This study was carried out to investigate the antioxidative and anti-inflammatory activity of crude anthocyanin compounds extracted from black soybean. The crude anthocyanin compounds were extracted with 80% methanol and concentrated to powder. The most abundant compound isolated from the extract was C3G(cyanidin-3-glucoside). The superoxide dismutase (SOD) assay was conducted to assess the antioxidative activity of the crude extract. SOD, which catalyzes the dismutation of the superoxide anion into hydrogen peroxide and molecular oxygen, is one of the most important antioxidative enzymes. The black soybean anthocyanin extracts inhibited more than 90% of the superoxide radical at a concentration of 0.1% and 100% at a concentration of 0.5%, indicating that this extract displayed excellent antioxidative activity. To assess the anti-inflammatory activity of the extract, a NO(Nitric oxide) production assay in RAW 264.7 cells was performed. NO is an important physiological messenger and effector molecule in many biological systems, including immunological, neuronal and cardiovascular tissues. In this assay, the anthocyanin extracts showed a high anti-inflammatory potential, where the inhibitory potency for NO production was similar to the positive control, particularly for EGCG(epigallocatechin-3-gallate), which is known to have excellent anti-inflammatory activity. Thus, it can be concluded that the anthocyanin extracts from black soybean have distinctive pharmaceutical activities and may be used as an excellent source materials to supplement the health benefits of various food products.
The effects of temperature and pH on color deterioration of anthocyanin in Schizandra fruit (Schizandra chinensis fructus) were determined with temperature range of $80{\sim}100^{\circ}C$ and pH range of $2.0{\sim}5.0$. Browning index was used as an index of color deterioration of crude anthocyanin extract from Schizandra fruit. As pH of crude anthocyanin extract was increased, color deterioration was accelerated, showing pH-dependency of thermal stability of anthocyanin extract from Schizandra fruit. Anthocyanin degradation could be modeled as a second-order rate reaction, with rate of $3.2{\times}10^{-3}\;h^{-1}\;(pH\;2.0){\sim}4.1{\times}10^{-3}\;h^{-1}\;(pH\;5.0)\;at\;100^{\circ}C$. Temperature dependence of deterioration was described by the Arrhenius relationship. Activation energies for pH $2.0{\sim}5.0$ ranged from $24.87{\sim}42.54\;kJ/mol^{-1}$.
Cholangiocarcinoma (CCA) is an uncommon adenocarcinoma which arises from the epithelial cells of the bile ducts. The aim of the study was to investigate the cytotoxicity, toxicity, and anticancer activity of a crude ethanolic extract of ginger (Zingiber officinale Roscoe) against CCA. Cytotoxic activity against a CCA cell line (CL-6) was assessed by calcein-AM and Hoechst 33342 assays and anti-oxidant activity was evaluated using the DPPH assay. Investigation of apoptotic activity was performed by DNA fragmentation assay and induction of genes that may be involved in the resistance of CCA to anticancer drugs (MDR1, MRP1, MRP2, and MRP3) was examined by real-time PCR. To investigate anti-CCA activity in vivo, a total of 80 OV and nitrosamine (OV/DMN)-induced CCA hamsters were fed with the ginger extract at doses of 1000, 3000, and 5000 mg/kg body weight daily or every alternate day for 30 days. Control groups consisting of 10 hamsters for each group were fed with 5-fluorouracil (positive control) or distilled water (untreated control). Median $IC_{50}$ (concentration that inhibits cell growth by 50%) values for cytotoxicity and anti-oxidant activities of the crude ethanolic extract of ginger were 10.95, 53.15, and $27.86{\mu}g/ml$, respectively. More than ten DNA fragments were visualized and up to 7-9 fold up-regulation of MDR1 and MRP3 genes was observed following exposure to the ethanolic extract of ginger. Acute and subacute toxicity tests indicated absence of any significant toxicity at the maximum dose of 5,000 mg/kg body weight given by intragastric gavage. The survival time and survival rate of the CCA-bearing hamsters were significantly prolonged compared to the control group (median of 54 vs 17 weeks). Results from these in vitro and in vivo studies thus indicate promising anticancer activity of the crude ethanolic extract of ginger against CCA with the absence of any significant toxicity. Moreover, MDR1 and MRP3 may be involved in conferring resistance of CCA to the ginger extract.
This study was carried out to investigate the quality characteristics of fermented milk containing Rhus verniciflua seed (RVS) extracts (0.0%, 0.1%, 0.3% and 0.5%) and antioxidant activity of RVS extracts. The proximate composition of RVS was moisture (4.76%), crude ash (1.40%), crude fat (5.33%) and crude protein (11.10%). A total polyphenol content of 70% ethanol extract of RVS ($554{\pm}2.64mg/g$) was higher than that of RVS water extract ($145{\pm}3.47mg/g$). 70% ethanol extract ($1103{\pm}6.42mg/g$) of RVS showed higher content in the total flavonoids ($37{\pm}2.30mg/g$) and activities on DPPH free radical scavenging (73.23%) and ABTS free radical scavenging (83.47%) when compared with water extracted of RVS. The quality characteristics, such as pH, titratable acidity, and the number of lactic acid producing bacteria were not remarkably different between the fermented milk samples subjected to treatments with and without the addition of RVS extracts.
It was carried out for development of natural antimicrobial on Scutellariae Radix by measuring the general nutritional composition and mineral contents. This study analyzed it with LC-MS to identify antimicrobial activity substance in the Scutellariae Radix extract, its content was analyzed using HPLC. The searching substance was examined antimicrobial activity by disk method. The approximate composition of Scutellariae Radix was $8.93\%$ of moisture, $4.13\%$ of crude ash, $15.30\%$ of crude protein, $3.71\%$ of crude fat, $67.93\%$ of carbohydrate, respectively. Scutellariae Radix was contained high contents of minerals such as K(12,050 mg/kg),. Mg(4,295 mg/kg), remarkably. It was identified that molecular weight 445' peak was baicalin, molecular weight 283' peak was wogonin and molecular weight 269' peak was baicalein on Scutellariae Radix extract Baicalin showed remarkable antimicrobial activity against V. parahaemolyticus and L monocytogenes when examined by disk method, which was estimated antimicrobial activity substance in the Scutellariae Radix extract. The content of baicalin was $0.75\%$(with D.W.) and $0.82\%$(with methanol) in the Scutellariae Radix extract using HPLC.

Cassia mimosoides var. nomame was grown at five seeding rates (10, 20, 30, 40 and 50 kg/ha) from March 31 to September 21, 1998 at Cheju to determine influence of seeding rate on agronomic characters, and forage yield and quality. Days to flowering increased from 126 to 129 days as seeding rate increased from 10 to 50 kg/ha. The plant height increased from 86 to 99 cm as seeding rate was increased from 10 to 30 kg/hac and then decreased to 93 cm at a rate of 50 kglha. With increasing seeding rate, stem diameter quadratically decreased and the number of branches and green leaves per plant linearly decreased but the number of withering leaves per plant linearly increased. As seeding rate increased &om 10 to 30 kg/ha, fresh forage, dry matter, crude protein, and total digestible nutrients (TDN) yield increased 'from 30.7 to 49.1, 7.5 to 12.2, 0.90 to 1.57 and 4.09 to 7.09 MTha, respectively, and then decreased with further increased seeding rates. Crude protein, ether extract, nitrogen free extract, and TDN wntent increased 12.1 to 14.2% 2.2 to 2.9%, 35.1 to 39.2%, 54.8 to 60.3% respectively, but crude fiber wntent decreased 39.8 .to 33.3% and crude ash declined 4.9 to 3.8% as seeding rate increased from 10 to 50 kgiha. The effects of slaughter age (28, 32, or 38 mon) on the proximate composition, collagen content, fatty acid composition, amino acid content, and mineral contents of horse leg bone (femur and tibia) extracts (HLBE) obtained from Jeju crossbred horses (n=14) in Korea. HLBE was extracted for 24 h with boiling water. At those ages, the respective proximate compositions of the HLBE were found as follows: 5.20-6.42% crude protein; fat 0.61-1.65% crude; and 0.10-0.22% crude ash. At 32 and 38 mon, the HLBE showed higher levels of both crude protein and collagen than at 28 mon. The major fatty acids of the horse leg bone extract powder (HLBP) were palmitic acid and oleic acid. Palmitoleic acid and the essential fatty acids were higher in the HLBP at 38 mon compared to that at 28 mon. Nearly all the amino acids were found at higher levels in the HLBP at 38 mon than at 28 mon, except histidine. The P, K, Zn, Se and Fe contents in the HLBP increased significantly with age. These results suggest that some nutrients in the HLBE increase with age, and that extracts from horses older than 32 mon would be more nutritious for human consumers.

Jeju Italian millet was grown at five planting densities(5$\times$5, 15$\times$15, 20$\times$20, 25cm) form May 13 to Aug. 14, 2000 at jeju island to determine influence of planting density on agronomic characters, forage yield and quality. Days to heading increased from 87 to 89 days as planting density was decreased. In 5$\times$5cm planting density plot, plant height was 185.4cm and it was gradually decreased as planting density was increased. So in 30$\times$30cm planting density plot, plant height was 173cm. As planting density increased, stem diameter, the number of nodes per plant, the umber of leaves, leaf width and SPAD reading values was increased, the longer leaf length as the broader planting density. Fresh forage yield increased from 29.99 to 55.01MT/ha, dry matter(DM) yield from 8.04 to 15.59MT/ha, crude protein(CP) yield from 0.78 to 2.26MT/ha and total digestible nutrients(TDN) yield from 3.65 to 7.93MT/ha as planting density was decreased. Crude protein content increased from 9.8 to 14.5% ether extract comtent from 1.4 to 1.9%, nitrogen free extract content from 38.4% to 38.9% and TDN content from 45.4 to 50.9%, but crude fiber content decreased from 34.5 to 30.1% and crude ash content from 9.1 to 8.0% as planting density was decreased.

In order to identify the growth characterization, the yield and chemical composition of Jeju barnyard grass (Echinochloa crusgalli var. fiurnentacea(Roxb) Wight) based on seeding date in Jeju region, seeding carried out the 10-day intervals from March 27 to September 30 in 2000, respectively. Plant height was 143.2 cm, showing the highest on seeding date, April 6 among that of any other seeding date. On the other hand, those of early and late seeding gradually decrease. Plant height was 119.2 an in May 16 seeding. The results of stem diameter, number of withering leaves, number of leaves and fresh weight per plant were similar to those of the plant heights. The yield of fresh, dry matter forage, crude protein and TDN found the highest on April 6 seeding, 63.5 MT/ha, 13.9 MTha, 1.1 MT/ha, and 7.6 MT/ha, respectively. In early and late seeding, the yield was gradually decreased. In seeding May 16, the yield found .38.2 MTIha in fresh forage, 6.2 MTha in dry matter forage, 0.7 MT/ha in crude protein and 3.7 MTha in TDN, respectively. According to delaying the seeding date, March 27 to May 16, the contents of crude protein (from 7.9 to 10.8%), ether extract (from 4.6 to 6.0%), nitrogen free extract (from 45.1 to 46.5%), and TDN (from 54.2 to 60.8%) were gradually increased, respectively. On the other hand, those of crude fiber (from 28.9 to 25.6%) and crud ash (from 13.5 to 11.2%) were decreased. These results showed that April 6 was the optimum seeding date with the sole object of feed production of Jeju barnyard grass under the environmental condition like as atmospheric phenomena and soil in Jeju region. Maca roots (Lepidium meyenii) are an important medicinal herb that have long been used by the Andes-indigenous peoples and South Americans. In Korea, recently, it has attracted attention as a health food material because of nutritional values and physiological activities. The purpose of this study was to investigate the industrial applicability of maca (red and golden varieties; R&G) as immunostimulating materials. In the macrophage stimulating assay using RAW 264.7 cells at 125~500 ㎍/mL of non-cytotoxicity doses, G-HW showed the most potent production of TNF-α, IL-6 and nitric oxide compared to red maca or the other extracts. The general component analysis results showed that all extracts comprised more than 90% neutral sugars with small amounts of uronic acid and protein. Meanwhile, component sugar analysis showed the difference in the content of uronic acids of cold- and hot-water extract. Additionally, the further fractionation of G-HW into crude polysaccharide (G-CP) greatly enhanced the macrophage stimulating activity, and G-CP contained macromolecules over 144 kDa, comprised mainly of glucose and galacturonic acid (51.0 and 34.9%). In conclusion, crude polysaccharide from maca showed industrial applicability as immunostimulating material, and especially golden maca showed higher macrophage stimulating activity than red maca.
