The Effect of Caffeine on 3T3-L1 Adipocyte Differentiation : A Nutrigenomical Approach (Caffeine이 지방세포주 3T3-L1 분화에 미치는 영향: 영양유전체학적 접근)

  • Nutrigenomics refers to research that investigates the interaction between nutrition and the human genome. Caffeine in tea and coffee is widely and routinely consumed by people. This study was performed to confirm the effect of caffeine treatment on the gene expression and cytokine profiling in 3T3-L1 adipocyte cells using microarray and protein array methodology. Treatment of caffeine in 3T3-L1 adipocyte cells increased expression of several genes related with obesity including adipocyte C1Q and collagen domain containing (ACDC), Adipsin (ADN), uncoupling protein 3(UCP3), while glyceraldehyde-3-phosphate dehydrogenase (GAPDH), which is known as lipid storage enzyme, was decreased by caffeine treatment. Furthermore, cytokines, such as interleukin-3 (IL-3), interleukin-12(IL-12), interleukin-13 (IL-13), granulocyte colony stimulating factor (GCSF), granulocyte macrophage colony stimulating factor (GM-CSF) and vascular endothelial growth factor (VEGF), were decreased in caffeine treated 3T3-L1 adipocyte cells. These results provided interesting information about the genes related with caffeine and cytokine expression profiling in obesity.

Development of non-dairy creamer analogs/mimics for an alternative of infant formula using egg white, yolk, and soy proteins

  • Objective: A study was conducted to develop non-dairy creamer analogs/mimics using egg white, egg yolk, soy protein and their combinations, and their nutrient content, shelf-life and flavor acceptability were compared. Methods: Spray dried egg white, egg yolk, and soy protein isolate were purchased from manufacturers and used for the formulae. Results: The protein contents of the non-dairy creamer analogs/mimics were about 8.5% as calculated. The amounts of oleic and linoleic acid content increased as the amount of yolk increased in the formula, but the increases of polyunsaturated fatty acids were <0.5% of total fat. Addition of egg yolk to the formula increased choline and lutein content in the products, but the amounts were <0.4 mg/g for choline and $4{\mu}g/g$ for lutein. The lutein in the products continued to decrease over the storage time, and only about 15% to 20% of the 0-month amounts were left after 3 months of storage. Although the thiobarbituric acid reactive substances values of the spray-dried non-dairy creamer analogs/mimics increased as storage time increased, the values were still low. Yellowness, darkness, and egg flavor/odor of the non-dairy creamer analogs/mimics increased as the amount of egg yolk in the formula increased. The overall acceptability of the non-dairy creamer analogs/mimics was closely related to the intensity of egg flavor/odor, but storage improved their overall acceptance because most of the off-odor volatiles disappeared during the storage. Water temperature was the most important parameter in dissolving spray-dried non-dairy creamer analogs/mimics, and $55^{\circ}C$ to $75^{\circ}C$ was the optimal water temperature conditions to dissolve them. Conclusion: Higher amounts of yolk and soy protein combinations in place of egg white reduced the cost of the products significantly and those products contained better and balanced nutrients than the commercial coffee creamers. However, off-flavor and solubility were two important issues in the products.

  • Objective : This study examines the historical changes of Ssangwha-'tang', traditional restorative medicine, to a type of tea in tea rooms(Da-bang) named Ssangwha-'cha' in the modern era in South Korea. The goal is to understand how traditional Korean medical culture has been related to the food culture of everyday life. Method : We analyzed traditional medical texts, newspaper articles and advertisements, literary works, and folk song lyrics in which Ssangwha-tang and Ssangwha-cha are mentioned. Results : Ssangwha-tang used to be mentioned as a medicine to tonify 'Yang' energy(Bo-yang) in traditional medical texts from the late Goryeo dynasty to the mid-Joseon dynasty. Since the late Joseon dynasty, it has also been prescribed for cold, as the tonifying method(Bo-beop) gradually prevailed from the royal family to the public. Since then, Ssangwha-tang has been more popular with the public, with the emergence of the patent medicine(Mae-yak) market since the Opening port period and the Colonial period. As the number of Da-bang sharply increased nationwide amid the period of the country's liberation, Ssangwha-tang has been included in the Da-bang menu served as Ssangwha-cha, corresponding to the increasing demands of the public and government policy that tends to favor traditional beverages over coffee. Conclusion : The historical process in which Sssangwha-tang, a type of herbal medicine, became also considered as tea, Ssangwha-cha, provides an example of how Korean traditional medical culture emphasizing the tonification of the body is interconnected with the daily lives of the public and food culture.

Association between dietary intake, body measurements, and urinary bone resorption markers in young adults with osteopenia and osteoporosis: a cross-sectional study

  • Objectives: Bone health in early adulthood, as individuals approach peak bone mass, plays a critical role in preventing osteoporosis later in life. This study aimed to investigate the associations between lifestyle and dietary factors, anthropometric measurements, and urinary bone resorption markers in young adults. Methods: A cross-sectional study was conducted with 100 healthy Korean adults (50 men and 50 women) in their 20s and early 30s. Bone mineral density (BMD), anthropometric measurements, dietary intake (24-hour recall), and urinary bone resorption indicators (deoxypyridinoline and N-terminal telopeptide of type I collagen) were analyzed. Variables were compared between the osteopenia and osteoporosis groups (OSTEO group: 30% men and 60% women) and the healthy control group. Results: Men in the OSTEO group were significantly taller than those in the control group (P < 0.05). Women in the OSTEO group had significantly lower body weight and body composition (muscle and body fat) than those in the normal group (P < 0.01). Men in the OSTEO group had a significantly higher intake of animal calcium (Ca) than those in the normal group (P < 0.05). Women in the OSTEO group had significantly higher dietary fiber, vitamin A, Ca, plant Ca, and potassium intake than did those in the normal group (P < 0.05). There were no significant differences in caffeinated beverage consumption, eating habits, or urinary bone resorption indicators between the OSTEO and control groups of either sex. Conclusions: In our study of young South Korean adults, we observed low bone density levels, with particularly low BMD in taller men and underweight women. We found a higher nutrient intake in the OSTEO group, indicating the possibility of reverse causality, a phenomenon often found in cross-sectional studies. Therefore, there is a need to further elucidate dietary factors related to osteoporosis in young adults through prospective cohort studies involving a larger population.

Evaluation of Nonpoint Pollutant Management Effect by Application of Organic Soil Ameliorant Based on Renewable Resources in Urban Watershed (도시유역에서 재생자원기반 유기성 토량개량제 적용에 따른 비점오염물질 관리 효과 평가)

  • This study investigated the chemical properties of Organic Soil Amendments (OSAs) made from organic waste. It also assessed the effectiveness of using these OSAs in the soil layer of Green Infrastructure (GI) to reduce stormwater runoff and non-point source pollutants. The goal was to improve the national environmental value through resource recycling and contribute to the circular economy transformation and carbon neutrality of urban GI. The OSAs used in this study consisted of spent coffee grounds and food waste compost. They were found to be nutrient-rich and stable as artificial soils, indicating their potential use in the soil layer of GI facilities. Applying OSAs to bio-retention cells and permeable pavement resulted in a reduction of approximately 11-17% in stormwater runoff and a decrease of about 16-18% in Total Phosphorus (TP) discharge in the target area. Increasing the proportion of food waste compost in the OSAs had a positive impact on reducing stormwater runoff and pollutant emissions. This study highlights the importance of utilizing recycled resources and can serve as a foundation for future research, such as establishing parameters for assessing the effectiveness of GI facilities through experiments. To enable more accurate analysis, it is recommended to conduct studies that consider both the chemical and biological aspects of substance transfer in OSAs.

Effects of Roasted Cassia tora L. Extracts on the Chemical Changes and Microbial Growth (열처리가 결명자의 화학성분 변화 및 추출물의 균체증식에 미치는 영향)

  • The effects of roasting Cassia tora L. were investigated for proximate composition, color, volatile flavor profile, microbial growth and alcohol fermentation. While moisture, protein and fat contents decreased with increasing roasting temperature, fiber and ash contents increased. The L, a and b values of Cassia tora L. extracts decreased with increasing temperature, and only a small difference in total color difference$({\Delta}E)$ was observed. A little difference in major flavor components between raw and roasted treatment was found during roasting. Furfuryl alcohol, a major component of coffee flavor, was separated from Cassia tora L. extracts extracted with ethyl ether. The yeast growth was the highest on the water-extract of Cassia tora L. roasted at $160^{\circ}C$. With increased levels of water-extract at $160^{\circ}C$, S. cerevisiae grew rapidly for 24 hr incubation and the growth rate was higher than the unroasted control group. The growth rate of Bacillus subtilis was the highest in a treatment of 0.5% concentration. Little differences in ${\alpha}-amylase$ produced from Bacillus subtilis were observed among the treatment groups. The total alcohol content increased with increasing roasting temperature during alcohol fermentation.

Food purchase in e-commerce and its relation to food habit of adult women in Incheon and Gyeonggi (인천 및 경기지역 성인 여성의 전자상거래에서 식품 구매실태와 식습관과의 관련성)

  • Purpose: This study examined the food purchases from e-commerce and its relation to eating behaviors or habits in adult women in Incheon and Gyeonggi. Methods: A total of 410 subjects participated in the questionnaire survey. Food purchases in e-commerce and food habits were compared according to age, marital status, and food purchase status in e-commerce of the subjects. Results: Approximately 88% of the subjects had experience of buying foods by e-commerce; more than 40% of the subjects spent less than 100,000 Won buying foods by e-commerce in the past 6 months. The major purchases were coffee and tea, instant food and frozen food, and water and beverages. The reasons for buying foods in e-commerce were cheaper price, convenience of delivery, and variety of food choices. The main factors considered for purchasing foods in e-commerce were price and quality followed by rapid and accurate delivery, and food label and information. Approximately 70% of the subjects were very satisfied or satisfied with their food purchase in e-commerce, and 96% answered that they were willing to buy food in e-commerce again. The perception on the advantages of food purchases in e-commerce was 3.6 points out of 5 and significantly lower in the over 50s and married group. The subjects with experience and high cost of food purchase in e-commerce showed significantly low scores of dietary behaviors and eating habits, which is undesirable. Conclusion: A high percentage of people purchased foods by e-commerce, and they showed undesirable eating habits, especially when the cost of purchasing foods by e-commerce is high. These results showed that purchasing foods in e-commerce may be related to consumers' food habits. Therefore, continuous attention and nutrition guidance for e-commerce consumers are needed.

  • This study aims to analyze the effects of satisfaction on behavioral intentions depending on brand equity based on the consumers who visited specialty coffee shops in Busan. The self-administered method was used for empirical analysis and 295 copies (89%) out of 300 copies of questionnaires were used for analysis. For data processing, the SPSS WIN Version 15.0 statistical package program was used and the frequency analysis, reliability analysis, factor analysis were conducted so the hypothesis was verified through the regression analysis. As a result, for the hypothesis that "Brand equity(perceived quality, brand awareness, brand image) will have a significant impact on satisfaction," perceived quality, brand awareness, and brand image had a significant impact on satisfaction. Satisfaction was shown to have a significant impact on behavioral intentions for the hypothesis that "Satisfaction will have a significant impact on behavioral intentions" For the hypothesis that "Brand equity(perceived quality, brand awareness, brand image) will have a significant impact on behavior intentions," perceived quality and brand awareness had a significant impact on behavioral intentions while brand image didn't. Based on the results of this study, companies should be systematically managed to prepare strategies to remind consumers of their brands and focus on to strengthen brand equity effectively in order to build a competitive brand.

Examination into Favorable Taste of College Students on Food Colors (식품색에 대한 대학생의 기호도에 관한 조사연구)

  • This study was conducted to examine the favorable taste of food color for one month of November 1991 With 200 college students consisting 100 male and 100 female students. The color to examine the favorable food was based on Munsell color standard of ten colors such as F. Birren seven colors (red, orange, yellow, yellowish green, green, blue and violet), brown, pink and black. And then, the data of this study was analysed by using frequency(%), mean values, standard deviation, t-test, Chi-square, Spearman correction with SAS Package on the basis of 100% collection and reliable coefficient alpha= .775. The result of this study is summarized as follows. 1. It was shown that the male college students (59%) showed remarkable interest in the food color higher than that of female college students (92%), and that 85% of male students and 97% of female students considered that the food color has an effect on appetite. In addition, the food name having an effect of the food color on appetite appeared in such order as carrot (13.0%), apple (10.9%), spinach (7.0%), cucumber (6.0%) and red pepper (5.6%). The important factor in choosing the favorable food was the taste for both male and female college students, while the male and female students considered the food color as the 4th, respectively, and the 3rd important factor in choosing the favorable food. 2. The favorable food color appeared in order such as orange, red, yellow, yellowish green, green, blue, violet, pink, black and brown colors for the male college students, and in order such as red, orange, yellow, green, yellowish green, brown, violet, black, pink and blue. Also, there was difference between the male and female college students in such colors as brown, yellowish green, blue and pink. It was also shown that there was no relation between the male and female college students in examining the order of favorable food colors and general colors when selecting null hypothesis (ASE: .405). The food name associated with the color was apple for red color, orange for orange color, coffee for brown color, banana for yellow color, lettuce for yellowish green color, spinach for green color, mackerel for blue color, eggplant for violet color, sausage for pink color and bean for black color 3. The favorable color combination of both male and female college students showed red with green, orange with yellow, yellow with green, green with yellow, pink with violet and black with black. In addition, the favorable combination of the male college students indicated brown with black, yellowish green with orange, blue with red and violet with yellow while the female college students did brown with yellow, yellowish green with green, blue with yellow and violet with pink. The favorable combination color showing difference between the male and female college students included orange, brown, violet, pink and black colors. 4. The relation between the food color and terms of favorable taste showed that “light and mild color” is yellow, that “untasty color” is black, that “sourish and puckery color” is orange, that “bitter color” is violet, that “hot color” is red, and that “fresh color” is green which were answered by both male and female college students. However, the male and female college students considered yellow, respectively, and orange as “tasty color”, and black and yellow, respectively, as “sweet color”. Then, the taste term showing difference between male and female college students included “light”, “mild”, “sourish”, “tasty” and “sweet”. Based on the above result of this study, it is apparent that there is a close relation between the food color and appetite while being difference between the general color and taste. In addition to this fact, there is also some differences between male and female college students in the taste of food color.

Liquid Intake of Female High School Students by Self-Recording Method for 3-days in Daejeon (3일간의 자기 기입식 기록법을 적용한 대전지역 여고생의 액체수분 섭취실태)

  • This study was performed to measure the liquid intake and the liquid intake difference by obesity, exercise frequency, and salty food intake score in female high school students. A total of 235 students in Daejeon area were participated, and the liquid intake was recorded for 3-days(2 weekdays and 1 weekend) by self-recording. The T-test, F-test, Pearson's correlation, and Scheffe test were exercised. The results of this study are as follows. The amount of total liquid intake was 838.5 ㎖/d. Among the 13 kinds of beverages, water was the highest 611.6 ㎖/d, 72.9% of liquid intake total, followed by carbonated drink(65.7 ㎖/d), milk(41.6 ㎖/d), fruit drink(32.8 ㎖/d), and fruit·vegetable juice(25.4 ㎖/d). The other beverages' intake were very small, ≤13.0 ㎖/d. Carbonated drink, milk, and coffee's intake were higher during weekend than weekday. There were sig. difference in water and total liquid intake by the obesity, student of BMI≥23.0 was higher than students of BMI<23.0. And only carbonated drink was sig. different by exercise frequency and salty food intake score. Exercise frequency of ≥3 d/week and salty food intake score of ≥7(very dangerous) consumed more carbonated drink than the lower counterparts. Total liquid intake of female high school students was not reach to 900 ㎖/d, the Adequate Intake in Dietary Reference Intake for Koreans 2015. The amount of milk intake was 41.6 ㎖/d, far less than the Recommended Intake of 2 serving, 400 ㎖/d. Education and promotion program may necessary to increase the liquid intake amount and to choose the nutritious beverage.
