중학생의 식습관, 영양지식 조사 및 기술.가정 교과의 식생활 교육 만족도에 관한 연구 (A Study on the Eating Behaviour and Nutrition Knowledge of Middle School Students and Satisfaction of Dietary life Instruction in Technology.Home Economics Subject)

  • 본 연구는 대구 경북의 6개 중학교에 재학 중인 1, 2, 3학년 남녀 493명을 대상으로 식생활 수업에 관한 내용, 영양지식, 식습관 및 식태도, 식생활의 실제적인 도움정도에 관한 내용을 설문조사를 통해 실시되었다. 기술 가정교과의 식생활영역 수업 만족도는 보통이 43.5%로 가장 많았고 수업에 만족하지 않는 이유로는 지루한 강의식 수업이어서가 10.1%로 가장 높았다. 가장 많이 원하는 수업형태는 실험 실습수업이었고(75.4%), 조리실습이 가장 관심이 많았으며(53.0%), 가정과의 식생활 교육이 실제 생활에 도움을 주는 정도는 3.30/5점(66/100점)으로 낮은 편이었다. 영양지식 총점은 7.29/12점(60.75/100점)이었으며, 여학생점수와 3학년의 점수가 유의적으로 높았다(p<0.01). 식습관 및 식태도의 점수는 3.55/5점(71/100점)으로 남학생보다 여학생의 점수가 높았고, 1학년의 식습관점수가 가장 높고, 3학년의 점수가 가장 낮았다. 열량과 비만에 관한 영양지식 점수와 식습관 및 식태도 영역에서 싱겁게 먹기, 규칙적인 식사, 정상체중 유지, 인스턴트 및 패스트푸드 자주 먹지 않기, 환경을 생각한 식생활 항목의 점수가 낮게 조사되었다. 따라서 식생활 교육은 중학생의 성장과 바람직한 식습관 형성을 유도하고, 기술 가정교과에 대한 흥미를 높이기 위해 강의식 중심의 수업진행보다는 실험과 실습을 중심으로 하여 건전한 식습관 및 인성을 형성시켜 줄 수 있는 교육이 되어야 할 것이다. 또한 가정과교육의 궁극적인 목표를 달성할 수 있도록 가정과의 다른 영역 및 타 교과와의 융합교육을 통해 실생활에 적용, 응용할 수 있는 능력과 창의적인 사고 문제해결 능력을 길러줄 수 있는 적극적인 교육이 되어야 할 것이다.

국산(國産) 조제분유(調製粉乳)와 발효유(醱酵乳)의 영양효과(營養效果)에 관한 연구(硏究) - 2. 유제품(乳製品)이 성장기(成長期) 흰쥐에 미치는 영양효과(營養效果) 및 장내미생물(腸內微生物)의 변화(變化)에 관한 연구(硏究) - (Studies on the Nutritional Effects of Locally Produced Dried Formula Milk and Fermented Milk -2.   • 국내(國內)에서 생산(生産)되는 세가지 조제분유(調製紛乳) 및 한가지 발효유의 영양효과(營養效果)를 파악(把握)하기 위하여, 30%의 기초사료를 분유(紛乳)로 대치(代置)하고, 또한 발효유를 대비(對比)로 급여(給與)시켰을때 성장중(成長中)인 쥐의 증체량(增體量), 사료효율, 단백질효율(蛋白質效率), 장기중량(臟器重量), 영양이용률(營養利用率)에 미치는 영향을 조사하고저 60마리의 albino rats (male)을 이총하여 6주간(週間) 실험(實驗)을 하였던 바 그 결과(結果)를 요약하면 다음과 같다. 1. 증체량(增體量)은 분유처리구(粉乳處理區) 및 발효유 처리구(處理區)가 대조구(對照區)보다 다소 높은 경향(傾向)이였으나 통계적(統計的) 유의성(有意性)은 없었다. 그러나 분유(粉乳)A 및 C의 증체량(增體量)이 가장 좋았고, 시험구 사료의 단백질(蛋白質)함량이 대조구사료보다 낮았음에도 불구(不拘)하고, 30%의 조제분유(調製粉乳)를 대치(代置)시키므로서 성장기(成長期) 흰쥐의 증체량(增體量)을 향상(向上)시켰다. 3. 대조구(對照區)사료를 먹는 군(群)들의 사료 섭취량이 분유(粉乳)처리군보다 많은 경향이 었으나 통계적(統計的) 유의성은 없었다. 3. 사료효율은 대조구(對照區)에 비(比)하여 분유처리구(粉乳處理區)가 현저히(P<0.01) 좋았고, 분유간(粉乳間)에는 차이(差異)가 없었으나, 분유(粉乳)A의 사료효율이 가장 좋았고, 발효유 급여군(給與群)과 비급여군간(非給與群間)의 유의성도 각각 검정되지 않았다. 4. 단백질효울(蛋白質效率)은 다섯가지의 분유(粉乳) 및 발효유 처리구가 모두 대조구보다 현저히 (P<0.01) 높았으나, 분유(粉乳)들간에는 차이가 없었고, 조제분유 B에 발효유를 첨가한 구가 다른 모든 구보다 단백질 효율이 훨씬(P<0.01) 좋았다. 이는 발효유가 단백질효율을 개선시키는데 어떤 효과(效果)를 미치거나, 다른 시험구 사료에 아미노산 함량(含量)이 요구량(要求量)보다 훨씬 높았고, 동물(動物)이 필요량(必要量) 이상의 필수아미노산 함량(含量)을 받으면 그 이용(利用)율이 저하되기 때문인 것으로 추측된다. 5. 최종장기(最終臟器)의 무게는 처리간(處理間)에 아무런 차이를 보이지 않았다. 6. 고형물의 소화율은 분유(粉乳)처리구 및 발효유처리구가 대조구보다 높았고, 지방과 탄수화물도 유제품구(乳製品區)가 높았으나, 단백질의 소화율은 차이가 없었다. 생물가(生物價) 및 단백질 이용율은 발효유구(區)> 분유구(區)> 대조구(區)의 순으로 좋아서 단백질 효율, 사료효율, 성장효과 등에 대한 이들 시험사료의 효과(效果)를 뒷받침한다고 생각된다. 7. 장내 미생물의 변화는 발효유를 급여한 군(群)이 비급여군(非給與群)에 비(比)해 불리(不利)한 대장균(大腸菌)은 적은 반면, 유리(有利)한 유산균(乳酸菌)은 많았다. 이상의 여러 결과(結果)들을 종합(綜合)할 때 세가지 분유(粉乳)사이의 영양효과(營養效果)는 비슷하고, 분유(粉乳)나 발효유(醱酵乳)의 첨가(添加)가 어린쥐의 성장(成長)을 도웁고, 사료효율이나 단백질(蛋白質) 이용률(利用率)을 증진(增進)시키는 것이 확실하다.

한국 서해에 출현하는 꼼치(Liparis tanakae)의 위내용물 조성 (Diet Composition of Tanaka's snailfish, Liparis tanakae in the Yellow Sea, Korea)

  • 이번 연구에 사용된 꼼치는 2022년 4, 8, 10, 11월에 우리나라 서해에서 저인망으로 채집하였으며, 채집된 꼼치의 전장범위는 3.8~52.2 cm였다. 꼼치의 가장 중요한 먹이생물은 생이하목 새우류였으며, 그중 마루자주새우, 분홍갯가꼬마새우를 주로 섭식했으며, 영양단계는 3.63으로 나타났다. 또한, 꼼치는 생이하목 새우류 중 마루자주새우를 주로 섭식하는 섭식특화종이었다. 크기군별 먹이생물 조성 변화를 분석한 결과, 모든 크기군에서 생이하목 새우류가 가장 우점했으며, 성장함에 따라 마루자주새우의 비율은 감소하는 반면, 분홍갯가꼬마새우의 비율은 증가하는 경향이 관찰되었다. 개체당 평균먹이생물의 개체수는 유의한 차이를 보이지 않은 반면, 중량은 크기군이 증가함에 따라 유의하게 증가하는 경향이 관찰되었다. 계절별 먹이생물 조성 변화를 분석한 결과, 여름과 가을에 생이하목 새우류를 주로 섭식했으며, 생이하목 새우류 중에서 여름에는 마루자주새우, 가을에는 마루자주새우와 분홍갯가꼬마새우를 주로 섭식했다.

행동관찰 기반 치매 식이 평가 도구의 한국판 개발 (Development of Korean Version of the Dementia Eating Evaluation Tool based on Behavioral Observation)

  • 목적 : 본 연구는 치매로 인한 이상행동으로 인하여 음식물의 섭취에 영향을 보이는 환자들을 대상으로 행동관찰에 기반하여 식이 문제를 파악할 수 있는 국외의 체계화된 평가 도구들을 소개하고, 전문가 집단에 의한 내용타당도 검증을 통하여 한국화 하는 데 있다. 연구 방법 : 폭넓은 관련 문헌 검색에 기초한 수차례의 회의를 통하여 최종으로 한국판으로 개발할 평가도구 3종(Eating Behavior Scale; EBS, Edinburgh Feeding Evaluation in Dementia Scale; EdFED, Feeding Difficulty Index; FDI)을 선택하였다. 수정된 평가 도구 3종은 연구진들에 의하여 1차 번역되었으며, 9인으로 구성된 전문가팀을 대상으로 내용타당도지수(Content Validity Index; CVI)를 검증 하였다. 결과 : EBS 내용타당도 산출 결과 6개의 질문 항목 및 1개의 응답 항목 모두에서 CVI가 0.9 이상인 것으로 나타나 항목의 수정 없이 모든 항목을 한국판 EBS에 수록하였다. EdFED 내용타당도 산출 결과 11개의 질문 항목 모두에서 CVI값 0.9 이상인 것으로 나타나 항목의 수정 없이 모든 항목을 한국판 EdFED에 수록하였다. FDI의 내용타당도 산출 결과 19개의 질문 항목 모두에서 CVI값 0.8 이상인 것으로 나타나 항목의 수정 없이 모든 항목을 한국판 FDI에 수록하였다. 결론 : 국외에서 많이 활용되고 있는 치매 환자 대상의 행동 관찰기반 식이 평가도구 인 EBS, EdFED, FDI의 한국판을 개발하였다. 관찰기반의 한국판 평가 도구를 통하여 치매 환자들의 식이 관련 문제점들을 조기에 판단하고, 적절한 중재를 제공하는 것은 환자의 영양섭취 강화와 보호자의 부담 저하 측면에서 매우 중요하게 활용될 수 있을 것이다.

입원 환아 어머니의 가정간호 요구도 조사 (A Survey on the Demand for Home Care of the Mother's of the Hospitalized Children)

  • The subjects of the study were the 120 mothers who had children hospitalized in 6 hospitals in P city during the period from Feb. 1. to May 30. 1996. The purpose of the study are(1) the problems encountered when they carried out Home Care after discharge and (2) the degrees of demand that they had against Home Care Services. In order to investigate the purposes above-mentioned the researchers used the 55 items of Home Care services belonging to 10 areas selected by Korea Home-Care Association in 1994. The items were modified and supplemented to 4-point scale. The selected data were analyzed by SPSS : PC+ and the following results were derived. 1. The subjects payed great attention to 5 items such as 'pain control, OPD visits, diet-control problems' among the 15 sources of anxiety that they had against Home Care services after discharge. Especially, 'OPD visits and knowledge deficit' would to be overcome by the nursing activities of the Home Care Nurses. 2. The acknowledge level of the subjects to the Home Care Project that governmental plans to carry out was surveyed and found as under 50. 0% responded they heard about Home Care Nursing System. 60.8% said that they thought the system was 'very necessary' and 'somewhat necessary'. 65.0% said they would like to use the system. However, the acknowledge level of 50.0% is still low and is thought to need further national promotion and propagation. 3. The demand of the subjects against 55 Home Care Services was investigated and found as

    . 'Assessment, Lab, basic nursing technology, relay ' transfer, training ' education and curative nursing' showed comparatively high scores. However, the items belonging to pediatric Home Care Services such as 'umbilical cord care, breast-feeding, infant care, and post-partum care & loan of breast-pump' showed relatively low scores.

    • The purpose of this study was to analyze the contents related to health in the three major monthly women's magazine that was printed from March, 1997 to February, 1998. The unit of analysis was the section of health, living life, and reaing child. The total number of related story of health was 317. The analysis was done according to the target, health management, topics and the informer by using frequency and number. The findings are as follows : 1. The contents were categorized by target people. The number of items for women was 113(35.6%), child(17.4%), family(15.5), husband(4.7%) and others(26.8%). Others were the contents that are impossible to classify. 2. The number of items of contents by health management was the related to health maintenance and promotion 120(47.8%), health care when they were deviated from health 26(10.3%), and those of both attributes 105(41.8%). 3. The number of items of contents by topics was the related to the occurrence, prevention and treatment of various kinds of disease 41(12..9%), diet 37(11.7%), academic information 11.3%, women's disease 10.4%, the effect of foods 6.0%, child's growth & development and child care 5.75, various kinds of therapy for health care 5.7%, sexual life 5.4% and exercise 4.7%. 4. The number of items of contents by informer was medical doctor 215(49%), lay person's case report or report of a struggle against a disease 12.3%, relevant organization of a related story(eg. family therapy research institute, physical therapist's or teacher's) 11.2%, and the contents of existing books or lecture 8.9%. Among those contents, only the one case from nurse or Korean nurses association as informer was founded, which is related to "skinship child care." In conclusion, this finding showed that women's magazine took a role as a important resource providing informations of health to women. it provides a challenge to the health professionals to have concerns on women's needs, and the content, source, and accuracy of the health related information and take part in the process producing information through such as screening and examining so as to give accurate information to women. Then women's magazine can take a role as a major resource for maintaining and promoting women's health. Finally, nurses's, who are professional health care providers, important and active role as informers toward the lay persons, especially for the women who are non-professional care givers at the family unit should be stressed. More active and continual monitoring and analyzing the contents related health in the mass media including magazine and Internet network in detail, and participating in establishing the system of adequate and precise information for women and lay persons from the nursing profession are required absolutely.

    Nutrient Intakes of First Generation Korean-American in Hawaii

    • To evaluate nutrient intakes of the first generation Korean -Americans in Hawaii, a dietary survey was conducted using a food frquency questionaire which included 139 food items most often consumed among Korean foods and American foods. The questionnaire surveyed 157 first generation Korean-Americans living in Hawaii. The 66.7~81.1% of first generation Korean-Americans in Hawaii were of healthy weight. The mean percentages of calories obtained from their dietary analyses were 61% carbohydrate, 23% fat and 16% protein. The calorie distribution of their diet appeared to be similiar between older women and older men, however it was seen that men consumed a higher percent of calories from fat than women among younger subjects. The mean dietary intakes for first generation Korean-Americans exceeded recommended intakes for protein, thiamin, niacin , vitamin A, vitamin C, folacin , phosphorus and iron , but the intakes of energy, riboflavin, vitamin B6 ,vitamin E, calcium and zinc were lower than the recommended dietary allowance for Americans. Compared with other groups based on age and gender , younger men had significantly(p<0.05) higher intakes of riboflavin, phosohrous, iron and zinc, and lower intake of folacin. Older subjects consumed significantly (p<0.05) less protein, riboflavin, vitamin B6 and zinc than did younger subjects, and most of the first generation Korean-Americans in Hawaii consumed adequate levels of saturated fatty acid . The ratio , however, of polyunsaturated fatty acid to saturated fatty acid in the diet of younger men was about 0.61, much lower than the recommeded ration of 1.0 and also was significantly (p<0.05) lower than that of other subjects. Moreover, cholesterol intakes of younger men were close th the maximum recommeded level of 300mg/day.

    홍고추를 첨가한 수제 소시지의 품질특성 (Quality Characteristics of Homemade-Sausage by the Addition of Red Pepper)

    • Meat products have become prevalent in people's diet, and sausages, with the Korean diet getting more westernized in modern times. In particular, emerged as one of the favorite and the most consumed food products in Korea. In order to attain the best recipe to maximize the sausage's sensual taste, we have attempted to experiment and to analyze the differences in characteristic tastes of the sausages with varying increments of crushed red pepper of 0%, 2.5%, 5,%, 7.5%, and 10%. The followings are our findings from our experiment. As the result shows that red pepper, instead of nitrite, added sausage has twice more red chromaticity than those not added, sausage can be colored in red solely with natural materials when sold in the market. pH and moisture decreased as more red pepper was added, it did not show large difference. Texture results showed that the original sausage became harder and its viscosity decreased as more red pepper was added. Cohesion appeared to be similar and red pepper added sausage was munchier and more flexible. In the results of sensory test, 5% of red pepper added sausage showed the highest score but did not have any significant difference. For each items, red pepper added sausage got higher scores and by supplementing it would be seen as a useful additive in developing natural color sausages.

    Trophic position and diet shift based on the body size of Coreoperca kawamebari (Temminck & Schlegel, 1843)

    • Background: Fish body size is a major determinant of freshwater trophic interactions, yet only a few studies have explored the relationship between the fish body size and trophic interactions in river upstream. In this study, we investigated the relationship between the body size and trophic position (TP) of Coreoperca kawamebari (Temminck & Schlegel, 1843) in an upstream of the Geum River. Results: A stable isotope analysis (based on δ15N) was used to determine the TP based on the body size of C. kawamebari. The regression analysis (n = 33, f = 63.840, r2 = 0.68) clearly showed the relationship between the body length and TP of C. kawamebari. The TP of C. kawamebari was clearly divided by body size into the following classes: individuals of size < 10 cm that feed on insects and individuals of size > 10 cm feed on juvenile fish. This selective feeding is an evolutionarily selective tendency to maximize energy intake per unit time. Furthermore, the diet shift of C. kawamebari was led by different spatial distributions. The littoral zone was occupied by individuals of size < 10 cm, and those of size > 10 cm were mainly in the central zone. The littoral zone can be assumed to be enriched with food items such as ephemeropterans and dipterans. Conclusion: The TP of C. kawamebari, as a carnivorous predator, will have a strong influence on biotic interactions in the upstream area of the Geum River, which can lead to food web implication.

    총식이조사를 위한 식품의 소비형태 및 식품섭취량 조사 연구 (Study on Food Intake and Food Consumption Pattern of Adults as a Part of Total Diet Study)

    • A dietary intake survey in 2 major city area was conducted as a part of the study which determined the level of exposure of people to harmful substances in foodstuff. A total of 800 randomly selected men and women aged 20-49 yr and living in the cities of Seoul and Taegu were invited to participate in the survey. All subjects were interviewed by trained dietitians to answer for demorgraphic characteristics and dietary intake for 1 day by 24hr recall method, and asked to record what day ate for following 2 more days by themselves. Results were analyzed and presented for the amount and frequency of food intake by area, sex body weight. Food consumed most by adults resifing in these 2 city area was rice and followed by kimchi in the amount of 225.7g/persn/day and 85.0g/person/day, respectively. In the list of foods consumed most frequently, items used for condiments were included in addition to rice and kimchi. And the total daily intake of food per person was summed up to be 1, 534g for men and 1, 304g for women. Considerable part of this sexual difference in total intake was originated from the difference in beverage consumption including alcoholic beverages and the higher intake of certain foodstuff due to higher body weight of men. Intake data were presented din terms of per capita and per kg body weight, and compared among adults in different categories of body weight, also. The data gathered here, food intake by individuals, reflect our own dietary culture in terms of food assortment and relative contribution of each food item to total food intake include the consumption of "extreme" eaters might be found useful also especially for the sake of food safety such as risk assessment using ADI and PTWI for contaminants in the food supply.od supply.
