Development and Evaluation of the Educational Program for South Korean Middle School Students in Preparation for Reunification on North Korean Family Living Culture (중학생을 위한 통일대비 가정생활문화교육 프로그램 개발과 평가)

  • This study aimed at developing an educational program for South Korean adolescents on North Korean family living culture so that the students become familiar with the values and everyday lifestyles of North Korea. Understanding of North Korean culture is considered important as a foundation for social integration in prospect of future reunification. The contents of the program were developed based on the analysis of North Korean defectors' interviews and review of the literature and media reports on North Korean family culture. The program consists of 12 units of 40-minute sessions with the following topics: economy and consumption, leisure activities, family relationships, dating and spouse choices, fashion changes, clothing acquisition and care, food choices and local diets, dietary problems, housing, and neighborhood. The program was implemented between December 21 and 30, 2015 in a middle school located in Seoul. This program is expected to be useful in preparing the students as future leaders to create harmonious family living culture in the reunified Korea.

  • Embryonic stem cell classically cultured on feeder layer with FBS contained ES medium. Feeder-free mouse ES cell culture systems are essential to avoid the possible contamination of nonES cells. First we determined the difference between ES cell and MEF by Oct4 population. We demonstrate to culture and to induce differentiation on feeder free condition using a commercially available mouse ES cell lines.

  • Lately, cities have been trying to build a certain brand by using its identity and culture in public designs. Cities are using its public design to show its cultural identity and to differentiate itself from other cities so it is playing a significant role in establishing a city's overall image. Public uniform is used to reflect the symbolism and identity of the city, an image of the city's culture and is used as a means of communication for specialization. Thus, the purpose of this study is to develop public uniform designs to build and strengthen the brand of Gwangju as Asia cultural hub city. Research presents a review of the literature including concept and type of a cultural city, correlativity between public design and urban competitiveness, domestic and foreign culture city branding case: focusing on Gwangju which is a cultural hub city in Asia, and then study sets up the development direction and motifs of uniform designs, and uniforms are designed by making use of the textile with symbols and logos, colors, and architectural motifs of Asian Culture Complex. Development ranges of uniforms were limited to Cultural Tourism Narrators and the Asian Culture Complex Advertisements staff uniforms, within the region of cultural tourism. Textile design, illustration, uniform simulation using Adobe Photoshop 7.0 and Adobe Illustrator CS 3 program is presented.

Acculturative Stresses and Adjustment elements of Chinese students' studying in Korea (중국인 유학생의 대학생활문화에서의 스트레스와 적응)

  • The purpose of this study is to identify stresses and adjustment elements of Chinese students in Korea. The data analysis was conducted by qualitative method based on interviews with sixteen Chinese students as a focus group by the help of two interpreters. The results were as follows: first, stresses of Chinese students were from 'cultural difference', 'language', and 'financial', 'educational' and 'psychological stress', and 'university culture in Korea'. Those categories were divided into several sub categories. Second, ten helpful elements Chinese students could adapt themselves to Korean university life were such as 'Help of Korean professor and friends', 'Chinese friends' help', 'English-oriented lecture', 'Cultural affinity to Korea', 'Fluency in Korean language', 'Integration to Korean culture', 'Pride in Chinese culture', 'Individual effort', 'Satisfaction with educational environment', 'Perception of self-growth'.

Quality Characteristics of Shrimp Flour Added Dumpling Shell (새우 분말을 첨가한 만두피의 품질 특성)

  • The purpose of this study was to investigate the effect of shrimp flour on quality characteristics of dumpling shell. Dumpling shell samples were prepared with wheat flour along with the addition of different amount of shrimp flour, followed by functional measurements and sensory evaluations. According to amylograph data, the composite shrimp flour/wheat flour samples had increased gelatinization temperature with increasing shrimp flour content, while initial viscosity at $95^{\circ}C$, viscosity at $95^{\circ}C$ after 15 minutes, and maximum viscosity were reduced. In terms of color values, L value decreased, but a and b values increased with increasing shrimp flour content. Furthermore, the addition of shrimp flour increased hardness and decreased chewiness in all samples. Overall, sensory evaluations proved that dumpling shell with 10% added shrimp flour was preferred over the other samples.

Monitoring the Ecology of Bacillus During Daqu Incubation, a Fermentation Starter, Using Culture-Dependent and Culture-Independent Methods

  • Daqu, a traditional fermentation starter, has been used to produce attractively flavored foods such as vinegar and Chinese liquor for thousands of years. Although Bacillus spp. are one of the dominant microorganisms in Daqu, more precise information is needed to reveal why and how Bacillus became dominant in Daqu, and next, to assess the impact of Bacillus sp. on Daqu and its derived products. We combined culture-dependent and culture-independent methods to study the ecology of Bacillus during Daqu incubation. Throughout the incubation, 67 presumptive Bacillus spp. isolates were obtained, 52 of which were confirmed by 16S rDNA sequencing. The identified organisms belonged to 8 Bacillus species: B. licheniformis, B. subtilis, B. amyloliquefaciens, B. cereus, B. circulans, B. megaterium, B. pumilus, and B. anthracis. A primer set specific for Bacillus and related genera was used in a selective PCR study, followed by a nested DGGE PCR targeting the V9 region of the 16S rDNA. Species identified from the PCR-DGGE fingerprints were related to B. licheniformis, B. subtilis, B. amyloliquefaciens, B. pumilus, B. benzoevorans, and B. foraminis. The predominant species was found to be B. licheniformis. Certain B. licheniformis strains exhibited potent antimicrobial activities. The greatest species diversity occurred at the Liangmei stage of Daqu incubation. To date, we lack sufficient knowledge of Bacillus distribution in Daqu. Elucidating the ecology of Bacillus during Daqu incubation would enable the impact of Bacillus on Daqu to be accessed, and the quality and stabilization of Daqu-derived products to be optimized.
