3-Tier 구조를 이용한 케이터링 시스템 개발 (Development of catering system using 3-Tier architectures)

  • 3-Tier 구조는 비즈니스 로직을 공유할 수 있으므로 기존의 코드의 재사용성이 보장되며, 사용자 인터페이스만 담당하는 작고 가벼운 클라이언트 어풀리케이션을 만들 수 있기 때문에 클라이언트의 많은 메모리와 계산능력을 필요로 하지 않는다. 본 논문에서는 데이터베이스, 언어 그리고 ADO(ActiveX Data Object) 엔진을 이용하여 3-Tier 구조의 기술을 접목한 식자재 코드관리, 식자재 소요량 자동산출, 식자재 매입/출하 관리, 식단관리, 결산처리 등을 할 수 있는 케이터링 시스템을 개발한다. 이 시스템은 급식 분야에 생산성을 향상시킬 뿐만 아니라 비용 절감을 얻을 수 있다 급식 서비스 업무 환경에 적합한 시스템으로써 많은 활용이 기대 된다.

  • 본 연구는 급변하는 시대에 변화하는 소비자의 특성에 따라 하루가 다르게 변화하는 마케팅 트렌드를 통하여 점차 중요시 되어지는 스토리텔링(storytelling) 마케팅의 기본 요소들을 토대로 이를 충족시켜주는 스토리텔링의 특징들을 문헌과 자료들을 통하여 고찰 분석해보고 이를 통하여 스토리텔링이 기업의 브랜드 이미지에 미치는 영향과 스토리텔링 마케팅이 성공하기 위하여 필요한 요소들을 알아본다. 또한 이 요소들이 실질적으로 어떻게 사용되어 지고 있는지 국내외적인 사례분석을 통하여 성공적인 외식프랜차이즈의 스토리텔링 마케팅을 위해 나아갈 방향을 제시하는데 도움이 되고자 한다.

Research Trend Analysis on Customer Satisfaction in Service Field Using BERTopic and LDA

  • Purpose: The purpose of this study is to derive various ways to realize customer satisfaction for the development of the service industry by exploring research trends related to customer satisfaction, which is presented as an important goal in the service industry. Research design, data and methodology: To this end, 1,456 papers with English abstracts using scienceON were used for analysis. Using Python 3.7, word frequency and co-occurrence analysis were confirmed, and topics related to research trends were classified through BERTopic and LDA. Results: As a result of word frequency and co-occurrence frequency analysis, words such as quality, intention, and loyalty appeared frequently. As a result of BERTopic and LDA, 11 topics such as 'catering service' and 'brand justice' were derived. As a result of trend analysis, it was confirmed that 'brand justice' and 'internet shopping' are emerging as relatively important research topics, but CRM is less interested. Conclusions: The results of this study showed that the 7P marketing strategy is working to some extent. Therefore, it is proposed to conduct research related to acquisition of good customers through service price, customer lifetime value application, and customer segmentation that are expected to be needed for the development of the service industry.

E-서비스품질과 소비자 태도 및 만족도 간의 관계: 중국 음식배달 애플리케이션 중심으로 (Influences of the E-service Quality of Food Delivery Application in China on Customer Attitude, and Satisfaction)

  • Purpose - The food delivery mobile application market is growing rapidly in the catering service industry. The purpose of this study was to investigate the effects of E-service quality on consumer attitudes and satisfaction in the food delivery service field in China. Design/methodology/approach - A total of 390 copies of this questionnaire were distributed between February 17 and March 25, 2021 on the Chinese survey site (https://www.wjx.cn). Three hundred forty-nine parts were used for the final analysis. Validity and reliability were analyzed using SPSS 25.0 statistical program, and correlation and regression analysis were performed. Findings - The study results showed among the e-service quality components of food delivery application software, trust, convenience, proximity and reactivity have an impact on consumer attitudes. Research implications or Originality - The service quality of food application software is an important factor determining consumer attitude. The limitations of this study and suggestions for future research were discussed.

국내 급식위생관리의 현황고찰 및 발전방안 (Evaluation of the Management of Sanitation in Food Service Establishments in Korea and Strategies for Future Improvement)

  • 우리 나라의 학교급식, 병원급식, 및 위탁급식 등에서 위생관리의 수준을 알아보고 앞으로의 개선 및 발전 방안을 논의하였다. 앞으로 발전을 위한 10가지 방안으로서 이들 집단급식에서 (1)인력과 전문성 보강, (2) 건물과 시설의 전용화, (3)조리장 시설 설비의 보강, (4)주 ·부재료 공급 방법의 개선 및 품질관리, (5) 정확한 기계 ·설비류의 생산과 구비, (6)검사 장비와 설비의 보강, (7)개인위생관리의 여건 강화, (8)다양한 위생교육 및 훈련, (9)수입개방에 대한 능동적 대처, (10)관련 연구 및 background data의 축적 강화 등이 이루어져야 할 것으로 도출되었다. 식품 재료를 생산하여 먹기까지에는 여러 가지 단계를 거친다. 그 중에서 조리는 먹기 직전의 단계이다. 영양적으로 우수하고 위생적으로 안전한 재료를 취득하였다 하더라도 이 과정에서 취급이 잘못되면 대규모의 건강 위해를 야기할 수 있다 또 비록 재료가 안전하지 못하였다 하더라도 이 과정에서의 위생관리를 철저히 함으로써 그 위해를 상당히 줄일 수도 있다. 바로 이러한 측면에서 우리는 집단급식 시설의 위생관리가 얼마나 중요한 가를 다시 강조하지 않을 수 없다. 음식물에 의한 위해를 예방하고 위해 요소를 사전에 차단하기 위한 노력의 일환으로 세계적으로 식품위해요소중점관리기준(HACCP)의 도입이 활발하다. 우리 나라에서는 이를 식품제조 ·가공업소에 먼저 도입하였으나 급식 시설에서 시급히 적용하여 건강 위해를 최소화하여야 할 것으로 본다.

  • It is a real situation that the meal service at silver towns such as the welfare facilities for the elderly is giving help in maintaining health, preventing diseases, and giving mental pleasure to the dwelling elderly people, thus the importance of meal service for housing occupants is being demanded together. This study is based on some inconvenient matters when using the meal-service facilities within the silver town targeting housing occupants at the silver town, aiming to examine which influence it can have upon the satisfaction with meal service in housing occupants. Accordingly, the purpose of this study is to present a desirably developmental direction for the meal-service facilities, which can cope with diverse needs of housing occupants. To achieve the objectives of this study, it was analyzed by selecting research variables that were verified by the consideration of preceding studies.

  • This research is based on the survey of strategic alliance of the foodservice industry conducted by interviewing their customers. We found out that cooperating and information of benefits influenced revisiting followed by service quality and customer satisfaction. As a result of research, we noticed that for breaking through the depression and having synergic effects among the enterprises, providing high service and quality to customer is a key to success. It must be used as an essential part of marketing strategic plans for maintaining and increasing customers, guiding partner selection among the enterprises.

외식업 종사자의 직무 적합 정도가 이직 의도에 미치는 영향 - 조직 몰입을 매개변수로 - (The Influence of Foodservice Employees' Job Suitability on the Turnover Intention - Focusing on the Moderating Variable of Organizational Commitment -)

  • The purpose of this research was to examine the construct known as job fit perceived by service employees in the foodservice industry. The model was tested using SPSS 12.0 and AMOS 4.0 based on the sample of 667 persons that showed a 95% usable response rate. The results of the empirical analysis showed as follows. First, in restaurants, the employees' job suitability factor brings about an indirect effect by organizational commitment and turnover intention. Second, employees' job satisfaction factor causes an indirect effect by organizational commitment. Third, employees' organizational commitment factor has relationships with turnover intention. That is, the higher organizational commitment, the lower turnover intention. By the same route analysis, job suitability has an effect on organizational commitment. Also, the research proved organizational immersion has an effect on turnover intention. In this respect, the research contributes to job performance of foodservice employees, emphasizing the necessity of educational programs for them.

  • The main purpose of the study is to determine the features of state regulation of the hotel and restaurant business in the digital economy. Particularly relevant are the processes of digitalization of the service sector. Trade and transport companies, enterprises in the hotel and restaurant industry, catering got the opportunity to expand the target audience, improve the quality of service, develop at an accelerated pace, take into account that in the global digital economy, victory will go to those whose arsenal will involve a large number of high-quality digital platforms. As a result of the study, key aspects of state regulation of the hotel and restaurant business in the digital economy were identified.

  • The purpose of this study, where the subjects are people with the job related to cooking or are culinary expert, is to investigate factors that influence consumer's satisfaction on the tableware seen on broadcast, magazine, food service industry and/or other media. First, this study demonstrates three factors that influence on consumer's satisfaction : first factors of the shape, the color, the size of the tableware, second factors of the shape, the color, the quality of the food, third factors of the design, the color, and the quality of the tablecloth.Lastly, this study shows satisfaction that can be affected between the tableware and the food, between the food and the tablecloth, and between the tablecloth and the tableware.In conclusion, the primary factors that influence on consumer's satisfaction are the color of the food, tableware, and tablecloth, that reflects that visual role plays an important role in the food service industry. From now on. more study that will go into details is expected.
