흰깨, 검은깨 및 들깨가 고아미 2호를 이용한 쌀쿠키의 이화학적 및 관능적 특성에 미치는 영향 (Physicochemical and Sensory Characteristics of Rice Cookies Based on Goami 2 with Sesames(White and Black) and Perilla Seeds)

  • The aim of this study was to develop rice cookies based on 'Goami 2' rice, and made with sesame (white and black) and perilla seeds. Furthermore, we studied the physicochemical and sensory characteristics of the cookies as well as the alternative effects of the sesames or perilla seeds for butter, where we substituted the sesames or perilla for 30% of the total butter. The pH values of the cookie doughs made with the sesames or perilla seeds were significantly different (p<0.001), whereas the spread factors of the doughs were not significantly different. The Hunter color L-, a-, and b- values were significantly different for the cookies made with the added sesames or perilla seeds (p<0.001). The brittleness of the Goami 2 rice cookies (control) was significantly higher than that of the cookies made with the sesames or perilla (p<0.001). In a descriptive analysis performed by 8 trained panelists, the following sensory characteristics: yellow, black, sweet taste, nutty taste, nutty odor, oily flavor, and off flavor, were significantly different among the cookie samples. In a consumer test by 50 women students, the Goami 2 rice cookies were preferred in the following order: Goami 2 rice cookies with no additions > black sesame cookies > white sesame cookies > perilla cookies. In conclusion, some physicochemical and sensory characteristics of the cookies were different, in relation to being made with or without the sesame or perilla seeds. However, because of the small difference in acceptance among the cookies, the sesame and perilla rice cookies show strong potentials for consumer acceptance. Moreover, the black sesame cookies were more acceptable in terms of butter substitution for the cookie preparation.

  • Black sesame (Sesami semen nigrum) has been used to treat dizziness, earnoise, constipation in the traditional Chinese medicine. In the present study, we assessed memory enhancing properties of 70% ethanolic extract of black sesame (EBS70) and its ameliorating activities on learning and memory impairments induced by scopolamine. Drug-induced amnesia was made by scopolamine treatment (1 mg/kg, i.p.). Single EBS70 (200 mg/kg, p.o.) administration significantly enhanced cognitive function and attenuated scopolamine-induced cognitive impairments as determined by the passive avoidance and Y-maze tasks (P<0.05) and also reduced escape-latency on the Morris water maze task (P<0.05). In addition, EBS70 increased BDNF expression in hippocampus 4 h after its administration (P<0.05). These results suggest that EBS70 enhances learning and memory in normal state and attenuates amnesic state caused by cholinergic dysfunction.

Effect of Feeding Sesame Hull on Growth Performance, Nutrient Digestibility, and Carcass Characteristics of Black Goat Kids

  • An experiment was conducted to evaluate the effect of replacing barley and soybean meal in finishing diets with sesame hull (SH) on growth performance, digestibility, and carcass characteristics of Black goat kids. Twenty-one Black goat kids were assigned randomly to 0%, 10%, or 20% SH diets (7/diet). The study lasted for 63 d. Intakes of dry matter (DM), organic matter (OM), and crude protein (CP) of kids fed the 10% diet were greater (p<0.05) than for the 0% and 20% SH diets (p<0.10). Neutral detergent fiber (NDF) and acid detergent fiber (ADF) intakes were highest (p<0.05) for kids fed the 10% SH diet when compared to 0% and 20% SH diets. Ether extract (EE) intake was greater (p<0.05) for kids fed 10% and 20% SH diets when compared to 0% SH. Digestibilities of DM, OM, CP, NDF, and ADF were similar among all diets. However, sesame hull inclusion increased (p<0.05) EE digestibility. Final body weight, total gain, average daily gain (ADG), and feed conversion ratio were comparable among all diets. Cost of gain was lower (p<0.05) in kids fed 20% SH than the 0% SH diet, while there was no difference between the 10% SH diet and the other two diets. Dressing percentage, hot and cold carcass weights, non-carcass components, carcass cut weights, and meat quality parameters were not influenced by SH. Total fat percentage in the leg was greater (p<0.05) on 0% SH than on the 10% SH diet. Results of this study demonstrated that inclusion of sesame hull at levels of 10 or 20% did not influence the performance of Black goat kids, but the cost of gain was lower.

반응표면 분석법을 이용한 노화쌀가루첨가 흑임자 튀일 레시피의 최적화 (Optimization of Recipe for Black Sesame Tuile Containing Retrograded Rice Flour using Response Surface Methodology)

  • Tuile containing retrograded rice and black sesame was developed by optimization of the mixing rate of retrograded rice and egg white using response surface methodology. Nine samples of design points were obtained according to central composite design, and the optimal mixing rate of retrograded rice flour and egg white as independent variables was calculated with the sensory score, color, and texture as response variables. Nine samples of the experimental group and no added retrograded rice flour Tuile were also compared in terms of sensory properties, color and texture. According to the results, the optimal mixing rate of black sesame Tuile was 8.6 g of retrograded rice and 33.5 g of egg white. Regression analysis of the response showed that retrograded rice flour and egg white had effect on the color and texture of black sesame Tuile, with egg white more influential rather than retrograded rice. In a comparison of quality between retrograded rice flour added Tuile and no retrograded rice flour Tuile, lightness ($p$<0.05), hardness ($p$<0.001) and fracturability ($p$<0.001) of retrograded rice flour added Tuile was better than those of the other sample, and sensory quality in terms of color ($p$<0.01), taste ($p$<0.001), texture ($p$<0.01) were more excellent as well.

논에서 벼 대체작물의 전작 재배가 조경밀의 곡물 생산성과 밀가루의 품질에 미치는 영향 (Effects of Pre-cropping with Rice (Oryza sativa L.) Alternative Crops on Grain Yield and Flour Quality of Winter Wheat (Triticum aestivum L. 'Jokyung') on the Paddy Fields)

  • 벼 대체 밭작물(검정콩, 들깨, 참깨)과 연계한 밀 이모작 작부체계를 적용한 논에서 조경밀 생산성과 밀가루의 품질 특성을 살펴보았다. 전작으로 검정콩, 참깨, 들깨를 재배하였던 포장은 벼를 재배한 논보다 토양의 pH는 높고, 전기전도도는 낮았다. 그리고, 유효인산(Av. P2O5), Ca2+과 Mg2+ 함량은 벼를 재배하였던 토양에서보다 높았다. 밀의 생육 특성 중 간장, 수장, 수수, 수당립수는 검정콩 전작 토양에서 전반적으로 양호하였다. 하지만, 밀의 수량은 벼 전작 토양에서보다 대체작물인 검정콩이나 참깨, 들깨의 전작 토양에서 모두100 kg/10a 이상 증가하였다. 더군다나, 단백질 함량과 SDS-침전가가 검정콩, 참깨, 들깨 전작에서 모두 벼 전작에서보다 높았으며, 아밀로스 함량은 벼 전작에서보다 검정콩, 들깨 전작에서 다소 낮았다. 이러한 결과들은 논토양에서 전작으로 참깨나 콩, 들깨 등의 벼 대체 작물들의 재배는 토양의 물리화학적 특성을 개선하고 제빵공정에 좀 더 유리한 고품질의 밀을 생산하는데 이바지할 수 있음을 보여준다.

Liquid chromatographic determination of α-, β-, γ-, and δ-tocopherol in sesame oils of different origin

  • The contents of ${\alpha}$-, ${\beta}$-, ${\gamma}$-, and $\delta$-tocopherols in sesame oils were determined by high performance liquid chromatography with UV detection. ${\alpha}$-Tocopherol contents ranged from 10.28 to 19.79 mg/g oil, ${\beta}$-tocopherol contents from 8.22 to 20.10 mg/g. However, both ${\gamma}$- and $\delta$-tocopherol were less than 1.49 mg/g or not detected. ${\gamma}$-Tocopherol was not detected from both unroasted white and black sesame seed oils. Significantly higher level of tocopherol in sesame oil than other oils is an evidence of the reason why it is highly stable and prevents oxidation. The tocopherol composition for twenty sesame oils was classified by using principal component analysis.

Melanin 합성을 촉진하는 흑임자 에탄올추출물의 효능 (Black Sesame Ethanolic Extract Promotes Melanin Synthesis)

  • 백발화과정은 인간의 노화의 표현형 중 하나로 노화의 지표이다. 시간이 지남에 따라 사람 모낭에 melanocyte의 melanin 생성이 줄어들게 된다. 이의 원인으로는 모낭내 tyrosinase 활성의 감소와 활성 산소 종 중 $H_2O_2$에 의한 축적을 통해 나타난다. 천연물중에서 예로부터 흑모를 유도한다는 흑임자주정추출물의 비극성 층과 극성 층을 분리하여 항산화 효과 및 B16F1에서 melanin 생성 촉진 효과를 조사하였다. 항산화 실험에서 SBEEP와 SBEEO는 DPPH 소거 효과를 보여주지 않았고, 낮은 환원력을 보여주었다. SBEEP는 $8{\mu}g/ml$ 이상에서 세포 독성이 나타났고 SBEEO는 $4{\mu}g/ml$ 이상에서 세포 독성 효과를 보여주었다. SBEEP와 SBEEO는 in vitro에서 tyrosinase 활성과 DOPA 산화 활성에 대한 높은 melanin 합성 효과를 보여주었고, 살아있는 세포에서는 SBEEP처리군은 SBEEO 처리군보다 높은 melanin 합성 촉진 효과가 나타났다. 세포 내 melanin 생성에 효과가 있는 SBEEP는 melanin 합성 기전에서 중요한 효소인 TRP-2의 발현을 통해 melanin 생성을 촉진한다는 것을 발견하였다. 이러한 결과들은 흑임자의 SBEEP가 melanin 합성을 촉진할 수 있다는 가능성을 시사하고 있다.

  • 1) 강력한 위조독소(Wilt toxin)인 Fusaric acid를 생성하는 것으로 알려진 참깨$\cdot$시들음병균(Fusarium oxysporum f. vasinfectum)의 배양여액이 참깨의 종자발아 및 발아후의 유식물의 생육에 미치는 영향을 구명하기 위하여 이 시험연구에 착수하였다. 2) Fusarium oxysporum f. vasinfectum의 5종의 계통의 배양여액은 모두 참깨종자의 발아를 억제하고 종자의 흑변, 괴사를 초래한다. 3) 공시균의 어떤 계통의 배양여액에 대한 참깨종자의 발아반응에 있어서의 품종간 차이는 없다. 4) 공시균의 5종의 계통의 배양여액이 참깨종자의 발아를 억제하는 독성에는 뚜렷한 차이가 있다. 5) 공시균의 5종의 계통의 배양여액을 첨가한 육묘상에서는 발아후의 참깨유식물의 뿌리나 줄기의 신장이 다 같이 억제되며 조직은 흑변, 괴사하게 된다. 그러나 배양여액을 $10\%$ 첨가한 육묘상에서는 줄기의 신장생장 약간 촉진되는 경향이 있다. 6) 공시균의 배양여액을 $1\%$ 내지 $1\%$ 첨가한 Knop Solution에 본엽이 생기지 않은 참깨 유식물을 배양하면 참깨의 뿌리나 줄기의 신장생장이 억제되고 제2본엽이 전개할 때까지에 줄기나 잎자루나 연화, 흑변, 괴사하며 제1본엽에는 맥간에 염갈색반문이 형성되고 제2본엽은 권축, 흑변, 괴사하며 특히 제2본엽에 나타나는 병상은 포장에서 나타나는 참깨의 잎의 위조병징과 흡사하다. 7) 공시균의 5종의 계통간에 나타나는 배양여액의 독성의 차이는 공시균의 각계통자체의 기생에 의한 병원성의 차이와 일치하지 않는다
