  • This study was conducted to investigate the nutrition knowledge, dietary attitudes, dietary behaviors, smartphone usage-related dietary habits, and health-related lifestyles of higher grade students in elementary school according to risk level of smartphone overdependence. Subjects were 286 fifth and sixth grade students of elementary school in the Siheung and Ansan areas. Data were collected using self-administered questionnaires and analyzed using SPSS v. 20.0. Based on scores of S-scale (smartphone overdependence scale for adolescents), subjects who used smartphone were classified into an overdependence group (ODG, n=52) and a normal group (NG, n=234). The ODG showed a significantly longer usage time than NG on both weekdays and weekends (p<0.001). There were no significant differences in total scores of nutrition knowledge between the ODG and NG. Average total scores of dietary attitude and dietary behavior in the ODG were significantly lower than in the NG (p<0.001). There were higher risks of ODG for skipping meals (OR=8.3, 95% CI=4.027-17.099), changing eating speed (OR=4.4, 95% CI=2.209-8.822), and changing meal amount due to smartphone usage (OR=2.9 95% CI=1.233-6.623). Therefore, education programs are needed to ensure proper dietary behaviors and habits among smartphone overdependent elementary school students.

  • Objectives: This study was conducted to examine the effects of nutrition education with a dietary guidebook for children on dietary attitude, nutrition knowledge and nutrient intakes. Methods: The subjects were 54 higher grade elementary students (27 educated vs. 27 non-educated). The educated group was provided individual and/or group lessons (40 min/lesson/week, 4 week) using a dietary guidebook of Children developed by The Korean Society of Community Nutrition (KSCN) & Korean Food and Drug Administration (KFDA). The contents were Balanced Diet, Smart Food Choices, Cooking a Healthy Snack and Building a Healthy Body. We examined the differences in nutrition knowledge, dietary attitudes and dietary intake between the educated group and non-educated group. Results: After education, the educated group improved dietary attitude, nutrition knowledge and qualitative nutrient intakes compared to the non-educated group. Specifically, among dietary attitudes, 'taking a meal with salty and spicy food' increased, while among nutrition knowledge, 'functions of protein', 'functions of fat', 'foods with carbohydrates', 'foods with fat', 'foods with vitamins', and 'foods with minerals' were increased. Nutrition adequacy ratio (NAR) scores for vitamin C, iron, and zinc were increased. Conclusions: Nutrition education using a dietary guidebook for children developed by the KSCN & KFDA had positive effects on nutrition knowledge and qualitative nutrient intakes. These findings suggest that nutrition education focused on personalized daily energy and nutrient requirements may improve dietary attitude and quantitative nutrient intakes of children.

  • A convenience samples of Korean-Canadian/American adults who lived in Vancouver, San Hose and Los Angeles areas for over 10 years, were studied in 2000. Total of 130 adults were analyzed by immigration age. The age of immigration age was divided into 3 groups: the young group immigrated at 25 or before, the middle group immigrated at 26 to 40, and the old group immigrated at over 40. Their average length of residence in Canada and the U.S. was a little longer than 20 years. The dietary behavior patterns were similar among 3 groups, except co-eaters and dining-out frequency, and the Korean-Canadians/Americans seemed to be more home-based, family-tightened and traditional patterns than Koreans in Korea. They liked Korean traditional basic dishes, but their children liked a-la-carte ones and immigrants at early 20's showed similar food preferences as young generations. The attitudes of dietary acculturation for themselves and for their children were high. Since immigrating at age 26 to 40 years old rather than 20's or over 40's, showed stronger acculturation attitudes even with no significance and revealed significantly differences in some dietary behaviors and food preferences, it is recommended that immigration age should be considered when planning dietary foodservices at nursing care systems for Korean Canadians/Americans.

  • The consciousness and eating habits of the housekeeper directly influence the stress level and health quality of the household occupants. In Korea, most housewives are in charge of dietary life. Accordingly, their attitudinal clusters toward dietary (eating) life were researched in relation to their stress and health. The research results showed that irregular eating habits cause stress. Therefore, it is necessary for housewives to have a regular eating habit. The results were as follows. The house wives' attitudes toward dietary life were categorized into 5 clusters: regular and speedy overeating, regular and frequent eating, regular and light eating, irregular and light eating, irregular and speedy overeating. The cluster of regular and frequent snacks was 24.3%. The cluster of irregular and speedy overeating caused the most stress. Especially the house wives' group belonging to the cluster of irregular and speedy overeating were under social and emotional stress, while the cluster of regular and light eating and the cluster of irregular and light eating were under concentration stress. The cluster of regular and frequent snacks and the cluster of irregular and light eating had negative effect on their health, while the cluster of regular and speedy overeating had negative effect on their family's health by their social stress.

  • This study was carried out to evaluate the usefulness and the effectiveness of the nutrition education website 'ifood(http://ifood.or.kr)', for children. A total of 262 children (5th and 6th graders) participated in the self-education program using the website which consisted of 4 sessions every two weeks. In each session, they were asked to answer some questions on the comprehensiveness of each topic while navigating the website. Nutrition knowledge (20 items), dietary attitudes (7 items), and dietary behaviors (10 items) were evaluated using questionnaires before and after the education. After the education, the usefulness and readability of the website was also evaluated. Most (97.2%) of the responders reported that the education using this website was helpful, 97.3% thought that the contents were reliable, 90.1% responded that the contents were easy to understand, and 88.8% answered that they would revisit 'ifood'. The menus they liked best were 'Interesting games' for 35.8%, 'How can I cook?' for 17.8%, 'How can I become slim' for 16.4%. This website might be more attractive by providing a 'greater variety of contents in detail', 'more music, motion pictures and images', 'more interesting games'. After the education, there was a significant increase in nutrition knowledge scores from 10.9 to 13.1. Although the total scores of dietary attitudes and dietary behaviors did not improve, there was a significant increase in each of some questions. These results showed that 'ifood', a nutritional education website, was desirable in reliability, aesthetics and enjoyability, and was effective in improving nutrition knowledge and some of dietary attitudes and behaviors in children.

  • This study investigated the demand of nutrition education programs among preschooler's parents. Focus group interview was conducted four times with 29 parents of preschool children. Most subjects appeared to have interest in nutrition education; 'very interested' (58.6%), 'somewhat interested' (20.7%). Sources of nutrition information were 'internet' (35.1%), 'books' (21.6%), 'newspaper or magazines' (13.5%), 'family or relatives' (13.5%), 'media' (8.1%), 'preschool' (5.4%) and 'hospital or public health center' (2.7%) in order. The most frequently mentioned health problems related to dietary behavior were atopy and obesity. Major concerns for children's dietary behavior was picky eating habits, and having questions for how to deal with this problem. Most subjects had trouble with obtaining an adequate amount of dietary supplements for their children. Nutrition education for parents about food labeling and information on processed foods was in demand. Preferred methods of nutrition education for children were playing games with stickers, gardening vegetables, and participating in cooking. Attitudes toward computer-assisted education materials, one of the methods of nutrition education, appeared to be ambivalent. Some preschool parents showed negative attitudes towards exposing their children to electronic devices at an early age, whereas others showed positive attitudes. Subjects were interested in meal-planning and ways to balance nutrients for their child. Parents preferred attending professional lectures to receive reading materials or searching websites as an adult nutrition education method. Results of this study have implications on providing basic information for developing nutrition education programs for preschoolers and their parents. Future research should focus on developing nutrition education programs for both preschools and the home.

  • Recently, local foods have drawn significant attention due to their intrinsic merits. Such foods not only have commercial potential, but also cultural value. Therefore, local foods must be well-maintained and fostered, and a comprehensive plan to develop them must be devised. In this aspect, various factors such as dietary attitudes, perceptions and concerns affecting their development should be considered. The present study was designed to investigate via survey the dietary attitudes, perceptions and concerns towards local foods among married women in Jeollabuk-do. The number of subjects was 434. According to the results, the highest frequency for consuming local foods was '1~3 times/month' for all ages. For the number of local foods subjects had ever tried, '7~8' was the highest overall with 36.8%, followed by '5~6', '3~4', '9~10', and '0~2' with 27.4%, 17.9%, 10.3% and 7.6%, respectively. However, there was a statistically significant difference according to age. The higher the person’s age, the higher the number of local foods they had tried. A similar pattern was shown in the number of local foods subjects had ever cooked. For those in their 20s and 30s, the highest number was '0~2', with 70.8% and 53.0%, respectively, while for those in their 40s the highest number was '3~4' with 38.5%, and for those above 50s it was '5~6' with 31.4%. Most of the subjects realized the need to advance the development of local foods. There were differences among the subjects for certain aspects concerning progression and development, opinions on the major drawbacks of local food development items served more often at home, and different views by age on taste modifications according to modern concepts. From this study, it can be concluded that the utilization of local foods increases with age, and the view that local food development should be based on the recovery and/or maintenance of original tastes becomes more prevalent with age.
