Comparison of Single and Double Combination of Temperature-time in Sous Vide Treated Semitendinosus Muscle from Cattle and Goat

  • This study observed the effects of the double combination of temperatures-times (2 temperatures: 2 times combination, 2T2T) in sous vide cooking method on the physicochemical properties and collagen solubility (CS) of semitendinosus muscle from cattle and goat as a comparison to common sous vide treatment (1 temperature: 1 time combination, 1T1T). The new invention of sous vide cooking method (2T2T) cooked at the first temperature at $45^{\circ}C$ for 3 h, and the second temperature at $60^{\circ}C$, $65^{\circ}C$, and $70^{\circ}C$ for 3 h, and labeled as N45-60, N45-65, and N45-70, respectively. While, common sous vide treatment (1T1T) were cooked directly for 6 h at $60^{\circ}C$ (T60), $65^{\circ}C$ (T65), and $70^{\circ}C$ (T70). Results revealed that cooking with 2T2T treatment improved the water-holding capacity and reduced the cooking loss of both beef and goat meat. The $L^*$ values have no apparent changes between treatment in beef and goat meat, while $a^*$ values of N45-60 treated goat presented markedly higher values than other treatments but an only slight increase in beef at the same treatment (p>0.05). Again, 2T2T treatment tended to decrease mean shear force (SF) values for beef and goat meat with the lowest SF values recorded at N45-60, and the CS no or less influenced this value. Therefore, the application of innovative sous vides cooking method (2T2T) presented comparable values in the treated beef and goat meat as compared to common sous vide method (1T1T).

온도균열 저감공법을 복합사용한 매스콘크리트의 현장적용 (Field Application of the Mass Concrete Utilizing Combined Method for Temperature Crack Reduction)

  • In this study, with new office construction site of S Construction company as subject, to solve all the problems according to reduced hydration heat and temperature crack of mass concrete used mat foundation and placing time difference, low heat combination of coarse particle cement and fly-ash and setting time difference applied AE water reducing agent, and to prevent the early frost damage caused by low outdoor temperature, a heat insulation method using double bubble sheet was conducted. As a result, it was found that hydration heat and setting time difference was reduced by applying a low heat combination and setting time difference construction method, and that the high insulation capability of the double bubble sheet was able to not only prevent the early frost damage but also reduce temperature difference between the central part and the upper part of mass concrete.

  • Experiments were performed to study the effects of diluents, cryoprotectant, equilibration time, thawing temperature and addition of BSA and egg yolk. Among the various diluents, Alsever's solution was the best for sperm cryopreservation. A combination of Alsever's solution and 15% ethylene glycol showed the better results than others did. Sperm activity indection and survival rate gradually decreased with the equilibration time. The appropriate thawing temperature was 30 ${\pm}1^{\circ}$C. These results indicate that sperm cryopreservation methods can be developed in tiger puffer.

  • The maturity concept proposes that concrete of the same mix at the same maturity has the same strength, whatever combination of temperature and time makes up that maturity. Maturity is the integral of time and temperature of concrete above a datum temperature. Tests are conducted in order to determine a datum temperature and to measure compressive strengths and maturity of test specimens. This study also proposes some appropriate functions to represent the relationship between maturity and strength development.

  • This paper investigated the temperature history of mass concrete mock up structure considering different heat generation by varying with mixture proportion. Setting time difference between high early strength mixture (E-P) and retarding mixture (R-F30) was 14.5hours. Incorporation of $30\%$ of fly ash contributed to $10^{\circ}C$ of hydration heat reduction. In generally used C and D combination, bottom concrete shows earlier hydration, while E-J combination showed reverse tendency and thus, this method can reduce the crack occurrence. Therefore, heat generation difference method has beneficial effect on reducing crack induced by hydration heat resulting from heat generation difference between surface and center section.

Drying characteristics of lotus root under microwave and hot-air combination drying

  • Because lotus root has a short shelf life, the quality easily deteriorates. Thus, the harvested lotus roots are processed into a variety of products. Drying is one of the simplest food preservation methods, which can increase food stability. However, the convective drying method takes a long time and requires high energy consumption. Combination drying methods have emerged to overcome the limitations of the convective drying method. This study investigated the drying characteristics of lotus root and determined the optimal drying model of lotus root depending on the microwave and hot-air combination drying conditions. The lotus root slices (5 mm in thickness and 40 mm in diameter) were dried by different drying conditions that were combined with three microwave power levels (50, 100, and 150 W) and two hot air temperatures (50 and 60℃) at a velocity of 5 m·s-1. Eight drying models were tested to evaluate the fit to the experimental drying data, and the effective moisture diffusion (Deff) values of the lotus root slices dried by combination drying were estimated. The combination drying time of the lotus root was significantly reduced with the high air temperature and microwave power. The effective moisture diffusion (Deff) of lotus root was more affected by the air temperature than microwave power intensity. Logarithmic model was most suitable to describe the drying curve of lotus root in the microwave-hot air combination drying method.

지연성 근육통 유발 후 냉기 적용 방법이 피부온도의 변화, 냉각 통과 근육 기능에 미치는 효과 (Effects of skin temperature change, cold pain and muscle activity by Cold Air Application type on the induced delayed onset muscle soreness)

  • 본 연구는 급성염증과 비슷한 지연성 근육통이 있을 때 초기 한냉치료를 적용함에 있어 냉기에 의한 냉각통증을 최소화하면서, 근육온도를 낮출 수 있는 방법으로 냉기단독과 냉기와 적외선 조사 병용을 적용하여 피부온도에 미치는 영향을 측정하고, 냉기와 적외선 병용치료의 효율성을 평가함과 동시에 초음파를 통한 근 두께를 바탕으로 등척성 근기능을 평가해보고자 하였다. 본 연구의 결과 냉기와 적외선 병용치료 시 냉기 단독치료보다 냉각통증의 빈도가 낮게 나타났으며, 냉각통증 자각 시점도 늦게 나타났다. 또한 충분한 냉기적용 후 피부온도가 재가온되는데 있어서 냉기를 2회 적용할 때가 1회 적용할 때 보다 더 느려지며, 냉기 단독치료보다 냉기와 적외선 광선 조사 병용치료 시 더 느려짐을 나타내어 2회 이상의 반복적인 냉기 적용이 냉기의 효용이 있다고 나타났다. 또한 상완이두근 두께 변화에 있어서 병용군이 대조군보다 더 크게 나타나 이 효과를 뒷받침하게 되었다. 이러한 연구결과 자료는 향후 급성염증이 있는 환자에게 한냉치료와 관련된 치료적인 자료로써 활용될 수 있을 것이라 생각되고 근골격계 초음파 진단기를 활용하여 통증에 대한 자각도를 간접적으로 표현하는 것이 구체화되어 임상에서 널리 활용될 것으로 보여진다.

Drying Ginseng Slices Using a Combination of Microwave and Far-Infrared Drying Techniques

  • Purpose: This study was performed to improve the drying quality and drying rate of ginseng slices by combining microwave and far-infrared drying techniques. Methods: Based on single-factor experiments and analyses, a quadratic regression orthogonal rotation combination design was adopted to study the effects of the moisture content at the conversion point between the microwave and far-infrared techniques, the ginseng slice thickness and the far-infrared drying temperature on the chip drying time, the surface color difference value, the nutritional composition and the surface shrinkage rate index. Results: Compared to the far-infrared drying alone, the combined microwave and far-infrared drying resulted in an increase in the saponin content of the ginseng slices and reductions in the drying time, surface color difference, and shrinkage rate. Conclusions: We established a mathematical model of the relationships between the surface shrinkage rate index and the experimental factors using the multi-objective nonlinear optimization method to determine the optimal parameter combination, which was confirmed to be the following: microwave and far-infrared moisture contents of 65%, a ginseng slice thickness of 1 mm, and a far-infrared drying temperature of $54^{\circ}C$.

  • The annealing behavior of a 5083 Al alloy deformed at cryogenic temperature was investigated, focusing on the evolution of microstructures and mechanical properties. Especially, the effects of annealing temperature, $150~300^{\circ}C$, and time, 3∼60min., on microstructures and mechanical properties of the sheets received 85% reduction at cryogenic temperature were investigated. The optimization of the annealing conditions resulted in a mixture of equiaxed grains and elongated subgrains, exhibiting a good combination of uniform elongation and high strength.

Visibility Enhancement of Laccase-Based Time Temperature Integrator Color by Increasing Opacity

  • Time-temperature integrators (TTIs) based on aqueous enzyme solutions produce transparent colors which lead to difficulty in distinguishing its color change by naked eye. In this present study, this issue has been solved by increasing the opacity of laccase-based TTI without changes in the kinetics (same zero-order reaction) and temperature dependency (similar Arrhenius activation energy values) of the color change. The opacity was increased by introducing TiO2, latex, BaSO4, or ZnO, in combination with a hydrocolloid (xanthan gum, acacia gum, pectin, and CMC) into the TTI system. The combination of TiO2 and xanthan gum was the best. This finding broadened the advantages of laccase-based TTI to more practical uses for consumer convenience.
