritional status and the knowledge of the 204 elderly in Young-nam area. Their weight and height were measured and their dietary intake and nutritional knowledge evaluated. The sutjects were 74.7$\pm$5.9 years old in average. The BMIs were in the moderate range. Weights and BMI decreased significantly with age. The dietary assessment data showed that each energy intake of the males and the females was 90.9% and 97.0% compared with the Korean RDA, respectively. The dietary intake of vitamin A, calcium and iron was lower than that of the Korean RDA. The fiber intake of the subjects was 7.4g~7.8g. The MAR of vitamin $_{B2}$ was the lowest, 0.66 and that of phosphorus was the highest, 0.99. According to the nutritional knowledge level, the intake of protein, vitamin A, vitamin $B_1$and iron in the excellent group was significantly higher than that in the poor group. The correlation analysis revealed that the score of nutritional knowledge was positively associated with BMI, MAR and protein intake, while negatively with age.e.

Discrimination between FRC-post and core according to the color difference (색상차이에 따른 FRC-포스트와 코어 사이의 구별)

  • Purpose: The purpose of this study is to evaluate which FRC-posts were more distinguishable from core. Materials and Methods: Nine extracted single-rooted mandibular premolars with similar lengths (${\pm}0.5 mm$) and widths (${\pm}0.5 mm$) were endodontically treated and obturated. One specimen which the three roots were embedded in a cold mounting resin was made. 3 specimens were made by this method. Post spaces were prepared for the following post system: FRC $Postec^{(R)}$ Plus, MACRO-$LOCK^{TM}$ POST $ILLUSION^{TM}$ $XRO^{(R)}$, $Snowpost^{(R)}$. After three different posts were placed in the roots of a specimen, each three specimens received a direct core build-up: $Luxacore^{(R)}$ Dual A3, $Luxacore^{(R)}$ Dual blue, $Filtek^{TM}$ Z350 A1E. Digital images were taken of the post and core with and without air-blowing. We asked to fifty dentists and fifty dental college students which post was more clearly discriminated from the core. Results: In surveys, when core was $Luxacore^{(R)}$ Dual blue, among three types of posts people more easily discriminated the $Snowpost^{(R)}$ from core. When core was $Luxacore^{(R)}$ Dual A3, among three types of posts people similarly more easily discriminated $Snowpost^{(R)}$ from core. When core was $Filtek^{TM}$ Z350 A1E, among three types of posts people more easily discriminated distinguished MACRO-$LOCK^{TM}$ POST $ILLUSION^{TM}$ $XRO^{(R)}$ post from core. People more easily distinguished MACRO-$LOCK^{TM}$ POST $ILLUSION^{TM}$ $XRO^{(R)}$ post from core when temperature was lowered by air-blowing. Conclusion: Ability to discriminate between FRC-post and core is different according to color contrast. MACRO-$LOCK^{TM}$ POST $ILLUSION^{TM}$ $XRO^{(R)}$ posts are more discriminable when temperature is lowered by air-blowing.

Mycelial Growth Using the Natural Product and Angiotensin Converting Enzyme Inhibition Activity of Pleurotus eryngii (천연물을 이용한 큰느타리 균사배양 및 Angiotensin Converting Enzyme 저해활성)

  • To develop the health/functional food materials, we investigated the cultural condition of mycelial growth on the solid state fermentation using the brown rise, Acanthopanax sp. and Artemisia sp., and also evaluated inhibitory activity of angiotensin converting enzyme (ACE) of hot water extracts from cultured media of Pleurotus eryngii. As the amount of Acanthopanax nnd Artemisia In the cultural media increased, the mycelial growth rate decreased. Especially, addition of Aeantopanax showed marked effect than Artemisia. Moisture contents in three kinds of cultured media were in the range of $10.9{\sim}12.0%$. Crude protein fat and crude fiber content were the highest value in cultured brown rice medium, whereas the mineral contents (Ca, K and P) were higher in the Acanthopanax supplemented (5%) medium than the other media, The extraction yield of the Artemisia supplemented (5%) medium was the highest value of 4.80%, and the pH of hot water extract from cultured brown rice medium showed the lowest value of 6.1. Lightness (L) values in three kinds of extracts from cultured media were in the range of $85.8{\sim}87.1$. Redness (a) value was the highest In the brown rice and Acanthopanax supplemented media, however cultured Artemisia supplemented medium showed the highest value in yellowness (b). In comparison of sugar components analyzed by the thin layer chromatography with three kinds of samples, two spots were detected to be glucose and maltose, respectively. The ACE inhibitory activity of hot water extract from the cultured Acanthopanax supplemented medium showed the highest value at the concentration of $0.2{\sim}1.0\;mg/ml$. These results suggest that the Pleurotus eryngii grew in natural media using brown rice and Acanthopanax can be supplemented to the brown rice medium to enhance its ACE inhibitory activity as health/functional food materials.

Optimum Capacity of Retention Basin for Treating Nonpoint Pollutants and Its Removal Efficiency in Industrial Complex Areas (산업단지내 비점오염물질 처리를 위한 적정 저류조 용량 산정 및 처리효율)

  • The Construction of industrial complex areas means the increase of imperviousness rate and the increase of nonpoint pollutant emissions during a rainfall. Generally the retention basin can become the alternative for removing and controling these nonpoint pollutants. Recently Ministry of Environment are trying to change the purpose of retention basins from flooding control to nonpoint pollutant control. In order to propel the stormwater management program, administration plan of stormwater management is enacted in Spring, 2005. Hereafter, in a newly developing area, the best management practices should be established to control the nonpoint pollutant. Landuses of the research area are classified to the categories of the 1st manufacturing industry, metal industry, fiber and chemical product manufacturing industry, etc. Therefore, this research was performed to understand washed-off characteristics of stormwater and to suggest the controling method of nonpoint pollutants. The optimum capacity of the retention basin can be determined by analyzing the relationships among data of rainfall, runoff, washed-off pollutants from the areas. The rainfall analysis using the data of normal year, recent 2, 5 and 10 years shows that the 80% rainfall frequency was occurred on 10mm accumulated rainfall, but which is not considered the first flush effect. However, by considering the first flush effect, the appropriate treatment capacity of rainfall can be decreased to 4-5mm accumulated rainfall. Using the criteria, the optimum capacity of retention basin is determined to $12,000m^3$ in the research area. The washed-off nonpoint pollutant loading from the areas have beeb calculated to 435ton/yr for TSS, 238ton/yr for COD, 8,518kg/yr for TKN and 1,816kg/yr for TP. The mass of 78.3ton/yr for TSS, 20.4ton/yr for BOD, 128.6ton/yr for COD, 4.6ton/yr for TKN and 980kg/yr for TP can be reduced by constructing the retention basin. The sediment accumulation rate is also calculated by $6.53kg/m^2-hr$.

Chemical Components of Korean Paprika According to Cultivars (한국산 파프리카의 품종별 화학성분)

  • The chemical components of Korean paprika according to cultivars were investigated and analyzed to provide basic data for food materialization and processing. Nitrogen free extract contents of President, Special and Fiesta were 6.64, 6.22 and $6.01\%$ respectively. The contents of crude lipid and crude fiber in the Special, President and Fiesta were similar. Mineral components of paprika were rich in $K(83.41\-152.98\;mg\%),\;Mg(28.66\~39.46\;mg\%)\;and\;Mn(10.34\~18.96mg\%)$. Among the cultivars of paprika, K content had a slightly higher level in the President than those of Special and Fiesta. The major free Sugars of paprika were glucose $(1.36\~1.45\%)$ and fructose$(0.06\~1.53\%)$, respectively. The contents of total amino acids in paprika were $1,168.08\;mg\%$ in the Special, $1,112.97\;mg\%$ in the President and $874.79\;mg\%$ in the Fiesta. The major amino acids in the paprika were lysine, aspartic acid and glutamic acid Abundant organic acids of paprika were tartaric $(2.34\~4.32\;mg\%)$, succinic $(2.01\~2.42\;mg\%)$ and malic acids $(0.67\~1.72\;mg\%)$. Eight fatty acids in paprika were identified and the major fatty acids were stearic $(15.11\~34.68\%)$ and linoleic acids $(32.12\~60.36\%)$. The contents of ascorbic acid in paprika were $263.45\;mg\%$ in the Special, $284.24\;mg\%$ in the President and $206.34\;mg\%$ in the Fiesta. Total phenolics and carotenoid contents were higher in President cultivar than any other cultivars.

Investigation of Physicochemical Properties According to Different Parts and Maturity of Momordica charantia L. (여주열매의 성숙단계 및 부위에 따른 이화학적 특성)

  • Momordica charantia L. is a valuable food and medicinal plant of the gourd family (Cucurbitaceae) that is cultivated in tropical and subtropical regions of the world. Physicochemical properties of M. charantia based on cultivars, parts and growing stage were investigated. Crude protein contents of leaf were 27.5%, 26.9%, and 23.6% in native leaf (NL), cv. Erabu leaf (EL), and cv. Dragon leaf (DL), respectively. In particular, the crude protein content was the highest in leaves. The crude fat content was in the order of developmental stage 1 of cv. Erabu fruit (EF1) and developmental stage 1 of native fruit (NF1) with values of 4.0%, and 3.9%, respectively. There was also high amount of crude fiber in stem of all three cultivars. The crude ash content was in the order of cv. Erabu leaf, cv. Dragon leaf, and developmental stage 3 of native fruit (NF3) with values of 23.2%, 17.4%, and 13.6%, respectively. The major minerals found in M. charantia were K, Ca, and Mg. The potassium contents of developmental stage 3 of native fruit (NF3), developmental stage 3 of cv. Dragon fruit (DF3), cv. Dragon stem (DS), and developmental stage 2 of native fruit (NF2) were 498.37, 339.21, 314.30, and 307.34 ㎎ /100g, respectively, while the calcium contents were decreased of EL, DL, and NL with values of 513.45, 371.69, and 209.43 ㎎/100g, respectively. The calcium content was higher in leaves and stems than fruits. On the otherhand, the highest magnesium content was measured in EL (69.92 ㎎/100g). The highest contents of chlorophyll a, chlorophyll b, and total chlorophyll were found in NL (442.9 ㎎/100g dw), EL (759.6 ㎎/100g dw), and EL (1164.9 ㎎/100g dw), respectively. The vitamin C contents from developmental stage 2 of cv. Erabu fruit (EF2), NF3, developmental stage 3 of cv. Erabu on fruit (EF3), and NF2 were found with values of 2849.9, 2330.5, 1985.1, and 1844.5 ㎎/㎏, respectively, and found to be higher in Korean cultivar and Erabu fruit than in Dragon. The charantin contents of leaf were higher than the fruit found to be 547.71, 506.04 and 395.62 ㎍/g dw in DL, EL and EF2, respectively. According to the results, mineral contents, total chlorophyll and charantin contents of M. charantia were higher in the leaves (EL and DL) than the fruits. And, vitamin C content was the highest in the fruit (EF2 and EF3). Therefore, much more research needs to be undertaken to use of the leaves as well as fruits. The data showed that M. charantia can be considered a good source of nutrient for application in food system.

Effects of Mulberry Leaves Powder on Lipid Metabolism in High Cholesterol-Fed Rats (뽕잎분말이 고콜레스테롤 식이 투여 흰쥐의 지질대사에 미친 영향)

  • Mulberry leaves, high in dietary fiber and some nutritional materials, are thought to have hypocholesterolemic effect. Therefore, effect of mulberry leaf powder on serum lipid profiles were studied using rats with diet-induced hypercholesterolemia. Male Sprague-Dawley rats were fed AIN-93 diet (control group), and diets containing high-cholesterol and 0% mulberry leaves powder, high-cholesterol and 5% mulberry leaves powder, and high-cholesterol and 10% mulberry leaves powder for 4 weeks. Hypercholesterolemia was induced by adding 1% cholesterol and 0.5% cholic acid to all diets except in control group. Although no differences were observed in food intake and initial body weight among groups, mulberry leaf treatment resulted in significant decreases in food efficiency ratio and body weight gain. Mulberry leaf treatment decreased serum lipid profiles, atherogenic index, cardiac risk factor, low density lipoprotein cholesterol ratio, serum aspartate transaminase, and liver lipid levels. High density lipoprotein cholesterol, total cholesterol, serum HDL-cholesterol, and fecal lipid levels increased, suggesting mulberry leaves could improve hyperlipidemia and liver action, thereby proventing cardiovascular disease.

Effect of Lactic Acid Bacteria and Formic Acid on the Silage Quality of Whole Crop Rice at Different Maturity (유산균 및 개미산 첨가가 수확시기별 벼 사일리지의 발효 품질 및 사료성분에 미치는 영향)

  • Silage additives are needed to increase the quality of whole crop rice silage which seldom produce without the additives due to both high pH and butyric acid concentrations. Little information, however, is available about the silage fermentation of whole crop rice added with silage additives in Korea. This study was conducted to determine the optimum levels of silage additives by evaluating the effects of latic acid bacteria (LAB) and formic acid concentrations on the silage quality of whole crop rice harvested at different mature stages. Field study was established early in May until October 7th on a rice field at Yupori, Sinbuk-yeup, Chunchon, Kangwon-Do. "Ilpum" mutant rice was harvested at six different mature stages; booting stage (17 Aug.), milk-ripe stage (27 Aug.), dough stage (7 Sep.), yellow ripe stage (17 Sep.), dead ripe stage (27 Sep.) and full ripe stage (7 Oct.). Each sample was ensiled in three different ways; with 1) LAB (0.05, 0.1 and 0.2% of sample wt), 2) formic acids (0.2, 0.3 and 0.4% of sample wt.) and 3) no additive. The additive levels did not affect dry matter content, crude protein, fiber and total digestable neutriant concentrations at all stages. Addition of additives significantly decreased the silage pH and butyric acid concentrations which tended to be more decreased with higher levels of additives. Latic acid concentrations were higher with the use of additives, especially with LAB. The lower concentrations of ammonia-N were observed in additive treatments at all stages, but the concentrations of ammonia-N did not differ according to the additve levels after yellow ripe stage (0.69, 0.60 and 0.71% of DM in 0.05, 01 and 0.2% of LAB, respectively; 0.64 0.59 and 0.75% of DM in 0.2, 0.3 and 0.4% of formic acid, respectively). These results indicate that the optimum addition levels of LAB and formic acid are 0.5∼0.1% and 0.2∼0.3%, respectively, on which the high quality of rice whole crop silage was produced. produced.

Effects of Feeding Whole-Crop Barley Silage and Corn Silage on Nutrients Availability, Growth Performance and Blood Parameters in Korean Black Goats (청보리사일리지 및 옥수수사일리지 급여가 육성기 재래 흑염소의 영양소 이용률, 성장 및 혈액성상에 미치는 영향)

  • This study examined the effects of feeding whole-crop barley silage (BS), corn silage (CS) and the mixture of BS and CS (CB) on feed consumption, daily gain, nutrients apparent digestibilities and blood parameters in order to investigate the feed evaluation in Korean black goats. BS, CS, and CB were fed to twelve Korean black goats, which were allocated into three groups in metabolic cages according to the latin-square design. As a result, dry and organic matter intakes for goats per day have shown a tendency to decrease in the order of CS, CB and BS, but there were no significant differences. We also found a similar tendency when the intakes of crude protein, crude fat, and non-fiber carbohydrates (NFC) were examined. However, ADF and NDF consumptions showed a decreasing tendency in the order of CB, BS and CS. Dry matter intakes per metabolic body weight showed the decreasing tendency in the order of CS (57.6g), CB (53.8g) and BS (52.7g), however with no statistical differences. Average daily gain of 64.2 g in CB was significantly higher than the other groups (42.0g to 46.0g). Nitrogen intakes and nitrogen retention showed a decreasing tendency in the order of CS, CB and BC. Nevertheless, nitrogen retention in CS group was higher by 30% than that of the BC group with p<0.05. Apparant digestibilities of dry and organic matters were 72.6 and 72.8% for the CS group respectively, which were significantly higher than those of the BS group (67.5 and 69.0%) and the CB group (66.0 and 67.1%). In conclusion, the results of this study demonstrated that the CS group showed more positive feed consumption, digestibility, and nitrogen retention in Korean black goats than those of BS group. The CB group, however, showed similar results to the results of the CS group.

Effects of Molasses and Phellinus linteus Meal Addition on the Quality of Korean Herbal Medicine Meal Silage (상황버섯박과 당밀의 첨가가 한약제박 사일리지의 품질에 미치는 영향)

  • This experiment was conducted to investigate the effects of molasses and $Phellinus$ $linteus$ meal supplementation on the quality of Korean herbal medicine silage. Herbal medicine meal silages were produced by the addition of 0, 15, and 30% of $Phellinus$ $linteus$ meal and 0, 1, and 2% of molasses ($3{\times}3$ factorial design) and stored for 40 days at room temperature. There were three replicates per treatment. Its quality such as chemical composition, pH, organic acids, the number of microorganisms and $in$ $vitro$ dry matter disappearance were determined. As the $Phellinus$ $linteus$ meal level increased, crude protein and crude fat contents increased significantly, but the acid detergent fiber (ADF) content decreased significantly. As the addition of $Phellinus$ $linteus$ meal decreased, and molasses increased, pH tended to decrease, but the lactic acid content trended to increase. The acetic acid content was lower in a higher level (30%) of $Phellinus$ $linteus$ meal, and higher in a higher level (2%) of molasses. As the $Phellinus$ $linteus$ meal level increased, the butyric acid content decreased, and butyric acid of molasses treatment was higher than that of non-supplemented control. Molasses increased the number of Lactobacillus, but decreased the number of fungi in silage. A lower level of $Phellinus$ $linteus$ meal increased the number of Lactobacillus, but decreased the number of fungi. $in$ $vitro$ dry matter disappearance tended to increase by the addition of $Phellinus$ $linteus$ meal and molasses. It is concluded that the addition of molasses and $Phellinus$ $linteus$ to herbal medicine meal silage could enhance its nutritional quality. It is considered that proper levels of molasses and $Phellinus$ $linteus$ meal in herbal medicine meal silage were 2 % and 15% respectively.
