Poultry welfare has recently appeared as worldwide concern as well as Korea. The recent action plan for farm animal welfare introduced by the European Commission intends to expand the body of regulatory standards. In this context, many countries and/or organization are on the verge of establishing the most optimum poultry welfare standards. To establish the most optimum standards, comparative analysis of feeding regimen before and after welfare-bestowed environment need to be preceded. Most guidelines or standards for poultry welfare do not suggest the nutritional requirements and feeding system in detail, although it is deterimental especially for the farmer. This review intends to find scientific base to establish detailed welfare feeding guidelines. However, only limited research has been conducted in the view of actual poultry welfare. The results indicated the incidence of SDS, ascites, skeletal dysfunctions caused by fast growth rate in broiler, feather pecking and cannibalism in laying hen, and feed restriction in broiler breeder could be reduced by changing nutritional regimen and feeding strategies or both. The regimen and feeding strategies are certainly near to the direction that the poultry welfare ought to be in the right track. In this article, feeding and drinking guidelines in many standards as well as welfare feeding experiments have been reviewed and compared In the view of chicken productivity, welfare physiology and poultry health.

This study was conducted to investigate the detection rate and serotypes of Salmonella spp. in conventional and welfare poultry farms. Ten welfare (five layer and five broiler) and 15 conventional farms (five layer and ten broiler farms) were visited to collect environmental samples for identification and serotyping of Salmonella spp. The detection rate of Salmonella spp. was higher in the welfare farms than in conventional farms in both layer and broiler farms. In layer farms, Salmonella spp. was detected in 0.76% (1 out of 130) of samples from one of five welfare layer farms, but was not detected in the five in conventional layer farms. No significan ifference (P>0.05) was observed between the welfare and conventional layer farms. In broiler farms, Salmonella spp. was detected in 10.5% (21 out of 200) of samples from four of five welfare broiler farms and 3.5% (7 out of 200) of samples from five of ten conventional broiler farms, and a significant difference (p <0.05) was observed between the welfare and conventional broiler farms. Among 29 Salmonella spp. isolates, five isolates were serotyped to Salmonella enterica subsp. Enteritidis (n=2), Salmonella enterica subsp. Grampian (n=1), Salmonella enterica subsp. Virchow (n=1), and Salmonella enterica subsp. Senftenberg (n=1). These results suggest that microbial risks could be higher in welfare farms than in conventional farms due to easy access to open-air areas, environmental enrichment, and reduced use of antibiotics. Therefore, continuous monitoring and surveillance for Salmonella spp. is necessary to improve the microbiological safety of poultry meat.

As domestic meat consumption increases, the broiler production industry has been larger and denser. The concentration of particulate matter (PM) and harmful gases generated is also increasing inside livestock house. However, the current research status of PM exposed to farm workers and the health effects are in the early stage. To understand PM concentration affecting workers in the broiler house, field monitoring was conducted according to its size distributions. Concentrations of PM10, PM2.5, and TD (Total Dust) were monitored using personal air samplers with teflon filter during working and moving periods considering the ventilation systems of 6 broiler houses. The purpose of this study is to monitor the PM concentration in the experimental broiler houses operated by forced ventilation system generally used in Korea and to evaluate the regional concentrations through airflow pattern. The PM concentrations were increased from inlet to outlet vents resulting in 1,872 of TD, 1,385 of PM10, and 209 ㎍/㎥ of PM2.5, respectively. The TD and PM10 concentrations were increased when the workers and broilers were moving. Among them, the particle size that occupied the largest amount of PM was 13.75 ㎛. These results suggest that personal protection equipments are important to reduce the health effect from PM inhalation.

Objective: This experiment was conducted to investigate the effects of dietary crude protein (CP) level and exogenous protease supplementation on growth performance, serum metabolites, carcass traits, small intestinal morphology and endogenous protease activity in broiler chickens reared under a tropical climate. Methods: A total of 480 day-old male broiler chicks were randomly assigned to eight dietary treatments in a $4{\times}2$ factorial arrangement. The main effects were CP level (21.0%, 19.7%, 18.5%, or 17.2% from 1 to 21 days and 19.0%, 17.9%, 16.7%, or 15.6% from 22 to 35 days) and protease enzyme supplementation (0 ppm or 500 ppm). All experimental diets were fortified with synthetic feed-grade lysine, methionine, threonine and tryptophan to provide the minimum amino acid recommended levels for Cobb 500. Results: Reducing dietary CP linearly reduced (p<0.05) growth performance, serum albumin, total protein, and carcass traits and increased (p<0.05) serum triglycerides and abdominal fat. There was no consistent effect of reducing dietary CP on morphological parameters of the intestine and on the pancreatic and intestinal endogenous protease activity (p>0.05). Protease supplementation improved (p<0.05) feed conversion ratio, body weight gain, carcass yield and intestinal absorptive surface area. Conclusion: Protease supplementation, as measured by growth performance, intestinal morphology and carcass yield, may alleviate the detrimental effects of low protein diets in broiler chickens.

Animal welfare has become a prominent concern around the world so that the laws and guidelines of animal welfare are being strengthened in many countries including the EU. In Korea, it is required to supplement animal welfare standards because social awareness of animal welfare has changed. This study was conducted to compare broiler welfare certification standards and improve the quality of practice. We found that broiler welfare certification standards differ among countries according to environmental and managemental differences. Standards for stocking density and perch which is considered more important for poultry welfare are similar, but there is a little difference in feed, water, litter and lighting. Therefore, we assumed that theses are able to revise standards taking into account the environment and suggested that the broiler welfare certification standard will serve as a more useful criterion if breeding conditions in Korea are considered.
This study was conducted to determine the effect of hot environment and dietary crude protein level (CP) on performance, carcass characteristics, meat visual quality, muscle chemical composition and malondialdehyde (MDA) concentration of tissues in broilers. Two hundred and sixteen 21-d old Arbor Acre broilers were used in a $4\times3$ factorial arrangement and randomly reared in 4 environmental chambers and fed on 3 diets with different CP levels for 3 weeks. The results showed: (1) when air temperature (AT) rose to $33^{\circ}C$, average daily feed intake, average daily gain, carcass weight, right breast meat weight, left thigh and drumstick meat weight decreased (p<0.05) and feed conversion rate decreased (p<0.05), but the ratio of carcass to live weight and of left thigh and drumstick meat weight to carcass weight increased (p<0.05). (2) There were significant differences in pH and shear force in breast meat, and shear force, L* and a* in thigh meat (p<0.01 or 0.05) among hot environments. Dietary CP level tended to affect breast meat pH and pH and L* of thigh meat (p<0.06 or 0.09). Compared to the normal temperature ($22^{\circ}C$), low temperature ($15^{\circ}C$) and hot humid (AT $33^{\circ}C$, relative humidity (RH) 80%) treatments significantly (p<0.05) decreased the tenderness of thigh meat. L* and a* value in thigh meat under high temperature treatments, regardless of RH, were higher (p<0.05) than those under normal temperature. (3) Protein content in breast and thigh meat of broilers fed under high temperature ($33^{\circ}C$) was lower (p<0.05) than that under $22^{\circ}C$, but fat content had an adverse change. High temperature ($33^{\circ}C$) increased the moisture of breast meat significantly (p<0.05). Protein content in breast meat increased significantly (p<0.05), in which fat content had an adverse change (p<0.05), when the dietary protein rose. (4) MDA concentration in liver and breast meat under hot humid (AT $33^{\circ}C$, RH 80%) treatment increased markedly (p<0.05). (5) High humidity could sharpen the bad effect of high temperature on performance, carcass yield and choice cuts, crude protein and moisture content in breast meat. It was concluded that a hot environment could affect the performance and meat quality of broiler chicks more significantly than CP level and that high humidity would aggravate the bad influence of high temperature on the broiler.

Heat stress causes a decrease in immunity and disease occurrence in livestock, increasing mortality and impairing productivity. In particular, chickens are very vulnerable to high temperatures compared to other livestock species because their entire body is covered with feathers and sweat glands are not developed. Currently, air conditioning systems are essential in broiler houses to prevent high-air temperature damage to broilers, but conventional cooling facilities are greatly affected by the external environment, so there are limits to their use. In this study, to propose a cooling method, thermal insulation paint and a heat pump were apply in the broiler houses to evaluate the temperature reduction effect. The heat pump experiment was to analyze the cooling effect according to the change in ventilation rate and propose an appropriate. As a result of the experiment, the heat-insulating paint reduced the temperature of the broiler houses by maximum 1-2℃, and in the broiler houses where the heat pump was operated, the temperature decrease was the largest when the ventilation rate was the lowest. When the air temperature in the house is similar to or lower than the outside air temperature, it is considered to be most effective to use a heat pump while maintaining only the minimum ventilation rate.
The basic problem of the broiler industry is that of fluctuating prices, mainly thanks to unstable supply of and inelastic demand for products as usually indicated as a peculiarity of agricultural commodities. This particularly brings the producer to a great economic risk, because he has to sell products under the condition of pure competition, whereas others from whom he has to buy deal under the condition of oligopoly or even monopoly. Therefore, producers economic position is generally placed in the worst comparing others dealing with, which results in unbalanced economic status of elements involved in broiler operation and further obstruction of industry development as a whole. A certain type of business coordination to overcome such a problem should be measured in order to improve the efficiency of entire operation and thus assure the balanced industry development. The concept of the economic integration developed in modern business system had been adapted to U.S. poultry industry which became common later around the world as a means of stabilizing producers price and whole industry as well. There are two main typos of integration; horizontal and vertical The former refers to the general grouping of similar business units, eg. a hatchery tying with other hatchery, while the latter refers to the knitting together of two or more stages of economic activities, eg. tying together among units of hatching, fled milling, production, processing and marketing. By having the industry integrated, risk and uncertainty involved in various stages of operation could be diversified. The typo of integrating contract between producers and integrators include the share of profits, flat fee payment, feed conversion payment and salary basis. In the U.S., extensive changes in production, processing, and marketing during the last few decades have changed the thicken broiler industry from one of small, widely scattered farms to one that is largo, concentrated and efficient. More than 99 percent of all broilers produced are grown under contract and by integrated firms which vary in size of operation and complexity. About 84 percent of all production is concentrated in 10 States. Some of the other factors ;hat contributed to these choses arc costs, energy use, prices, processing, marketing and demand. No integrated broiler production system has yet been applied in Korea's poultry industry, thus all stages all broiler operation run independently seeking for its own profit. Consequently, producers price fluctuate very widely around the year even more than 50 percent in a few months. This also leads to disadvantages of material supplies, processors and distributors and enforce the industry unstable. The current economic environment in Korea seems that the time for broiler integration comes and as an ideal integrator, feed millers, food processors and producers group may be considered.
This study was investigated to observe Lactobacillus spp. population of poultry digestive organ, duodenum, ilium, cecum and colon by growing steps and to select of valuable lactobacilli as probiotics. Two strains of male broiler commercial chickens, Hybrid and Ross, were used to evaluate population of Lactobacillus spp. in intestinal tracts. Three strains of Lactobacillus were identified, and bile salts environment. The number of lactovacilli was the lowest in duodenum compared to other intestinal tracts which had similar population. Population of Lactobacillus was maintained constantly regardless growing steps after one week of age. Identification of Lactobacillus from cecum resulted in L.reuteri BC5, L. crispatus BC7, L.reuteri BC9. All strains was depressed in pH 1 and 2, although two strains could survive for one hour at pH 2. And they could survive at pH 4 for 4hours. In bile salts tolerance, L.reuteri BC5, L.crispatus BC7 were maintained for 2 hours, but the growth reduced from 2hours. Growth of L.reuteri BC9 was increased continuously. In conclusion, Lactobacillus of intestinal tracts were established at first week, and maintained constant population. They were influenced on severe acidic condition and bile salts. Cecal Lactobacillus has different growth charcteristics by strains.

The handling and transport of broiler birds from farm to the processing factory is known to cause injury and dead. The preslaughter period can be compromised through thermal stress, emotional stress, starvation, dehydration, metabolic exhaustion, trauma to the skin and bone fraction resulting in bruising and dead. This paper focuses on the control points of individual post Harvest stages by reference to recent literature. In catching, the injuries and deads are caused from fracture of bone, skin damage and hipbone dislocation. It can be improved by training the catchers. The primary factor of dead during transportation is from thermal stress. It is related to stocking density, type of crate and vehicle, ventilation and transportation time. Of the factors, the ventilation is very important. The holding place should be built with consideration of protection from the hostile external environment. There were not much progresses in this area, however, many researches are conducting to focus on animal welfare in European Union. Recently, it is rapidly changed in marketing custom from whole carcass to portion cut in Korea. This means the increase of economic loss due to the mishandling at post harvest. The systematic approach is demanded for this area.
