Zinc status and dietary quality of type 2 diabetic patients: implication of physical activity level

  • The purpose of this study was to analyze the relationships among zinc status, diet quality, glycemic control and self-rated physical activity level of type 2 diabetic patients. Dietary intakes for two non-consecutive days were measured by 24-hour recall method for seventy-six diabetic patients. Fasting blood glucose and HbA1c were measured for the assessment of glycemic control. We evaluated the extent of dietary adequacy by the percentage of subjects with a dietary intake of a nutrient less than the estimated average requirement(EAR), the dietary diversity score(DDS) and the dietary variety score(DVS). Zinc status was assessed from serum levels and urinary excretion. Dietary inadequacy was serious for five nutrients: riboflavin, calcium, thiamin, zinc and vitamin C. Dietary intakes from the meat, fish, and egg food groups and the milk food group were below the recommended level.   • Recent epidemological observations suggested beneficial effects of dietary fiber on man's health. With the increased emphasis placed on the requirement for dietary fiber in the diet, there has been greater interest in successfully incorporating dietary fiber into food products. Hence, in this study, several dietary fibers such as cellulose, pectin, rice bran, barley bran and job's tears bran were incorporated into julpyun to determine their effects on some physical properties and sensory characteristics. Difference of water binding capacity(WBC) was found among dietary fiber sources. The WBC of pectin was highest and that of job's tears bran was lowest. The moisture contents of julpyun were increased as WBC of added dietary fiber sources was higher. In the rheometer measurement for julpyun added with dietary fiber, hardness of julpyuns added with cellulose and pectin was low. But, hardness of julpyun added cellulose was increased rapidly during storage at 4$^{\circ}C$. Springiness and gumminess wereshowed similar aspects to hardness. In the retrogradation speed by Avrami equation, the rate constant of julpyun added barley bran was low ao retrogradation occurred slowly. The results of sensory evaluation, julpyun added no dietary fiber showed good overall preference. Overall preference in sensory evaluation showed positive correlation with the after-swallowing and color.

Effects of Inclusion Levels of Dietary Vitamins and Trace Minerals on Growth Performance and Nutrient Digestibility in Growing Pigs

  • Two feeding trials were conducted to evaluate the effects of inclusion levels of dietary vitamin and trace mineral (VTM) premixes on growth and nutrient digestibility in growing pigs. A total of 112 pigs ($24.82{\pm}3.22kg$) were employed for 49 days (exp. 1), and 168 pigs ($21.64{\pm}1.41kg$) for 40 days (exp. 2) in completely randomized block designs. Treatments were: 1) 100%, 2) 150%, 3) 200% and 4) 250% NRC (1998) requirement of VTM in exp. 1, and the ratio of vitamins to trace minerals at 1) 100:100%, 2) 100:150%, 3) 150:100% and 4) 150:150% of NRC (1998) requirement in exp. 2. Basal diets for feeding trials were formulated to contain 3,310 kcal ME/kg and 18% crude protein, and contained 0.25% chromic oxide as an indigestible marker for digestibility trials. Increasing dietary VTM premix in growing pigs had linear and quadratic effects (p<0.05) on ADG, and feed conversion ratio was also improved (p<0.05) as VTM premix was increased by 150-250% of NRC (1998) requirements in exp. 1. Adding vitamin to trace mineral premixes at 150% NRC (1998) over the control improved (p<0.05) ADG and feed efficiency in growing pigs, but performances were not improved by vitamin nor by trace mineral premixes alone (p>0.15) (exp. 2). There were no differences (p>0.05) in the digestibilities of energy, crude protein and fat among dietary treatments. However, increasing dietary VTM premix in growing pigs had a linear effect (p<0.05) on the digestibilities of calcium and phosphorus. The 200 or 250% fed group showed improved (p<0.05) calcium digestibility, and 250% fed group also showed improved (p<0.05) phosphorus digestibility as compared to 100% or 150% fed group (exp. 1). The digestibilities of Ca and P were higher (p<0.05) in 150% addition of vitamins than in 150% addition of trace minerals in the diet (exp. 2).

Effects of Reduced Dietary Crude Protein Diet with Synthetic Amino Acid Supplements on the Growth Performance and Histochemical Characteristics of the Breast Meat of Male Broilers (사료 내 단백질 함량 및 합성아미노산 첨가에 따른 육계의 사양성적 및 가슴육 성상에 미치는 영향)

  • The present study was conducted to determine the effect of reduced dietary crude protein (CP) with a synthetic indispensable amino acids (AA) supplement on the growth performance, economics, and breast meat quality. A total of 450 male broilers (Ross 308) were used from the age of 7 to 28 days. On d 7, the birds were individually weighed and randomly assigned to three treatment diets with six replicate pens for each treatment in a randomized complete block design. The experimental diets were: (1) a control diet, (2) a diet with a reduction of 1% of the dietary CP with synthetic AA supplements to meet the indispensable AA requirement (OAA) of broiler chickens, and (3) a diet with a reduction of 1% of the dietary CP with synthetic Lys, Met, and Thr supplementation to exceed 5% of the indispensable AA requirement (HAA). There were no differences among the treatments on the final body weight, weight gain, and feed intake. However, the HAA diet impaired the feed conversion ratio at d 21 and during the overall feeding periods (P<0.05). The predicted total feed intake and feed price required to reached 1.5 kg BW was higher than for the birds fed the HAA diet (P<0.05). The breast meat muscle fiber cross sectional area and fiber density varied between the treatments (P<0.05). However, there were no differences in breast meat weight. In conclusion, reducing 1% of dietary CP had no adverse effects on the growth performance or breast meat yields.

Dietary Protein Requirement for Young Far Eastern Catfish Silurus asotus

  • A feeding trial was conducted to determine the optimum dietary protein requirement of young far eastern catfish Silurus asotus. Five isocaloric diets were formulated to contain graded levels of protein (35, 40, 45, 50, and 55%). Triplicate groups of fish (initial body weight of 44 g) were hand-fed to apparent satiation for 9-weeks. Weight gain and specific growth rate of fish fed 55% protein diet were significantly higher than those of fish fed 35 and 40% protein diets, but not significantly different from those of fish fed 45 and 50% protein diets. The feed efficiency of fish fed 50 and 55% protein diets was significantly higher than that of fish fed 35, 40 and 45% protein diets. The protein efficiency ratio of fish fed 40% protein diet was significantly higher than that of fish fed 45, 50 and 55% protein diets, but not significantly different from that of fish fed 35% protein diet. The dietary protein level significantly affected whole body lipid and moisture contents. The results of this study suggest that the 45% protein in the diet is optimal for maximum growth of young far eastern catfish weighing in the range of 44 to 227 g.

Dietary Optimum Phosphorus Level of Juvenile Korean Rockfish (Sebastes schlegeli)

  • A 10-week feeding experiment was conducted to determine the phosphorus requirement of juvenile Korean rockfish (Sebastes schlegeli). Three replicate groups of fish initially averaging 4.2g were fed the semipurified experimental diets containing graded levels of $NaH_2PO_4\;\cdot\;2H_2O$ to provide from $0.1\%$ to $1.32\%$ total phosphorus level in a flow-through seawater system. Korean rockfish muscle and casein were used as the protein sources of the basal diet. Weight gain, feed efficiency and protein retention of fish fed the $0.35\%$ phosphorus were higher than those of fish fed the $0.1\%$ phosphorus, although no significant improvements $(P>0.01)$ were observed above the level. Determined phosphorus requirement using the broken line model was found to be $0.3\%$ for weight gain. Moisture, protein and lipid contents of whole body and muscle were not affected by dietary phosphorus levels $(P>0.01)$. Lipid contents of liver in fish fed the $0.1\%$ phosphorus were lower than those in fish fed the $0.35\%$ and $1.32\%$ phosphorus $(P<0.01)$. Dietary phosphorus increased ash and phosphorus contents of the whole body, while those of bone were not affected $(P>0.01)$. The data obtained in this study indicate that a $0.3\%$ dietaryphosphorus level could be recommended for the optimum growth and efficient nutrient utilization of juvenile Korean rockfish.

Re-evaluation of Dietary Methionine Requirement by Plasma Methionine and Ammonia Concentrations in Surgically Modified Rainbow Trout, Oncorhynchus mykiss

  • This study was designed to re-evaluate the dietary methionine requirement by means of the plasma methionine and ammonia concentrations in surgically modified rainbow trout, Oncorhynchus mykiss. A total of 35 rainbow trout averaging $505{\pm}6.5$ g (initial body weight, mean${\pm}$SD) were randomly distributed into seven groups with five fish in each group. After 48 h of feed deprivation, each group of fish was fed one of seven L-amino acid based diets containing 0.5% cystine and graded levels of methionine (0.25, 0.40, 0.50, 0.60, 0.70, 0.80 or 0.95% of diet, dry matter bases) by intubation at 1% body weight on dry matter basis. Blood samples were taken at 0, 5 and 24 h after intubation. Post-prandial plasma free methionine concentrations (PPmet, 5 h after intubation) and post-absorptive plasma free methionine concentrations (PAmet, 24 h after intubation) of fish fed diets containing 0.60% or higher methionine were significantly (p<0.05) higher than those of fish fed diets containing 0.50% or lower methionine. PPmet and PAmet in fish fed diets containing 0.60% or higher methionine were not significantly different except PPmet of fish fed diet containing 0.95% methionine. Post-prandial plasma ammonia concentrations (PPA, 5 h after intubation) of fish fed diets containing 0.70% or higher methionine were significantly higher than those of fish fed diets containing 0.60% or lower methionine, and PPA of fish fed diets containing 0.25 and up to 0.60% methionine were not significantly different from each other. Broken-line model analyses on PPmet, PAmet, and PPA indicated that the dietary methionine requirement of rainbow trout was between 0.59 (1.69) and 0.67 (1.91) % of diets (% dietary protein bases) when the diets contained 0.5% cystine.

Establishment and future tasks of estimated energy requirement in 2020 dietary reference intakes for Koreans (2020 한국인 에너지필요추정량 설정 및 앞으로의 과제)

  • Energy requirement is defined as energy expenditure in an energy equilibrium state. The doubly labeled water (DLW) method is considered the gold standard for measuring total energy expenditure (TEE). In 2002, the Institute of Medicine (IOM) of the National Academies established dietary reference intakes (DRIs) for Americans and Canadians, and the equations for estimated energy requirement (EER) were developed by using pooled data from studies that had applied the DLW method. Since 2005, these equations have been used for establishing EER in the DRI for Koreans. These equations based on age group include the physical activity (PA) coefficient determined by the PA level (PAL; sedentary, low active, active and very active) as well as body weight and height. The PAL values of Koreans calculated using the DLW method and PA diaries were determined to fall in the low active category (1.40~1.59). Therefore, the PA coefficient corresponding to 'low active' was applied to the EER equations. In recent years, with increasing number of people regularly engaging in various physical activities in Korea, EER is now separately presented for people with 'active' and 'very active' PALs. In the future, like the United States and Japan, Korea needs to expand the DLW research for developing EER predictive equations for Koreans. In addition, standardized guidelines should be prepared to accurately evaluate the PAL using the physical activity diary and the new PA classification table for Koreans.

  • Dietary protein is the most expensive component in flounder feed because of the high protein requirement of this species. The non-protein energy sources may also influence the protein utilization of fish. The inclusion of adequate levels of non-protein energy sources in diets can minimize use of protein as an energy source. Protein sparing effect by fat and carbohydrate has been studied in other fish.
