대구지역 직장인의 아침식사 현황 - 생산직과 사무직의 비교 - (A Survey on Breakfast of Workers in Daegu Area)

  • Breakfast is an important factor for health status of people. This study was carried out to investigate the dietary life related to breakfast of workers and to develope some nutritional convenient diets for the workers. The collected data were consisted of items about general characteristics of the subjects, breakfast pattern, factors affecting on breakfast and opinions on convenient foods. The subjects were classified into labor workers (n=202) and office workers (n=227) aged from twenties to fifties. The rate of skipping breakfast in workers was $31.5\%$ and higher according to the increase of age. Their favorite style of breakfast was mostly Korean traditional diets, but only $38.1\%$ of the subjects had cooked rice as breakfast. The main reason for skipping breakfast was that they had no time for it. But $65.4\%$ of total workers had experiences of using convenience diets. They had these kinds of diets because of convenience. These results suggest that recipe development of convenient breakfast is very important for the good dietary life of the workers.

패스트 푸드의 외식행동(外食行動)에 관한 2차(次) 실태조사(實態調査) -여의도(汝矣島) 지역(地域)을 중심(中心)으로- (A Secondary Survey of Fast Food Dining out Behaviours -Focused on Youido Apartment Compound in Seoul-)

  • A secondary survey was conducted of 503 customers, to investigate eating out behaviours at five fast food restaurants of Youido apartment compound in Seoul, in April of 1988. The results are summarized as follows: The majority, 84% of customers, were aged 14 to 30, consisting of junior and senior high school children, college students and company employees. In contrast to the previous survey of 1986, in which no elderly customers were found, a small number of elderly customers were observed in this study. The reasons given by customers for patronizing fast food restaurants were the following, from most to least frequent: 'convenient', 'allows for companionship', 'the pleasant place to eat', 'dining equipment and tableware are hygienic', 'to be able to stay as long as I want', and 'foods rapidly served'. Only 24.2% of the customers purchased the fast foods for a full meal, 38.3% purchased the foods for snacking, and others purchased ice cream only or drink only. The majority of the customers ate the purchased foods at the fast food restaurants. However, a limited number of female customers preferred to take the packed fast foods to their homes. Taste preference was a major factor in food selection from available menu items, among the younger customers; whereas customers over 30 years old were concerned with nutritive balance. Fried chicken, pizza, rolled rice with laver, ice cream, and juice were high on the list of liked foods; in contrast, lower preference was for fish burger, doughnut, spaghetti, Chajang noodles and chili beans. The survey discovered that the preference for fried chicken, pizza, and salad had increased compared to the previous survey of 1986. Preference by food nationality was highest for Korean food, then Western food, Chinese food, and Japanese food, in that order. Customers offered suggestions for better fast food service, such as lowering the price; greater variety in the menu; developing fast foods from the traditional Korean foods; and increasing the proportion of vegetables and fruits on the fast food menu. The customers, in particular, emphasized a need for the development of Korean traditional beverage of malt drink and persimmon punch, as well as mungbean pan cakes and sweet- spicy rice noodles (docbokki), as fast foods.

  • To determine dining out behaviours of fast foods at five different fast food restaurants of Youido apartment compound in Seoul, a survey was conducted of 460 customers ranging in age from 7 to 29 year, from October 1 to 5th, 1986. Findings are summarized follows: The reasons the customers the fast food restaurants by the highest percentage were the following in the order: 'the atmosphere in which fast food is eaten is enjoyable for the companionship', 'convenient to dining', 'the surroundings and dining equipment are pleasant and hygienic', and 'to be able to stay as long as I want'. The majority of the customers visited the fast food restaurants with their friends between 1pm and 5pm. The fast foods purchased by the customers were mostly for snack rather than a full meal. Preference was a major factor in food selection from available meun items. Ice cream, Kentucky fried chicken, rolled rice with laver I rice cake stew, fried Mandoo were ranged high on the list of liked foods, in contrast, lower preference was for noodle soup, small red bean porridge, pinenut porridge, and persimmon punch.

대전지역 대학생들의 전통음식에 대한 이용 및 의식조사 (The Research of Utilization and Awareness on the Traditional Food of University Students in Daejeon)

  • To investigate of the utilization and awareness on the traditional foods of university students in Daejeon, 104 male students(26.8%) and 282 female students(73.2%) were surveyed by the questionnaire. The traditional foods surveyed were Korean sauce, rice cake, Korean cookies, Korean soft drinks, kimchi and ritual foods. Among respondents, 56.5% answered that they had made Korean sauce at home, and 66.2% replied the reason why was because home made Korean sauce had much better tastes than other instant Korean sauces. 40.1% of the respondents answered that they would made Korean sauce at home after getting married. 61.2% of respondents answered that they liked the rice cakes and there was a significant difference between sex(P<0.001). Most respondents(50.7%) ate the rice cakes at traditional holidays. They liked Injulmi the most(28.4%) and there was a significant difference between sex(P<0.001); males liked Injeolmi better and females Patsirooduk. 47.4% of respondents liked the Korean cookies and 68.3% of them replied that the reason was because they were tasty. 71.1% of respondents ate Korean cookies at traditional holidays. 53.93% of respondents ate Korean soft drinks at traditional holidays and 68.1% of them made them at home. 81.3% of respondents said that they would make Kimchi at home instead of buying at market after they married; 65.2% of them answered the reason why was because home-made ones were tastier. For ritual foods for traditional ceremony, 52.2% of respondents said they would not use order and delivery service, and if they would use them, 60.5% respondents said because it might be convenient because it took much time to prepare. There were no significant differences between sex distinctions.

중학생의 가공식품에 대한 선호도와 식품${\cdot} $영양표시에 대한 인식도 (Processed Food Preferences and Food and Nutrition Labeling Perceptions of Mddle School Students)

  • The objectives of this study were to determine the preferences and consideration factors for selecting processed foods, in middle school students as well as their perceptions on food and nutrition labeling student. Middle school students in the Seoul area were surveyed from October to November, 2006. The results are summarized as follows: the preferred processed foods included 'drinks' (3.85), 'noodles' (3.81), 'biscuits and bread' (3.80), 'milk and dairy products' (3.71), and 'meat and meat products' (3.60). The most important consideration factors in selecting processed foods were 'expiration date' (4.45), 'taste' (4.34), and 'price' (4.08). The two main reasons for eating processed foods were 'delicious' (43.1%) and 'convenient' (33.9%). Food labels were identified 'sometimes' (34.5%), 'rarely' (31.2%), and 'almost never' (18.6%). The primary reason for examining a food label was 'to confirm the expiration date' (52.6%). The main reason for not reviewing a food's label was 'habitual purchase' (57.8%). Nutrition labels were identified 'rarely' (33.4%), 'almost never' (24.7%), and 'sometimes' (23.5%). The reasons for examining nutrition labels included 'to confirm a high proportion of nutritive substances' (26.5%), 'boredom' (24.2%), 'for weight control' (23.5%), and 'to improve health' (18.1%). The main reason for not examining a food's nutrition label was 'not interested' (56.5%).

  • 서울시와 경인지역을 중심으로 도시락 생산업체 16개사를 선정하여 방문 조사한 기기류 보유 현황은 다음과 같다. 1. 조리기기는 주로 레인지, 튀김기, 국솥, 밥솥을 사용하고 있었다. 2. 전처리기기는 푸드 캇타, 푸드 슬라이서와 야채 탈피기, 야채 캇타를 주로 이용하고 있었다. 3. 냉동 냉장고는 16개사에서 모두 보유하고 있었으나 냉장고의 용량을 늘려야 할 것으로 판단되었다. 4. 살균기로 자외선 살균기를 주로 사용하고 있었으나 살균시의 능력이 부족하고 살균기의 용량이 처리량에 비해 적었다. 5. 싱크 작업대는 16개사에서 모두 보유하고 있었으나, 싱크 작업대를 품목별로 구분하여 사용할 필요가 있었다. 6. 식품을 보온하거나 가온하는 기기류는 보유율이 대체로 낮았다. 7. 스팀발생용 에너지는 가스를 많이 사용하고 있었다. 8. 운반기는 평운반기, 키친 웨건을 주로 이용하고 있었다. 9. 포장기는 ???N 포장기가 주종을 이루고 있었으며 자동포장기, 집진기, 에어커텐 등의 기기류는 보완되어야 한다고 판단되었다.

One portion size of foods frequently consumed by Korean adults

  • This study aimed to define a one portion size of food items frequently consumed for convenient use by Koreans in food selection, diet planning, and nutritional evaluation. We analyzed using the original data on 5,436 persons (60.87%) aged 20~64 years among 8,930 persons to whom NHANES 2005 and selected food items consumed by the intake frequency of 30 or higher among the 500 most frequently consumed food items. A total of 374 varieties of food items of regular use were selected. And the portion size of food items was set on the basis of the median (50th percentile) of the portion size for a single intake by a single person was analyzed. In cereals, the portion size of well polished rice was 80 g. In meats, the portion size of Korean beef cattle was 25 g. Among vegetable items, the portion size of Baechukimchi was 40 g. The portion size of the food items of regular use set in this study will be conveniently and effectively used by general consumers in selecting food items for a nutritionally balanced diet. In addition, these will be used as the basic data in setting the serving size in meal planning.

  • Obesity is a global pandemic that is increasing throughout most of the world. Increases in obesity are not restricted to highly industrialized countries, but have been observed in newly developed and developing countries as well. Obesity is associated with increased risk for non-insulin dependent diabetes mellitus, coronary artery disease, and some types of cancer. Tragically, eliminating food shortages in developing countries may result in substituting heart disease, diabetes, and cancer for malnutrition. There are many approaches to reducing obesity, including dietary modification, surgical interventions, and drug therapies. However, only dietary modification has the potential to be effective on a global scale. Public health measures in the United States have sought to reduce obesity by reducing the intake of dietary fat. While these efforts have succeeded in reducing dietary fat, obesity has continued to increase, suggesting that moderate fat reduction may not be effective. Other proposed diets include low-carbohydrate diets, low glycemic index diets, and very low fat diets. While all of these diets may be effective for some people, they are not satisfactory for public health policy. In fact, the ratio of fat to carbohydrate may not be as important as previously believed. Humans may be well suited to adapt to diets as varied as a high carbohydrate tropical diet consisting mostly of fruits to the high fat Eskimo diet consisting largely of animal foods. Either extreme may be healthful if providing adequate, but not excessive, energy and adequate amounts of micronutrients. Public health measures may need to focuss on reducing the overconsumption of inexpensive and convenient foods.

대학생들의 패스트 푸드의 외식 행동에 관한 실태조사 - 김천, 서울지역간의 차이조사 - (A Survey of College Student Behaviors on Fast Food Restaurants)

  • 226 college students in Kimchun and Seoul area were surveyed for consumer behaviors and opinions about fast food restaurants from August 1 to 31 1994. The purpose of this study Is to Investigate eating behavior, nutrition knowledge and utilization state of fast foods of college students In Seoul and Kimchun. All statistical data analysis was conducted using the SAS program package. The results were summarized as follows : Eating behavior score of the subjects were higher in Seoul than Kimchun. Nutrition knowledge of the subjects had not significant difference In Seoul and Kimchun. Also eating behavior and nutrition knowledge had not correlationship in Seoul and Kimchun. Utilization state of fast food restaurant was most frequently in noodles, also more frequently in Seoul. The reasons the customers visiting the fast food restaurant by the highest percentage were the following in the order : "the atmosphere in which fast food is eaten Is enjoyable for the companionship", "convenient to dining", "the surroundings and dining equipment are pleasant and hygienic" and "to be able to stay as long as I want". The fast foods purchsed by the customers were mostly for a full meal rather than snack. Majority of college students selected their fast food by preference and price.their fast food by preference and price.

일부지역 성인여성의 사회경제적요인, 건강관련의식구조 및 식생활태도와 채소류 소비에 미치는 영향 (Influences of Socio-demographic Factors, Health-related Recognitions and Dietary Behaviors on Use and Purchasing of Vegetables among Adult Women)

  • The aim of this study was to investigate the effects of socio-demographic and health-related perceptions and twenty dietary behaviors on the superiority and preference, convenient use of and purchase motives of vegetables among 370 women(mean age 43.9) in Seoul and metropolitan and Gangwon area. Data was collected using a questionnaire developed in advanced studies. Almost all subjects rated vegetables more predominantly than grains or meats on the basis of health, diversity, and convenience to purchase. Recognition of healthly funcions of diet, purpose of diet and some dietary behaviors had influence on preference for vegetables. Those who recognized that diet had the function of disease control and prevention, knew the healthy options vegetables provide us, such as, preventing us from geriatric diseases, good sources of vitamins and minerals and considered other motives aside from health issues. From Pearsons's correlation analysis, it was revealed that sufficient time for meal preparation and pleasant eating and desirable life style and dietary attitudes, and a better understanding of nutrition were positively correlated with consumption of more vegetables and convenient use of vegetables. The subjects who recognized the ability of food to help prevent diseases, had a preference for vegetables and attitude to use nutritional knowledge and also considered the nutrition values of vegetables and environment friendliness. Everyday use of vegetables such as consuming a variety of different vegetables, a families favorite vegetables and variation of cooking methods had correlated positively with purchase motives. Therefore to encourage consumption of vegetables, it is important to notice three points continuously; first, practical information of nutritive values of vegetables, the contribution of vegetables in current animal protein foods centered diet and healthful functionalities. Second, the importance of regular diet and steadfast attitude and lifestyle. Finally, the quality of the market where the products are bought such as, quality control of freshness, sanitation, expression of producer and a pleasant environment to shop in.
