인천지역 초등학교 5학년 대상 '어린이 건강UP 안전한 식생활교육'의 영양식품안전 지식, 태도, 실천의 변화에 대한 효과 (Effects of 'Dietary Education for Children's Health UP' on the Changes in Knowledge, Attitudes, and Practice of Nutrition and Food Safety in 5th Grade Elementary School Students in Incheon)

  • This study examined the effects of 'Dietary education for children's health UP' (DECHUP) on the changes in knowledge, attitudes, and practice (KAP) of nutrition and food safety in $5^{th}$ grade elementary school students in Incheon. The DECHUP program was conducted from May to October 2018 and consisted of education and activities focusing on the children's levels of understanding. Data were collected before, immediately after, and 6 weeks after DECHUP using the same method. All data were analyzed using SPSS ver 20.0. The level of knowledge and attitudes of the subjects to nutrition and food safety was significantly higher after than before DECHUP, but the attitude of boys did not show any significant difference after 6 weeks. Although there were no significant differences in the behavior for nutrition in the practice of the subjects, there were significant positive changes in the behavior of food safety. The higher the satisfaction of DECHUP, the more positive the change in knowledge, and the more positive the attitude and practice behaviors. Therefore, DECHUP has positive effects on the KAP of the subjects, and it will be helpful for elementary school students to form desirable eating habits if it can be carried out periodically and continuously.

  • This study utilized qualitative research to understand the changes taking place in adolescent dietary behaviors during the COVID-19 pandemic and the current status of school-provided nutrition counseling. These, along with barriers and strategies for improvement, were derived from focus group interviews with 10 nutrition teachers. Throughout the pandemic, adolescents experienced various dietary problems, including frequent meal skipping, unbalanced diets, increased obesity, and difficulties building positive attitudes towards food. To resolve these dietary problems, nutrition teachers recognized the need for school-provided nutrition counseling. However, nutrition teachers faced various barriers, such as a lack of time for nutrition counseling among students, lack of support from parents, and insufficient space and resources. To revitalize school-provided nutrition counseling, strategies such as home-connected nutrition counseling, the development of standardized guidelines, manuals for school-provided nutrition counseling, software support for nutrition diagnosis, and implementation of nutrition counseling in connection with cooking activities were proposed. This is important as school-provided nutrition counseling can help develop the foundation for healthy dietary behaviors and health promotion in adolescents.

코로나-19 확산 시기 여고생의 외모 관심도와 식행동 및 식사의 질과의 관련성 (High School Girls' Interest in Beauty and Its Association to Eating Behaviors and Dietary Quality during the COVID-19 Pandemic)

  • This study assessed the beauty care behavior and the dietary attitudes, eating behaviors, and dietary quality related to beauty care in accordance with the level of interest in beauty care by examining 558 female high school subjects in the Incheon area. The study aimed to identify the interest in beauty care on the part of adolescent girls that impacts their dietary life and provide basic data for nutrition education forming desirable dietary habits. The interest in beauty care on the part of female high school students is relevant to dietary life and dietary attitude, with the high-level interest group attempting to use diet foods more frequently and attempting weight control because of their low satisfaction with their body type. On the other hand, a high level of interest in appearance failed to lead to the practice of a varied and balanced dietary life. Therefore, nutritional education is necessary to avoid a high level of interest in beauty care, leading to an incorrect perception of body shape and excessive weight control. Furthermore, nutrition education is necessary to link interest in appearance to the beauty of a healthy body based on nutritional balance by connecting the interest in appearance to a varied and balanced dietary life that goes beyond the category of practice.

여고생의 체중조절, 영양지식, 식태도, 식행동에 관한 연구 (A Study on Weight Control, Nutritional Knowledge, Dietary Attitudes and Eating Behaviors among High School Female Students)

  • This study was designed to examine weight control, nutritional knowledge, dietary attitudes and eating behaviors of 370 high school girls and to investigate if there were differences in these variables by weight control status. The weight control attempters (65.1%) had significantly higher body weight and BMI (p<0.001). The difference between desired and current body weight was -9.1 kg in the attempters, showing a significantly higher difference than the counterparts (p<0.001). The attempters also showed more interest toward weight control (p<0.001), but were less satisfied with their body size (p<0.001). Most of subjects (88.1%), especially in the attempters (96.7%) responded that they would try to control their weights in the future. The regular exerciser was 22.9% in the attempters while the percentage of the counterparts was 11.9% (p<0.05). The use of internet or television watching was not significantly different by weight control status. Subjects scored 15.8 out of 20 on a nutritional knowledge scale, which showed a moderate level of knowledge. The nutritional knowledge score was 15.7 for the attempters and 15.8 for the counterparts. None of the nutritional knowledge items reached statistical significance, although the percentages of correct answers regarding weight control or balanced meals were slightly lower in the attempters. The attempters showed more favorable eating attitudes than the counterparts (p<0.001), especially in the attitudes of applying nutritional knowledge to daily life (p<0.01), attitudes for modifying diets (p<0.01) and importance of having adequate meals (p<0.01). The eating behavior was moderate, with mean scores of 31.1 (possible score: 15 - 45). Subjects showed problems in eating a variety of foods, eating meals regularly, eating slowly, eating breakfast and consumption of some food groups (e.g., dairy foods, fruits). The attempters consumed seaweeds more frequently than the counterparts (p<0.05). Although there were not many significant differences by weight control status, this study suggested that nutrition education for adolescent girls should be planned to provide nutrition information regarding desirable weight control as well as modifying diets and eating behaviors.

일부 남녀 대학생의 소변 중 Salt Signal로 추정한 소금 섭취량에 따른 소금 섭취 관련 식태도, 식행동, 영양지식에 관한 연구 (Salt-Related Dietary Attitudes, Behaviors, and Nutrition Knowledge of University Students according to Estimated Salt Intake Using Urinary Salt Signal)

  • 본 연구에서는 성인기 초반에 있는 대학생 118명을 대상으로 나트륨 섭취를 간단하게 평가할 수 있는 소변 중 salt signal을 사용하여 나트륨 섭취량을 추정하고 이에 따른 나트륨 섭취 관련 식행동 및 식태도를 조사하였으며, 그 결과는 다음과 같다. 연령 및 신체계측 분석 결과 소변 중 salt signal에 따른 과잉섭취군의 경우 남자 대상자의 비율이 적정섭취군에 비해 유의적으로 높았으며 수축기혈압이 높은 경향을 보였다. 또한 체질량지수는 두 군간 유의한 차이를 보이지 않았으며 생활습관 조사 결과 과잉섭취군의 경우 음주를 하는 비율이 적정섭취군에 비해 유의적으로 높게 나타났다. 나트륨 관련 식태도에 대해 분석한 결과 11가지 항목에 대한 식태도 총 점수는 적정섭취군과 과잉섭취군에서 각각 35.50점과 33.45점으로 적정섭취군이 과잉섭취군에 비해 긍정적인 나트륨 관련 식태도를 가지는 것으로 나타났다(P<0.05). 나트륨 관련 식행동에 대해 분석한 결과 식행동 총점은 소변 중 salt signal에 따른 두 군간 유의한 차이를 보이지 않았다. 그러나 나트륨 관련 영양지식을 조사한 결과 나트륨 관련 영양지식 총점에서 12점 만점 중 적정섭취군이 9.77점으로 과잉섭취군의 8.82점에 비해 유의적으로 높은 점수를 보였다(P<0.05). 소변 중 salt signal과 나트륨 관련 식태도, 식행동 및 영양지식과의 상관관계를 분석한 결과 연령, 성별 및 체질량지수를 보정했을 때 소변 중 salt signal에 따른 소금 함량은 나트륨 관련 식태도 총점과 음의 관련성을 보였다. 이상의 연구 결과를 종합하여 볼 때 대학생에서 소변 중 salt signal에 따라 과다한 소금 섭취를 보인 대상자의 경우 적정섭취를 보인 대상자에 비해 나트륨 관련 식태도가 좋지 않고 영양지식도 낮은 것으로 나타났다. 이와 같은 결과를 통해 소변 중 salt signal로 추정한 나트륨 섭취와 나트륨 관련 식행동과의 관련성을 제시할 수 있었다.

중년기 여성의 영양교육이 식습관, 식행동, 영양지식 및 영양섭취에 미치는 영향 (The Effect of Nutrition Education on Food Habits, Dietary Behaviors, Nutritional Knowledges and Nutrient Intakes of Middle-aged Women)

  • This study investigated the effect of nutrition education on food habits, dietary behaviors, nutritional knowledges and nutrient intakes of middle-aged women. The subjects were 209 females aged $30{\sim}64yrs$. The subjects helped by trainers filled the questionnaire about demographic information, food habits, dietary behavior, nutritional knowledge and dietary intake before and after three months of nutrition education. All data were analyzed by chi-square test and paired t-test using the SAS program. The subjects who didn't drink alcohol significantly increased after the education(p<0.001). The largest meal of the day was lunch and the amount consumed was significantly different before and after the nutrition education(p<0.05). Dietary attitude scores significantly increased after the nutrition education(p<0.001). The percentages of subjects who didn't have processed foods, sweets and salty foods frequently significantly increased after the education(p<0.05). The subjects who answered correctly significantly increased in ten out of fifteen nutrition knowledge items related to obesity and in four out of five nutrition knowledge items related to nutrients after the education. There were significant differences in protein(p<0.01), calcium(p<0.05) and cholesterol intakes(p<0.01) before and after the nutrition education. This study suggests that nutrition education can improve dietary attitudes and nutritional knowledge.

독거 여자노인의 식품공급프로그램 실시 후 음식섭취빈도, 식태도 및 영양위험정도 변화 (The Changes of Dish Consumption Frequencies, Dietary Attitudes and Health-Nutrition Risk for Single Living Female Elderly on Food-Aid Program)

  • This study aimed to estimate the effect of the home based food supplying program in single living female elderly on the basis of depression, Health and Nutrition Risk Index, dietary attitude and dish consumption frequencies. The Food Supplying Program was carried out for 8 months for 27 single living female elderly from lower income status in Bucheon city. Main supplied foods were consisted with soymilk, vegetables, fruits and fish. The effect of the food supplying program were analyzed for 22 elderly who completed the program (group supplied with food : GSF) compared to the group not supplied with food (GNSF). The results of this study were as follows: Degree of depression estimated with depression score and Health-Nutrition Risk Index were decreased and the scores of dietary attitude and behaviors were increased for GSF after 8 months. However these improvements were not shown in the GNSF. GSF showed significantly increased consumption frequencies in soybean milk, tangerine, stir fried anchovy and yogurt, where as GNSF was observed with the decreasing trend in most of the dishes. In conclusion, home based food supplying program for single living female elderly not only increased the consumption frequencies of some dishes but also improved depression rate, Health and Nutrition Risk Index and dietary behavior concomitantly.

체질량지수에 의한 대학생들의 식습관에 관한 연구 (A Study of the Food Habits of College Students by Body Mass Index)

  • This study was designed to investigate the relationship between body mass index and food habits of college students. For this purpose, 358 students of Kangweon University were asked to fill out the questionnaires for food habits and weight control. The results are summarized as follows ; The rate of underweight, normal and obese was 16.5, 65.1, 18.4%, respectively. Food habits score of obese females were lower than normal or underweight females. Male subjects did not show significantly different scores among the three groups. Female obese subjects have lower scores than the other groups on the eating time, seaweed intake, protein intake and vegetable intake. Male obese subjects have nutritious meals and more eating time than normal and underweight males. College students are the early stage of adult life and their food habits, food behaviors and life style will continue in later life. Therefore, college students need more nutritional knowledge, positive dietary attitudes and modified life styles to prevent and treat obesity.

중.고등학생의 가족 식사에 대한 인식과 태도 연구 (A Study on the Perceptions and Attitudes of Middle and High School Students towards Family Meals)

  • This study investigated the overall conditions related to family meals, including perceptions, attitudes, and behaviors, among middle and high school students. The data were collected from 773 male and female students attending middle and high schools in Seoul and Kyunggi-Do from March to May 2006, using pre-tested self-administered questionnaires. The results are as follows: 78.9% of the subjects lived with their parents and siblings, and 75.7% regarded family meals as meals eaten with all family members living together in a household. As for the frequency of family meals, 40.1% of the middle school subjects answered that they ate with their family 'more than once per day' and 20.8% answered '1 or 2 time per a week'. However 21.0% of the high school students had family meals 'more than once per day', and 31.7% had family meals '1 or 2 times per a week', showing a significant difference between the groups(p<0.001). When the degree of satisfaction with life was evaluated using a Likert scale(strongly satisfied 5 point, strongly unsatisfied 1 point), the middle school students showed a significantly higher level of satisfaction than the high school students towards daily life, health, nutritive conditions, and family care. feelings, attitudes, and behaviors toward family meals were also evaluated(strongly agree 5 point, strongly disagree 1 point), and the results showed that the subjects had positive psychological feelings, with significant differences based on the frequency of family meals. Likewise, the groups who ate frequent family meals scored higher on aspects related to having positive attitudes and behaviors toward the family meal, implying that eating family meals is associated with promoting friendship, psychological stability, and positive thinking in adolescents. These findings suggest that attention needs to he directed toward increasing the frequency of family meals and creating a positive family meal environment.

경기지역 사회초년 직장인의 식생활 태도, 영양지식 및 식품 기호도 (New Employees' Dietary Attitudes, Nutrition Knowledge, and Food Preferences in Gyeonggi Area)

  • This study evaluates nutrition knowledge, dietary behaviors and food group acceptability based on a sample of 514 of new employees in Gyeonggi area. Among the respondents, 70.6% of male, and their age was 30.7 Most were college graduates (94.9%) and unmarried (86.3%). Based on the BMI males tended to be overweight, whereas females, normal. In terms of health consciousness based on five-point Likert-type scale, the average score for the health status was 4.18 indicating good health, and health attention was 4.88 indicating high health attention. Dietary behaviors were evaluated using five-point Likert-type scale. According to the results, the total score for regular diet based on 5 items was 9.6; that for a balanced diet based on 7 items was 22.2; and that for practical diet action based on 8 items was 22.3. That is, the respondents were on an irregular diet but tried to balanced diet through appropriate diet action. Food acceptability was evaluated using a five-point Likert scale ranging from "strongly dislike(1)" to "strongly like(5)". The score of meat group was 3.67; that for the fish 3.43; and that for the vegetable group was 2.86. Females were slightly more like to accept fruits 3.60 than males 3.48;(p<0.05). The total score for nutrition knowledge based on 35 items was 20.5. A balanced diet was correlated with egg acceptability (p<0.01); energy-related knowledge with confectionery preferences (p<0.05); and vitamin knowledge, with snack affinity (p<0.05). Health attention was negatively correlated with seafood preferences for male(p<0.05) and with snacks for females(p<0.05). The respondents were strongly interested in and aware of their health, but this did not lead to their food preferences. These results suggests that dietary habits can lead to nutritional balance for maintaining the health of employees.
