특급호텔 조리직 종사원의 갈등이 이직에 미치는 영향 (The Effect of the Conflict of Kitchen Employees in Deluxe Hotel on Turnover)

  • This study aims at inquiring into the effect of kitchen employees' conflict factors in deluxe hotels on turnover to present a improvement plan. For this, it made a survey of 292 kitchen employees in deluxe hotels from December 1 to 10, 2006. The results were as follows: First, it showed that the service welfare conflict had a positive effect on the compensational turnover, and high compensational turnover was caused by high conflict of welfare or benefits. Second, it showed that the cooking job conflict had a positive effect on the developmental turnover. Third, it showed that the colleague relationship conflict had a positive effect on the developmental turnover. Consequently, each factor of compensational and developmental turnover had significantly positive correlation to the cooking job conflict, service welfare conflict and colleague relationship conflict. Considering the above results, the employees' turnover produced results that are contrary to negative and positive effects traditionally discussed various effects or results on organization.

  • The main objective of this study was to investigate how Jongga and its cuisine is perceived by Koreans and foreign tourists and develop Jongga culinary culture for culinary tourism. Chungjae Jongga was chosen since it is one of the most famous Jongga in South Korea. In-depth personal interviews were performed with Koreans and foreign tourists. Interviews were performed to provide deeper insights into comments and subject matters. Most tourists selected "having lunch at Jongga" as the most distinctive part of the tour. To develop the experience at Jongga as a culinary destination, questionnaires were created to study eight areas: satisfaction, expectations as a tourist at Jongga, most impressive part of tour, preference of food serving style, length of stay, price range, things to be improved, and role of food guide. This study will help Jongga to improve food as a culinary tourist's attraction and ultimately heighten the value of Jongga. Perceptions toward Jongga and its cuisine were generally positive, but the quality of service and lack of organization in establishments were perceived to be negative factors.

조직의 서비스지향성이 종업원 직무만족과 조직성과에 미치는 영향: 특급호텔 뷔페레스토랑 주방을 중심으로 (A Study on the Effect of Organizational Service Orientation on Job Satisfaction and Organization Performance - A Case of Buffet Restaurant Kitchen Employees in Deluxe Hotels -)

  • 본 연구는 특급호텔 뷔페레스토랑 주방 조직의 서비스지향성이 종업원의 직무만족과 조직성과에 미치는 영향관계를 실증적으로 검증하여 주방종사자의 효과적인 관리에 대한 시사점을 제공하고자 하였다. 이를 위해 조직의 서비스지향성(서비스리더십, 서비스시스템, 인적자원관리, 서비스 접점)과 종업원의 직무만족 및 영업장의 조직성과에 대한 개념과 이론적 배경을 중심으로 각각의 구성개념에 대한 요인을 도출하여 영향관계를 분석하였다. 분석결과, 서비스지향성의 서비스리더십과 서비스시스템이 종업원의 직무만족에 미치나 영업장의 조직성과에는 직접적이지 않고, 대신 인적자원관리가 조직성과에 직접적이라고 할 수 있다. 또한 종업원의 만족이 조직성과에 직접적인 관계에 있기 때문에 서비스지향성을 향상시키면서 종업원의 직무만족을 향상시키기 위해서는 서비스리더십과 서비스시스템이 우선되어야 한다고 할 수 있다. 그리고 서비스지향성을 향상시키면서 직접적인 레스토랑의 조직성과를 도출하기 위해서는 인적자원관리에 의한 서비스훈련과 서비스보상이 효과적이라고 할 수 있다. 본 연구 결과는 조직의 서비스 지향성이 서비스기업의 우수한 고객가치를 창조하는 요소로 인식되고 있는 가운데, 서비스지향성의 관리적 방향성을 제안하였다는데 의의가 있다.

호텔조리사의 조직문화유형과 혁신행동 관계에 라포의 매개효과 (The Mediating Effect of Rapport on the Relationship between Organizational Culture Type and Innovative Behavior of Hotel Chefs)

  • The purpose of this study was to examine the mediating effects of rapport on the relationship between type of organizational culture and innovative behavior of hotel chefs. In order to accomplish the research purpose, data were collected from 202 chefs working at five-star hotels located in Gwangju and Jeonnam areas, and SPSS 22.0 Program was used to conduct frequency analysis, reliability analysis, exploratory factor analysis, regression analysis and mediation effect analysis. The results of the study were as follows. Firstly, it was found that innovative behaviors of hotel chefs are significantly affected by three types of organizational culture: rational culture, consensual culture, and developmental culture. Secondly, it was found that rational and consensual culture have significant effect on rapport. Thirdly, it was found that better-formed rapport in hotel chefs significantly remarkably influences their innovative behavior. Fourthly, the study results revealed that rapport has a mediating effect on the relationship between type of organizational culture and innovative behavior of hotel chefs. Thus, in order to induce voluntary innovative behaviors from building rapport in the hotel organization, it is necessary to develop and implement effective strategies which will form a work environment where chefs can freely engage in mutual exchanges and build trust with one another.

  • The purpose of this study was to explore the effects of job attitudes from the professional restaurant service organization on customer orientation. Using a self-administered questionnaire, data was collected from service employees of professional restaurants. Survey was conducted 20 days from October 11, 2015 to October 30, 2015. Total of 200 questionnaire were distributed and 185 samples were collected and used in the data analysis after excluding 15 unfaithfulness answers. SPSS 18.0 statistical program were used to analyze samples. The result indicated significant and positive impacts between job attitude and its sub-factors(i.e., job satisfaction, organizational commitment) on customer orientation.

  • In the hotel industry, there are the production and consumption of services at the same time, considering direct contact between employees and customers. In this respect, this study was conducted based on more practical factors to grasp employees' feelings and conflicts. The results of this research are as follows. First, individual conflicts among hotel banquet employees influence devotion to the organization which has a direct effect on performance of management. Second, such devotion is closely correlated with the factors of the performance of management. Finally, managing employees' conflicts is the key factor to promote the performance of management. Under these circumstances, there should be more concern in solving problems among employees and special pro-grams for promoting job satisfaction and devotion which bring about more profits as well as a sense of achievement.

  • The purpose of this study was to find out the efficiency of control plan for the productivity at the deluxe hotel. To analyze the data, 5-point measure, self entry, SPSS, frequency analysis, difference analysis, many fold regression analysis. The results of this study could be explained as follow: change of occupation rate, reflect to employees, lack of stability a state of mind condition, reflected mental factor and stability of organization, and compared to the job satisfaction and inclination of a change of occupation.

  • 본 연구는 조리 실기 교육에 있어서 어떤 교육방법이 가장 효과적인지 알아보고 실험 대상에 따라 어떤 학습방법이 효과적인지 알아보고자 차이를 분석하였다. 조리 관련 학과를 전공하고 있는 일부 4년제 대학생을 대상으로 1,2,3,4,학년과 남녀를 비율을 생각하여 설문지를 배부하였으며 조리 실습 교육을 향상시키고자 외부 프로그램과 현재 수업의 만족도와 희망도를 알아보고 추가적으로 더 학습 하여야야할 요인은 무엇 인지 알아보고자 하였다. 고학년으로 갈수록 이론의 중요성을 인식하고 있었고 현재 진행되고 있는 수업은 기능사 중심 이였으며 학생들은 단지 먹기 위한 조리가 아니라 예술로서 조리에 대한 접근을 하고 있어 창작요리나 융합요리에 대한 관심이 증가 하고 있었다. 수업 시 평가는 전반적인 부분의 고른 평가를 원하고 있어 평가에 대한 기준을 세울 필요성이 있으며 세계화의 시대로 인하여 해외 취업에 대한 관심과 조리의 세계화를 위해서 외국어 분야에 대한 공부의 필요성을 느끼고 있었다. 이에 본 연구에서는 조리교육서비스 현재 상태를 알아보고, 이를 통하여 대학 조리 실습교육 품질을 결정하는 요인을 도출해 보았으며, 20개의 품질속성에 대해 요인분석을 이용하여 해석한 결과, 이론교육만족도, 실기교육만족도, 평가만족도, 외부교육만족도를 도출하였다.

  • 본 연구는 외식산업에서 근무하고 있는 조리사를 대상으로 개인-조직 적합성과 개인-직무 적합성이 직업 몰입, 조직 몰입, 그리고 이직 의도에 미치는 영향을 조사하는 데 그 목적이 있다. 본 조사에서는 서울, 경기 지역 외식업 근무 조리사를 대상으로 총 210부의 자료를 실증분석에 사용하였다. 구조방정식 모형을 이용하여 AMOS 분석을 실시한 결과, 개인-조직, 개인-직무 적합성은 직업 몰입과 조직 몰입에 정적인 영향을 미치고 있는 것으로 확인되었다. 그리고 조리사들의 직업 몰입은 이직 의도에 정적인 영향을 미치는 것으로 나타났으나, 조리사들의 조직 몰입은 아직 의도에 부적인 영향을 마치는 것으로 나타났다. 본 연구는 조리사들의 이직 의도를 밝히는데 직업 몰입과 조직 몰입의 매개 역할을 이해하고, 선행변수로 개인-직무 적합성, 개인-조직 적합성이 영향을 준다는 결과를 밝힘으로써 이직 의도를 원인을 본질적으로 이해하는데 기여하였다는 점을 들 수 있다.
