The purpose of this study was to compare the perception of meals and nutrition knowledge among high school students in Seoul. A survey was carried out on 548 male/female students in general and vocational high schools. The general high school students showed higher frequency of breakfast than the vocational high school students (p<0.001). As for the reasons for eating alone, the general high school students showed high frequency of 'busy', whereas the vocational high school students revealed high frequency of 'irregular meal times' (p<0.001). Concerning the habit of eating alone, 'irregular meal times (25.0%)', 'unbalanced diet (22.4%)', and 'instant food (16.6%)' were observed in that order (p<0.01). The percentage of high school students who regarded family meals as meals eaten with every member of their family was 70.6% (p<0.05). The percentage of general high school students who ate family meals was 61.8% and that of vocational high school students was 50.0% (p<0.01). When agreement with attitudes, environment, and participation in family meals was evaluated using a Likert scale (strongly agree 5 points, strongly disagree 1 point), the general high school students showed a higher level of agreement than the vocational high school students, and the results showed a significantly higher level of agreement as the frequency of family meals increased. Likewise, the groups who scored a higher level of nutrition knowledge had positive attitudes, environment, and participation in family meals with significant differences.
This study examined changes in dietary life and dietary life satisfaction in one-person households during the COVID-19 pandemic. Using a sample of 916 one-person households from the Food Consumption Behavior Survey, we applied ANOVA and a system of equations model for our analysis which produced four main results. Firstly, during the COVID-19 pandemic, eating homemade and delivered meals increased, whereas eating restaurant, group, and HMR meals decreased. Eating breakfast and regular eating habits also increased during the pandemic. Secondly, approximately 30% of the sample reported increased expenditure on fresh food and HMR meals. The proportion of positive changes in dietary life was also greater than negative changes, and dietary life satisfaction was about three times higher than it had been before the pandemic. Thirdly, having breakfast and regular eating fully mediated the relationship between spending on fresh food and dietary life satisfaction, as well as the relationship between HMR purchases and dietary life satisfaction. Changes in expenditure on fresh food and HMR meals positively affected dietary life satisfaction through eating breakfast and regular eating. Fourthly, increased consumption of delivered food had a positive direct effect on dietary life satisfaction. Among sociodemographic variables, gender, education, occupation, and age were also significantly related to changes in dietary life satisfaction.
The purpose of this survey was to investigate the status of dietitians' nutrition management in school lunch program. Questionaries were distributed to 233 dietitians of elementary schools and 10 dietitians of high schools in Seoul and Incheon provinces. The statistical analysis of data was completed using SPSS program. The results were summarized as follows : 78.4% of Seoul and 48.6% of Incheon among the whole students were served their meals in the classrooms. 70.0% of dietitians were 30-39 years old and 31.4% had a career less 5-7 years old. The standardized recipe was used in 71.6% of total schools but not effectively in both provinces. The students' nutrition and preferences were the very first to be considered in menu planning in both provinces. The nutrient value of meals was evaluated by the dietitians in most schools. Nutrition surveys of the meals which students are eating at home were surveyed in 27.3% of Seoul and 53.2% of Incheon. Students' preferences were studied regularly in 65.4% of Seoul and 78.9% of Incheon, and students evaluations of meals were carried out by the school lunch program in 74.6% of Seoul, and 68.8% of Incheon. In 49.6% of Seoul and 53.2% of Incheon, leftover foods were measured for each meal. 38.5% of Seoul used per a week and 48.6% of Incheon used per 2-3 week the processed foodstuffs. In 17.2% of Seoul and 25.2% of Incheon, nutrition education was executed by direct education, but educational methods were done mostly by letterssent to students' parents(76.9% of Seoul and 85.3% of Incheon). Evaluation studies on nutrition management, and nutrition education were hardly correlated to the dietitian's career and educational level. The number of meals served by the school lunch program have no related with the students' preferences. For improvement of nutrition management of school lunch program, it is necessary to develop new nutrition management model and nutrition education program.

BACKGROUND/OBJECTIVES: This study was conducted to examine disparities in food and nutrient intakes based on family types identified among 1,856 participants who were the Korean elderly people in the 6th Korea National Health and Nutrition Examination Survey (KNHNES) excluding those who were currently practicing the diet therapy. SUBJECTS/METHODS: We separated the subjects into two groups: living alone (LA, n = 638) and living with a spouse (LS, n = 1,218). We also examined the disparities of dietary quantity and quality of those two groups using complex sampling design general linear regression analyses (CS GLM). RESULTS: In the LA group, there was a higher percentage of females and average age in LA group was higher than the participants in the LS group. Household income and education level were significantly lower in LA compared to those of LS. The frequencies of skipping meals were higher in LA. LA's food and nutrient intakes showed lower consumption of vegetables, fruits, seaweeds, and of most nutrients. Even after adjusting for the confounding factors, the consumption of vegetables, seaweeds, carbohydrates, potassium, riboflavin, and vitamin C showed lower in LA than LS. Moreover, LA's nutrient intake ratios compared to the KDRIs were lower which turned out to be similar to their nutrient intakes. CONCLUSIONS: These results show that dietary behavior and food intake of the elderly are associated with family types. Frequently skipping meals and less dietary variety are more common with elderly persons who were living alone. Therefore, it is necessary to integrate the supplementary food programs and nutrition education programs for the elderly living alone.
For the development of school meals, this study was designed to identify the status of middle school students who eat eco-friendly school meals with a view to converging on their awareness, interest, and operational satisfaction. The results of the survey of 468 K middle school students in Gwangju were all based on a significant level of p.Validated at 05. There were achievements in the recognition of students' awareness, interest, and operational satisfaction contributing to the improvement of school meal satisfaction, but there were also limitations in the operation of eco-friendly school meals, such as various family composition and budget expansion, and not the entire school. If the disclosure of data on future results is expanded to the whole, it could be used as a valuable resource for improving school meal satisfaction and developing school meals.
This study was carried out to compare the dietary behaviors and nutrient intakes among the students(13 years of age) of middle schools between in industrial complex and in non-industrial complex. The subjects of each group were composed of 192 male and female teenagers living in Ansan city in Korea, and this study was performed by questionnaire and dietary survey. As a result, mothers' education level and monthly family income were lower in industrial complex-families(ICF) than those in non-industrial complex-families(NICF). The subjects in ICF took dinner more irregularly than did those in NICF. The subjects in ICF skipped the meals often as there was no person preparing meals'. The subjects in ICF tended to take ra-myun, cookie or bread more often as a lunch, and they considered size and price of snack more imporandy when they chose snack than those in NICF. And the subjects in ICF had lower degree of flood habits and satisfaction on their meals than those in NICF. The daily intakes of calorie, vitamin B$_2$, calcium and iron of subjects of two groups were lower than the Korean RDA, and these intakes were lower in ICF than in NICF. These findings show that dietary behaviors and nutrient intakes were poor among the students of middle schools in ICF, in part it seems to be related to the fact that the group of ICF has low family income and mothers of ICF have the jobs that are finished late or irregularly. Therefore, these results underscore the need to provide the nutritional education for the students of middle schools and their mothers in ICF with respect to the importance of optimal nutrition through sound dietary behaviors during the adolescence.
This study was conducted to investigate the meal quality and dietary behaviors of low-income family children by qualitative method. The subjects were 12 children(2 boys and 10 girls) aged 7 to 11, enrolled in an after-school care center in Kimpo, Gyeonggi province. Most of their mothers had jobs(83.3%) and 75% were the beneficiaries of a government assistance program. When compared using body mass index(BMI) percentile, 16.7% of the subjects were classified as being overweight. The food intake patterns and meal qualities were evaluated from dietary records for three non-consecutive days. The mean dietary diversity score(DDS) was 3.8, suggesting at least one food group was deficit. Only 8.3% of the records indicated a satisfactory intake of all five food groups, and fruit was the most deficit food group(58.3%). Also, the proportion of balanced of meals was low, especially breakfast(36%), in that main dish(the source of protein) was not included. The children had problematic eating behaviors, such as an unbalanced diet, eating meals in a hurry, skipping breakfast, and irregular meal times. They answered that they liked to eat simple meals and convenient foods. In conclusion, nutrition education should incorporate strategies to reach families and help with meal planning and management, as well as modifying the eating behaviors of children, in order to improve nutritional status.
This study investigated changes in the household expenditure for food outside home using the time-series family expenditure data during 1982-2002. Major findings were as following: first, expenditure for food outside home had been increasing, while over all level of the food expenditure had been decreasing; second, two thirds of the total amount of expenditure for food outside home were for regular meals; the proportion of food outside home which were paid to alcohols and other beverages have been decreasing since 1999; lastly, over the half of the total expenditure for food outside home had been spent on Korean food. Based on the results implications for consumer trends for food and food industry were provided.
This study is designed to examine influences of living arrangements on psycho-social factors, health and nutritional status, dietary adequacy and meal service utility patterns of the elderly. Nutritional status was evaluated by Mini Nutritional Assessment (MNA). Three hundred and nine elderly (110 men and 199 women) who participated in meal service in the Chung-buk province were investigated. Proportion of the elderly living alone, couples only, living with spouse and family, living with family without spouse; and living with other than family were 30.7%, 25.9%, 14.2%, 24.3% and 4.9% respectively. The mean age of the elderly was 74.1 years and the elderly who are living couples only and living with spouse and family were younger than those with other living status. Living arrangements seem to be related to psycho-social factors, health and nutritional status, and dietary quality. Those who live alone and live with other than family were mostly women and they have lower socio-economic status, psycho-social, health and nutritional status and dietary patterns compared with those of the elderly who are living with spouse or family. It was found that the elderly who live a couple only and live with spouse and family had better emotional, health and nutritional index than those of the elderly who live with family without spouse, especially in case of females. Most of elderly perceived that participation of meal service programs had a positive effect on their daily life and satisfied with meals. The elderly living alone and living with other than family were more frequently using meal service but had a negative attitude about the charged meal service for better quality than the elderly with other living status. The most important reason for all the elderly to participate in meal service was to meet their friends and then to get other services. Particularly those who are living alone and living with other than family showed lack of moivation to prepare and set the meal, and for them the economic reason is also important. They also replied that the poor health and lack of other help were the most difficult problems for them to prepare meals. It would be effective to provide nutritional services that meet specific needs of the elderly according to their characteristics and living environment.
Purpose: The purpose of this study was to investigate the prevalence fate of obesity and to assess the relationship between obese children and their family Characteristics in 3 rural area in the Chung Cheong Nam Do province. Method: The children's height, weight and family characteristics of 327 5th and 6th grade elementary school students were obtained from the individual health records and self-recorded questionnaire surveys from June 25th to July 15, 2004. Results: The results of this study are summarized as follows: 1. The prevalence rate of obesity of 5th and 6th grade of rural elementary school students was 10.5%. 2. 20.9% of obese children had obese family members and 9.4% of obese children did not have any obese family members. The birth order, family size and family structure showed no significantly difference. 3. The obese children were more affected by their parents' concerns of body image (upper quartile of 84.1) and exercise (upper quartile 61.4%) than normal children. However, there was no significantly increase with the parents' concerns about meals. 4. There was no relationship in the obese children by PBI. 5. There was no relationship in the obese children by FACES III. Conclusion: The elevation of a parent's concern of their obese child about meal regulation should be investigated further.
