  • Determination of capsaicin, dihydrocapsaicin and nonivamide in pungent liquids of self-defense spray were studied. The nonivamide having almost same spicy taste with capsaicin have been containing a few amounts in natural products, it had called as synthetic capsaicin or PAVA, have used to flavorings for foodstuffs and incapacitating agents of riot controls. Nowadays, it has been occasionally found that the quality controls of a self-defense sprays were not properly due to flood of illegal self-defense sprays. Thus, the simple analytical method with gas chromatography is developed, it is identified whether the products which have contained synthetic capsaicin were marked like natural materials as well as the pungent ingredients in it obeyed with permissible concentration to human or not was investigated. Finally, the pungent components and amounts in some kinds of self-defense spray were investigated.

Analyses of Capsaicinoids and Ascorbic Acid in Pepper (Capsicum annum L.) Breeding Lines (고추의 육성계통에 따른 Capsaicinoids와 Ascorbic Acid 분석)

  • Peppers (Capsicum annuum L.) are a rich source of phytochemicals including polyphenolics, flavonoids, capsaicinoids and ascorbic acid. Capsaicinoids are a group of 12 or more related alkaloids responsible for the pungent sensation in the fruits of the genus Capsicum. Ascorbic acid is another functional and nutritional constituent of peppers. In this study, the contents of two major capsaicinoids (capsaicin and dihydrocapsaicin) and ascorbic acid in 131 pepper breeding lines were quantified by HPLC. In 131 pepper breeding lines, capsaicin and dihydrocapsaicin contents were in the range of 0.0 to 219.6 and 0.0 to 110.8 mg/100 g, respectively. The breeding lines with higher capsaicin content contained higher dihydrocapsaicin content as well. Ascorbic acid contents were 264.9 to 1695.5 mg/100 g for the 131 pepper breeding lines. The analytical method validation parameters including accuracy, repeatability, and reproducibility were calculated to ensure the method's validity. This study provides basic information to plant breeders and biotechnologists who are planning to breed genotypes with high content of phytochemicals.

Chemical Component Analysis of Red Pepper (Capsicum annuum L.) Seeds with Various Cultivars (품종별 고추씨의 화학적 성분 분석)

  • This study was carried to investigate the proximate compositions, capsacinoids, organic acid of various red pepper (Capscium annuum L.) seeds. Twenty domestic varieties of red pepper seeds cultivated in Korea and four foreign varieties of samples cultivated in New Mexico, USA were analyzed. In proximate composition of the various red pepper seeds, ash content showed a range of $3.11{\pm}0.03{\sim}3.77{\pm}0.01%$, and protein content showed a range of $13.25{\pm}0.01{\sim}16.53{\pm}0.08%$. On the other hand, crude lipid content showed wide range distribution of $18{\sim}30%$ and total dietary fiber showed a range of $40{\sim}65%$. Capsaicin content of various red pepper seeds showed $0.09{\pm}0.04{\sim}5.32{\pm}0.14\;mg%$ and dihydrocapsaicin was $0.00{\sim}2.17{\pm}0.18\;mg%$. Capsaicin content was higher than dihydrocapsaicin content. In the organic acid content, Dangchan, Chohyang and Mixed red pepper seed showed a low range of $1.6{\sim}1.9%$; in contrast, Chunhamujuk, Samgang, Ganggun, Wangdaebak, Chunhailpum, New Mexico 6 and LB-25 showed higher values of over 5%.

Capsaicinoids contents of several varieties of red pepper (고추 품종(品種)에 따른 capsaicinoids 함량)

  • The total capsaicinoids content of red pepper were determined according to the varieties and places of production. These samples were also analyzed on the analogues and homologues of capsaicinoids of the pepper. The following results showed that the capsalcinoids content was highly different between varieties of the pepper, and the ratio of capsaicin to total capsaicinoids was higher in product of China$(66{\sim}73%)$ than that of Japan$(49{\sim}57%)$ and Korea(38% ). However, product of Korea$(46{\sim}48%)$ showed higher ratio of dihydrocapsaicin than that of Japan$(27{\sim}37%)$ and China$(22{\sim}27%)$.

Relationships Between the Content and Sensory Evaluation of Pungent Principles in Red Pepper (고추의 매운맛 성분 함량과 관능 검사와의 상관관계)

  • The pungent principles of 20 Korean red peppers(Capsicum spp.) were analyzed by high performance liquid chromatography(HPLC) method. Capsaicinoids levels were considerable from 7.0mg/100g to 75.9mg/100g in Korean red peppers. The index value of the variety, ratio of capsaicin to dihydrocapsaicin was 0.8~1.1. This fact reveals that several varities of red pepper have existed in Korean. The sensory intensity of pungent principles was completely accordant with instrumental analysis result until 10ppm of capsaicinoids. The acceptance concentration of pungent principles was from 7.8ppm to 15.6ppm in Korean people.

Quality Characteristics of Wet Noodles Combined with Cheongyang Hot Pepper (Capsicum annuum L.) Juice (청양고추 착즙액 첨가에 따른 생면의 품질특성)

  • We conducted this study to investigate the quality characteristics and antioxidant activity of noodles combined with Cheongyang hot pepper juice (CPJ). The noodles were evaluated for cooking properties (weight, volume, water absorption, and turbidity), Hunter's color values, texture characteristics, sensory characteristics, capsaicin, dihydrocapsaicin, polyphenol contents, and antioxidant activity. The cooked weight, volume, and turbidity of the cooked treated noodles were not significantly different from the cooked control noodles but water absorption decreased. The Hunter's color L value of the cooked noodles was not significantly different between treatment types, but there was a significantly higher b value with increasing concentrations of CPJ. The texture characteristics (hardness, adhesiveness, springiness, gumminess, and chewiness) of the cooked treated noodles were not significantly different from the cooked control noodles. A sensory evaluation indicated that cooked noodles treated with 2% CPJ were significantly (p<0.05) better than the cooked control noodles. Capsaicin, dihydrocapsaicin, and polyphenol contents, and antioxidant activity were significantly (p<0.05) increased with increasing concentrations of CPJ. In conclusion, CPJ could be used as an ingredient to increase the sensory and antioxidant properties of wheat flour noodles without affecting their quality characteristics.

A Study on the Standardization of Kimchi for the Children -The Proper Red Pepper Powder for Children대s Kimchi- (어린이 김치 표준화에 대한 연구 -어린이 김치에 적합한 고추가루-)

  • This study is a continuous work for the standardization of children's kimchi preparation. In order to find out the proper red pepper powder for children's kimchi, four kinds of red pepper powder(A, B, C, D) sold in Kyungsang province were used as samples. The proximate composition, color value, capsaicinoids concentration and sugar content in four kinds of the red pepper powder were determined, and sensory evaluation of kimchi Prepared with those was carried out for different fermentation times. Moisture contents of red pepper powder A, B, C and D were in the range of 11.59~13.48%. Lipid and ash contents of samples were in the range of 7.59~8.39% and 4.34~7.45%, respectively. In comparision of color values measured by a Hunter colorimeter, red pepper powder A showed the highest value for a and b values. Also A showed the brightest color as measured in ASTA color and L value. Capsaicin concentration of D and dihydrocapsaicin concentration of C were found to be the highest among the sanlples. The capsaicin equivalent was in tile order of D>C>A>B. The content of total sugar was in the order of B>A>D>C. In the sensory evaluation of children's kimchi prepared with four kinds of red pepper powder, the color and total acceptability of kimchi prepared with A were found to be the best. The results of sensory evaluation between kimchi prepared with A and school supplied kimchi showed that the former was better. And the composition of A red pepper powder was as follows: capsaicin equivalent 24.l5mg%, total sugar content 15.79% and ASTA color value 178.2.

Determination of capsaicinoids in red pepper powder using ultra high performance liquid chromatography (초고속 액체크로마토그래피를 이용한 고춧가루의 capsaicinoids 분석)

  • The efficiency of the two extractions (refluxing extraction and heating-block extraction) was compared to develop the simple analytical method for the determination of capsaicinoids, including capsaicin and dihydrocapsaicin in red pepper powder. For the method development, the parameters, including particle size, extraction time and sample size, were evaluated using ultra high performance liquid chromatography (u-HPLC). It was found that the most effective extraction time of the refluxing extraction was 3 hr. The higher extraction efficiency was obtained with the fine particle of a mild red pepper powder, while the particle size did not affect the extraction efficiency in case of the hot red pepper powder. The higher extraction efficiency was obtained with the small size of sample taken because of the ratio of the large extracting solvent to sample amount. The extraction efficiency of the refluxing method was 3-9% higher than that of the heating-block method, however, the heating-block method could be applied to the determination of capsaicinoids in the red pepper powder for the purpose of quality control of the product.

Quality Attributes of Quarri Green Peppers at Different Storage Temperatures (꽈리고추의 저장온도에 따른 품질특성)

  • Quarri green peppers were stored at $3^{\circ}C$ and $25^{\circ}C$, and capsaicin, ascorbic acid, chlorophyll, free sugars and surface color of the peppers were measured for 35 days of storage. Capsaicin and dihydrocapsaicin of quarri green peppers decreased during storage. The changes were bigger at $25^{\circ}C$ storage than at $3^{\circ}C$. Weight loss and decaying rate of the peppers were affected most by the increasing storage period and temperature. Ascorbic acid diminished remarkably at the beginning of storage period. Free sugars and chlorophyll decreased gradually during storage. Browning of quarri green peppers progressed slowly during storage not in pericarps but in seeds.

Quality Attributes of Korean Red Pepper According to Cultivars and Growing Areas (한국산 고추의 품종 및 재배지역에 따른 품질 특성)

  • Seven different cultivars of Korean red pepper, Capsicum annuum L., were collected from different growing areas and analyzed for pungent principles, redness, size and weight. Length of the pod varied in the range of $7.0{\sim}9.4\;cm$ total weight, $1.2{\sim}3.1\;g$, capsaicin content, $11.5{\sim}45.0\;mg%$, dihydrocapsaicin content, $8.5{\sim}35.1mg%$, and redness (absorbance at 460 nm), $6,270{\sim}7,810$ conventional color unit. Contents of capsaicins and redness were significantly different according to the cultivars but the two components were not correlated each other. According to the growing areas, contents of capsaicins and redness were significantly different. Capsaicins content was not significantly different but redness was significantly different between sun-drying and hot air-drying of the pods.
