한국문화에 기반한 호텔인적자원관리와 직원 결과(Employee Outcomes)의 관계에 관한 연구 (A Study on the Relationship between HRM Practices which is based on the Korean Culture and Employee Outcomes in the Korean Hotel Industry)

  • Most countries have their own culture that presents different types of behaviour. The employees' specific ways of working, according to each country, influence its organisation, thus cultural differences have become an essential issue in operating management. Therefore, this study explored how the different cultures based on Hofstede's paradigm interact within the specific Korean context. This study examined how cultural related HRM practices were enacted in the Korean hotel industry, how the frameworks of Hofstede's model impact the employee outcomes, including the concept of organisational justice. This study followed a quantitative approach which relied on a positivist paradigm to evaluate the different HRM practices at hotel workplaces with the view of employees. This study gathered a survey on 601 hotel employees in the deluxe sector. The analysis of quantitative data was undertaken using SPSS version 23.0 software and AMOS 23.0 to achieve the research aim for the study. This study contributes new findings to the research literature. The results of this study showed how Confucianism also plays a predominant role in understanding Korean culture, more than the Hofstede's original four dimensions of culture.

호텔 컨벤션 종사원의 변혁적 리더십이 에피커시와 조직 시민 행동에 미치는 영향 - 서울 지역 특1급 호텔을 중심으로 - (The Effect of Transformational Leadership on the Efficacy and Organizational Citizenship Behavior of Hotel Convention Employees)

  • This study was designed to investigate the results of a performance analysis on the effect of transformational leadership on the efficacy of organizational citizenship behavior of hotel convention employees. This study referenced the relevant literature, proposed hypotheses to solve the main issues of inquiry, and made a corresponding empirical analysis. For the empirical analysis, a questionnaire was given to a total of 149 kitchen and food & beverage banquet employees at a Seoul area deluxe hotel convention. The model was tested using SPSS 12.0 and AMOS 5.0 on a sample of 149 surveys, of which 71% constituted a usable response rate. The results of the empirical analysis show the following. 1) Charisma and vision have a significant effect on group efficacy. 2) Individual consideration and intellectual stimulation have significant influence on self efficacy. 3) Individual consideration and intellectual stimulation have significant influence on group efficacy. 4) Altruism and conscientiousness have significant influence on group efficacy. 5) Sportsmanship and civic virtue have significant influence on self efficacy.

호텔 베이커리 종사원의 직무, 조직, 작업환경이 이직의도에 미치는 영향에 관한 연구 (A Study on Duty and System and Work Environment of the Turnover Factors among Bakery Employees at Tourist Hotel)

  • The purpose of this study was to examine what caused bakery employees at tourist hotel to leave their job. It's basically meant to lay the foundation for increasing personnel management efficiency and reducing turnover rate, as an attempt to prevent workers from quiting their jobs would be a successful way to take advantage of human resources more efficiently. Both theoretical and experimental approaches were utilized to serve the purpose of this study. First, concerning salaries, their turnover intention was under the influence of whether they were properly paid or gained a sufficient living. Second, as for environmental factors, their turnover intention was affected by performance appraisal and interpersonal trust with colleagues. Third, regarding job-related factors, their turnover intention was impacted by whether their job was clearly defined, how much they were satisfied with their job and whether their posts were suitable. Forth, the change of job was subjected to the influence of the desire for job in another region, job in another company and another kind of job. And there should be a clear distinction between sales and other works, and they should carefully be treated so that they could find their job more satisfactory.

로컬호텔과 체인호텔 종사자의 직무만족, 이직의도, 조직몰입에 관한 연구 (The Study on Job Satisfaction, Turnover Intention and Organization Commitment of Employees in Domestic Independent Hotel and International Chain Hotels)

  • The purpose of this study was to analyze the job satisfaction, turnover intention and organization commitment level of hotel employees using Herzberg's motivation hygiene theory. This study used SPSS 20.0 and AMOS 20.0 to conduct frequency analysis, reliability analysis, confirmatory factor analysis, path analysis and chi-square difference test. The results of study, first of all, Herzberg's, theory of hygiene are influenced by satisfaction of employees, organization commitment and turnover intention. It will be strongly needed to management of compensation, well-organized policy of human resources system. Lastly, in Hotel business, It showed differences having a strong influence on local employee and chain hotel employee according to method of Hotel management. In conclusion, in the hospitality industry, it is desirable to carry out on their own ways of vision and purpose each corporations rather than following regimental rules.

호텔종사자의 직장 내에서의 스트레스에 관한 연구 (A Study on the Job Stress of the Hotel Employees)

  • This study is of an analysis of the kinds of influences on the subordinate variables through the adjusting variables by the independent variables which serve as the perception factor of job stress. also This study, with taking the workers for the hotel employees who are in the room, food & beverage and cook, was carried out so as to analyze deeply and throughly the stress of work they experience in doing their job and the tension incited from this stress and the strategy used for meeting this stress to grope for raising plan for the degree of satisfaction with their job of the workers for the hotel. In order for, this study ran paralled with literature study and research study, taking 615 workers who are now working in hotel. Job stress is easily negligible in hotel business not only because it is hard to identify and measure its concrete entity on account of its intangible characteristic but also because it is impossible to check physically the relationship with each direct behavior. If job stress continue, however, it can cause neglect of duty, change of occupation, deterioration of service quality and eventually aggravate the cost of a hotel business and decrease the hotel sales. Consequently, it is highly necessary to increase job satisfaction by identifying systematically and eliminating the stress factor of hotel employees in order to accomplish particularly experience unique job stress in the course of contact since they should provide the customer with their services.

외식 업체 종사자들의 전공 특성에 따른 직무 만족도 비교 (Comparison of Job Satisfaction of Employees by Major in Foodservice Industry)

  • Employee turnover and job satisfaction are the main concerns of Foodservice indusryy because of a high dependence on human resources. This study was carried out to find out the differences of job satisfaction of employees in Foodservice industry and identify the effects of job satisfaction on turnover intention by major at the college or university. In comparison of job satisfaction of employees by 3 groups of food-related majored, tourism-business majored, and other majored, there were no significant differences among groups. But in the correlation between overall and 6 factors of job satisfaction, there were all significant correlations in food-related majored and tourism-business majored employees. Employees in Foodservice industry were satisfied by different demographic characteristics according to what they majored at college. Statistically significant variables that affect to the job satisfaction were gender, employment status, length of employment, monthly income, working hour per week in the food-related majored employees and employment status in the tourism-business majored employees. Finally, among job satisfaction factors, intention to quit was negatively affected by supervision in food-related majored and tourism-business majored employees, but positively affected by job environment only in tourism-business majored employees.

학교급식 종사자의 로하스(LOHAS)수준이 식재료 구매태도 및 급식품질에 미치는 영향 연구 (Evaluation of the Effects on Food Service Quality and Food Purchasing Attitudes According to the LOHAS level of School Foodservice Employees)

  • This study was conducted to evaluate the effects of the LOHAS index value of school food service employees on the purchase of food materials and foodservice quality. The subjects consisted of 566 foodservice employees. The findings were as follows. (1) The foodservice employee's LOHAS index fell within that of a NOMADICS group with an average of 72.18 points out of 100 points. (2) When the age, working experience and LOHAS index of the foodservice employees was high, the necessity, view, interest and recognition of LOHAS introduction for the improvement of the foodservice environment was high. (3) The amount of environmentally-friendly food materials purchased by foodservice employees was high, when they had a high LOHAS index. (4) High foodservice quality management items of foodservice employees were 'sanitation management' (3.87 points) and 'human resource management' (3.84 points), whereas 'menu management' (3.57 points) and 'food material and inspection management' (3.61 points) scored low. (5) The LOHAS index of foodservice employees has a significant impact on the purchase intention of environmentally-friendly food materials in LOHAS and NOMADICS groups. (6) This study confirmed that a higher LOHAS index of foodservice employees was associated with higher foodservice quality management behavior, which leads to an improved quality of foodservice.

변혁적 리더십이 호텔 식음료 종사원의 직무만족과 고객지향성에 미치는 영향 (The Influence of Transformational Leadership on Job Satisfaction and Customer Orientation in Hotel F&B Employees)

  • 본 연구는 호텔 관리자의 변혁적 리더십이 식음료 서비스 종사원의 직무만족과 고객지향성에 미치는 효과를 실증적으로 규명하고자 하였다. 이러한 목적을 달성하기 위하여 문헌연구를 통해 가설을 도출하였으며, 서울 지역 특1급 호텔 식음료 서비스 종사원을 대상으로 설문지 375부를 배부하여 미회수 30부, 불성실한 응답 23부를 제외한 총 322부를 최종분석에 사용하였다. 분석은 SPSS 14.0 통계패키지를 이용하였으며, 연구결과를 요약하면 다음과 같다. 첫째, 변혁적 리더십이 직무만족에 영향을 미칠 것이라는 가설 1과 세부가설 1-1, 1-2, 1-3을 검증한 결과 직무만족에 유의적인 수준에서 정(+)의 영향을 미치는 것으로 나타났다. 그리고 변혁적 리더십이 고객지향성에 영향을 미칠 것이라는 가설 2와 2-1, 2-2, 2-3을 검증한 결과 가설 2와 세부가설 2-2는 유의적인 수준에서 정(+)의 영향을 미치는 것으로 나타났으나, 세부가설 2-1과 2-3은 유의성이 타나지 않았다. 둘째, 직무만족이 고객지향성에 영향을 미칠 것이라는 가설 3을 검증한 결과 유의적인 수준에서 정(+)의 영향을 미치는 것으로 나타났다. 이러한 연구결과를 바탕으로 본 연구는 호텔 관리자의 변혁적 리더십과 종사원들의 직무만족, 고객지향성에 관한 시사점을 제안하였다.

호텔주방의 HACCP 시스템적용 유무에 따른 조리종사원의 직무스트레스, 만족, 몰입의 비교 분석 (A Comparative Study of Job Stress, Satisfaction and Commitment of Cooking Employees in Hotel Kitchens with and without HACCP Systems)

  • Objectives: This study was conducted to identify differences in job stress, satisfaction and commitment of cooking employees working in hotel kitchens with and without HACCP systems. Methods: Culinary employees of 12 five-star hotels were surveyed and 504 valid data were used for SPSS analysis. Sub factors of working environment factors (job stress, job satisfaction, and job commitment) were examined for analysis. Results: The results showed that hotels that implemented the HACCP system had significantly higher values for the five sub factors of employee job stress (job demand, relationship conflict, organizational system, lack of job autonomy, and job instability; p<0.001). For the sub factors of job satisfaction (internal and external satisfaction) statistic showed a statistically significant value in hotels that did not implement the HACCP system (p<0.001). Job attachment and job importance, which are sub factors of job commitment, showed no difference in relation to the implementation of HACCP system, and job responsibility showed a higher p-value in hotels that did not implement HACCP (p<0.05). Conclusions: The results of the study indicate that culinary employees working at venues with HACCP systems have more job related stress, lower job satisfaction and partially less job commitment. Based on this outcome, venues that have already implemented or are planning to implement HACCP systems should consider the implications regarding their management of employees. Managerial policies that enhance autonomy, job stability, achievement, self-development, promotion, and compensation should also be implemented. Finally, meticulous attention and high investments into the work environment and human resources are necessary.

셀프리더십을 매개로 한 서번트 리더십이 직무 태도에 미치는 영향 (The Impact of Servant Leadership Mediated through Self Leadership on Job Attitude - Centered on Hotel Restaurant Employees -)

  • 호텔 경영인들은 끊임없이 직원들의 능력과 지속성을 상승시킬 수 있는 리더십 유형을 찾고자 하며, 직무 태도를 형성하고 영항을 주는 속성에 관한 관심을 가지고 있다. 이에 본 연구는 직원들의 셀프 리더십을 매개로 한 상사의 서번트 리더십이 직무 태도(직무 만족과 조직 몰입)에 미치는 영향을 연구하였다. 호텔 레스토랑 근무자를 대상으로 하여, 서울시 특급 호텔 15개를 선별하여 설문하였다. 297명의응답자 중성실한 272개의설문이 실증 분석에 이용되었으며, 수집된 자료는 SPSS와 AMOS를 이용해 구조모형방정식을 통해 분석되었다. 결론에 의하면, 상사의 서번트 리더십은 직원들의 셀프 리더십에 긍정적인 영향을 주었다. 아울러, 셀프 리더십은 직무 만족에는 직접적인 영향을 주었으나, 조직 몰입에는 직접적인 영향을 주지 않았다. 마지막으로, 서번트 리더십은 직무 만족에는 직접적인 영향을 주었으나, 조직몰입에는 셀프 리더십을 매개로 할 때 긍정적인 영향을 주는 것으로 나타났다. 이 연구는 호텔 레스토랑 전문가들에게 셀프 리더십을 매개로 한 서번트 리더십이 직무 태도에 영향을 주는 총체적 모델을 제시하여 호텔 레스토랑 직원들을 대상으로 한 셀프 리더십 강화 필요성에 대한 시사점을 제시한다.
