Monthly Variations in the Nutritional Composition of Antarctic Krill Euphausia superba

  • The proximate composition and various specific components of Antarctic krill Euphausia superba, in the catch season between March and August were investigated. Frozen krill were freeze-dried and milled. The proximate composition comprised water, proteins, fats, ash, fatty acids, and amino acids, while the specific components were vitamins, minerals, nucleotides, betaine, and astaxanthin. The moisture content of the krill ranged from 77 to 80%, with the highest value in June, and the ash content was between 12 and 13%. The protein content was lowest in May, and the fat content was 18-19%, with the highest value in March. The amino acid content varied according to the season: taurine and glycine were highest in August; ${\beta}$-alanine was higher in April and May; and arginine, ornithine, and lysine were highest in March. The unsaturated fat content was ~50% and omega-3 fatty acids were highest in June. Oil-soluble vitamins A and E were highest in March, and the water-soluble vitamin content was less than that of oil-soluble vitamins. The mineral content was highest in June, and the most abundant mineral was sodium at 235.60 mg/100 g krill. The content of other minerals was lowest (2.94 mg/100 g) in April, except for lead. The nucleotide content was highest in July, while the betaine content was highest in April and lowest in June. The astaxanthin content was highest in May and ranged from 6 to 10 ppm in other months.

Vitamin E status of 20- to 59-year-old adults living in the Seoul metropolitan area of South Korea

  • BACKGROUND/OBJECTIVES: Vitamin E is a fat-soluble vitamin and functions primarily as a lipid antioxidant. Inadequate vitamin E status may increase risk of several chronic diseases. Thus, the objectives of this study were to estimate intake and plasma concentration of each tocopherol and to evaluate vitamin E status of Korean adults. SUBJECTS/METHODS: Three consecutive 24-h food recalls and fasting blood samples were collected from healthy 20- to 59-y-old adults (33 males and 73 females) living in the Seoul metropolitan area, South Korea. ${\alpha}$-, ${\beta}$-, ${\delta}$-, and ${\gamma}$-tocopherol intakes and plasma concentrations of tocopherols (${\alpha}$-, ${\delta}$-, and ${\gamma}$- tocopherol) were analyzed by gender. RESULTS: Dietary vitamin E and total vitamin E intake (dietary plus supplemental vitamin E) was $17.68{\pm}14.34$ and $19.55{\pm}15.78mg$ ${\alpha}$-tocopherol equivalents, respectively. The mean daily ${\alpha}$-tocopherol, and ${\gamma}$-tocopherol intakes were $3.07{\pm}2.27mg$ and $5.98{\pm}3.74mg$, respectively. Intakes of total vitamin E and each tocopherol of males were significantly higher than those of females (P < 0.05). Plasma ${\alpha}$-tocopherol concentration was $15.45{\pm}10.16$ of males and $15.00{\pm}4.54{\mu}mol/L$ of females, respectively. There were no significant differences in plasma tocopherol concentrations by gender ($P{\geq}0.05$). Plasma ${\alpha}$-tocopherol was negatively correlated with ${\gamma}$-tocopherol intake (P < 0.05). Twenty-three percent of the subjects had plasma ${\alpha}$-tocopherol concentrations < $12{\mu}mol/L$ indicating a biochemical deficiency of vitamin E. Approximately 8% and 9% of these participants had plasma ${\alpha}$-tocopherol:total lipid ratio less than $1.59{\mu}mol/mmol$ and plasma ${\alpha}$-tocopherol:total cholesterol ratio less than $2.22{\mu}mol/mmol$, respectively, which are also indicative of vitamin E deficiency. CONCLUSIONS: Vitamin E intakes of Korean adults were generally adequate with the Korean Dietary Reference Intakes for vitamin E. However, ${\alpha}$-tocopherol intake was lower than that reported in other countries, and 23% of the subjects in the current study were vitamin E deficient based on plasma ${\alpha}$-tocopherol concentrations.

눈다랑어(Thunnus obesus)를 활용한 고령친화식품용 연화식 함박스테이크, 완탕 및 토마토스프의 개발 및 품질특성 (Development and Quality Characteristics of Softened Hamburger Steak, Wantang, and Tomato Soup for Senior-friendly Seafoods Using Bigeye Tuna Thunnus obesus)

  • This study was developed to prepare hamburger steak (HS), wantang soup (WS), and tomato soup (TS) for senior-friendly seafood's (SFS) using bigeye tuna Thunnus obesus, and to investigate their quality characteristics. All data were presented in the order of HS, WS, and TS. The hardness values were 298.9×1.03, 47.1×1.03 and 14.9 ×1.03 N/m2, respectively. The viscosity of TS was 2,856 mPa·s. The protein contents were 13.8, 11.7, and 9.7 g/100 g, respectively. The fat-soluble vitamins content were as follows: vitamin A 21.88, 5.03, and 23.72 ㎍RAE/100 g; vitamin D 1.15, ND, and 1.81 ㎍/100 g, respectively. The water soluble vitamins contents were as follows: vitamin C 47.22, 32.83 and 37.01 mg/100 g; vitamin B2 0.17, 0.11 and 0.10 mg/100 g; vitamin B3 34.87, 34.76 and 54.62 mgNE/100 g. The Ca contents were 15.9, 16.8, 28.9 mg/100 g, and the K contents were 383.8, 167.4, and 300.0 mg/100 g, respectively. The dietary fiber was 0.04, 0.07 and 0.08 g/100 g, respectively. Escherichia coli was not detected in any of the products. These results suggest that the products should be classified as follows, based on their appropriateness as SFS: HS, WS and TS.

국내산 퀴노아의 조리방법에 따른 영양성분 비교 (Comparison of the Nutritional Composition of Quinoa Seeds Cultivated in Korea Depending on Different Cooking Methods)

  • The purpose of this study was to compare differences in the main food components of quinoa (Chenopodium quinoa Willd.) cultivated in Hongcheon after steaming, boiling, and roasting. Among the general components, crude protein, fat, and ash content were the highest in raw quinoa. Dry matter and carbohydrate content was the highest in steamed quinoa, while total dietary fiber content was highest in roasted quinoa. Total amino acid contents were the highest in boiled quinoa and lowest in steamed quinoa. Fatty acid content was highest in raw quinoa and lowest in boiled quinoa. The mineral (calcium, potassium, and phosphorus) and vitamin content was most enriched in raw quinoa, while iron, magnesium, zinc, and manganese were highest in boiled quinoa. For free sugars, the fructose and sucrose levels were highest in raw quinoa, while glucose level was highest in roasted quinoa. The water-soluble vitamin and free sugar contents were lowest in boiled quinoa. In summary, nutritional levels of vitamins vulnerable to heat and unsaturated fatty acids decreased after cooking with heat, while those of amino acids and saturated fatty acids increased after cooking with heat, although there were variables based on different cooking methods.

비타민 D의 자가면역, 알레르기, 감염질환에서의 역할 (Vitamin D in autoimmune, allergic, and infectious diseases)

  • 비타민D3는 칼슘 대사를 조절하며 뼈의 건강을 담당하는 중요한 호르몬이지만 다양한 면역세포에 작용하여 면역반응을 조절할 수 있다는 것이 알려지면서 자가면역질환, 알레르기질환, 감염 등 여러 질병과의 상관관계에 대한 관심이 증가되었다. 비타민D3의 활성 형태인 1,25(OH)2D3는 면역세포에 의해 전환될 수 있으며 핵-호르몬 수용체인 VDR과 결합하여 세포 내 다양한 유전자 발현을 조절함으로써, 세포의 형질과 기능을 바꿀 수 있다. 특히, 최근 다양한 연구를 통해 과도한 면역 반응을 조절하는 Treg 세포의 분화를 증가시키고 그 기능을 향상시키는 기전을 통해 염증성 사이토카인을 감소시키며, 외부 병원균을 제거할 수 있는 AMP의 생산을 유도함으로써 자가면역질환, 알레르기, 감염성 질환 등 다양한 질환에 긍정적 역할을 할 수 있음이 확인되었다. 특히, 최근 COVID-19 에 의한 글로벌 팬데믹을 경험하면서, 중증 질환 및 사망에 이르는 환자들과 비타민D의 상관관계 연구, 다양한 나라들에서 시행된 비타민D 치료의 임상결과들을 통해, 비타민D 보충 기반의 면역조절의 전략이 유리할 수 있음을 알 수 있었다. 전세계 현대인들의 비타민D 결핍은 최근 50년 간 지속적으로 증가하고 있으며, 자외선 노출로 합성할 수 있는 비타민D의 양이 충분하지 않은 부분을 식품 또는 보충제의 형태로 섭취하는 것이 여러 자가면역질환과 알레르기, 감염성 질병을 예방하는데 도움이 될 것이다.

Physicochemical Properties of Reconstituted Milk Made from Freeze-dried Milk Powder or Spray-dried Milk Powder

  • This study was designed to compare the physicochemical and nutritional properties between reconstituted milk samples made from freeze-dried milk powder (FDMP) and spray-dried milk powder (SDMP). Reconstituted milk (87%, wb) was made by combining FDMP or SDMP with water. In the color analysis, the $L^*$, $a^*$ and $b^*$ values of the reconstituted milk samples made from both powders were not significantly different from the control. The thiobarbituric acid values and short-chain free fatty acid concentrations were considerably greater in the reconstituted milk made from SDMP than in the milk made from FDMP. The quantities of water-soluble and fat-soluble vitamins in the reconstituted milk samples made from SDMP were significantly lower than those made from FDMP. Based on the findings obtained in the present study, the reconstituted milk made from FDMP appeared to be more resistant to lipid oxidation and exhibited little changes in the nutrients levels when compared with reconstituted milk made from SDMP.

국내에서 소비되는 육류의 부위별 비타민 K 함량 분석 및 비교 (Comparison of vitamin K contents in different meats commonly consumed in Korea)

  • 본 연구에서는 국내에서 소비되고 있는 육류인 소고기, 닭고기, 돼지고기의 부위별 비타민 K 함량을 분석, 비교하고, 사용된 분석법의 신뢰성을 확보하여 분석품질관리를 통한 국가표준식품성분 데이터베이스 구축 및 개정을 위한 자료로 제공하고자 하였다. 모든 부위별 육류에서 비타민 K1은 검출되지 않았고, 비타민 K2는 소간과 선지, 천엽 생것(raw)을 제외한 모든 부위에서 검출되었으며, 육류의 종류 및 부위 그리고 조리방법에 따라 함량의 차이가 나타남을 확인하였다. 소고기의 부위별 비타민 K2 함량은 0.00-5.87 ㎍/100 g, 닭고기의 부위별 비타민 K2 함량은 16.59-46.64 ㎍/100 g이었으며, 돼지고기는 부위별로 4.33-22.90 ㎍/100 g의 범위를 나타내었다. 삶은 닭고기(meat and skin)의 비타민 K2 함량이 46.64 ㎍/100 g로 모든 부위별 육류 중 가장 높은 함량을 나타내었다. 본 연구의 비타민 K 분석법에 대해 정확성, 직선성, 검출한계, 정량한계를 검증하였으며, 비타민 K1과 비타민 K2 모두 높은 정확성과 직선성을 확인하여 분석품질관리를 통해 분석을 진행한 기간 동안 모든 육류 시료에 대해 분석이 신뢰성 있게 진행되었음을 확인하였다. 따라서 본 연구에서 분석된 부위별 육류의 비타민 K 함량은 정확한 영양성분 정보와 국가표준식품성분표 개정을 위한 기초 자료로 이용될 수 있을 것으로 판단된다.

감잎의 성장시기에 따른 화학성분 변화 (Changes of Chemical Components in Persimmon Leaves (Diospyros kaki Thunberg) during Growth)

  • 상주둥시 감잎의 이용성 증대를 위하여 성장시기 별 감잎의 유용성분 함량을 조사하여 감잎의 적절한 채취시기를 결정하기 위한 기초연구를 수행하였다. 감잎의 수분함량은 새잎이 나기 시작하여 성장초기인 5월 5일경에는 79.65%를 보이다가 성장함에 따라 꾸준히 감소하는 경향을 나타내었다. 조지방과 조섬유 및 회분함량은 감잎이 성장함에 따라 다소 증가 하였으며 조단백질은 큰 변화를 나타내지 않았다. 감잎의 유리당은 sucrose, glucose, fructose 및 raffinose의 4종류가 분리 확인되었으며 sucrose 함량이 가장 높았으며 glucose와 fructose는 비슷하였고 raffinose는 미량 존재하였다. 비휘발성 유기산은 oxalic acid, levulenic acid, magic acid 및 citric acid의 4종류가 분리 확인되었다. 감잎에 함유되어 있는 구성아미노산을 분석한 결과는 총 17종의 아미노산이 동정되었는데 주요한 아미노산은 glutamic acid, aspartic acid, leucine, phenylalanine 및 valine 순으로 높게 나타났다. 수용성 탄닌과 vitamin C 함량은 감잎이 성장함에 따라 계속적으로 증가하였으며 6월 20일 이후에는 감소하였다.

꽃게액비 엽면시비가 추부 들깻잎의 영양성분에 미치는 영향 (Effects of Liquid Fertilizer of Portunus trituberculatus Foliar Application on the Proximate Components of Chubu Perilla frutescens Leaves)

  • The purpose of this study was to investigate the effects of fertilizer application on the content of functional materials, such as fatty acids and organic acids in perilla leaves. (1) As compared to the controlled with Ammonium sulfate fertilizer, the yield of Perilla frutescens leaves increased by 7.3% and 12.8% of biomass at 2000 and 1000 times liquid respectively, but decreased by 7.6% at 500 times. The lipid and protein contents of perilla leaves were higher than those of Portunus trituberculatus liquid at 1000 times. The average contents of minerals (mg/100g) were as follows; K (638.4) > Ca (561.6) > P (145.4) > Mg (133.5) > Fe (36.2) > Zn (1.9) > Mn (1.6) > Na (1.4 mg). However, the correlation between the controlled with P. trituberculatus liquid was relatively low. (2) The fat-soluble vitamin E content of P. frutescens leaves was 3.4, 3.9, 3.3, and 3.9 mg in the controlled with liquid by 500, and 1000, 2000 times respectively; Vitamin A contents were 6.4, 8.9, 10.9, and 8.5 mg respectively, which was more than twice as much as the corresponding vitamin E content. The water soluble vitamin C contents were 177.9, 172.6, 195.2, and 163.5 mg respectively. (3) Amino acid contents of P. frutescens leaves in 100 g of fresh weight were 3821.7 mg in the controlled with Ammonium sulfate fertilizer and 3918.8, 4054.0, and 4005.4 mg in the controlled with P. trituberculatus liquid at 2,000, 1000, 500 times respectively. Amino acid contents of each controlled group with P. trituberculatus liquid above were as small as 2.5~6.1%, and these contents of amino acid were as follows: Glutaminic acid > Aspartic acid > Leucine > Arginine > Phenylalanine. In further study, it is necessary to develop an effective microorganism and a variety of amino acid fertilizer to supplement the study on new manufacturing.

고지방 식이내 식이섬유질이 흰쥐의 레티놀 결합 단백질 (RBP, cRBP I, cRBP II) 유전자 발현에 미치는 영향 (Effect of Dietary Fibers on Retinol Binding Protein (RBP, cRBP I, cRBP II) Gene Expression in Rats Fed High Fat Diet)

  • Recently it has been reported that vitamin A and retinol binding proteins (RBPs) in blood and urine were changed in the condition of diabetes mellitus or hyperlipidemia. Fruits and vegetables are recommended to consume for the people suffered from these chronic degenerative diseases. The main components of fruits and vegetables are dietary fibers, for example cellulose and pectin, of which function to affect the absorption and excretion of dietary fat and fat-soluble substances. This study was conducted to investigate the effect of dietary fibers on RBPs mRNA expression in liver, small intestine and serum of rat fed high fat diet during 4 weeks. Sprague-Dawley rats, weighing 121g on average, were divided into four groups; (Control; $17\%$ fat & cellulose supplement diet, HF0: $25\%$ fat & fiber free diet, B:.Uc: $25\%$ fat & cellulose supplement diet and HF0: $25\%$ fat & pectin supplement diet) . The rats fed high fat diet groups (HF0, HFC, HFP) tended to consume the food less than the control group, but FER of HF0 groups was significantly higher than the control (p < 0.05) . The weight of adrenal gland in high fat diet groups (HF0, HFC, HFP) was significantly less than the control. Total lipid in feces daily excreted and in liver did not show any significant differences among the groups. Total cholesterol in HFP group was significantly different from that of HFC group. Serum total cholesterol and triglyceride in other group tended to lower than other groups and HDL cholesterol higher. Consequently, AI (atherogenic index) was the lowest in HFP group. Vit A contents in feces daily excreted tended to lower in high fat diet groups (HF0, HFP) compared to the control group. That content in adrenal gland was the lowest in HF0 group, but not in liver. In HFP group were down-regulated cRBPI mRNA in liver and cRBPII mRNA in small intestine and up-regulated RBP and transthyretin expression in serum compared to the other groups. In conclusion, dietary fibers, especially pectin, in high fat diet might down-regulate the expression of CRBP I, CRBP II mRNA in liver and small intestine, but increase the secretion of RBP into serum and therefore inhance the bioavailability of Vit A through the body.
