Preparation and Sensory Properties of Semi-dried Israeli Carp Cyprinus carpio (향어(Cyprinus carpio)를 활용한 반건제품의 제조 및 관능 특성)

  • The aims of this study were to optimize the processing procedure of high-quality semi-alternating temperature dried Israeli carp Cyprinus carpio (SAD-IC) and to investigate the sensory properties of the product. Based on the differences in moisture content of the dorsal and ventral muscles, high quality SAD-IC was prepared by alternating the drying temperature between 4 h at 35℃, and 2 h at 5℃, three times before final drying for 2 h at 35℃. The surface in SAD-IC produced under the optimal alternating-temperature drying process had a markedly superior browning index value and softer texture compared to products produced using constant-temperature drying. SAD-IC produced from dorsal and ventral muscle had significantly superior taste values than the raw material. These results suggest that SAD-IC has the potential to be industrialized.

Sensory and Enzymatic Properties of Israeli Carp Cyprinus carpio as Affected by Size, Part and Commercial Value (향어(Cyprinus carpio)의 크기별, 부위별 및 상품성별 관능적 및 효소학적 특성 비교)

  • This study was conducted to compare the sensory and enzymatic properties of Israeli carp Cyprinus carpio muscle (ICM) according to size [normal large (NLF) and small fish (NSF)], part [ventral (VM) and dorsal muscles (DM)], and commercial value [NLF, recessive (RF), or deformed fish (DF)]. There was not difference in salty of all samples. The sourness was stronger in NLF and DM than in NSF, RF, and DF, and VM, respectively. The umami of ICM showed no size-associated differences; however, those of DM, and DF and RF, were superior to those of the VM and NLF, respectively. The sweetness was also stronger in NLF than in NSF and RF, and in DM than VM. The sweetness of DF didn't differ compared to those of NLF and RF. The intensity of fish odor was weaker in NSF or DF than that in NLF, and was higher in DM than in VM. The color of ICM was bright in NSF and DF compared to NLF. Enzyme activity was very low in the muscles and high in viscera. Therefore, ICM could be used as a material for seafood products, regardless of size, part, and commercial value; however, the issue of lipid oxidation must be considered.

  • A study was made to measure mortality and scoliosis of the fingerlings of common carp (Cyprinus carpio) which has been exposed to various concentrations of trichlorfon. Trichlorfon increased mortality of the fingerlings and it caused severe scoliosis. When exposed to 40 ppm trichlorfon for 120 hrs, $100\%$ mortality was observed. Scoliosis was observed when the fingerlings have been exposed 25 to 40 ppm trichlorfon.

Food Components of Wild and Cultured Fresh Water Fishes (천연 및 양식산 담수어의 식품성분)

  • The object of this study is to obtain fundamental data on cultured fishes produced in Korea to improve their food components. For this purpose, the food components of cultured fresh water fishes such as eel, Anguilla japonica, snakehead, Channa argus, and common carp, Cyprinus carpio, were investigated and compared with those of the wild ones. The results obtained are summarized as follows: 1. Common characteristics in the proximate composition were that wild fish was higher in crude protein content and lower in crude lipid content than those of cultured one. 2. Among the 9 kinds of minerals analyzed in all the samples, sodium, potassium, calcium and magnesium contents were absolutely predominant being more than $99.52\%$. These four elements in feedstuff also occupied $99.68{\sim}99.92%$ of total minerals. 3. The neutral lipids of wild and cultured eel, snakehead and common carp occupied $55.7{\sim}95.8%$ of lipid fractions, while the content of the phospholipids in snakehead was particularly higher than those of others. 4. The neutral lipids of wild and cultured eel, snakehead and common carp mainly consisted of triglycerides ($85{\sim}95%$), and a little quantity of diglycerides, monoglycerides, free sterol ester and hydrocarbon were also identified in the neutral lipid. 5. The phospolipids of eel and common carp were mainly occupied by phosphatidyl choline ($71.3{\sim}83.9%$), followed by phosphatidyl ethanolamine ($12.1{\sim}23.5%$) and phosphatidyl serine ($7.5{\sim}13.8%$). The phospholipids of snakhead consisted of phosphatidyl choline ($50.7{\sim}64.5%$), phosphatidyl ethanolamine ($28.0{\sim}35.5%$) and phosphatidyl serine ($7.5{\sim}13.8%$). Generally, phosphatidyl choline content was higher in wild fish than in cultured one, while phosphatidyl ethanolamine and phosphatidyl serine contents were higher in cultured one. 6. The major fatty acids in total lipid of wild eel, snakehead and common carp were $C_{16:0}\;and\;C_{20:5}$, while those in cultured ones were $C_{18:1},\;C_{18:2}\;and\;C_{22:6}$. The fatty acid composition of neutral lipids showed similar tendency to that of total lipid, and the main fatty acids in phospholipids of cultured fishes were $C_{18:1}\;and\;C_{18:2}$. In glycolipids, $C_{20:5}\;and\;C_{22:6}$ were higher in wild fishes, while $C_{18:2}$ were higher in cultured ones. 7. Total amino acids contents of wild and cultured eel were nearly the same, being $16.65\%$ ana $15.99\%$ respectively. The major amino acids of wild and cultured fish were glutamic acid, leucine, aspartic acid and lysine in order. In snakehead, the contents of aspartic acid and proline in cultured fish were higher than those in wild one, while the contents of glutamic acid, alanine, glycine were higher in the wild one. Total amino acid content of cultured common carp was $21.7\%$ compared with $17.08\%$ in wild one. The contents of glutamic acid, aspartic acid, glycine, proline and alanine occupied higher quantities in cultured common carp compared with those in wild one while the other amino acids revealed no significant difference. 8. Aspartic acid in free amino acids of cultured eel held $1.0\%$ of total free amino acids, while that in wild eel held $2.9\%$. Histidine, arginine and tyrosine content of cultured fish were two times higher than those of wild one. But free amino acid composition of samples seemed to be no marked differences according to cultured places. The contents of arginine, aspartic acid, glutamic acid, methionine and phenylalanine of snakehead ware higher in wild one than in cultured one, while the contents of lysine, histidine, glycine, and alanine ware higher in cultured one. In free amino acids content of wild common carp, histidine, glycine and lysine occupied $76.9\%$ of total free amino acids. Lysine, histidine, aspartic acid, alanine, valine and leucine were higher in wild one compared with those of cultured one, while glycine and tyrosine contents were higher in cultured fish.

On the Efficiency of Soybean Meat as a Protein Source Substitute in Fish Feed for Common Carp (잉어 사료 단백질 대체원으로서의 대두박분의 효율)

  • An experiment on the efficiency of soybean meal substituted for fish meal in the diet of common carp was carried out at the Fish Culture Experiment Station of the National Fisheries University of Pusan from June 27 to August 25, 1983. The carp used for the experiment were 50 fish each lot, each averaging 26 g in initial weight (total weight 1300 g). The experimental diets contained $10\%,\;20\%,\;30\%$, and $40\%$ soybean meal ($44\%$-protein) at iso-protein content basis in place of white fish meal in the control diet which contained $35\%$ protein. The growth rate in the control division was highest with progressive decrease in performance of the fish with increasing rates of soybean meal substituted in the test diets. Nevertheless, the $10\%\;and\;20\%$ soybean meal test diet groups showed acceptable conversions and growth rates, i. e. feed coefficients being 1.28 and l.30 and daily growth rates, $1.708\%\;and\;1.694\%$ compared to $1.22\%\;and\;1.758%$ for the control group, respectively. Therefore, soybean meal could be substituted for fish meal in carp diet by $20\%$ without significant differences of performance with some saving in feed cost.

Effects of $\beta$-glucan from Schizophillum commune on Non-specific Immune Parameters in Common Carp (Cyprinus carpio) and Flounder (Paralichthys olivaceus) by Oral Administration (경구투여 $\beta$-glucan이 잉어와 넙치의 비특이적 면역활성에 미치는 영향)

  • The effects of dietary $\beta$-glucan administration on non-specific immune parameters in common carp, Cyprinus carpio, (1.0 g and 68.7 g of body weight) and flounder, Paralichthys olivcaces (12.1 g and 54.0 g of body weight) were evaluated. All fishes were fed an experimental diet supplemented with $\beta$-glucan at $0.1\%$ per kg diet for 5 weeks. A week intermission with basal diet occurred between first 2 weeks and second 2 weeks of $\beta$-glucan administration, The changes in the numbers of peripheral neutrophils and macrophages were counted under light microscopy and serum lysozyme activity was also analysed at a week of interval during the experiment. Phagocytic activities of leucocytes from the swimm bladder of carp and the peritonium of flounder were measured 5 weeks after feeding. The oral adminisration of $\beta$-glucan induced significant reduction in mortality after an artificial challenge with $1\times10^6$ cells of Aeromonas hydrophila in larger carp and $1\times10^5$ cells of Edwardsiella tarda in larger flounder but did not in other groups. The numbers of peripheral macrophages and neutrophils, phagocytic acitivies of leucocytes, and the activity of serum lysozyme were greatly increased in the fish fed a $\beta$-glucan supplemented diet. These suggest that $\beta$-glucan administration by oral route can enhance leucocyte phagocytic activity, serum lysozymal activity, and survival rate against artificial infections depending on the infected fish size and challenged bacterial concentration.

Effects of Dietary Blood Meal as a Protein Source in Growing Common Carp (Cyprinus carpio) (성장기 잉어(Cyprinus carpio) 사료에 있어서 단백질원으로서의 혈분 첨가효과)

  • A series of feeding experiments were conducted to study the possible utilization of blood meal as a dietary protein source in growing common carp, Cyprinus carpio. Diets were formulated on isonitrogenous and isocaloric basis of $40\%$ crude protein and 3,640 kcal/kg diet : diet 1 (100 FMP, control), $100\%$ fish meal Protein (FMP) : diet 2 (25 BMP), $75\%$ $FMP+25\%$ blood meal protein (BMP) : diet 3 (50 BMP), $50\%$ $FMP+50\%$ BMP : diet 4 (75 BMP), $25\%$ $FMP+75\%$ BMP : d;et 5 (100 BMP), $100\%$ BMP. As the dietary protein sources, $34.2\%$ of animal protein were supplied by FMP and/or BMP, and approximately $65.8\%$ of plant protein were used. In the first experiment, weight gain and feed efficiency were improved with increased level of blood meal protein in the diets. Weight gain and feed efficiency from fish fed diets 4 and S were significantly higher (P<0.05) than those from fish fed diets 1, 2 and 3. The second experiment was designed as a cross-over study to prove the first experiment's results. This cross-over study shows that weight gain from fish fed diet 5 is greater than that from fish fed diet 1. The third experiment was conducted to compare palatability between diet 1 (100 FMP) and 5 (100 BMP). The data from this palatability study indicated that the palatability of diet 5 was lower than that of diet 1 initially, however, the palatability of iiet 5 was improved and not worse than that of diet 1 within a week. Therefore, these findings may suggest that the fish meal can be replaced with blood meal completely in growing common carp diets.

  • Red tilapia fingerlings were tested for 45 days on the growth rate in a closed recirculating water system omitting filter bed and was compared with common carp fingerlings grown together in the same tank and also with red tilapia fingerlings grown in a well conditioned conventional pond. The tank water was kept in deepgreen colour by heavy phytoplankton bloom during the most of the experimental period and duckweeds, Lemna sp. and water hyacinth, Eichhornia crassipes were put to grow in the parts of the water system. Total ammonia level in the tank was mostly kept at about 5 to 7 ppm, with a fluctuation between 3.4 and 11.2 ppm. Average daily growth rate of the tilapia in the experimental tank was $6.5112\%$ without any mortality, compared to $3.617\%$ for common carp fingerlings involving some mortality in the same tank, and to $5.7712\%$ for the tilapia grown in the conventional pond. The feed used for the experiment was one prepared for the rearing of common carp, and the duckweed grown in parts of the water system was routinely collected and fed to the tilapia in the tank as supplementary diet probably satisfying unknown growth factors.

Proximate and Fatty Acid Compositions of Three Species of Imported and Domestic Freshwater Fishes (수입산 및 국내산 담수어류 3종의 일반성분과 지방산 조성)

  • The proximate and fatty acid compositions of the edible portion of three species of cultured freshwater fish (common eel Anguilla japonica, rainbow trout Onchorhynchus mykiss, and Israeli carp Cyprinus carpio) were compared between imports from China and domestically produced specimens. The lipid contents of cultured common eel and rainbow trout were rich in imported fishes (20.4 and 12.2%, respectively) compared with those in domestic ones (16.0 and 8.01%, respectively), while those of Israeli carp were rich only in the domestically produced specimens (8.06 and 3.07%, respectively). There was a negative correlation between the lipid and moisture contents in all fish samples (r =-0.86). The protein contents ranged from 16.6 to 21.3% in domestic fishes and 15.3 to 19.1% in imported ones. The most prominent fatty acids in the fishes were: saturated fatty acids, 16:0, 18:0 and 14:0; monounsaturated fatty acids, 18:1n-9, 16:1n-7 and 18:1n-7; and polyunsaturated fatty acids (PUFA), 18:2n-6, 22:6n-3 (docosahexaenoic acid, DHA), and 20:5n-3 (eicosapentaenoic acid, EPA). The percentage of n-3 PUFA (e.g., DHA, 22:5n-3, EPA, and 18:3n-3) was higher in domestic common eel and Israeli carp than in imported ones, but similar in domestic and imported rainbow trout, and higher in domestic wild rainbow trout than in cultured ones. On the other hand, all of the cultured freshwater fishes contained a relatively large amount of 18:2n-6, which is a characteristic fatty acid in cultured fish lipids.

  • Mackerel water-soluble protein fraction produced by washing the mackerel meat were concentrated by isoelectric point shifting precipitation process, and the concentrates were utilized as the alternative feed of fish meal. In the 1st aquaculture diet experiment for Israel common carp, the feed conversion ratio decreased in proportion to the rise in the percentage of the recovered protein containing a residual lipid, which was added to the fish meal. It was supposed that the low feed efficiency was because of lipid oxidation in the recovered protein fraction. In addition, 2nd aquaculture diet experiment for Israel common carp was conducted after removing the oxidized lipid in the recovered protein fish meal. When a portion of the fish meal was substituted by the recovered protein devoid of the residual lipid, the feed conversion ratio increased in proportion to the amount of the substitute being added to the fish meal. Therefore, the recovered protein fraction of the mackerel washing wastewater from mackerel processing factory could be used as the alternative feed of fish meal.
