  • This study was conducted to investigate how body size and weight control experience affect the nutrient intakes and the health status of adolescent females. The survey was carried out by self-questionnaires with 463 female high school and college students in Daegu. Analysis of data was done by using a t-test, and ANOVA with the SAS computer program. The average height, weight and BMI of the subjects were 161.2 cm, 53.4 kg, and 20.51 kg/$m^2$ respectively. However, 25.1% of the subjects belonged to the underweight group when we divided the subjects into 3 groups- underweight, normal-weight, overweight-according to their present body size. The average Fe intake of the subjects was less than 50% of the Korean recommended dietary allowances. The dietary intakes of energy and Vit. A were significantly higher in the underweight group than in other groups. However, no significant differences among body size groups were observed in the dietary habit score and the nutritional knowledge score. It also appeared that the dietary habit score and the nutritional knowledge score of the weight control attemptees were worse than those of the non-attemptees. The physical health status of the subjects significantly differed according to weight control experience, and the psychological health status of the subjects differed with present body size. The physical health condition of the weight control attemptees was worse than the non-attemptees. and the psychological health condition of the overweight group was worse than other groups. The results indicated that unnecessary weight control in adolescent females induces unhealthy food behavior which is linked to undesirable health status.

  • To promote health status, strategies and interventions to improve nutrition should be based on the proper diagnosis of the subject's eating patterns. The elderly usually have traditional food habits and preferences, and it is very difficult to change them. This study was designed to identify dietary behavior and food preference of the elderly, in order to provide baseline data for the Elderly Nutrition Intervention Program for the Public Health Center. A survey questionnaire was made for use by trained interviewers to query 151elderly people from 5 community elderly centers located in Suwon, Korea. The majority of them ate regularly and partook of all available side dishes. Their major dietary problems were frequent consumptions of salty foods, and eating too quickly. They consumed grains and vegetables regularly, but seldomly ate dairy products, fruits, meat and food prepared with oil. They also tended to eschew ready made processed food, high cholesterol food, and fast food. Also they did not dine out as much as younger people. Desirable eating habit score were not significantly influenced by socioeconomic variables and nutrition-related characteristics. These included nutrition knowledge, Nutritional Risk Index(NRI) and a score of health concerns. However, meal balance scores were significantly higher in the younger group(p<.05), the higher household income group(p<.05). According to stepwise multiple regression analysis, NRI was the most important determinant of a desirable eating habit score for the male elderly, whereas the score of health concerns was mo9st important for female elderly subjects. The greatest predictor of the meal f balance score was nutrition knowledge. The elderly liked sweet tasting food, grains, rice, stews and Korean style soups. They disliked sour food, dairy products, processed food, and bread. The results indicate that the Elderly Nutrition Education Program should focus on increasing consumption of dairy products, fruits and food with oil, prepared by traditional Korean cooking methods. It also suggests that the program planning should consider the socioeconomic status of the elderly, such as income and education level, as well as concern for health.

  • Objectives: This study aimed to assess the adherence to dietary guidelines among college students in the post-COVID-19 era and examine the changes in their dietary habits as the learning environment transitioned from remote to in-person classes. Methods: We conducted a survey involving 327 college students in Daejeon from March to April 2023. The survey questionnaires included various factors, including age, gender, type of residence, frequency of use of delivery food, convenience food, and eating out. In addition, we investigated the extent of adherence to the dietary guidelines for Koreans and the degree of dietary changes following the post-COVID-19 shift in class format were investigated. For comparative analysis of the level of adherence to dietary guidelines in relation to dietary habit changes, an ANOVA and a post hoc Scheffe test were employed. We also performed a multiple linear regression analysis to identify dietary factors influencing the level of adherence to dietary guidelines. Results: The study revealed a high rate of convenience food consumption and a low rate of homemade food intake among students. There was a marked increase in the consumption of processed foods, convenience foods, dining out, sweet foods, high-fat fried foods, beverages, and alcohol following the transition from online to in-person classes. When examining adherence to Korean dietary guidelines, the highest scored practice was 'Hydration', and the lowest was 'Breakfast habit'. Increased consumption of convenience foods, late-night snacks, and dining out were negatively correlated with adherence levels to dietary guidelines, specifically correlating with 'Healthy weight', 'Hydration', 'Breakfast habit', and the total score of adherence. The adoption of 'regular meals' was positively associated with increased adherence levels to dietary guidelines. Conclusions: The transition from remote to in-person classes post-COVID-19 led to increased intake of convenience foods, dining out, sweet foods, high-fat fried foods, and alcohol. The rise in convenience food and late-night snack consumption negatively influenced several aspects of the dietary guidelines adherence, thereby suggesting the need for strategies to encourage healthy dietary habits among college students.

  • This study was performed to investigate the degree of different stresses in university students of outer region of Seoul and to search the influence of food habit and nutrient intakes in stress. The data was collected by questionnaire method for self-diagnosed different stresses, dietary habit, and physical status and 24 hours recall for nutrient intakes. The subjects were 282 students attended at the lecture Food and Health. Diet balance was no difference with gender but food intakes were more diverse in female. Nutrient intake of male students was lower in vitamin A and riboflavin, but that of female was low in vitamin A and iron. The university students outer region of Seoul had more stress situation in frustration, deprivation and self-efface than in the stress of the noise and Type-A behavioral stress. Total self-diagnosed dietary habit score was better in the group of no susceptive overload stress than that of the high susceptive group. Same trend of dietary behavior score was in the group of no noise and anxiety-response stress than that in the susceptive groups. The quantity of nutrient intakes was correlated with different kind of stress. Niacin intake was positively related with the stress from life-events, and food induced stress. Thiamin intake was positively related with food induced stress. But the intake of iron, calcium, niacin and riboflavin were negatively related with the stress of noise. Therefore, we could concluded that different kind of stresses were influenced in dietary behavior and vitamin-mineral nutrient intakes. More research would be needed at the aspects of health promotion in the stressful situation of modern society.

  • This study was conducted to investigate the annual differences in food habits and dietary attitudes of new female college students enrolled in the department of food and nutrition for 6 years by questionnaire. The results were as follows: age, height, weight and body mass index(BMI) were no significant annual differences over study period. The average ratios of underweight, normal weight and above overweight groups classified by the BMI standard were 19.4%, 64.4% and 16.2%, respectively. There were no significant annual differences in the scores of food habits and dietary attitudes. The intake of milk showed the lowest scores among all the food habit items and the same annual tendencies for 6 years. Among food groups items, the mean intake scores of milk(p<0.01), fats and oils(p<0.001) and vegetables(p<0.05) differed significantly by year. Specifically, the intake scores of milk and vegetables decreased gradually throughout the study period and were significantly lower in 2008 than in 2003. Among dietary habits, the mean intake scores of sweets were significantly lower in 2003 and 2007 than in other years(p<0.001), and the mean intake scores of instant frozen foods were significantly higher in 2006 than during other years(p<0.05). The sum of health related items in 2007 was significantly lower than those during other years, and this was likely due to the lowest scores both of eating-out and alcohol intake in 2007 than in other years. Among dietary attitudes, the mean score of item 'Price of food is more important than nutrition.' was significantly lower in 2005(p<0.05). Food habit scores showed significantly positive correlation with dietary habits(r=0.733, p<0.01), food groups related habits(r=0.720, p<0.01), lifestyle related disease related habits(r=0.518, p<0.01), health related habits(r=0.422, p<0.01). Food habits and dietary attitudes showed highly significantly positive linear correlations each other(r=0.426, p<0.01). Dietary habits and food groups related habits showed highly significantly positive linear correlations(r=0.366, p<0.01). These results showed the same annual tendency with respect to food habit and dietary attitudes in newly enrolled college female students for 6 years. It is expected that food habit and dietary attitudes will be improved if systemic and proficient nutrition education is provided during their college period.

Two hundred seventy workers(165 men and 105 women) in Masan, who were provided food services were selected as survey subjects. They were given questionnaires on nutrition knowledge, food frequency questionnaires, and blood analysis were conducted through an annual health examination from May to August 1998. The average age of the subjects was $35.7\pm{11.8}$ years, and 80% the of women were in their teens and 20's and 80% of men were in their 30's and 40's. The nutrition knowledge score was higher in women than in men, while food habit score was higher in men than in women. As age increase, the degree of life stress became lower and food habit score was higher in men than in women. As age increases, the degree of life stress became lower and food habit was improved. In women, all nutrient intakes were avove the recommended dietary allowances(RDA), and in men intakes of only vitamin E and calcium were under RDA. Levels of serum total cholesterol, triglyceride, and blood glucose, blood pressure, body mass index were positively related to age. The number of subjects suspected of having chronic disease was the highest for those in their 40's. The results indicate that nutritional status of industrial workers in the present study was fairly good probably due to food services, but their health status should be supervised as their age increases.

The children involved in this study were 153 boys and 134 girls, aged 3 to 6 years old. The eating frequency of breakfast and the number of meal times a day were significant difference according to sex(P<0.01). Reason for skipping breakfast was ‘no appetite’(49.3%). It was found that 51.5% of the children belonged to ‘fair’ in food habit score, while children in ‘poor’ and in ‘excellent’ were 25.0% and 9.7% respectively. There was no significant difference in food habit score between boys and girls. Their preferred staple foods were ‘cooked rice’ and ‘Chajangmyon’, their preferred soup was ‘seaweed soup’. Also, their most preferred side dishes with animal foods were ‘fried chicken’ and ‘Bulgogi’. The preference of ‘hard boiled soybean curd’ and ‘pan fried soybean curd’ among the side dishes with vegetable foods were significant according to the obesity index(P<0.05). Children preferred side dishes with animal foods to those with vegetable foods. First considered item in meal preparation was child's favorite(58.1%). Mother's response to child's unbalanced diet was ‘trying to persuade the child’(56.6%). It was significant according to mother's occupation(P<0.01). The nutritional management program at child care center is required to enhance the nutritional status of children. Also the nutritional education for the children and their meal planners is required for better growth and health promotion of preschool children.
